Welcome to the July 2014 edition of West Coast Way.

What a fantastic start we have had to 2014. I’ve been very proud to see West Coast people win multiple awards across a range of industries.

Earlier this year, we celebrated West Coast’s brightest stars at the Institute’s annual Awards Evening (pg 6). Nominees included students, trainers and staff of the Institute who have gone above and beyond in their discipline to achieve positive outcomes. I am pleased to write that Apprentice Baker Nick Gillan won our prestigious award, student of the year. (pg 3).

Institute students continue to shine in industry competitions with two fitness students placing in the International Natural Bodybuilding Association’s annual national competition (pg 4) and apprentice bakers and pastry students dominated at this year’s Baking Industry Employers Association of WA’s annual Baking Industry WA Awards (pg 10.

Throughout 2014, The Institute has also taken ground breaking steps to expand its commercial offerings, provide better training solutions for students and greater workforce productivity for local businesses.

Next month the Institute will launch a coworking space at our main Joondalup campus. The space has been created in partnership with the City of Joondalup and aims to offer affordable and

modern desk-space in a collaborative environment to start-up businesses and micro-businesses in the local community (pg 12).

The Institute’s Academy of Hospitality and Culinary Arts was proud to host the nationwide launch of the next generation in seafood training for apprentice chefs and cookery students (Pg 5).

A ‘Women in Leadership’ forum (pg 9) debuted in May as part of the Institute’s Workforce Solutions offerings. The forum featured some of Western Australia’s most successful and powerful business women who captivated the audience as they spoke about their experiences as women in leading roles in the workforce.

It’s been a busy start to 2014 for the Institute and I would like to acknowledge staff for their contemporary and flexible approach to doing business that allows the Institute to continue to provide positive outcomes for students, industry and the community.

I look forward to exciting times ahead for the remainder of 2014 and beyond.

Second year apprentice baker Nick Gillan, claimed the prestigious title

of West Coast Student of the Year at the Institute’s annual Awards Evening held on Monday 24 March.

The 23-year-old, who also won the Institute’s Apprentice of the Year Award, had almost completed a psychology and sports science degree when he decided to leave it all behind to follow his dream of becoming a pastry chef.

“I decided to make the career change while I still could, to go and do something I actually enjoy.” Nick said.

Nick is now completing his apprenticeship at Lawley’s Bakery where he starts work at 5:00pm and finishes

at 2:00am baking a range of breads, pastries, cakes and savoury snacks.

Nick was nominated by two of his lecturers for his enthusiasm and for his personal and professional development since starting his apprenticeship in January 2013. He was humbled to receive the award.

“I owe a lot of thanks to my lecturers for getting me where I am today. They have guided me and helped me recognise and develop my abilities, plus my training is hands on, so I get to learn new things on the job every day, not just read about it in books,”

“One of my highlights throughout my apprenticeship so far was travelling

to Korea to compete in the Australian

Culinary Federation’s Culinary Olympics,

my team won a silver and bronze medal

in the dessert category,” Nick said.

“Once qualified, I hope to work in a

fine dining restaurant creating and

baking fine pastries and specialising in

chocolate and sugar work. “

outstanding achievement.

“Nick’s really excelled in the short

time he has been here. He always puts

in 100% and I can see him working

among the best in the industry once he

graduates,” Nathan said.

Fitness students win national bodybuilding titles

Past and present fitness students brought home the gold from the

International Natural Bodybuilding Association (INBA) Nationals held in Castle Hill, New South Wales this June.

After securing a place at the State championships in May, Certificate IV in Fitness graduate Marc Fury and Certificate IV in Fitness student Jordan Madaschi trained rigorously in the lead up to the national competition which would judge their body’s symmetry, muscularity and conditioning.

Through countless hours of training and a disciplined diet, both Marc and Jordan went on to win the national title in their respective divisions. Marc won the national Mr. Physique division and

Jordan took out the Australian Junior Men’s title.

“I’m extremely happy with winning my first national title against such strong competition,” Jordan said.

Jordan started bodybuilding two-years ago and had his first competition at the end of 2013 where he placed second in a close contest.

“When I first started competing I was committed but didn’t have all the knowledge around training and how to get the most out of my body. By studying fitness at West Coast I’ve gained a greater insight into health and fitness which has helped me get to the next level.”

Jordan underwent a gruelling training regime to condition his body for peak performance on the night. “I was training up to three times per day when I was a week or two out from competition,” Jordan said.

Fitness lecturer Paul Ahern was proud of Marc’s and Jordan’s success, “Their dedication to fitness is evident in the classroom and I’m not surprised they both won in the competition, they will both go on to have fantastic careers in the health and fitness area.”

