Here we have two decanters - one peated, one unpeated - that are constantly morphing and changing as we add different whiskies to them. We will add blends, grains & malt from all sides of the world, ranging from 3 to 30 years old, matured in numerous casks including virgin, bourbon, rum, wine, fortified - you name it!

No one knows the exact identity of the first Scotsman to distil spirits, nor are they sure when or where the first malt whisky was made, but one fact of

which we can be certain is that whisky is endemic in Scottish culture.

As with all great enterprise mass whisky production was born out of economic necessity, Highland farmers burdened with a surplus of grain discovered that through fermentation and distillation a supplementary source of income could be made. Barley was most commonly used, although wheat and oats

were also turned into whisky.

The leap toward a global industry started with the invention of the Coffey still in 1827. For many early imbibers malt whisky was an acquired taste but this new still produced a much lighter, less robust and therefore a more widely appealing whisky than its predecessor and at a far greater volume to boot. Abrogation of laws restricting the use of continuous still whisky in the 1860s paved the way for blended whiskies to consumers’ great delight. In the 1870s a rampant strain of phylloxera devastated Cognac production. Naturally, a suitable replacement was needed. Scotch whisky was suddenly

lauded as the drink du jour.

ARDBEG UIGEADAIL 54% $18.00 Bottled at cask strength, this whisky is a marriage of ex-American bourbon barrels and sherry butts, giving a sweet and smoky finish to this malt. Some consider this to be the core of the range. ARDBEG GROOVES 46% $20.00 Ardbeg Grooves was a special release to celebrate Ardbeg Day on June 2nd, 2018 (the Distilleries Open Day during the Islay festival). Part Maturation in extremely charred ex- red wine cask. Heavy iodine spice with unusual herbaceous notes paired with stone fruits. Sea salt with a touch of leather allow for a balanced bonfire smoke finish. ARDBEG CORRYVRECKAN 57.1% $22.00 Taking its name from the famous whirlpool that lies to the north of Islay, where only the bravest souls dare to venture. This whisky starts with chocolate and blackberries on the palate, with hickory and star anise before the finish. BOWMORE 12 YEAR OLD 40% $14.00 Remarkably long and complex, finishing with hints of vanilla ice cream. BOWMORE 18 YEAR OLD 43% $22.00 The official replacement for Bowmore seventeen year old, this whisky has become a fan favourite from the Bowmore portfolio. It is a fresh dram, with notes of salty kippers and coal smoke. BOWMORE VAULT 57.5% $23.00 Matured in their No. 1 Vault maturation warehouse, this dram contains hints of sun-ripened fruit, spiced cocoa and blood orange. BRUICHLADDICH BERE BARLEY 50% $17.00 A 2009 vintage single malt from Bruichladdich, made with 100% organically grown Scottish barley. In fact, the whole process of making this whisky, from barley to bottle, has been organically certified by the Biodynamic Association! Vanilla cream and lemon zest is followed by a refreshing and clean finish.

A region renowned for its heavily peated style of whisky, such as Octomore and Lagavulin, it is understandable why one would assume that the island’s titular whisky is predominantly peat-centric. One of five whisky distilling localities in Scotland whose identity is protected by law, there are eight active distilleries on the island offering several contrasting styles of Scotch.

This is an island steeped in tradition, with a whisky to suit all palates.

BRUICHLADDICH OCTOMORE 8.1 59.3% $27.00 The first expression of Octomore released by the new head distiller Adam Hannet. Aged for 8 years exclusively in first fill American oak casks with 42,000 bottles exclusively, peated to a level of 168 PPM. Well-rounded peat smoke with toffee and chocolate, winding into a deep balance of a vanilla and creamy finish. BRUICHLADDICH OCTOMORE 8.4 58.7% $34.00 The last release in the Masterclass series, it was created to examine the effect of virgin oak on this intensely peated spirit. The barley was peated to 170 PPM, with only 12,000 bottles released worldwide. Heavy oak is married with sweet honey malt and toffee. Unrelenting peat becomes submissive with coconut and cooked apples. BRUICHLADDICH OCTOMORE 8.3 61.2% $35.00 With casks aged 0.1 miles away from the sea, there is a salty influence on the whisky with 309PPM. Aged for 5 years in 56% American Oak barrels and lives in European, Ex-Paulliac, Ventoux, Rhone and Burgundy casks for the remainder. Aggressive vanilla and peat go hand-in-hand here, plenty of chocolate jumping the gun over a sharp spice, finishing beautifully with tobacco and coffee.

