Beat The Blues Chilled Pea Soup

This dish is the easiest, tastiest and most affordable in the history of cooking. Try it - you won't be sorry.

Serves 4-6 | Preparation Time: 5 mins | Cooking Time: 5 mins

Ingredients

- 4 cups Frozen peas- 750 millilitres water- 2 KNORR Chicken Stock Cube- 15 millilitres Chopped fresh mint- 250 millilitres Plain yoghurt - 1 pinch Salt & Pepper to taste

Instructions

1. Heat a large pot on the stove and cook the peas, water and stock by simmering for 5 minutes.2. Puree the mixture with a hand blender.3. Chill until ice cold and stir in the yoghurt just before serving.4. Season with salt and pepper.

Budget Beater Brinjals

These delicious budget beater brinjals make a meal on their own or can be served as an accompaniment tochicken.

Serves 4-6 | Preparation Time: 5 mins | Cooking Time: 35 mins

Ingredients

- 3 Medium brinjal- 150 grams Feta cheese - 1 Bunch coriander, chopped- 1 KNORR Sundried Tomato with Olive oil Salad Dressing- 1 pinch Salt and black pepper to taste

Instructions

1. Place brinjal in a roasting dish, drizzle with olive oil and roast for approximately 30 mins at 200°C until softand cooked.2. Cut in half lengthways and scoop out the flesh.3. Mash the flesh and set aside.4. Stir crumbled feta cheese into the brinjal flesh and add the KNORR Salad dressing and seasonings.5. Spoon the filling into the brinjal cavity and reheat in the oven.6. Serve with char-grilled chicken breasts.

Carrot Soup

This soup is easy to make and can be frozen. Made with leeks, ginger and carrots rich in vitamin B, it makes ahearty meal served with crisp bread, any day of the week.

Serves 4-4 | Preparation Time: 10 mins | Cooking Time: 30 mins

Ingredients

- 1 tablespoon olive oil - 1 Leek, halved lengthways, thinly sliced- 6 Carrots, peeled, chopped- 1 Piece ginger, peeled, grated- 500 millilitres water- 2 KNORR Vegetable Stock Cubes- 2 cups water- 1 cup Sour cream, dill, and toast, to serve

Instructions

1. Heat oil in a large saucepan over medium heat.2. Add leek, carrots and ginger.3. Cook, uncovered, stirring occasionally, for 8 minutes, or until vegetables start to soften.4. Add water and Knorr Vegetable Stock Cubes to saucepan.5. Cover and bring to the boil.6. Reduce heat to medium-low.7. Simmer, covered, for 20 minutes, or until carrots are very tender.8. Remove from heat.9. Set aside to cool slightly.10. Liquidise soup until smooth.11. Return to saucepan.12. Heat over medium-high heat until hot.13. Season with salt and pepper.14. Ladle soup into bowls.15. Top with sour cream and dill.16. Serve with toast.

Ingredients

- 250 millilitres Rice- 1 Red onion, finely chopped - 2 Tins tuna in oil- 500 millilitres water- 1 KNORR Fresh Ideas Chicken & Mushroom Pan- 15 millilitres Finely chopped chives- 125 millilitres Grated Cheddar cheese

Instructions

1. Cook rice as per packet instructions and drain well.2. Preheat oven to 180°C and grease an oven proof dish.3. Sauté the onion in a little of the tuna oil.4. Add the flaked tuna to the onion and mix together.5. Place water and KNORR Fresh Ideas Chicken & Mushroom Pan into a pot and bring to the boil, stirring fre-quently.6. Add the tuna mixture and mix together well.7. Spoon half the rice into the dish and top with half the tuna mixture.8. Repeat layers.9. Sprinkle chives and cheese on top.10. Instructions

1. Heat oil in a large, non-stick saucepan.2. Add onions and garlic and sauté until soft.3. Stir in sachet of seasoning spice blend, milk and water and mix together well.4. Add prawns, lime zest, herbs and the uncooked pasta and bring to the boil, stirring occasionally.5. Reduce the heat and allow to simmer uncovered for 15-20 min until the pasta is cooked.6. - 15 millilitres Oil- 1 Red onion, coarsely chopped- 50 grams Celery sticks, chopped- 5 millilitres Crushed garlic- 5 millilitres Turmeric- 200 grams Butternut chunks- 50 grams Carrots, cut into chunks- 300 grams New potatoes, halved- 400 millilitres water- 1 KNORR Mild Durban Curry Cook in Sauce- 200 grams Baby marrows, cut into chunks- 200 grams Canned butterbeans, drained- 200 grams Canned red kidney beans, drained- ¼ Bunch coriander- 300 grams Basmati rice, cooked in unsalted water

Instructions

1. In a large saucepan, fry onion and celery for 3 min.2. Add garlic and turmeric and lightly fry for 1 min.3. Add butternut, carrots and potatoes and fry for 3 min.4. Add 400 ml cold water to the pan, stir in the Knorr Fresh Ideas Mild Durban Curry sachet contents and bringto the boil while stirring.5. Add baby marrows and simmer uncovered for 20 min, stirring occasionally.6. Add the beans and simmer for a further 10 min. Stir in coriander.7. Serve hot with basmati rice.

