Haciendo un análisis de este primer semestre del 2012, me doy cuenta lo intenso que ha sido este año de expansión para Air Panama. Además, estamos más conscientes que nunca de la relación directa que existe entre nuestra capacidad de alcanzar las metas propuestas y la relación con nuestros clientes. Gracias por su apoyo continuo.
Es un año de transición que nos impulsa a completar nuestra misión de modernizar la industria del vuelo doméstico en la República. Logramos nuestra meta actualizando, renovando y expandiendo nuestra flota e infraestructura, ambas necesarias para operar eficientemente y servirles de la forma que merecen. El primero de los jets Fokker 100 está ya operativo, y el segundo lo estará muy pronto. Además, hemos incrementado la frecuencia de vuelos en las rutas a Bocas del Toro y David para llenar sus necesidades.
Para nosotros es un privilegio poder servirle. Nuestra meta es brindarles un servicio de alta calidad y así lograr superar sus expectativas. En nombre de todo el equipo de Air Panama, les doy las gracias por volar con nosotros.

En contraste con la apacible vida de pueblo, la exuberante naturaleza se muestra salvaje en sus más de 10 playas e islas poco visitadas. Siendo ruta de las ballenas que migran desde el sur en busca de aguas cálidas donde pasar el invier-no austral y aparearse, desde junio hasta noviembre, Isla Iguana es uno de los escenarios donde se puede apreciar este espectáculo.
Más de 200 especies de peces, 10 especies de corales, pelíca-nos, pájaros Bobos y aproximadamente 5 especies de tortu-gas forman parte de la biodiversidad que habita el distrito de Pedasí y sus alrededores. Isla Cañas está localizada en Tonosí, cerca de Pedasí, y es considerada el lugar más im-portante de anidación para las tortugas marinas del pacífico en Panamá, especialmente la Lapidochelis Olivacea.
El verde de la selva mezclados con el azul del mar ha se-ducido a famosos como Mick Jagger y Mel Gibson, quienes visitan sus playas poco concurridas.

In contrast to the quiet village life, the exuberant wildlife is untamed in the more than 10 beaches and islands that are rarely visited. Its waters are part of a route for whales that migrate from the south for warmer waters to spend the austral winter and mate. From June to November, Isla Iguana is one of the settings where you can see this spectacular sight.
Over 200 species of fish, 10 species of corals, pelicans, boobies and about 5 species of turtles are part of the biodiversity that inhabits the district of Pedasi and the surrounding area. Isla Cañas is located in Tonosí near Pedasi. It is considered the most important nesting ground for pacific sea turtles in Panama, especially for the Lapidochelis Olivacea.
The green of the jungle mixed with the blue sea have seduced celebrity visitors such as Mick Jagger and Mel Gibson who have come to the secluded beaches.

Isla cañas / Cañas IslandEsta isla ha sido nombrada reserva natural, ya que es ahí donde las tortugas anidan sus huevos y se puede observar una gran diversidad de especies, superior a cualquier lugar de la costa del Pacífico. Esta eclosión de huevos puede ser vista entre los meses de julio y noviembre. This island has been designated a nature reserve since it is there where turtles lay their eggs. You can see a great diversity of species, more than anywhere on the Pacific coast. Between July and November,

WEIGHT RECORD
The historical records of the Panama Canal say that “the special wonder of the Canal was the Culebra Cut”. The claim is based on days of hard work and sleepless nights that this feat represented for thousands and thousands of workers during the construction of the waterway.