BUNNAHABHAIN 25 YEAR OLD 46.3% $50.00 Aged in refilled sherry casks, you’ll detect notes of figs and raisins on the nose, with a slight hint of chocolate and espresso. CAOL ILA DISTILLERS EDITION 43% $20.00 This distiller’s edition from Caol Ila is finished off in sweet muscatel wine casks for an extra depth of sweetness. It hits the nose with the smell of crisp smoky bonfires, then provides complexity on the palate with bold notes of cinnamon spice. CAOL ILA 18 YEAR OLD UNPEATED 59.8% $21.00 Although Caol Ila is renowned for its peat smoke – there’s so much more to this single malt than merely its ember qualities. Once a year the distillery swaps out its peated regimen for unpeated production runs, and the fruits of that labour shine through. A creamy and fruity expression coupled with sea salt and caramel, finishing with what could be discerned as smoke.

KILCHOMAN RED WINE CASK 50% $22.00Distilled in 2012 and bottled in 2017, this expression of Kilchoman has spent its entire life in a single cask. The cask from the Douro valley in Portugal were personally selected by Kilchoman founder Anthony Wills. This maturation adds depth of cooked fruits to the classic citrus sweetness & peat smoke of Kilchoman, with just under 7,000 bottles available worldwide.

KILCHOMAN PORT CASK 50% $23.00The 2nd release of the single matured Port cask from Kilchoman. Fully matured in Port casks and bottled at 50% ABV, resulting in a full bodied flavour profile with 10,000 bottles released worldwide. KILCHOMAN SINGLE SHERRY CASK 57.2% $25.00An exclusive to the Australian market, this whisky is an explosion of fruit and smoke bottled at cask strength. An amazing gesture from this farm yard distillery.

LAGAVULIN 8 YEAR OLD 48% $16.00Released in celebration of their 200th anniversary, this whisky packs a powerful smoky punch. A complete palate hit, with notes of sweet spice that come forward with a touch of water. LAGAVULIN 12 YEAR OLD CASK STRENGTH 56.5% $22.00 Lagavulin has become a Special Releases stalwart – and for good reason. The classic Islay distillery is beloved by peat fans (and everyone’s favourite Parks Director, Ron Swanson). This year’s 12 year old candidate brings together the characteristic island smoke with the sweetness of American hogsheads, all wrapped up in a natural cask strength bottling. It’s meaty and robust – Ron would certainly approve. Full flavoured, long and dry with plenty of Tobacco. LAGAVULIN DISTILLERS EDITION 43% $24.00 A bold malt, rich in complexity. This dram was distilled in 1998 and bottled in 2014 following a finishing period in Pedro Ximenez casks. LAPHROAIG QUARTER CASK 48% $17.00 A vibrant young whisky, aged in quarter casks to speed up the maturation process. This dram teases the palate with traces of soft sweetness and finishes with bold peat, complimented by a velvety feel throughout.

LAPHROAIG 27 YEAR OLD 41.7% $120.00 This limited edition older Laphroaig release sees the liquid take on a bit more complex fruit and leather whilst still paying homage to those classics characteristics we love - smoke and the seaside.

In 1843, William Matheson founded the Glenmorangie Distillery in the Scottish Highlands. Inspired by the Distillery’s peaceful surroundings on the banks of the Dornoch Firth, he brought forth a pioneering single malt whisky wonderfully complex and exceptionally smooth. DALMORE CIGAR MALT 44% $22.00A whisky made to be enjoyed with cigars. Flavours of caramel, shortbread, coffee and chocolate will put a moreish dram in one hand, and a hefty cigar in the other.

DALWHINNIE 15 YEAR OLD 43% $14.00A great introduction to the single malt world, elegant and smooth with a light fruity palate. Fantastic with chocolate.

DALWHINNIE DISTILLERS EDITION 43% $19.00Finished in Oloroso sherry casks, giving this edition rich caramel notes, Manuka honey, sweet vanilla and nutmeg.

GLENDRONACH 12 YEAR OLD 43% $14.00A superbly richly sherried single malt matured for at least 12 years in a combination of the finest Spanish Pedro Ximenez and Oloroso sherry casks. A sweet, creamy dram perfect suited for after dinner sipping.

GLENDRONACH 21 YEAR OLD 48% $30.00A 21 year old Glendronach released in 2011, and aged in a mix of sherry casks (Oloroso and sweet Pedro Ximenez dessert sherry). Soft smoke, with heaps of fruit and Sherry notes. A Sherry sweet finish end this delicious dram.