Jordan and Marc have been invited to represent Australia at the 2014 INBA World Championships which will be held in Slovakia.

West Coast hosts the launch of the next generation in trainingTailored online training resources for cookery students.

West Coast Academy of Hospitality and Culinary Arts joined forces

with seafood industry experts in May to launch tailored online training resources for cookery students and apprentice chefs.

The need for additional resources was discovered by Curtin’s Centre of Excellence for Science, Seafood and Health after research surveys were completed with 60 chefs across Australia. The research highlighted that many newly qualified chefs lacked knowledge and confidence in selecting, preparing and cooking seafood.

“In their three years of training to become chefs, most apprentices will spend only eight days of formal learning how to select, handle and prepare seafood. On-the-job training can also be limited with the hectic schedules of other restaurant staff,” Dr Janet Howieson, from Curtin’s Centre of Excellence for Science, Seafood and Health said.

The online resource includes a series of instructional videos that were created through a collaborative effort between West Coast’s Academy of Hospitality and Culinary Arts, The Australian Seafood Cooperative Research Centre, Curtin University’s Centre of Excellence for Science, Seafood and Health; and the Fisheries Research Development Corporation.

The videos are a learning resource that can be accessed outside of the classroom and aim to fill the knowledge gap on how to correctly select, store prepare and serve seafood.

Academy Executive Director, Patrick O’Brian was excited to have been a part of the video development. “Being involved in the filming and creation of some of the videos was a real bonus for many of our Academy lecturers, who are all very excited about the implementation of this new training tool.”

“The videos are going to be a great addition to student training programs.”

Leading chefs Pete Manifis (InContro Restaurant), Josh Catalano (Catalano Seafood) and Don Hancey (Panorama

Catering) were also involved in the production of the videos and all feature in the videos.

The videos cover some of Australia’s most popular ocean species including rock lobsters, oysters, snapper, barramundi, sardines and prawns.

The online videos have been trialled with cookery students and apprentice chefs and are now being made available to the wider training community.

Celebrating the Institute's brightest stars

It was another year for celebrating West Coast Institute’s finest students

and staff at the 2014 Awards Evening held on Monday 24 March.

Over 160 guests were in attendance to enjoy a night recognising the outstanding achievements and endeavours of students and staff across nine award categories.

Noongar elders Aunty Doolann-Leisha Eatts and Uncle Walter Eatts delivered a Welcome to Country which included a moving didgeridoo performance by Samuel Pilot.

Guests were welcomed by the Institute’s Governing Council Chair Dr Russel Perry and Institute Managing Director Michelle Hoad before being inspired by the drive, commitment and positive outlook held by finalists.

“The 21 finalists gathered here this evening represent over 10,000 students and 460 staff at the Institute. They have each excelled in their respective discipline and I am delighted that you are all here to join me in congratulating them on their accomplishments,” Ms Hoad said.

Tonight's finalists will be the decision makers of tomorrow and West Coast is proud to have been involved in their learning journey.

West Coast’s Encouraging New Vision and Inspiration (ENVI)

Beauty Salon’s beauty students were treated to a personal half-day workshop given by Hair and Beauty Expert, Joan Della Valle.

Joan who is known as the creative mind of Ebony & Ivory Hair and Beauty Salon, had a wealth of knowledge to share with the students. In this particular workshop, Joan provided students with insight into using skin products and make-up on a variety of skin tones.

Diploma of Beauty Therapy student Charlotte Middleman found the workshop inspiring “Joan showed us so many invaluable make-up techniques that we will be able to practise ourselves at home and use as soon as we start working in the industry,” Charlotte said.

Beauty Lecturer Liz Harris said participating in the workshop was a fantastic experience for the students, “Being able to learn from an industry expert is a wonderful opportunity for our students to further their understanding and skills in the beauty industry.”

“Joan provided a whole new perspective on make-up application for different skin-tones, and also showed students a wide range of different techniques to use with different products,” said Liz.

Students were given full access to use the celebrity trusted Black Opal Cosmetics line on the day which meant they were able to put into practise what they had learned throughout the workshop.

The Institute brought together three accomplished Western Australian

business leaders at a debut Workforce Solutions forum, Women in Leadership, held on Wednesday 26 March.

The forum explored contemporary leadership in a challenging and changing environment, with attendees engaged throughout the afternoon by key speakers Sonja Cox - Telstra WA Business Woman of the Year 2013; Sue Slavin - Strategic Leadership Consultant and Coach; and Ganit Poleg-Spark, Director of GPS Services.