El área no fue fácil para trabajar, ni lo es ahora. “El Corte Culebra es montaña y piedra… es un sitio difícil de excavar”, cuenta el capitán de la draga Rialto Milhouse Christensen (RMC), Peter Marotta.
Todas las experiencias vividas a lo largo de los 13 kilómetros de longitud del Corte en sus 40 años de servicio, le permiten hablar con propiedad.
Hoy día Marotta dirige el proyecto de dragado del Corte Cu-lebra con las dragas mecánicas, justamente el tipo de la RMC, la más grande del mundo.
Marotta cree en la potencia y en la destreza de la RMC, que llegó al Canal en septiembre de 1977, hace casi 35 años. No la cambia por ninguno de los equipos nuevos que han surgi-do con la llegada de tecnología moderna. Y es que su “bebé”, como le llama, no lo ha defraudado. Con su balde de 11.5 metros cúbicos de capacidad, la RMC ha roto récords en el Canal; el más reciente de ellos ocurrió este año. Geología diversa
El fondo del Corte Culebra no es regular. Quienes lo conocen a la perfección, como el capitán Marotta, se refieren a él como “un área de muchas fisuras”.Justamente de esa “geología diversa” emer-gió hace poco una piedra de un tamaño y un peso jamás antes vistos.
Era un día más de jornada para el operador de la RMC, Alcibíades Barrera. Después de casi 25 años en el Canal de Panamá está muy familiarizado con las tareas de draga-do en el cauce, las que realiza en turnos diurnos y nocturnos. Fue precisamente en una de esas noches, trabajando de 4 de la tarde a 12 mediano-che, cuando se percató de que una piedra, “nada común”, estaba en el fondo.
Se trataba de una enorme roca de 102 toneladas métricas, un hecho sin precedentes, pues el peso de la piedra más grande, removida al menos unos 15 años antes en el cauce, era de 64 toneladas métricas. La capacidad de carga de la RMC es de 160 toneladas métricas.
Antes, la piedra no hubiera representado peligro alguno para la navegación de los barcos porque su ubicación estaba fuera de los límites del Canal. Ahora con la ampliación de la vía interoceánica, que se lleva a cabo actualmente, el riesgo era inminente.
Barrera no dudó, “había que sacarla”, dice, y esa operación fue la que realizó la draga RMC que retiró la piedra del fon-do del Canal y la colocó en la barcaza que lleva el material dragado a los sitios de disposición.
Sin embargo, el tamaño descomunal de la roca hizo imposi-ble su transporte a bordo de la barcaza. Fue entonces cuan-do entró en acción la grúa Titán, con capacidad de 350 tone-ladas, que la removió de la barcaza y la llevó a tierra firme.
The area was not easy to work then, nor is it now. “The Culebra Cut is mountain and stone ... it is a difficult site to excavate,” says Peter Marotta, captain of the Rialto Milhouse Christensen (RMC) dredge.His 40 years of experience along the 13 kilometer-long Cut allow him to speak with authority.
Today, Marotta heads the project for dredging the Culebra Cut with mechanical dredges, specifically the RMC, the largest in the world.Marotta believes in the power and the ability of RMC, who joined the Canal in September 1977, almost 35 years ago. He wouldn’t change the dredge for any new equipment that has arisen with the invention of modern technology.
His “baby”, as he calls it, has not disappointed. With its 11.5 cubic meters tub capacity, the RMC has broken records in the Canal. The most recent record occurred this year.
Diverse Geology
The Culebra Cut floor is irregular. The people that know it well, like Captain Marotta, refer to it as “an area with many fissures”.Recently, a rock emerged from this “diverse geology” that is unique because of its extraordinary size and weight.
It was a regular day on the job for RMC operator, Alcibiades Barrera. After nearly 25 years in the Panama Canal, he is very familiar with his dredging job in the canal, which he performs in day and night shifts. It was one of these nights, working the 4pm to midnight shift, when he realized an abnormal rock lay on the bottom of the Cut.
The enormous rock weighed 102 metric tons. This was an unprecedented event. The largest rock removed had been about 15 years prior and weighed 64 metric tons. The RMC has a carrying capacity of 160 metric tons.
Before, the giant rock wouldn’t have been a problem for ships passing through because it was sitting outside of the canal limits. Today, with the expansion of the canal, it presented imminent danger.Without a doubt, Barrera knew it must be removed. The RMC dredge removed the rock from the bottom of the canal and placed it on the barge used to transport dredged materials to a deposit site.
The dredge was unable to carry the rock due to its size, so the Titan was brought into action. The Titan is a crane that has the capacity for 350 metric tons, and it was able to remove the rock from the barge and place it on dry land.

l Panama Jazz Festival fue fundado por Danilo Pérez en el año 2003 para así cumplir el sueño de tener en nuestra tierra un festival de jazz internacional de la
más alta categoría. Durante el primer año, el festival atrajo a más de ocho mil personas y más de 200 estudiantes de música que deseaban estar cerca de los maestros del jazz. Para el noveno festival más de 20,000 personas visitaron y disfrutaron del Panama Jazz Festival.
Algunos pensaron que era una locura crear un festival de Jazz cuando el panameño no estaba muy familiarizado con este ritmo. Soñador, valiente y con mucho coraje, Danilo logró su objetivo. Conocido por ser un apasionado activista social, Danilo Perez ha llevado el Panamá Jazz Festival a ser el mejor Festival de Jazz de Centroamérica y ha puesto a Panamá como centro de las miradas del mundo de la música.