The results speak for themselves. Hints of soft spice and citrus. Creamy and caramel on the finish with more citrus. GLENMORANGIE QUINTA RUBAN 12 YEAR OLD 46% $16.00 To craft this single malt specially selected port pipes from the Douro valley in Portugal are used in the distillation process. On the nose there are notes of berry fruits with a bold and rich finish of chewy port. Delightful. HIGHLAND PARK DARK ORIGINS 46.8% $22.00This welcome addition to the core range uses twice as many first fill sherry casks than the classic Highland Park twelve year old, resulting in a darker, richer flavour. INCHMURRIN 12 YEAR OLD UNPEATED 46% $14.00 Inchmurrin 12 Year old from Loch Lomond distillery, re-branded in 2015 as part of the Inchmurrin ‘Islands collection’. Aged in re-fill bourbon and re-charred American Oak. Refreshing and light with caramel sweetness, and plenty of orchard fruits and a spiced smoke INCHMURRIN 18 YEAR OLD 46% $23.00 Given all new packaging in 2015, Inchmurrin is a single malt from Loch Lomond distillery named after the largest fresh water island in The British Isles. Aged in re-fill bourbon and re-charred American Oak, this dram is zesty and spicy with plenty of tropical fruit. OBAN 14 YEAR OLD 43% $16.00A superb, full-blooded fruity malt with a whiff of heather and more than a hint of smoke.

OBAN DISTILLERS EDITION 43% $20.00This distiller’s edition has been given a finishing period in Montilla Fino casks for an interesting depth of flavour. A deeply intriguing expression of dry fruitiness. OLD PULTENEY 12 YEAR OLD 40% $14.00A very popular Highland dram, with a big sherry presence alongside sweet citrus, fruit notes and a faint whiff of brine. Picked up the top prize in its category at the World Whisky Awards 2010.

OLD PULTENEY 21 YEAR OLD 46% $40.00Full of vitality, charisma and class, this dram ran away with awards from all over the globe. Rich aromas of spicy apple and peach fill this robustly flavourful, velvet brick of a whisky.

ROYAL LOCHNAGAR 12 YEAR OLD 40% $16.00A light dram with notes of toffee, brown sugar and lingering sandalwood.

ROYAL BRACKLA 12 YEAR OLD 40% $20.00Finished in first fill Oloroso casks, this dram is spicy with hints of vanilla and black pepper.

TALISKER PORT RUIGHE 45.8% $16.00Finished in port casks after initial maturation in deeply charred American and European oak refill casks. On the nose there is faint orange whilst sweet chocolate and slight smoke dances on the palate. TALISKER DISTILLERS EDITION 45.8% $22.00After the initial maturation this malt is given a finishing period in Amoroso sherry casks. This process contributes some rich, juicy sherried notes to a traditionally smoky island dram.

TALISKER 18 YEAR OLD 45.8% $25.00A must have for any Talisker fan. A house favourite and the winner of “Best Whisky in the World” at the 2007 World Whiskies Awards. The palate is thick, rich and full-bodied. TOBERMORY LEDAIG 10 YEAR OLD 46.3% $14.00A gold medal winner at the 2008 International Wine and Spirits Awards. It is light and well balanced on the nose, transitioning into a medium bodied palate with rich smoke and hints of black pepper, charred oak and spice.

TOBERMORY LEDAIG 18 YEAR OLD 46.3% $40.00Ahh, Ledaig! A cracking single malt that proves Islay isn’t the only place to get your hands on a splendidly peated whisky. Smoky herbs, cracked black pepper and waves of sherry. Excellent stuff.

The Portwood is non-chilled filtered, displaying bold notes of fruit, raisin, honey and spice. THE BALVENIE LIMITED RELEASE TRIPLE CASK 25 YEARS 40% $42.00 A marriage of liquid that has been matured in three different casks in order to achieve a uniquely complex and deep yet, light and refreshing whisky. It proved very popular when it started out life as a ‘travel retail’ exclusive which saw it make its way to the permanent range and then our shelves. BENRIACH 10 YEAR OLD 40% $15.00This was a milestone in the Benriach distillery as this expression was the first core bottling created under Billy Walker. Matured in both ex-bourbon and ex-Sherry casks. Citrus forward sweetened with brown sugar and a peppery malt finish.

CARDHU 12 YEAR OLD 40% $14.00Sweet and rich, with apple peel and bruised pear on the nose. The palate is smooth and rounded with a gentle touch of soft peat.

CARDHU 18 YEAR OLD 40% $21.00A rich and complex Cardhu. Soft and approachable whilst staying true to the classic style of the distillery this dram has rich fruits on the nose with a leather and chocolate finish.

Being one of the smallest of the big-five whisky producing regions, it once boasted over thirty distilleries, however due to economic depression and prohibition only three remain. The common style is rich and heavy.

