Watermelon Salad: 8 ounces of your favorite greens 5 cups chopped watermelon 1 cup crumbled Gorgonzola or feta cheese ¾ cup chopped pecans Pepper Jelly Vinaigrette ¼ cup rice wine vinegar ¼ cup pepper jelly 1 Tbsp lime juice 1 Tbsp grated onion 1 tsp salt ¼ tsp pepper 2 Tbsp olive oil 1. Whisk together vinaigrette ingredients and set aside. 2. Toast the pecans at 350 degrees for 5-10 minutes. Combine watermelon, spinach, and dressing and gently toss. 3. Crumble the cheese and nuts on top. Also great topped with grilled steak or chicken.
