ooking for a great Italian taste from a well established restaurant? It doesn’t get any better than Stavro’s Pizza House III in Ormond Beach.

The Stavro family founded the line of Stavro’s Pizza House Restaurants in the 1970’s. This location was number three that opened in 1974. Famous for their delicious pizzas and subs, the chain grew to become one of the areas favorite places to dine. Restauranteurs, Robert and Melissa Walk, learned of the business becoming available and purchased the restaurant in October 2011. Both having been in the industry for over sixteen years, knew that they wouldn’t want to change what had made the restaurant successful, but to expand the existing menu and bring about new flavors, all the while, still offering the old favorites. Robert cut his culinary teeth in the pizza business in Long Island, New York (Lindenhust area). His mentor Vinny Costanza and his family from Sicily owned a well known Pizza Parlor there. Robert learned how to make pizza dough and sauces from scratch from Vinny and his family. Everything they did came from Sicilian recipes, and styles of careful food preparation. Experience is the best teacher, and Robert learned from the best. He has honed his culinary skills to perfection, and creates new, delicious menu items frequently. Melissa uses her skills to oversee the hostess and waitress staff along with assisting in the everyday operation of their business. Once they procured the restaurant, they began a complete renovation, both inside and out to give it a new look and feel. They opened up the window areas for better lighting and installed new tables and booths. They divided the dining room areas to provide a more intimate dining area. Softer colors add to a warmer feeling in the dining area, more

dining out guide!of a homey feeling. Wonderful original paintings adorn the walls from many artists, all are for sale at a fraction of their value. The paintings are changed monthly, so there is always something new to see. Large flat screen TV’s are also placed around the restaurant to provide entertainment. During football season, they show your favorite games on the NFL Sunday Ticket. Outside, they added new teal green awnings and new lighted signage. Robert has revamped the menu as well. Keeping most all of the original items, he increased the size of their largest pizza and added new items like their fantastic, new hamburgers, fried appetizers, a whole new list of salads and now seafood. The huge Chef and Greek Salads are favorites, with zesty new dressings and homemade croutons. The new line of seafood items include fresh breaded Calamari, Shrimp dishes, Linguini and Clam Sauce, both red and white. Robert’s Lasagna is a house favorite, all homemade, using his Sicilian Grandmother, Edith Walk’s recipe, that was handed down from generations to him. It is served up in a huge portion and is really a hit with the locals. Robert also brought his famous Garlic Knots, hand tossed New York Pizza and of course, Sicilian Pizza to the menu. All of which are from old family recipes from Vinny and Family, but with Robert’s own special touch. Daily specials are always available for lunch and dinner. One of the favorites is their Wednesday Night all you can eat Pasta Night. It includes your choice of pasta, bread, side salad, coffee and your choice of dessert, all for just $9.99. Mondays are Pizza Nights, order a large pizza and get it for the price of a medium. Saturday Night Happy Hour from 4-6 pm has $2.00 drafts. When Football season starts, there will be Beer Buckets, food and appetizers at special prices during the games. his Months Restaurant feature is about the Pizza King Pizzeria on Daytona Beach’s Famous Boardwalk, and Chef, Entrepreneur, Steve Petras.

Steve’s smiling face is one of the most recognizable faces in town. The Pizza King Pizzeria story is about Steve, and his history in our town. It is recounted like nobody else could, by Steve’s wife Pat. So here is Pat’s recollection of Steve and his success with The Pizza King Pizzeria and the Venice Italian Restaurant. In 1958, Steve was a young man living in Chicago, Ill. friends of his from Daytona Beach invited him to visit the beach. Being born and raised on a Greek isle, the beautiful Florida coast reminded him of his childhood. He soon decided to make Daytona Beach his home. Soon thereafter, he seized an opportunity to purchase a Boardwalk snack bar. This would be converted to the first pizzeria restaurant directly on the World’s Most Famous Beach. In 1969 the Pizza King was re-built and turned into a two story building with seating for over 100 customers and an amusement arcade in the upstairs. Even in the old snack Bar, Steve had people coming from all over to get his Pizza and Steak Subs. With this new Restaurant, the people who once went to Ft. Lauderdale and Miami had now found Daytona. The Northern people from Kentucky, Tennessee, Georgia, and Alabama had found the Boardwalk and the Collage Kids were going crazy to get to Daytona anyway they could, Cars, Bus, Planes, Daytona Beach and the Boardwalk was the place to be. Visitors soon learned that the Boardwalk was like no other place, you could run into your Doctor,