CAMPBELTOWN

GLEN SCOTIA 15 YEAR OLD 46% $25.00 This is the 15 year old single malt scotch whisky from Glen Scotia in the Campbeltown region, released in 2015 as part of a redesign range. The distillers use specifically selected American oak casks to age this expression, which complement the fruit-forward and subtly coastal whisky smell.

SPRINGBANK 10 YEAR OLD 46% $15.00 This dram picked up top prize in its category at the ‘World Whisky Awards 2014’. Blended from a mixture of bourbon and sherry casks, this malt has notes of citrus fruits to pears and peat with touches of nutmeg, smoke and cinnamon.

KILKERRAN 8 YEAR OLD CASK STRENGTH 56.2% $18.00 This expression comes from Glengyle Distillery in Campbeltown. A lightly peated, 8 year old at cask strength means one thing - absolutely great value for money from what was once the centre of whisky production in Scotland.

Much like Campbeltown, Lowlands never quite recovered from prohibition and currently has only three remaining distilleries from the ‘Golden Years’ of the nineteenth and early twentieth century. Recently, however, there have been plans to introduce new distilleries to the region.

Bourbon is a barrel-aged spirit that must be made primarily from corn, to which other grains must be added, most commonly rye. Then it must be aged in a new charred American oak cask for a minimum of 2 years. Although Bourbon can be made anywhere in the United States, it is

predominantly associated with Kentucky.

GEORGE T. STAGG 71.5% $150.00An extremely hearty whiskey, which is aged in new charred oak barrels for no less than fifteen years. Straight out of the barrel, uncut and unfiltered, the taste is powerful, flavourful and intense.

Where Rye differs from Bourbon is significant to its history. It’s not a history soaked in blood, like moonshine, or rooted in the American slave trade, like Jack Daniels. It’s more a history of a spirit that went from a near monopoly to little more than an alcoholic footnote to driving the cocktail revival over the past decade. The history of Rye is a story of how quickly you can rise to fame and fortune, and how fast you can lose it.

KNOB CREEK RYE 50% $14.00This whiskey is a wonderful balance between your classic, spicy rye whiskies and your sweeter, vanilla-fueled high-rye-content bourbons. Rich caramel and vanilla, with a lovely rye spiciness.

MICHTER’S US*1 STRAIGHT RYE 42.4% $15.00A straight rye whiskey from the Michter’s Distillery in Louisville, Kentucky. Every bottle of their excellent rye comes from a single barrel, highlighting the quality of their craft.

TENNESSEE WHISKEY

Initially Tennessee Whiskey and Bourbon are made in the exact same way. They both are distilled from at least 51% corn, and go into charred new oak barrels to age. Where the spirits differ drastically however is in regards to what happens just before the freshly distilled clear spirit goes into the barrel. In Tennessee, it gets charcoal filtered. Known as the Lincoln County Process, fresh whiskey is filtered through charcoal chips before barrelling. This process strips the harsh flavour-ing and creates a smoother, easy drinking spirit.

LOST SPIRITS ‘ABOMINATION’ SAYERS OF THE LAW 54% $17.00A big, bold, peppery and peaty spirit (think peat monster) with rounded fruit notes to boot. Made in California, this is aged in bourbon barrels for up to 18 months and then subjected to further aging in heavily charred, Riesling-seasoned oak barrels. This is placed into a reactor which breaks down wood polymers and fuses them to the spirit. This simulates the effect of decades of ageing in just a few days. A magical fuse of peaty whisky and technology.

WESTLAND AMERICAN SINGLE MALT 46% $18.00Based out of Seattle, these guys are utilising what is naturally available around them to create some American single malts that could stand up to some of the world’s greatest!

REDBREAST 12 YEAR OLD CASK STRENGTH 58.2% $21.00Redbreast 12 year cask strength is a ‘big brother’ to the 12 year, it still retains the pronounced influence from the sherry cask but less obvious than the standard 12 year. A rich mouthful with lasting spices and fruits fading to cream and butterscotch.

REDBREAST 15 YEAR OLD 46% $27.00An outstanding single pot still whiskey, which brings a richer, earthier and stronger flavour than its 12-year-old younger sibling.

REDBREAST 21 YEAR OLD 46% $50.00The oldest expression of Redbreast so far, this is a combination of malted and unmalted barley matured in a mixture of bourbon and first-fill olorosso casks, creating a rich and complex whiskey. GREEN SPOT 40% $15.00A single pot still Irish whiskey, produced exclusively for Mitchell and Son of Dublin, by Irish distillers at the Middleton Distillery in Cork. Made from seven to eight year old whiskies, with a good proportion of sherry maturation.

SINGLE MALT

BUSHMILLS 16 YEAR OLD 40% $23.00A 16 year old Irish single malt from Bushmills aged in three different cask types: bourbon, port and sherry. The result is a beautiful whiskey that was awarded Gold at the 2010 San Francisco World Spirits Competition.

