Creamed Corn Gratin

4 strips bacon, chopped

2 medium sweet onions, choppedSalt and pepper

3 cans creamed corn

1 T fresh thyme (or 1 t dried)

1 T butter (for greasing)

cup parmesan cheese

In a large saut pan, cook bacon over medium

heat until crispy. Remove bacon pieces from

the pan and in remaining bacon fat, cook onion

slowly over low heat until caramelized, stirring

occasionally, about 20 minutes. Add back the

bacon, and the thyme and cook another minute

or two to release avors.

Add creamed corn and cook over low heat ten

minutes. Salt and pepper to taste. Heat broiler

to high. Place corn mixture in a buttered gratindish. Top with parmesan cheese and broil until

golden brown and bubbly, about two minutes.

Quince Paste and

Crme Frache Tartlets

Preheat oven to 400. Divide pie dough into 4

pieces; roll out on a oured surface to just under

1/4 inch. Cut 5-inch circles then press circles

into 4-inch tartlet pans; trim and crimp edges.Chill 20 minutes. Line shells with parchment

paper and ll with rice or pie weights; bake 12

minutes. Remove rice and paper. Prick dough

3 times on the bottom and bake until crust is

cooked and golden, 6 to 8 minutes.

Heat quince paste, butter, salt, and 3 table-

spoons water over medium heat, until bubbling.Whisk to remove lumps. Remove from heat; stir

in wine. To serve, top with a dollop of crme

frache and a mint leaf (if using).

2 6-ounce packages dried fruit blend, diced

2 1/4 cups apple cider

tablespoon oil

tablespoon onion, diced small

2 tablespoon apricot preserves

sprig fresh thyme (optional)

Salt and pepper as needed

Place diced dried fruit in a medium-sized

bowl. Warm apple cider in a sauce pan until

immering then pour over the dried fruit. Dry

mpty sauce pan and return to medium heat.

Pour oil into sauce pan, add onions and cook

or 2 minutes. Add fruit and cider, apricotpreserves and fresh thyme. Bring to a simmer

nd cook until fruit is soft and sauce is thick-

ned. Adjust seasoning with salt and pepper.