Danilo Perez founded the Panama Jazz Festival in 2003 with the hopes of fulfilling his dream of having a high caliber jazz festival. During the first year, the festival attracted more than eight thousand people and over 200 music students wishing to be close to jazz masters. More than 20,000 people visited the 9th Annual Jazz Festival.
Some people thought the idea of having a jazz festival in Panama was crazy because many people here were not familiar with this type of rhythm. Danilo, known for being a passionate social activist, succeeded in making the Panama Jazz Festival the best in Central America due to his vision, bravery and courage. The festival has placed Panama at the center of the music world’s sight.

It is the smallest of the sea turtles. Their average size is 70 cm (27.5 in), and adults weigh around 45 kg (100 lbs).
Olive Ridleys feed mainly on invertebrates and play an important role in coastal and open ocean ecosystems.
Even though the Olive Ridley is the most abundant sea turtle, it is considered a threatened species.
Isla Cañas es el lugar más importante de anidación de las tortugas marinas en el Pacífico de Panamá.
Estas tortugas llegan a la playa donde nacieron 25 años antes, y cavan nidos de unos 40 cm aproximadamente en donde dejan alrededor de 80 huevos que cubren con are-na.
El periodo de incubación es de 42 días.
Sólo el 1% de los neonatos llegan a la edad reproductiva.
Esta especie sólo se encuentra en el Pacífico panameño, y no en el Atlántico.

These turtles return to where they were born 25 years later to nest. They dig 40 cm (16 in) nests, lay approximately 40 eggs and cover them with sand.

Estamos en plena temporada de esta deliciosa fruta que todos en Panamá conocemos como Pifá. En Centro América se le conoce como Pejibaye. Su nombre científico es Guillielma gasipaes o Bactris gasipaes. En otros países de América del Sur su nombre común varía entre el chontaduro, chichipay, pirijao o chonta, entre otros.
La crema de pifá es perfecta para cualquier ocasión y es un excelente aperitivo antes de un plato de pescado o mariscos.

Palm fruit “Pifá” Cream
The delicious fruit we all know as “pifa” is in full season in Panama. In Central America it is known as Pejibaye. Its scientific name is Guillielma gasipaes or Bactris gasipaes. In other South American countries its common name ranges from peach, chichipay, pirijao or chonta among others.

24 unidades de pixvaes cocidos, pelados y cortados
en mitad, sin semilla
4 dientes de ajo, pelados y picados
1 taza cebolla, finamente picada
2 cucharadas aceite vegetal Canola
2 cucharadas mantequilla sin sal
4 a 6 tazas caldo de pollo casero
1 taza crema de leche o crema para batir
Sal y pimienta al gusto
Cilantro fresco picado al gusto
Ingredientes:

24 cooked pifa, peeled, halved, with seeds removed
4 cloves of garlic, peeled and chopped
1 cup of onion, finely chopped
2 tablespoons of Canola oil
2 tablespoons of butter, without salt
4 to 6 cups of chicken stock
1 cup cooking or whipping cream
Salt and pepper to taste
Fresh, chopped cilantro to taste

Preparación: Procedure:
Vierta 12 unidades de pixvaes en una olla profunda junto con 2 dientes de ajo y la cebolla. Agregue 4 tazas de caldo y ponga a hervir por 20 minutos.
Retire del fuego y deje reposar por 10 minutos. Procesar o licuar los pixvaes calientes con parte del caldo hasta obtener una crema ligera. Si la mezcla está muy espe-sa, agregue caldo adicional hasta obtener la consisten-cia deseada. Agregar la crema de leche y combinar bien. Sazonar con sal y pimienta al gusto. Mantener la crema caliente a fuego muy bajo.
Aparte en un sartén mediano caliente el aceite con la mantequilla y el resto del ajo. A fuego medio dorar las mitades de pixvaes restantes revolviendo con frecuencia.
Servir la crema de pixvaes en platos hondos para sopa con la guarnición de pixvaes al ajillo y cilantro fresco.
Put 12 pifa in a deep pot with 2 garlic cloves and onion. Add 4 cups of stock and boil for 20 minutes.
Remove from heat and let rest for 10 minutes. Blend or process the hot pifa with part of the stock until it becomes a light cream. If it is too thick, add more stock until you reach a desired consistency. Add the whipping cream and mix well. Season with salt and pepper to taste. Keep the pifa cream hot on very low heat.
Heat the canola oil in a separate pan, and add the rest of the garlic. Add the remaining pifa, and sautee on medium heat. Stir frequently.
Serve the pifa cream in a soup bowl. Garnish with the sauteed pifa and garlic and fresh cilantro.