CONNEMARA ORIGINAL 40% $14.00From the Cooley distillery, this is the only peated single malt coming from Ireland. A dram for any smoke lover.

CONNEMARA TURF MOR 46% $16.00Stemming from a limited release of Ireland’s most popular peated single malt. This whiskey is a great introduction to Irish fair for the lovers of smoky flavours. Turf Mor literally translates to ‘Big Peat’ which is a nod to its higher peat content. Enjoy.

The first release in Teeling’s Brabazon bottling range, which will explore the impact that fortified wine casks have on the flavour profile of Irish whiskey. The initial bottling features whiskey drawn from 6 sherry casks, resulting in huge bundles of sherried deliciousness. TEELING 21 YEAR OLD VINTAGE 46% $40.00Teeling’s much anticipated 21 year old vintage reserve. Distilled in 1991, this was matured in ex-bourbon casks and then married in Sauternes (French, sweet dessert) casks. This is believed to be the first ever Sauternes-finished Irish whisky.

TYRCONNELL PORT CASK 46% $20.00Named after a very good racing horse, this solid single malt from Cooley distillery is matured mainly in bourbon casks and then finished in port pipes. The orchid fruits and honey are complimented superbly by the depth given by the port wine.

SLANE IRISH WHISKEY 40% $14.00An approachable blended whiskey from the Boyne Valley that focuses on triple cask maturation. The combination of bourbon, sherry and virgin oak leads to a complex yet easily enjoyable dram. TEELING SINGLE GRAIN 46% $14.00There are only a few elite Irish single grain whiskies available, but Teeling went ahead and made theirs unique by maturing it in Californian Cabernet Sauvignon barrels. Deliciously sweet with a good deal of spice and fruit hide within the Teeling single grain.

PADDY’S ORIGINAL 40% $14.00A triple distilled blended Irish Whiskey produced in Cork and made, unusually, with all three styles of Irish whiskeys: single pot still, single malt and grain. The nose is oily and fresh, with a sweet and spiced palate that lingers.

WRITER’S TEARS COPPER POT STILL 40% $14.00This is a blend of two richer styles of whiskey, a single malt and a single pot still. The results are a fruity, spiced, sweet and creamy dram of whiskey from Royal Oak Distillery in Co. Carlow.

The periodical rise of Japanese Whisky can be largely attributed to one man, Masataka Taketsuru. In 1923 Taketsuru returned to Japan from an apprenticeship at Hazelburn Distillery in Campbeltown, Scotland to help establish the Yamazaki Distillery. Eleven years later he would establish his own distillery which would become known as the Nikka Distillery. These days Japanese whisky is highly awarded, and as a result, there is an ever-

increasing demand for the reputable spirit.

HAKUSHU DISTILLERS RESERVE 43% $45.00A green and crunchy entry in the Hakushu Range, combining whiskies of a wide variety of ages, from across the range of casks used by the distillery to create a gentle smoky dram, packed with fruity flavour. HAKUSHU 18 YEAR OLD 43% $100.00Orange, pear and a dry smokiness are first from the glass, however after it has opened up, you receive a long fruity hit followed by hints of honey and subtle smoke.

ICHIRO MALT WINEWOOD RESERVE 46% $27.00A ‘Pure Malt’ whisky from the Ichiro’s Malt series, containing whisky from the now closed Hanyu distillery and matured, vatted and bottled at the Chichibu distillery. This expression was finished for a period in French wine casks. ICHIRO MALT & GRAIN 46% $19.00A ‘delicious’ blend from Japan, created by Ichiro Akuto, the Japanese whisky extraordinaire. This particular gem is made with both malt and grain whisky from Japan, along with some from around the world. “A worldwide blended whisky”.

ICHIRO MALT DOUBLE DISTILLERIES 46% $27.00From the beautiful Ichrio’s Malt range, this is a vatting of whisky from both the Hanyu and Chichibu distilleries. This whisky is matured in Japanese Mizunara oak and ex-Sherry casks, and bottled in 2010.

NIKKA MIYAGIKYO SINGLE MALT 45% $20.00An entry level whisky from Miyagikyo distillery. Light in body, yet full in flavour, this is an excellent introduction to Japanese whisky. Elegantly fruity with a hint of sherry-cask personality. Floral, tropical and malt-focused. NIKKA TAKETSURU PURE MALT 43% $14.00A NAS expression of Nikka named after the company’s founder, Masataka Taketsuru, It features plenty of whisky from the Miyagikyo distillery, as well as a percentage of malt matured in sherry casks to give it a rich, spiced nose. NIKKA PURE MALT BLACK 43% $15.00One of three Pure Malt colours, this expression falls in the middle of the light and fruity red malt, and the peated and spicy white. Nikka has done a great job integrating everything in Pure Malt Black.