“Gone are the days of having mostly men in power in the workforce. There are so many women in top positions these days and so many more on their way up”

commented West Coast’s Director of Business Development, Ian Martinus.

“We put this forum together to equip attendees with tips and strategies to ensure their success as women in leading positions,” said Ian.

Attendee Kate Buck from the WA Police felt uplifted by attending the forum “What an energising and informative event. All three speakers provided invaluable advice and gave me a lot of useful pointers that I can start using at my workplace straight away,” Kate said.

Sue began the event with an intriguing look into her professional life and how she worked her way to leadership roles, providing tips and knowledge to the

audience to guide them in their own careers and lives. Ganit followed by conducting a skills session focusing on negotiation, encouraging the attendees to better understand and strengthen their mediation and negotiation skills.

Sonja finished the formal section of the forum by providing five personal leadership lessons that she has learnt over the years, motivating and inspiring the audience with her confidence and experiences.

The forum concluded with a networking session enabling attendees to get up close and personal with the speakers to seek one-on–one advice and share their own experiences with fellow attendees.

Bakers and pastry chefs prepare their signature dishes for a panel of judges.

Academy of Hospitality and Culinary Arts students outshone

competitors at this year’s Baking Industry Employers Association of WA (BIEAWA) Commercial Bread and pastry Competition.

The competition which was held on Wednesday 28 May tasked bakers and pastry chefs to prepare their signature dishes for a panel of judges in over fifty different categories ranging from cheese cake’s to wholemeal bread rolls.

Eighteen-year-old Julia Buri (Certificate III in Retail Baking student) won a gold medal in the decorated cupcake division, presenting six unique cupcakes that astonished the judges.

“I decided to take a strategic approach and do something different to grab the judge’s attention. I kept it simple and didn’t go crazy with special ingredients, I made pistachio and rosewater cupcakes topped off with some cream cheese.”

“Most of the competitors here are from multi-award winning bakery and pastry houses, so I’m humbled to have won against such strong competitors. The bakers I was up against possess the skills and abilities I aspire to hold when I qualify,” Julia said.

Baking students take on professionals

The Academy’s International students also joined in the success with Elvis Gumangi securing third position in the Torte (16 portions) category and Marc Lyndon Dela Cruz earing a bronze medal in the chocolate éclairs category.

Academy Executive Director, Patrick O’Brian, said he enjoyed watching the students step up for this competition that is dominated by fully qualified and experienced bakers and pastry chefs.

“To see them compete is one thing, but to have them win or place in their category just proves that they are getting the skills at West Coast that will help them succeed in their future careers,” Patrick said.

Academy students have a state wide impact in Health Industry

Seventy-Six Stage 3 Enrolled Nursing students from the West Coast Academy of Health Sciences have been

given the opportunity to participate in the State wide patient safety and quality survey driven by the Western Australian Department of Health.

Conducted by the Office of Safety and Quality in Healthcare and in conjunction with WoundsWest, the WA Safety and Quality Point Prevalence Survey rolled out across 20 metropolitan and regional hospitals during the month of May. Its aim was to collect information which will be used to improve patient safety within the WA health industry.

Nursing student Renae Olsen began conducting surveys with patients at Joondalup Health Campus on the survey launch day, Tuesday 8 May. “So far this program has been a great experience for me as a student, I’ve been able to see first-hand how large hospitals like this run and operate day in and day out,” said Renae.

The Office of Safety and Quality in Healthcare held education sessions in April this year that were completed by all participating students prior to interacting with patients and conducting surveys.

Academy Director, Judy Peters, said it has been a positive addition to the students learning curriculum, “The students have been able to communicate directly with patients and have learned firsthand about patient safety and care in a hospital setting, an invaluable learning experience that can’t be simulated in a classroom environment,” said Judy.

The Institute will launch a one-of-a-kind coworking space in Joondalup this August in partnership with the

City of Joondalup.

The space has been designed to provide a dynamic environment for entrepreneurs, micro-businesses and digital start-ups to collaborate, share ideas and have the opportunity to participate in workforce development activities whilst connecting with broader industry and research networks.

West Coast’s Director of Business Development, Ian Martinus is looking forward to seeing the space harness local entrepreneurial talent “The coworking Space is not just about providing local professionals with a casual and affordable working environment, it’s also about creating a community of like-minded talent”, said Ian.

The space will be managed by enterprise development guru’s Business Foundations and will feature a lake-front location, free parking, security services and modern facilities like wireless high-speed internet.

The space will officially launch during Enterprise Week (4 – 10 August 2014), at the Institute’s main campus at Kendrew Crescent in Joondalup.
