The grand opening of the sandpit redevelopment took place with representatives from many local community groups in attendance. The sandpit redevelopment is a project that initially begun with an ‘idea’ over 18 months ago. The project which has now been completed apart from the addition of some cafe blinds; involved the construction of an overhead structure, concrete paths, new lawn, toy and equipment storage and a water tank.

A project such as this one comes at an expense and fortunately the kinder has been very well supported from many local community groups. The kindergarten committee were successful in receiving a small grant from the Surf Coast Shire, a community grant from the Winchelsea Community Bank and a kind donation from the Winchelsea Lions Club whilst also raising over $5000 in 2013 from four successful fundraisers. In addition to this, work was completed by local businesses including Earl Civil and Winchelsea Rural Constructions and supplies obtained from Winchelsea Trading. Without the support of these fantastic organisations

and individuals, this project would not have been possible. The kindergarten committee, staff and community wish to thank everyone that helped in some small or big way to help us reach our goal of providing a quality play and learning space for our own and future children.

VicRoads today reminded the community to have their say on plans for the highly anticipated proposed duplication of the Princes Highway between Winchelsea and Colac, with submissions closing soon.

VicRoads Project Director Tony Hedley said the community only had one more week to provide a written submission about the proposed design.

“Even if you’ve provided VicRoads with your feedback previously, it’s important that you put it in writing and for consideration by the independent panel,” Mr Hedley said.

“This is your opportunity to provide feedback on the plans, including what you may like or dislike about the project, any suggested changes and any important issues that have not been addressed.”

“Submissions must be received by Tuesday 1 April 2014,” he said.

Mr Hedley said that if it was not possible to resolve issues raised in the submissions, VicRoads would refer all submissions to an independent panel.

“Each and every submission is considered, regardless of the topic. If we can’t come to an agreement with land owners, then an independent panel will make recommendations.

Mr Hedley said the project was entering an exciting stage and the planning process is a way for the community to get actively involved to make sure the way the project is delivered is in line with the community’s needs.

The proposed $515 million highway duplication will help improve freight viability between Melbourne and the South Australian border and enhance access for tourists to the region and the Great Ocean Road.

Like me, Joe was once happy to drink instant coffee, until he bought the Birregurra General Store in 2004. There was a coffee machine there and Joe made it his business to learn how to use it. While he was there, he went through five coffee machines and developed a coffee culture in Birregurra, going from 1 kg of coffee a day to 20 kg when he left nine years later. Renowned chef and owner of Sunnybrae, George Biron, would regularly drop in for a coffee. Joe had found his passion and, in fact, his dream is one day to devote all of his working life to coffee – roasting, distributing and educating.

Joe was assisted in those early years by his coffee supplier, who subsequently became his friend, and he went on to buy a grinder and then a roaster four years ago. The roaster sat in Joe’s back room for a year before he found a coffee bean supplier. He now buys the green beans from a Geelong supplier who imports them from all around the world, direct from the farmers. The supplier is involved with Coffee Snobs Fair Crack Fund which donates money back to help the farming communities with various projects.

Making coffee from raw beans is quite a process. Roasting requires a fine balance between time of roasting and temperature, and it is here that Joe’s talent comes to the fore. Joe is always in search of making it better and getting that “sweet spot”

which makes the coffee just right. This is a family business – Joe’s wife, Sarah, rings for orders on Monday and Joe does the roasting on Tuesday morning in a back room of their house. On Tuesday afternoons he delivers the freshly roasted coffee to places like Bannockburn, Moriac, Forest, Colac, Gellibrand, Deans Marsh and Geelong.

Why roast every week? Apparently, coffee is at its best when used within three to four weeks of roasting, after which it starts losing flavour. Grinding also makes a difference. I buy the whole roasted beans from Joe and grind them in an electric blender at home just before making my coffee in a plunger. However, I’m always left with some sediment in the bottom of my cup and Joe says that it is because the blender doesn’t grind the coffee evenly enough. He has a machine to do that just right, and it only takes a few minutes.

It is not only the roasting that is important to making a good cup of coffee, you also need to set the grinder and get the “milk texturing” just right. In fact, prior to our interview, Joe poured my first cup of coffee down the sink, because something was not quite right (I probably wouldn’t have noticed, but Joe is obviously a perfectionist). Every night the coffee machine must be cleaned because this also makes a difference to the taste.