NIKKA COFFEY MALT 45% $20.00This expression is produced from 100% malt, though not technically a single malt due to its distillation in Coffey stills. Scheduled as a European exclusive, we’re very fortunate to have received this creamy and biscuit whisky.

The early 1990’s saw the kick-start of the modern Australian whisky industry, Bill Lark, the ‘Grandfather’ of Aussie Whisky successfully lobbied for the removal of the law in the Licensing Act of 1901, which limited still sizes to a minimum of 2,700 litres. This allowed craft distillers such as Lark to focus on quality small batches of distillate and set out on a

path that would soon lead to world recognition for their efforts.

HELLYERS ROAD PEATED 46.2% $16.00A fine example of a smoky dram of whisky from Tasmania. Made using Tasmanian barley and matured in bourbon barrels, you get plenty of fruit, honey and peat.

STARWARD TWO FOLD 40% $14.00The most accessible, uniquely Australian whisky currently available. A blend of two grains - malt and wheat, which is then matured in Starward’s signature red wine barrels. A true milestone.

STARWARD WINE CASK 41% $16.00Aged in Barossa ex-Shiraz casks for only a few years, this quest for new flavour has yielded this terrific dram. A dance of cherries lead to chocolate and fruits. The odd bit of pepper and tannin evolve as the whisky travels. An incredibly warming mouth feel lingers.

STARWARD SOLERA CASK 43% $20.00A great release from the distillery located at Port Melbourne. Aged completely in Australian Apera casks, aromas of bananas and tropical fruit jump out of the glass, with a light body and a finish of toffee and malt.

TIMBOON PORT CASK 40% $30.00This whisky is produced not too far inland from the famous 12 Apostles in Victoria. This is a small-scale distillery whose focus is on whisky loaded with quality. The port cask expression offers plenty of red juicy fruits and some vanilla.

BEN NEVIS 12 YEAR OLD ‘HIGHPROOF’ 55.4% $25.00 An unusual expression of Ben Nevis bottled by the good folks at Hidden Spirits. Here we have a heavily peated whisky which has been matured in sherry casks. An amazing balance of sweet sherry spice and rich savoury smoke. The higher proof definitely helps with carrying the flavour.

BLAIR ATHOL 23 YEAR OLD 58.4% $80.00 A superlative example of Blair Athol, one of the highland’s most under-appreciated distilleries. Characterised by Blair Athol’s signature nutty, spicy character, this cask-strength single malt is full of candied peel, baked apples, chocolate and fruit-cake. This limited edition 23-year-old whisky has been aged in ex-sherry European oak casks, resulting in a rich, full-bodied dram in quintessential Blair Athol. 5514 bottles released. CADENHEAD’S SMALL BATCH MORTLACH 20 YEAR OLD 53.4% $38.00This release from Cadenhead bottlers see a prime example of what Mortlach is all about. A rich oily whisky with nots of honey and fruit. COLLECTIVUM XXVIII 57.3% $30.00 An ambitious blending exercise utilising whiskies from Diageo’s 28 operating distilleries. The blend contains; Auchroisk, Benrinnes, Blair Athol, Caol Ila, Cardhu, Clynelish, Cragganmore, Dauiluaine, Dalwhinnie, Dufftown, Glendullan, Glen Elgin, Glenkinchie, Glenlossie, Glen Ord, Glen Spey, Inchgower, Knockando, Lagavulin, Linkwood, Mannochmore, Mortlach, Oban, Roseisl, Royal Lochnagar, Strathmill, Talisker and Teaninich. Non-age statement as the lowest age in the collection from Roseisle makes it a 6 year old. A waxy dram with plenty of nuts and cooked fruit.

GLEN ELGIN 18 YEAR OLD 54.8% $60.00 Part of Special Releases 2017 line-up, this unusual Glen Elgin expression turns heads due to the use of two different yeast strains. A vatting of two batches, one part of this 18 year old made use of Pombe yeast in fermentation, and the other was produced using the more conventional cerevisiae yeast. The first batch was then matured in ex-bodega casks, with the second destined for refill European oak butts. The result, a creamy whisky offering a twist on a typical Speyside character. Only 5,352 bottles have been released worldwide.