Lawyer, Priest or an Executive from a top corporation.Steve’s Pizza King added many choices of great food on the menu for the Boardwalk and the business kept on growing. While running the Pizza King with the help of family members which came from Greece and New York, Steve decided to fulfill his lifelong dream of a beautiful full service restaurant. In 1972, his dream started to become a reality, when they broke ground to start to build the Venice Restaurant on South Atlantic Avenue in Daytona Beach Shores. After this beautiful building was finished, it was something like Daytona had not experienced. The interior was like spending a lovely evening in Italy. Pictures, table linens, imported wall coverings and fine tables and chairs completed the look. The Venice quickly earned a name for being the only table side service restaurant in Daytona. If you ordered a Caesar Salad, Steve would personally go to your table with his cart and make your salad as you watched. He also was always adding new dishes on the menu for his customers. The Venice was the first restaurant that had the open kitchen concept so the customers could actually see the Chefs cooking.Word spread fast about the great food and peoples comments in the guest book were great. Race time came, and the Venice got an International reputation from Racers and fans alike. Two years after being open, Steve added a large Cocktail Lounge with a dance floor. This addition brought top name entertainment to the area. From 1974 to 1997 the Venice was presented the Award for Excellence in Service. After 24 years, Steve closed the Venice and returned to the Pizza King Pizzeria on the Boardwalk. Steve is still selling Pizza to this day. We want to thank Pat for her contributions and recollection of Steve. He has made a lot of people smile in our town and still does. CaFFeine Bistrokona Tiki Barrose villa

eing an Executive Chef at a dining establishment is quite an undertaking. It is nothing short of amazing when you are managing three large, high

volume, high quality and very different restaurants. That is what Executive Chef Chris Pruneau accomplishes everyday at Caffeine, Kona Tiki Bar and Rose Villa. Chef Chris’s background and upbringing was quite normal. He was born in Michigan, at age 4, his family moved to Castle Rock, Colorado. He grew up there, finished school then at age 19, moved back to Michigan to be closer to his family and relatives. He decided the he wanted to be in the restaurant industry and enrolled in culinary classes at School Craft Culinary Institute in Livonia, Michigan, where he was mentored by many notable Master Chefs. That is where his culinary journey started. While attending school, he started working at Portofino Italian Restaurant as a Saute Cook. From that stepping stone, he went to a catering company in the Detroit area that catered parties up to 5 thousand people at one dinner service. He was honing his skills. The Hyatt Regency in Dearborn brought him in as an A Cook, a first in charge placement in the kitchen. Chris accepted a position at the renowned Mosiac Restaurant in Dearborn as Executive Sous Chef. and then to Big Rock Chop House where he retained the same position. Chris became Executive Chef at West Shore Golf Club in Douglas, Michigan. This is where he had attained his goal and it seemed as if his career path had been set. He become a notable himself. He was featured in the local newspapers, was asked to be on TV cooking shows and was featured in Michigan Blue Magazine’s Food and Dining section. As the Detroit economy dwindled, he and his wife decided they wanted Florida to become their home. Three years ago they moved here and started a private catering business for small parties up to 20 people. Chris still wanted more. He answered an ad that was offering a Chef position at a local restaurant. That restaurant was Caffeine / Kona Tiki

Bar. He accepted the position, and as they say, the rest is history. Chef Chris has helped develop the culinary success of all three properties, Caffeine, Kona Tiki Bar and the fine dining restaurant, Rose Villa in Ormond Beach. Chef Chris oversees the day to day operation of all three restaurants, menu development, staff training, loss prevention, ordering, sanitation, all while maintaining high quality cuisine for these three high volume restaurants. This would be almost an impossible job by itself, so Chef Chris has employed others to assist him. But, not just anybody, his choice was local notable Chef Casey Ford. Chef Casey, Chef de Cuisine, is in charge of the kitchen at Rose Villa and their day to day operations. He also has a Beverage Manager, Ryan Langlois. Ryan is in charge of drink development, beer selection and wine, liquor purchasing. He makes sure the drinks are made with fresh fruit juices, not canned. He creates exciting new drink recipes, finds unique and rare beers with a wide range of varieties and selects fine wines. Chef Chris’s goal is to rotate and develop seasonal menus using only the best, freshest, high quality ingredients creating fresh local fare for all to enjoy. There are always new projects that are going on. Like the opening of The Board Room next to Caffeine. A private room available for small groups or parties up to 16. There they have a private restroom, comfortable seating and can be closed off from the rest of the restaurant for meetings, parties or an intimate, high class wine tasting and dining. The possibilities are endless. Rose Villa has a new dining room in the works as well as moving the lower level bar to the front where you will be able to dine on high tops and still enjoy the more casual bar atmosphere. Caffeine’s lower level Tiki Bar area will soon have comfortable outdoor sofa’s and chairs for seating as well as a new outside bar along the south wall of the area. They have extended their Happy Hour, now from 3 pm to 7 pm, there will be specials on all drafts, domestics, house wines and well liquor drinks. This months Bartender we love is Alac DeWeese from Parks Seafood Riverside. Alac is a life long resident of Holly Hill, Florida. He graduated from Atlantic High School. One of his first jobs was bussing tables at Parks Seafood Restaurant. He became an expediter, trained waiter and then Bartender. Alac has grown up with the Parks Family. He will tell you he has fond memories of Jim Park, and current owner Jolynn Watkins, Jim’s daughter. He has loved working, having fun and feeling like family. Jim now retired, comes to his favorite spot at Parks, the Bar. Jim is not alone as this is a local’s favorite. It is a gathering spot, a community meeting place to eat, drink and converse. Alac though young in age, fits right in. He is a sports aficionado, a statistical dictionary. He talks sports, while serving you your favorite libation, or taking you food order.