The type of milk that is used is crucial and Joe has blind tasted different milks to find the one that is just right. I’m happy to say that his choice is an Australian made and owned milk brand. The “stretch” and “texture” of the milk is important as is the amount of air that is added to make the foam that adds to the sweetness of the milk. Who would have thought making a cup of coffee could be so complicated? Joe has even trialled different soy milks and found the one that works best (which is important to me, since I had to give up cow’s milk recently).

Coffee is big business. In Europe a barista course requires a four-year apprenticeship. And there are barista championships! Last year the world championship was held in Melbourne and there are also state championships in Australia. Joe makes a point of attending these whenever he can. As Joe says, he loves coffee – and it shows!

He will even grind the beans for you and you can also get decaf. So, do yourself a favour and try one of Joe’s expertly crafted coffees. If you like coffee as much as I do, you will not regret it.

The Star AGM was held last Thursday at the HUB and the only change on the committee was the addition of Don Smith replacing Debbie Rowley.

Debbie has been on the Star committee for many years, and we thank her for her valued contribution.

A new constitution was adopted at the meeting in order to comply with the new Incorporated Bodies legislation which came into law November last year. This document runs to only 5 pages and is in simple English.

Following the AGM, the committee of 9 elected the following officers:

Presidents Report to Winchelsea Star AGMAfter nearly 20 years away from the committee I found the biggest change was the technology used which had changed completely from 1995.

A very high print quality is achieved and the technology is accessible to all people who have access to a computer.

Tony started the ball rolling by presenting a technology paper at the first committee meeting and setting up a website. Stu came on board during the year and used his graphic design skills to improve the

layout. These two dragged the rest of the committee into the new world of electronic communication by internet and email.

Neil has been responsible for advertising, Mick and Cathy handle finance, Lesley and Linda produce some copy each week and Debbie is in charge of distribution.

The weekly distribution is done by Don, John, Jean and Hayden who are not on the committee. This team produces the paper, distributes it to shops and subscribers and pays the bills. They do not write all the articles, the articles have to come from the community. With over 350 copies sold in the district each week, I think we have 350 potential contributors to the Star.

The highlight of the year for me was attending the CNAV conference at Frankston in October. It was good to meet a lot of like minded people who are involved with producing community papers all over Victoria. There were a large number of titles on display being produced fortnightly, monthly and some quarterly but very few are printed weekly. To win three awards as judged by our peers was a pleasant surprise.

It is with pleasure I report that the Star is financially healthy and has a good layout and appearance. It does however always need copy and content supplied by the community to make it an interesting read each week.

The workshops will inform a Long Vehicle Strategic Plan that Council is developing to ensure we can cater for long vehicle visitation in a way that benefits our community.

A workshop will be held on Friday 28 March for Winchelsea and Deans Marsh from 1pm-1:45pm for business groups

and 1:45pm-2:30pm for the general public at Winchelsea Community House.

Dear Editor Just to thank you for the great coverage you gave to our ‘Old Boat People Reunion’ in your excellent newspaper. I noted that you ran it for three weeks in succession (yes, I purchased copies of the Star as I traveled through Winchelsea 4 times in 4 weeks!) The paper is a credit to you and all involved.

I had 3 responses in the first week. Unfortunately none were actually from relations but people who had dealings with the family, and were of interest to me.

I have contacted some relations in the area and have a total 70 acceptances so far, so we are assured of a good gathering.