Over the years, many distilleries have sold different casks to independent buyers that have then bottled it under their name. As every cask ages differently, these bottles offer flavours that could be considered a little bit left of field than its normal distillery bottling. Often sold as single cask, and very limited, these whiskies can be little pots of gold. In this section we want to share limited release liquid that we have acquired over the years with our whisky loving drinkers. JOHNNIE WALKER BLENDER’S BATCH RUM CASK 40.8% $14.00 Part of the blender’s batch series, Johnnie Walker’s ongoing experiments with flavour compounds, this is a mix of Speyside and Lowland whiskies that have been finished in Caribbean pot-still rum barrels. Expect spicy, fruity and sweet characteristics. SIGNATORY VINTAGE 1989 BUNNAHABHAIN 26 YEAR OLD 47.7% $30.00 A Signatory bottling of 26 year old Bunnahabhain single malt, drawn from 2 hogshead casks (large bourbon barrels). This was distilled on the 23rd October 1989 and bottled on the 21st October 2016 (only 2 days before its 27th birthday). Only 429 bottles were produced. SIGNATORY VINTAGE LEDAIG 2005 10 YEAR SINGLE CASK 57.3% $20.00 A young indie bottling of this Tobermory distillery expression, presented under the Ledaig name. This was matured for 10 years in first fill Oloroso sherry butts so expect strong peat notes, pepper and plenty of thick fruits. Only 576 bottles were produced.

SIGNATORY VINTAGE JURA 1989 26 YEAR OLD 59% $30.00 This heavily peated whisky from the Jura distillery comes from a pair of Bourbon barrels that only yielded 338 bottles. Beautifully minty with generous slabs of peat and plenty of ginger.

TEANINICH 17 YEAR OLD 55.9% $70.00 Official Teaninich bottlings just don’t exist (outside of that Flora and Fauna bottling), which is a crying shame as the independent efforts are quite sublime. This one doesn’t disappoint: the 17 year old liquid is from refill American oak hogsheads and sherry butts, both filled in 1999, and the resulting candied sweet spice is a delight.

KAVALAN SHERRY OAK (TAIWAN) 46% $22.00 This is a great expression from the Taiwanese distillery containing the liquid that went in to the award-winning Soloist bottling. A fine example of traditional sherry richness paired with new world approachability.

MICHEL COUVREUR OVERAGED (FRANCE) 43% $18.00 A blended malt style whisky featuring spirit from Scotland, barrels from Spain’s sherry region and a cave to age them in Burgundy, France. Unusual in practice but definitely a whisky for those that love a deep, richer style of whisky. AMRUT FUSION (INDIA) 50% $16.00 Earned its name due to barley from Scotland and India going into the mash. This liquid was a favourite of Jim Murray in 2010. Fruity & honey with a hint a peat and dark chocolate. SHELTER POINT SINGLE MALT (CANADA) 46% $18.00 The first release from this distillery and coming in at 5 years old. Most of the barley is grown on their own land, which gives a good sense of provenance. Malty and fruity with some pepper spice to finish.

Barrel – A 200 litre American oak cask.

Blended Whisk(e)y – A mix of Grain and Malt Whisky (Scotland), or Bourbon and Rye Whiskey (America). Bourbon – Bourbon is a barrel aged spirit that must be primarily (51%) made from corn to which a small selection of other grain is added, most commonly rye. It then must be aged in a new charred oak cask for a minimum of 2 years. The word bourbon can be traced back to the 1820’s and is ultimately derived from the French Bourbon dynasty. Bourbon can be made anywhere in the United States but is synonymous with the south, particularly Kentucky.

Butt – A 500 litre ex-sherry cask used typically to mature scotch whisky.

Caramel – An additive used in many whiskies to adjust colour to make it consistent across batches, however it is not permitted to be used in bourbon. Overuse can dull the aroma of the whisky and give it a bitter finish.

Cask – A term referring to all different types of oak containers used for maturing whisky.

Chill Filtration – The process of chill filtering is where substances in the whisky are removed prior to bottling. The main reason to chill filter a whisky is actually purely cosmetic. An non chill filtered whisky that is 46% ABV or lower will go cloudy when water or ice is added, and when the whisky is cooled. This is seen as undesirable by some consumers, and the distillers react to this by removing the offending particles from the whisky so that this does not occur. Whiskies above 46% do not require chill filtration as the higher alcohol content prevents this cloudiness.

Corn Whiskey – Unlike its American whiskey cousins, no wood ageing is required at all for corn whisky, but if the product is aged, it must be in either non-charred casks or refill casks. These whiskies must be a minimum of eighty percent corn mash and a maximum strength of 160 proof.

Fino Sherry – Meaning ‘refined’ in Spanish, is the driest and palest of the traditional varietal of sherry and montilla-moriles fortified wine. They are consumed comparatively young and unlike, the sweeter varietals, should be consumed after the bottle is opened as exposure to air can cause them to lose their flavour within a few hours. The defining component of Fino sherries is the strain of yeast known as Flor that floats in a layer on top of sherry in the wine barrel. This Flor that covered the wine protected it from too much exposure to air which adds to making a lighter, cleaner product.

