Ground Turkey Minestrone(Serves 5-6 people, can be halved!)A hearty soup to warm you up and use lots of those cans in your pantry.

Ingredients:2 tablespoons olive oil1 medium-sized onion, diced2 large garlic cloves, minced1 pound ground turkey2 (14.5 oz) cans beef broth1 (28 oz) can Italian tomatoes1 cup macaroni1 medium-sized zucchini, sliced1 (10 oz) package frozen mixed vegetables1 (15 oz) can kidney beans1 teaspoon dried leaf oregano1 teaspoon basil2-3 tablespoons red wine vinegar

Instructions: Heat the oil in a soup pot, add the onion and garlic and saute for 6-8 minutes. Add the turkey, breaking up with a fork; cook until it is no longer pink. Add the broth and tomatoes, breaking up the tomatoes with a fork. Bring to a boil and add the macaroni. Reduce the heat and simmer until the macaroni is almost tender, then add the zucchini, mixed vegetables, kidney beans, oregano and basil. Stir to mix well, then cover and simmer for 10 minutes. Add the vinegar and salt/pepper to taste.