Dear Editor In reply to Mick O’Mara’s article last week ‘ One Year On’. I would like to clear up any misconception that the previous committee left the Star almost insolvent. At our AGM in Dec 2012 our Treasurers Report: stated a closing Bank Balance as of the 13th Dec of $1,329.99. Due to our sending invoices out late we took into account monies still owing that would be paid in Jan 2013, a further $6,367.00 was paid into the Star account by 17th Jan 2013 and further outstanding monies were received by the new treasurer. When this money was received it was made quite clear that $3000.00 owing to

the hospital was to be paid, as we would have done if ,as we requested of the new committee that we brought all finances up to date before handing over,I was assured by Mick that he would pay the hospital A.S.A.P. in all the Star was still left with a healthy balance. I have received an email from Mick O’Mara regretting that the purpose and intentions of his article wasn’t clear to me, but his purpose was to bring attention to the Stars upcoming AGM and to highlight the fact that Peter Burkett was willing to forgo the amount owing if it caused hardship to the Star. Peter and I had various conversations regarding amount owing and he was assured that the amount would be paid by Jan 2013, he was fine with this. From the amount of phone calls I have received regarding this article it appears that I am not the only one that it wasn’t clear to. Hoping that this letter has shed some light on these matters and that our Treasures AGM Report of 2012 is available to anyone that requests it.

Much loved in the folk/blues/roots Australian music scene, Tiffany Eckhardt and Dave Steel, who live on the edge of Winchelsea, will be playing up a storm at a cabaret night at the Carlisle River Hall on Saturday 5th April.The night will feature songs from Tiff and Dave’s new album “Big Big Sky”, which they have just finished recording. “They are songs about life’s journey, sometimes soulful and sentimental, sometimes a toe tapping romp,” says Tiffany. CDs can be bought or ordered on the night.

The husband and wife duo are known for charming audiences around Australia with their stories and songs. Tiffany, songwriter and performer, has become a firm favourite at festivals around the country. Dave has been writing songs and making albums for the past 20 years. He has a reputation for being one of our finest musicians and has been an instrumentalist for many of Australia’s best-known artists including Weddings Parties Anything, Archie Roach, Kasey Chambers and Kavisha Mazzella.

The cabaret has been organized by the Carlisle River Community Group to mark

VicRoads has prepared Amendments C91 to the Surf Coast Shire Planning Scheme and C80 to the Colac Otway Shire Planning Scheme. The amendments apply to land required for the proposed duplication of the Princes Highway between Deans Marsh Road, Winchelsea and Corangamite Street, Colac.

Hello everyone, the cooler weather is very nice and proves that the summer is finally over. I love the autumn for the beautiful sunny days and the cooler nights. I for one need at least 8 hours of rest or I simply cannot get anything done.

Filling 500g packaged Cream Cheese 1/2 cup Sugar 2 Eggs 1 1/2 teaspoons Vanilla 2 teaspoons grated Lemon Rind 1 1/2 Tablespoons Lemon Juice 1 Tablespoon Gelatine 1/2 cup Water 1 cup Sour Cream 2 Tablespoons Brandy 1/2 cup Cream 30g slivered Almonds 30g Dark Chocolate

Sponge Layer Beat egg white until stiff, gradually add the sugar, beating well after each addition. Beat in the egg yolk.

Lightly fold in sifted dry ingredients. Add combined water and butter, mix thoroughly. Pour the mixture into a greased 20cm sandwich tin. Bake in a moderate oven 180c for 12 to 15 minutes. Turn out on to a cake rack and allow to cool.

When cold, place into a springform tin which has been lightly greased around the sides and has the base lined with greaseproof paper.

Filling Beat the cheese until smooth. Beat the eggs and sugar until light and fluffy, beat into the softened cheese. Stir in the sour cream, lemon juice and rind, vanilla and the brandy.

Sprinkle the gelatine over the water and when softened dissolve in hot water. Add to the cheese mixture and mix in well. Pour on top of the sponge layer and refrigerate overnight.

Before serving, spread the top of the cheesecake with whipped cream, sprinkle over the toasted almonds and drizzle with the melted chocolate.

If you are one of those who tell me they would come “if only church wasn’t so early”, then this is the week for you! Being the fifth week of the month, we will be having our combined Anglican parish service at 11am at St Thomas’ followed by a bring and share luncheon.

We will also have a visiting preacher the Rev’d John Minotti who was, until his retirement last year, the vicar of St Peter’s in Ocean Grove along with “All Saints” in Barwon Heads. After the luncheon we have a special combined parish vestry meeting when we will be beginning a process of consultations exploring the possibility of joining our vestries across the parish. We look forward to welcoming the congregations from Deans Marsh and Barrabool Hills.

Monday the 31st of March Mainly Music at 10pm as usual.