First Fill – When distillers refers to a barrel as being “first fill”, they mean it is the first time they have filled it with whisky. As these industries often use second hand casks it is not however the first time the cask has been filled with whisky. This can become quite confusing.

Grain Whisk(e)y – Made from a mix of a small amount of malted barley and then either corn or wheat and distilled to under 94.8% in a column still.

Hogshead – A type of cask commonly made from American oak, with a volume of 250 litres.

Malaga Wine – Malaga in the Andalucian province of Spain is famed for sun, sea and sand, however it is also one of the oldest wine making regions in Spain. Once known as ‘mountain wine’ Malaga wine is a wonderfully unique sweet wine made predominantly from white muscatel and Pedro Ximenez grapes.

Malt – Malt Irish whiskey is made using 100% malted barley and distilled in pot stills. Single malt whiskey can only come from only one distillery.

Manzanilla Sherry – Essentially the same as Fino sherry but produced and matured around Sanlucar de Barrameda, closer to the sea than Jerez, and the only place it can be made. It is made from the Palomino grape. Almost no air contact resulting in a lighter style of Fino sherry, combining dry, saline notes with beautiful zesty liveliness. Oloroso Sherry – Meaning ‘scented’ in Spanish, this is a variety of fortified wine made in Jerez and Montilla-Moriles, produced via oxidative ageing. It is normally darker than Amontillado. Oloroso is usually dark and nutty. Unlike Fino and Amontillado sherries, in Oloroso the floor yeast is suppressed at an earlier stage. This causes the finished wine to lack the fresh yeasty taste of the Fino sherries.

Pedro Ximenez Sherry – This is the name of a white Spanish wine grape varietal grown in several Spanish wine regions but most notably in the Denominacion de Origen of Montilla-Moriles. Here it is used to produce a varietal wine, an intensely sweet, dark, dessert sherry. It is made by exposing the grapes under the hot sun, concentrating the sweetness, which are then used to create a thick, black liquid with a strong taste of raisins and molasses that is fortified and aged in solera.

Phenols – The chemical term for the aromatic compounds given off when peat is burned. Measured in phenolic parts per million, (ppm) the higher the ppm the smokier the whisky.

Pot Still – Pot Still Irish whiskey is made from a mash of a minimum 30% malted and a minimum 30% unmalted barley, with up to 5% of other cereals added, and is distilled in pot stills. Single pot still whiskey can only come from one distillery.

Quarter Cask – A small cask with a volume of 45 litres.

Refill – A term used for casks that have already been filled once with scotch whisky.

Rye Whiskey – Much like bourbon, rye whiskey follows strict guidelines. By law, it must be made from a mash of at least fifty-one percent rye, distilled to no more than 160 proof and aged in charred, new oak barrels. Rye whiskey is the prevalent whiskey of the northeastern states, predominantly Pennsylvania and Maryland.

Single Barrel – A term used in USA, which states that the whisky in the bottle comes from a single barrel, however, each batch of a single barrel whisky may comprise more than one barrel.

Straight Whiskey – A term used in USA that is strictly defined by law. “Any whiskey made from a minimum of 51 percent of any one grain, distilled to 160° proof, aged at no more than 125° proof for a minimum of two years in new charred oak barrels and bottled at a minimum of 80° proof. No caramel addition of flavour enhancement is allowed.”

Tennessee Whiskey – Tennessee whiskey is a fiercely independent branch of American whiskey, with any references to its products as ‘bourbon’ dismissed by purists. The truth is that it could be described as a straight bourbon, if it was not for two unique characteristics. Firstly, Tennessee whiskey is made exclusively in the state of Tennessee and secondly, it is filtered through maple sugar charcoal before ageing.

Wort – This is the name for the sweet liquid that is drained off the mash tun. If the pumping is fast, some of the barley husk can be pulled through. This cloudy wort will in turn help to promote a cereal note in the final spirit. A gentle extraction gives clear wort and a fruitier result.

Worm Tubs – There are generally 2 aspects. The temperature of the water in the tub, and the surface area inside the worm. Generally speaking, the higher the temperature and greater the contact with copper, the lighter and less complex the spirit will become. The worm keeps the sulphur compounds in the new make spirit to give you a bigger, heavier style of whisky. These are the meaty, vegetable, coal gas, sulphury notes. Then, with an American oak bourbon barrel with its char layer, the sulphur compounds interact and that’s what gives you your toffee and butterscotch in your mature whisky.
