Katy’s bacK with her fourth album, Prism, and she delivers many tunes with an additional tinge of maturity. a SPecTrum of coLourSThe title of the album was an inspiration from John Mayer (her on-again-off-again boyfriend) and I can see why it’s apt. Katy serves up an array of songs that showcase the range of her vocals, delivered with a variety of emotions, in many diverse styles.

“Walking on Air” will definitely be a chart hit, with the same bubble gum-pop flavours that we know her for. On the opposite end of the scale, Katy turns on her emotional crooning full blast in the album’s second single, “Unconditionally”. Bringing on The “roar”… “Roar” is an anthem that was a good pick for her first single, since it caught the attention of both fans and critics after it received fiery comparisons to Sara Bareilles’ “Brave”.

Outside of the harsh conditions in which we see Cory Richards on his treks with

National Geographic, he’s a cheery and surprisingly fresh-faced 29-year-old.

Cory was in town last week to promote the 125th Anniversary of the National Geographic magazine as well as the photo exhibition in line with it, held jointly with Canon at VivoCity from Nov 1 to 3.

Cory has been shooting for the past 14 years and his works have taken him across all seven continents. We were honoured to catch up with him in our little red dot.

How long Have you been interested in pHotograpHy?I’ve always been interested in photography. But I started doing this as my career path when I was about 18 years. So I’ve been in this almost 13, no, 14 years now.

i understand tHat you started out in fasHion pHotograpHy. wHy tHe switCH?Well, I worked in fashion and I started as a photographer’s assistant and I worked on some fashion on my own. The switch was a natural one; I worked in fashion because I needed to pay the bills and I loved the pace and lifestyle.

And, I was saving money from fashion work to go on climbing trips and while on climbing trips I’d shoot them and sell those images. Then, I was sponsored by The North Face [for my climbing] and that took me to more interesting places such as South America and Asia, and

that’s how I got involved with the National Geographic.

would you Consider yourself an adrenaline junkie?Not at all! I think being in places and situations that challenge you is a healthy thing but the adrenaline part of it is actually pretty unpleasant. I don’t really love that.

do you prefer tHe far-flung loCations or tHe Cities?I have a love affair with both. I really love getting as far away from what we consider as contemporary society as possible but I do love travelling in developing nations. I think that it is very interesting to see how people want and desire. And to see how [sic] this idea of opulence or opportunity has done to developing nations and how they respond.

wHat’s next for you?The next trip I have planned,

this Spring, is again to Southeast Asia. Borneo, Malaysia. I won’t tell you what I’m doing, but I can tell you where I am doing it. [Grins]

wHat’s one of tHe Craziest tHings tHat Has Happened to you on tHe job?Wow, my life is a huge anecdote. It’s like one hysterical experience after another. I’ve dropped my entire person and lenses and camera into the ocean after an unfortunate situation after a climbing anchor broke. I almost drowned but managed to swim to shore and that was it.

wHat would you say to enCourage budding pHotograpHers?Don’t look for a recipe. Do what you’re passionate about and if somebody is telling you not to do something, it’s probably the right thing to do. There isn’t a correct path. The only correct path is perseverance.

Plates & ‘PoPs'Start off with their homemade Mussel Soup ($10), a thick and creamy broth chockfull of New Zealand green-lipped mussels with a touch of sour cream. They also have Quesadillas ($15) filled with melted Jack cheddar and minced chicken or beef with sides of sour cream, salsa and guacamole.

If you are headed to The Chop House with a group of five friends, order the hulking 4kg Beef Shank Lollipop ($140). This meat shank falls off the bone and is braised in a brown sauce accompanied with asparagus spears, cherry tomatoes and tater-tots.

Meat ParadiseChomp down on their Mixed Grill Platter ($48) comprising two milk-fed lamb cutlets, beef

tenderloin, lamb and pork sausages and grilled tomatoes on a hot platter, or on their 200g USDA Prime Ribeye ($36) which comes with a side of twice-baked potato and fried onions.

Their Chop House Pork Burger ($22) is a thick minced pork patty flavoured with ginger, chilli and coriander served with applewood smoke bacon and pickles. Their burgers all come with sides of tater tots. But if all that meat puts you off, indulge in the Mixed Seafood Platter for two ($42) which comes with salmon, prawns and calamari stuffed with herbs and bread crumbs.

thirst Quenching BeersApart from the food, The Chop House also has six beers on tap, such as Schneider Weisse Tap 7, Pure Blonde Premium Lager, and Mac’s Great White Cloudy Wheat Beer.

Ku de ta Restaurant, famously located on the 57th floor at the SkyPark of Marina Bay Sands, presents a brand new a la carte menu from Nov 5, by new Executive Chef Frederic Faucheux.

I was honoured to be one of the first two people to taste the dishes on his new menu. With the balmy weather and the resplendent panoramic view of the city skyline and the Straits of Singapore all around, I truly felt as though I was dining in the clouds.

heavenly & artistic FoodWhat completed the deified impression was the heavenly food. The new menu retains Ku De Ta Restaurant’s modern Asian dining concept.