April 16th - Fun with the children. On Sunday at our family service there were kids and families everywhere as together we explored what it meant to be disciples of Jesus. Disciples were students who, unlike the students in Australian schools, physically followed a teacher around. These roaming teachers were also called Rabbi’s and their disciples shared life with their teacher while he taught them by his words and his actions how they should live. In our reading from Matthew 4, we read about Jesus’ call to his disciples to follow him and we saw their eager and willing responses. We also discovered that he called people in family groups since his disciples included some brothers. The congregation and children participated in a narrated mime as they dressed up and acted out the gospel. We even had a boat, fish, nets and fishing rods. In the reading, just after Jesus called the disciples he took them out to learn from him as he taught the people and healed and cared for the sick.

Sometimes I think we forget that Jesus call to us all was to be disciples and the word “Christian” wasn’t invented till many years later. I wonder what the church would be like if first and foremost we thought of ourselves as students and followers of Jesus and we lived this out? Our next family service will be on April the 27th at 9am. .

In one attempt to live out Jesus principle of caring, Sunday was also our Harvest Festival service and people brought imperishable goods to donate to the Uniting Care emergency food relief program in Winchelsea.

Matthew 4: 23 (NIV) Jesus went throughout Galilee, teaching in their synagogues, proclaiming the good news of the kingdom, and healing every disease and sickness among the people.

The Ballarat Goldfields By Lucas Brown - Grade 3/4 In 1885 at the Ballarat goldfields one stormy day I was mining for gold. It was really tough the mine flooded by the end of the day. The water was up to my waist it was really cold because I was saturated but I had to stay because if I left someone would steal my gold and my mine and that would be bad. If I didn’t have my mine I wouldn’t get a fortune and if I don’t get a fortune I wouldn’t get enough money to buy a really big house and lots of food to last a long time.

In the end I ended up being one of the richest people in Ballarat and after we left the goldfields I bought a big mansion and I had enough food to last a season.

But one day when I was going down the stairs I fell and broke my leg so I had to rent a maid five months until my leg got better.

My Day At The Movies By Jordi Forbes-Ackers - Grade 5/6 On the holidays Georgia and I went riding together. Georgia said that she was going to the movies and wanted me to come, so we went to her house and asked if I could come. We

pleaded and pleaded eventually Kate said “Yes”. That was great news for us! We went back to my house to get money to get in. We got some money and went back to her house.

We got in the car and drove off. Just when we crossed the bridge just out of Winchelsea, Blake said to Kate “Mum, I haven’t had brekky yet!” So Kate said “Well you should’ve had it before we left!” “Can you turn around” he answered “No!” she argued “Please” he argued back “Argh, fine”. So we drove back to Georgia’ house and Blake got his brekky.

By the time we got to the movies it was about 4 o’clock. We got our tickets and food and went in. We sat right at the back. The movie was great. It was called ‘Frozen’. Georgia had already seen it but she said it didn’t matter. We finished the popcorn, the coke and the skittles.

We went out of the theatre and went to the toilet. We came out and went grocery shopping. We eventually came home at about 6.30pm. I stayed at Georgia’s house that night, it was really fun!

Inspired Award Winner at Morning Melodies.Deans Marsh based Cellis, Louise Brown is the special guest solo performer at next week’s Morning Melodies at the Tea Rooms. Only recently was she recognised by the Surf Coast Shire with a Shire Outstanding Achievement Award for excellence in “Inspiring Change Through Music and Culture”.

Born in Melbourne into a musical family of 11, Louise has trained as a classical cellist since the age of 9 yrs. From there, she became the lead cellist in her college orchestra: was elected music captain/conductor for 200-voice girl’s choir and also joined the ‘Victorian Youth Symphony Orchestra’ before leaving school to study fine-art painting at RMIT.

Having moved to Bambra with her husband and three children in 2000, Louise teaches music, cello & singing and performs regularly with modern/classical

band Jarvis Brown, and having recorded many of her distinctive arrangements of well known music. She has developed in her time in the local area, putting together, and directing a Community Choir/Orchestra ‘Orchestral Manoeuvres in the Marsh’ which involves more than 150 people performing as ‘one voice’ at the Deans Marsh Festival, and other local events.