Beetroot has become a new trend and can be used in many ways from chutney to salads. Try out this whole-some and affordable beetroot soup.

Serves 4-6 | Preparation Time: 15 mins | Cooking Time: 20 mins

Ingredients

- 400 grams Margarine- 1 Onion, finely chopped- 1 Carrot, chopped- 1 Potato, peeled, chopped- 1.25 litres Warm water- 2 KNORR Chicken Stock Cube- 450 grams Fresh beetroot, cooked and chopped- ½ cup Sour cream to serve

Instructions

1. Heat the margarine in a large saucepan over medium heat.2. Add the chopped onion and carrot and cook, stirring, for 3 minutes or until slightly softened.3. Add the chopped potato and cook, stirring, for a further 5 minutes.4. Add the Knorr Chicken Stock and 1 cup (250ml) water.5. Increase the heat to medium-high, bring soup to the boil, then cook for a further 5 minutes or until the veg-etables are very tender.6. Add the beetroot and simmer for about 3 minutes.7. Allow the mixture to cool slightly and using a hand blender, blend soup until smooth.8. Season with salt and pepper to taste, add a little extra water if it's too thick, and warm through over lowheat if necessary.9. To serve, divide soup among bowls and top each with a dollop of sour cream.10. Scatter with croutons and chives.

- 1 KNORR Roasted Vegetable Bake - 30 millilitres Oil- 1 Onion, finely chopped- 1 Carrot, diced- 2 Celery stalks, diced- 1 Leek, finely sliced - 400 grams Beef/ lamb mince- 1 Can baked beans- 8 Sheets phyllo pastry- 40 grams Margarine, melted

Instructions

1. Preheat oven to 200°C.2. Heat oil in a large frying pan on medium.3. Cook onion, carrot, celery and leek for 10 minutes, stirring, until soft.4. Add mince and cook on high for 5 minutes, stirring to break up lumps, until brown.5. Add beans and ¼ cup water and season to taste.6. Spoon mixture into a shallow ovenproof dish or four ramekins.7. 1. Place 350g cubed chicken strips in a bowl.2. Prepare KNORR Classic white Sauce as per packet instructions however using only 200ml boiling water.3. Allow to cool, adding tandoori paste and mixing well.4. Add chicken strips.5. Cut pappadums in half with kitchen scissors and cook in microwave for 10 seconds or until crisp.6. Heat an oiled large non-stick frying pan on medium and fry chicken for 5-7 minutes, until cooked throughand lightly blackened.7. - 4 Sausages of your choice- 10 millilitres Oil- 1 Red onion, finely chopped - 2 cups Arborio (risotto) rice- 125 millilitres White wine or lemonade- 125 millilitres Tomato sauce - 4 ½ cups water- 2 KNORR Vegetable Stock Cubes- 1 ½ Frozen peas- 80 millilitres Parsley leaves, roughly chopped- 60 grams Grated Parmesan cheese

Instructions

1. Preheat oven to 180°C.2. Heat a pot over medium heat.3. Fry Sausages in oil and cook until evenly browned and cooked through.4. Set aside and keep warm.5. Add onion to pot and cook, stirring, for 2 minutes until the onion has softened.6. Add rice and stir to coat.7. - 1 KNORR Chicken Lasagne Mate- 1 Red onion, chopped - 5 millilitres Crushed garlic- 500 grams Button mushrooms- 5 Leeks- 15 millilitres Oil- 50 millilitres White wine (optional)- 600 millilitres Hot water - 250 millilitres Grated mozzarella cheese

Instructions

1. Empty the contents of the cheese sauce sachet into a jug and fill to 400 ml with boiling milk and stir for 1min.2. In a large pan, brown the red onion, garlic, mushrooms and leeks in oil.3. Add a splash of white wine (optional).4. Add the sachet of seasoning mix, 600 ml hot water and pasta to the mushrooms.5. Bring to the boil, stirring occasionally.6. Reduce heat, and simmer for 10 min and pour into a 2-litre oven dish.7. Pour cheese sauce over and sprinkle with mozzarella cheese.8. Grill for 10 min or bake for 20 min at 180°C .

Instructions

1. Place the mince in a bowl and add egg, olive oil, onion and the sachet contents.2. Scrub the sweet potatoes then, without peeling them, grate using a cheese grater.3.