Llegamos al bello Hotel Panamonte para vivir una expe-riencia memorable. Nos recibieron con un delicioso refres-co de naranjilla, luego pasamos a nuestra hermosa suite a descansar mientras llegaba la hora del masaje con piedras calientes; no puedo explicar el estado de relajación que sentí, un masaje espectacular en un ambiente de ensueño, después un pequeño descanso y ¡lista para la noche! En la terraza del Hotel, a la luz de la chimenea, compartimos la cena de bienvenida denominada “Regreso al Terruño”, un derroche exquisito de sabores, difícil de olvidar. Para resal-tar: las croustades de Cremini trufados al aroma de rome-ro, los Lollipops de Langosta con condimento agridulce que causaron furor en la mesa y los dados de atún con shishimi togharashi, microberros, wasabi mayo y soya dulce.

We arrived at the Panamonte Hotel hoping to have a memorable experience. We were greeted with a delicious naranjilla refreshment, then moved to our beautiful suite to rest before our hot stone massage. I cannot explain the state of relaxation that I felt. It was a spectacular massage in a wonderful setting. After a brief rest, I was ready for the night! On the hotel terrace by fireplace light, we shared a welcome dinner labeled “Homeland Return”. It was an abundance of flavors that will not be forgotten soon. Our Cremini croustades seasoned with truffles and rosemary were highlighted by sweet and sour lobster skewers that caused chaos at the table. Not to mention the diced tuna with shishimi togharashi, micro watercress, fresh wasabi mayo and sweet soy.

donde, en la intimidad y camaradería de su Cooking Studio, el chef Charlie Co-llins en compañía de Jorge Jurado, nos recibieron con un obsequio de bienvenida, delantales bordados, un té frío con jengibre y hierba buena, riquísimo. Luego nos revelaron con detalle deliciosas recetas, secretos y “tips” en una clase amena e interactiva. Después pa-samos al hermoso comedor en donde un gran chande-lier adornado con ramas de romero impregnaba el am-biente de ese olor tan deli-cioso, y nos preparaba para una velada de degustación que fue un regalo al paladar, simplemente exquisita.
Un sitio digno de visitar, con paisajes hermosos, perfec-tos para relajarse mientras aprendes detalles que te ha-cen valorar este apreciado grano. Allí tuvimos la expe-riencia de asistir a una cata de café y de almorzar en su acogedor restaurante, donde recibimos la fina atención de su personal, encabeza-dos por su chef que hizo una nutrida demostración de sus dotes culinarias. ¿Y de qué manera podría culmi-nar esta visita? Por supuesto que sí, con una rica taza de café acompañada de un cre-me brulee.

It is a site worth visiting, with beautiful scenery, perfect for relaxing while learning details that make you appreciate this precious grain. We were given a coffee tasting and lunch at a cozy restaurant where we received the kind attention of their staff led by the chef who displayed his vast cooking skills. What better way to end this visit? With a cup of coffee and a creme brulee.
Saturday afternoon brought us the pleasant experience of attending a master cooking class called “Taste of Tuscany in Boquete.
In the intimacy and camaraderie of his Cooking Studio, Chef Charlie Collins and Jorge Jurado received us with a welcome gift, embroidered aprons, iced tea with ginger and delicious spearmint. Then, we were shown how to make delicious recipes, secrets and tips, in a fun, interactive class. Afterward, we moved to the beautiful dining room where a large chandelier decorated with rosemary branches filled the room with a delicioius aroma. A tasting menu was prepared for us that was a gift to the palate, simply exquisite.
Para los amantes de la cocina les detallo los platos: Bruschette de Peperonata, Cipolle Agro-dolce, Vellutata de Puerros con Tomates, Peco-rino, Risotto con Hongos Silvestres, Parpadelle con Ragú de Ternera y de postre Zabaglione con Moras y Fresas.
Un fin de semana lleno de delicadezas, detalles especiales e inolvidables que hicieron de esta experiencia una de las mejores de mi vida, gra-cias a MasterCard Black.

I will highlight some of the dishes for the sake of food lovers: Peperonata Bruschette, Sweet and Sout Cipolle, Leek and Tomato Vellutata, Pecorino, Wild Mushroom Risotto, Veal Ragout Parpadelle, and blackberry and strawberry zabaglione for dessert.
Thanks to MasterCard Black for a weekend full of delicacies, special and unforgettable details that made this experience one of the best of my life.