When my first platter of the tasting menu arrived, I was taken aback by its beauty. This may sound like an exaggeration but I assure you it’s not. It looked like a work of art, with three items arranged on a black ‘canvas’, complete with decorative flower petals.

The Oyster with Kombu Jelly and Ikura was fresh, gratifying and easily the best part of the first presentation, while the Softshell Crab Sushi Roll came a close second. Both certainly whet my appetite for more to come.

Best oF east Meets WestThe pan-fried Foie Gras was topped with Sake Jelly to mimic the pairing of a sweet wine with foie gras, typical in the chef’s home country. Unique and refreshing, it was effervescent to taste.

Other highlights include the Rack of Lamb with Walnut Jus – with mushrooms and fried sushi rice grains adding to the texture and flavour – and the Heirloom Tomato Salad that features a combination of sweet, spicy, and sour flavours. These are sure to please both Asian and Western palates.

Keep an eye out for more heavenly creations. Next year, Chef Faucheux will present a new lunch and weekend brunch menu.

Chef Emmanuel partners with his work and life partner Edina Hong and long-time friend Ricky Ng for this new concept.

Ricky says, “Blue Lotus aims to be a fuss-free Chinese restaurant serving good value-for-money dishes.” We agree.

seaFood By the seaBlue Lotus Chinese Eating House has recently updated its menu with Lemongrass Prawn Roast ($18), with prawn paste roasted on the end of a lemongrass stick, for a fragrant and flavourful starter.

We also liked their sinfully-good Crispy Fried Salmon Skin ($12) coated with salted egg yolk. The crispy and slightly sandy salmon skin is great with Fresh Coconut Juice ($8).

Also try their Crispy Fried Squid Tentacles with salt and pepper ($26). Once you start, you simply cannot stop!

asian With a tWistIf you like hot-stone meats, try their Wok Fried Kagoshima Wagyu Beef Tenderloin ($45). The meat is mouth-numbing with peppercorns, capsicums as well as onions. It goes wonderfully with a bowl of their truffle rice.

The piece de resistance is definitely their Blue Lotus Signature Chilli Pomelo Crab ($7.80 per 100g); their crabs are at least 1.5kg and come in a spicy chilli sauce topped with bitter-sweet fresh pomelo to kill the burn.

Also available is their take on the local favourite, their Hot Stone Long Ribs Bak Kut Teh ($16). Desserts include a tart Lemongrass Gelo with Lime Sorbet ($9) and a fragrant Deep Fried Red Bean and Lotus Pancake ($12).

Try these dishes. You won’t be disappointed. And, you’ll have wonderful scenery to accompany your meal.

Old SchOOl charmThere is a fine art to choosing a proper suit and it is not merely throwing things together.

A spokesperson for Swagger says, “Choosing a suit can be a daunting task. You’ve got fabric, colour and fit to consider. To add a level of complexity to the suit, you will also need to consider the style of the suit.”

He advises notched lapels for a standard look and a peaked lapel for a touch of classic flair, and a double-breasted jacket – a jacket with six overlapping buttons – for men with a medium and/or tall build.

“Since a double-breasted suit is a less common choice, it will definitely make you stand out,” he explains.

Suiting upMost suits may be two-piece, comprising a suit jacket and pants, but the three-piece suit may have a slimming effect.

“The waistcoat of a three-piece suit isn’t just there to look good, it also keeps you warmer and has a slimming effect as it distracts from the belly and draws to the neck and face,” he says.

“Thirdly, most suits are made of only two pieces – the suit jacket

and pants. As for a three-piece suit, that is essentially the classic suit ensemble with an additional waistcoat,” he adds.

General suit etiquette also has to be adhered to, according to the spokesperson.

“The jacket sleeves should end at the break of your wrists. You should be able to see between 1/4-inch to 1/2-inch of your shirt sleeve when your arm is at rest,” he says.

He also advises that the length of your pants hits the top bit of your shoes, and the back touches the top of your heels.

You should also easily be able to cup your hands beneath your suit jacket.

Last but not least, a suit should always remain buttoned until one sits. The bottom button should always be left open.

Walker wrote: “as i gazed down at the bird’s small beak and two black eyes, i wanted to weep. if only this little bluebird could talk, what a story it would tell. a story of the heat of the night, of terror,

of survival against great odds.”

“and then the crucial question hit me. Why did this china bluebird survive? it had survived the fire because it had been tested by fire,” he continued.

and so it is with human beings who have been refined in life’s raging furnace. They are tougher, harder, and more resilient than those

who have never faced difficulty and loss.

That understanding may help us cope the next time the heat is turned up on our tranquil little world.

Time for

bed promptly at bed time and nap time, stop asking a zillion and one questions or even just play quietly by herself.

But since i only have 24 hours, i end up sleeping late most nights so that i can do my own things, like blogging, surfing the internet, watching my drama serials and, lately, picking up scrapbooking again.

dOWntiMe fOr YOurself & the fAMilYMy first project for myself is to make a travel album to record all our happy moments spent on our family vacations, from Taiwan to Hong Kong, this year. i love poring through my photographs and seeing them brings a smile to me as i recall the moments behind them.

