The Husk beverage program shares the soul and ideals of the culinary program. It embodies Husk’s vision of allowing the ingredients that come from the local farms and the history of the area to be the backbone of our cocktail program. One of the most important staples of the South is corn, without which there would be no grits, cornbread, nor bourbon. We showcase this important part of Southern heritage with an extensive list of bourbons and American whiskeys.
Husk and the Bar at Husk are located on land originally part of Schenckingh’s Square, a three-acre tract granted in the 1680s to Barnard Schenckingh, a Barbadian immigrant. Schenckingh’s grandson Bernard Elliott later inherited the property. After his death, the tract was divided and part of the land was purchased by William Mills, father of noted architect Robert Mills. Both structures were built on the site of earlier houses destroyed in the Great Charleston Fire of 1861.
76 Queen Street, the building housing the main restaurant, was rebuilt in 1893 by Thomas Graham and family. Thomas and Annie Graham lived in the house with their 9 children. In 1965, the house was purchased with funds donated by Josephine Pinckney. Efforts led by Drayton Hastie, who spearheaded the fundraising campaign to renovate the building, allowed the Gibbes to revive its art school. The Hastie School of Art opened at 76 Queen Street in 1969. We have guests that remember taking classes here as kids. The upstairs waitstation was the former dark room for the photography class. NDG purchased the properties in 2009. Renovations took over a year. Anne McGinness was adopted by the Graham family and inherited and lived in the house until the Gibbes Museum purchased it. Anne returned to celebrate her 80th birthday with us when Husk opened in November 2010. We celebrate the history the house and surrounding area have to offer, while also creating new stories.
Seasonality is at the heart of the cocktail program. Inspired by the classics, we let the ingredients determine the end product. Inspiration can come in many forms, from the perfect strawberry, a conversation with Chef about the food, a revived technique or spirit, or dinner with friends. To accompany our ever-changing cocktail program, we celebrate brewers through a regional craft beer program and local distillers with our spirits program. The wine program exhibits the same sense of place as our culinary menu and compliments its seasonality. Our goal is to cultivate a memory with each sip.
The Husk beverage program seeks to blend with the restaurant’s culinary ethos by offering selections that are Southern influenced, ingredient driven, and locally based. We love to be inspired by our friends and our past. We share the experiences and new ideas we gather with our guests through the flavors of our beverages.

W I N E & S O I L
As an agricultural product, grapes show a breadth of characteristics from the place in which they are
grown. Starting from the ground up, the soil is the foundation that creates the backbone for all grapes.
Detailed below are the profiles of each soil type and the particular complexities they may add to a wine.
A = Alluvial (sand, clay, gravel, silt/loess, loam) soils are blends that have good water and nutrient
retention, which can translate into a more opulent style of wine. Throughout the world, these are the
most prolific vine soils and a good place to look for more fruit-forward, approachable and juicy wines.
S = Sedimentary (limestone, sandstone, silex/flint) rock soils are made from solidified mineral or
organic deposits. These soils work like a sponge, wicking water away and storing it as reserves for the
vines when water is scarce. Highly valued in cool climates because of its heat reflection capabilities, this
is a good place to look for bright, balanced, mineral-driven wines and bubbly!
M = Metamorphic (slate, schist, gneiss) rock soils are formed under pressure from another type of
rock, with many color variations and mineral make-up. Dark colors retain and radiate heat, contributing
to ripening, helping develop color and more interesting flavors in grapes. Wines can have an underlying
mineral quality and can be quite powerful.
I = Igneous (volcanic, basalt, pumice, granite) rock soils are formed by lava flows above and below the
earth's surface. Volcanic soil is formed from molten lava and ash deposited from the earth's surface.
Granite is a plutonic rock formed deep under the earth's surface. Resulting wines are typically powerful
with an earthy, ashy element, often savory and complex.