Although Louise has a passion for the classical repertoire, her love of music spreads across all musical genres. She has learned to re-invent classics in a style uniquely her own, and find from popular songs, and songs from other cultures a way for the Cello to speak in a new and refreshing way, using the unique mellow qualities of her chosen instrument in an unexpected yet meaningful expression.

This cello performance is a rare insight into Louise as a ‘Soloist’ where, with local pianist John Bumford, she will cover classical pieces from Bach (“Arioso”)

& Schubert’s “Ave Maria” to her more contemporary favourite songs. Louise’s rendition of Saint-Saens’ “The Swan,” a definitive Cello show piece is beautifully crafted as an audience favourite. Material chosen from Italian, and Japanese sources will demonstrate the depth of her inventiveness. Popular songs “My Way”, and “Windmills of Your Mind” will stand out with the treatment Louise adds to these songs so well known. A lovely special treat is the transcription she has made of one of accompanist John Bumford’s own songs written late last year, “You Visit the Earth” - a real one off.

Friday the 21st of March was our final evening of Social Bowls. Thank you to those members of the community who have attended regularly making the evening competitive for all.

Sunday the 23rd March, Knuckey’s sponsored their usual Tournament “The Davey Bath Classic” in cool but fairly good conditions for bowling. As always a chocolate frog for a toucher and laughter ringing out across the green. There were 36 players and 3 games of 8 ends of two bowl triples were played and enjoyed by all present.

The winners of the Classic were Alison Parish (skip), Mike Devey and Mick Drayton. Runners Up were David Stephenson (skip), Paul Sorensen and Max Bushell. A great event was complemented with a scrumptious afternoon tea.

The Mighty Winchelsea Blues, Footballers, Netballers, Supporters and Sponsors are all geared up for a thrilling year ahead and will kick the off the season with a night match under Stadium Lights at Eastern Reserve on Friday 4th April. Action starts at 6.00pm

The Mighty Blues will play host to strong Bannockburn teams with nail biting season openers, in what promises to be an exciting evening with all teams “biting at the bit” to get out on the field and court.

To start the 2014 year off with a night to remember, the club has gone all out to cater for everyone’s needs including a junior dance party to keep youngsters entertained.

To cope with the large crowd expected, a range of catering options will be available, the Blues Canteen will be in full swing, the Winchelsea Community Bank BBQ will be serving hamburgers and sausages thanks to the Winchelsea Community Bank Staff who are generously giving their time to support the club, Winchelsea Community Bank – bigger than a bank!

Winchelsea Under 18’S Back In Business ! !

The Under 18’s traveled to Birregurra last Sat. to hit out in what would be their 1st game in the last 3 seasons. The Team acquitted themselves as well as could be expected against a very smart Birre side up until 1/2 time, when game plans went out the window, & the group seemed to become overwhelmed. The 3/4 break address by Coach Paul Benson hit the spot, with Winchelsea Blues outscoring the opposition in the last quarter, finishing the game on a high note! Great job boys ! !

The Blues welcome back several players into the Under 18 side, & the players are grateful for the Under 16 players who filled in the gaps on Sat.

Training : make it a priority : players must let coaches aware if unable to get to training .

Training nights now Tues & Thurs. We look forward to seeing as many as possible at the Thursday night dinners after training , starting this Thursday 27th - from 6pm The Blues Bistro is also back in business!

Representatives of the Anglesea Winchelsea Bendigo Community Bank, recently met with memers of the Moriac-Winchelsea Kyokushin Karate Dojo, to present the club with a cheque to sponsor club tops.

Community Bank Manager, Rosemary Gillett and staff, Chloe and Tillie are pictured here with Instructor Brad Hamblin and members of the Dojo, wearing the tops made possible by the $400 donation from the Bank.

Hamblin said that without the generosity of the Bank, many club members would not be able to afford the tops in addition to training and tournament fees, especially those families with multiple members.

The club now looks forward to attending tournaments and other activities, wearing their distinctive Club uniform and representing the region with pride.

Moriac-Winchelsea Karate Dojo operate out of the Newling Reserve Community Hall on Mondays and the Winchelsea Primary gymnasium Thursdays and welcome new members.