After the 1 millionth selfie, you might want to up your game and shoot some pictures that are simply stunning.

One of the ways to do so is to manipulate time with your camera.

CONTROLLING TIMEWith a compact digital camera, you can adjust the camera’s shutter speed. The shutter speed is, simply, the time the camera stays open to receive the light from your scene.

With fast shutterspeeds, moving objects begin to “freeze”, or stop in their motion. Conversely, slower shutterspeeds allow moving objects to blur in your image. Both extremes can produce “wow” results.

Unfortunately, phone cams don’t have features which let you adjust the shutter speed. So you do need

to, at the very least, use a Compact Digital Camera in order to control the speed and, therefore, to get the cool effects.

Here are some wonderful examples.

FREEZING THE ACTIONBright sunny days are made for this effect. In this photo, the hair and water trail is “frozen” by the camera’s fast shutter speed.

Setting your camera’s shutter speed high, (i.e. 1/2000 of a second) can help to freeze the action in mid-stride. Always make sure you take multiple shots in order to capture the best options!

3 STEPS TO WRITING A MESSAGE IN LIGHTThis is an example of when a phone was used not for taking pictures but for its flashlight function.

Here are three simple steps on how to write a message in light: 1) Mount a compact digital camera on a tripod or table; 2) Turn on the self-timer and set it to a slow shutter speed (i.e. 15 sec) to capture all the light it needs for this night shot; 3) Run into the photo, and point the phone’s flashlight towards the camera and use it to “paint” a heart shape.

As long as you keep moving, you will appear as a faint “ghost” in the picture. Try writing your name in your photo!

DAZZLING LIGHT STREAKSSimilar to the technique above, point the camera to fast moving light, set the camera for long exposure, and capture any light motion.

Play with various shutter speeds from 5 sec to 15 sec, and make sure to set your camera on a tripod so it’s stable and stationary.

As I disembarked from my ferry at the idyllic Bintan Island, I was a little sceptical. Would Angsana Bintan’s “Ultimate Chill Out – All-Day Beach

Party” live up to its billing?Upon arriving at Angsana Bintan, the first thing

that struck me was the impeccable service and the warmth of the staff, no matter in which role or where I encountered them.

Attention to detail, including leaving gifts and well wishes written with leaves, flowers and stalks on my bed, heightened the inviting ambience. It truly felt like coming home, away from home.

HIGH-SPEED FuNThe welcome aside, Angsana Bintan has various exciting sports activities available. For me, the most fun of them all was the All-Terrain Vehicle (ATV) ride. Also known as quad-bikes, these mean machines are basically motorcycles with four wheels that can travel over any terrain.

It was exhilarating being let loose as a speed demon on the beach and the open roads, as well as overcoming challenging or bumpy tracks in the forest and over the little knolls. What makes it more fun is that it is not that easy, so you not only experience the thrill but feel a sense of accomplishment at the end.

Along the journey, we got to see a small kampong, and even spotted a wild monkey in the trees!

Jet skiing was also a thrill, though the waves can be choppy and you need to be prepared to take water in your face. Still, if you like a high-speed chase on the water a la James Bond, this would be your kind of fun.

OTHER GAMES & ACTIvITIESThere are other beach party activities especially ideal for families or groups of friends. You can participate in a nature walk, beach soccer in sarong, a volleyball competition, a marble race with a spoon, and even a mobile gym on the beach.

There are also activities for kids, such as the sandcastle building competition, a bike race on the beach, kids’ treasure hunt, and a sugar sack race. It was lovely to see the little ones having a great time.

RELEASE OF SEA TuRTLESThe high point of the entire weekend was undoubtedly the release of sea turtle hatchlings, as part of Angsana Bintan’s conservation effort.

It was quite the experience, watching these little hatchlings clambering along the beach and heading straight for the sea. Only about 10 per cent of baby sea turtles survive to adulthood once they reach the sea and, in the wild, many are eaten before they even reach the sea.

The breeding and release of sea turtles greatly aids in the odds and numbers of survival. Make sure you come early and plan your photo spot as there will be others scrambling for a shot of these little darlings.

BEACH GRILL & PARTyAs the sun began to set, we headed to indulge in a massive barbecue spread for dinner at Pantai Grill, by the beach. We were surprised to find that our table and seats had been moulded from the sand.

Laid in our sight was a wide array of barbecued meat including beef, lamb, chicken, fish and seafood. The heady, tempting aromas wafted along with the sea breeze and helped to build up an appetite.

All of a sudden, there was a buzz of excitement. In a flash, the sky was lit in a flurry of striking colours and patterns. The spectacular fireworks that painted the night sky lasted for a long time.

We left at about midnight, but not without reluctance.

SPA REjuvENATIONThe next morning, we went for a spa experience at the Angsana Spa. You can choose a soft, medium or hard massage, and different scents of potpourri. Each level of massage has different options.

I chose the “Dreams” massage. Suffice to say, I can’t remember too much about it as you can guess where I drifted off to. The massage was soothing and therapeutic, and helped to unknot a few tense muscles from the daily grind.

I certainly felt rejuvenated after this great weekend escape. W
