The holidays are a time for balancing tradition with change. So it’s fitting that I kick off my new role as editor of Viva with the holi-day issue. In terms of keeping with tradition, I have been a writer and editor for almost 15 years. Also, I have always had a passion for health and wellness; whether it was working as a fitness director and personal trainer, running a marathon or biking with my kids. In the past I was editor-in-chief of two health publications; after having my first child almost seven years ago, however, I decided to switch to freelance so I could lead a more balanced life.
Now, after seven years of writing for a variety of publications, it’s a welcome change to be part of a team again and return to my pas-sion of delivering information people need to make healthy changes to their life. As a busy mother of three, I understand how difficult it can be to make time for fitness, to eat right, and to carve out a little me-time. At times it can seem impossible. Taking care of yourself, however, is a key ingredient of leading a balanced life. Our goal at Viva is to show you little ways to boost your health – and the health of your family – that take minimal commitment, while offering maximum rewards.

The Mark for Events, where Nia Long’s VIVA photo shoot took
place, lived up to its moniker. It definitely became an event from the moment Nia Long entered and then took center stage for the camera. Our cover team was pre-pared for the entrance of the actor and director who arrived in jeans, tee and a big smile.
Upbeat music, girl talk and mommy chatter filled the space with the same enthusiasm usually reserved for a baby shower. “My little one is home with a cold,” said Long as she slipped into the burgundy velvet dress. “Ooooh this dress is so rich – it makes me feel so playful and romantic. The exciting thing about doing a photo
shoot is you get to play dress up. I love it! Velvet is just one of those materi-als that make you feel special.” With a gleam in her eye and a bounce in her stiletto-heeled step, Long was set to glam it up for the camera.

suffer from rosacea. While dealing with the skin condition can be inconvenient, these celebrities are proof that you can still look great and have amazing skin – you just need to know a few little secrets.
What is RosaceaRosacea affects close to 20 million North Americans. It is most likely to occur in fair-skinned people and tends to be genetic, but anyone can get it at any time in their life (it’s most common between ages 30 to 50 though). Rosacea can also look different on different people, but characteristics tend to include: redness on the cheeks, nose, chin and fore-head; acne-like bumps or pimples on the face; a tendency to blush easily; tight, dry or itchy skin on the face; a burning

or stinging sensation on the face; visible blood vessels on the face; and irritated eyes.
Because of its appearance, rosacea is sometimes referred to as adult acne. While both conditions can cause pimples, rosacea requires different therapy. In fact, some acne treat-ments can make it worse. Because of the chronic nature of rosacea it rarely goes away by itself. “With time rosacea gets worse so it’s important to seek treatment as soon as possible,” says Dr. Lisa Kellet, a Toronto-based dermatologist.
Rosacea tRiggeRsOne of the most important steps in keeping your rosacea in check is to learn your triggers and try to avoid them when-ever possible. Flare-ups can be provoked by a wide range of environmental, physical, and emotional factors and rosacea triggers vary from person to person.

While rosacea is not a by-product of alcohol abuse, as little as one drink can aggravate flare-ups. Red wine tends to be especially problematic. Other triggers include: extreme heat, exercise, and stress.
“Avoiding triggers can be extremely difficult,” says Kellet. That being said, it’s still important to identify your triggers. Keeping a rosacea journal might be useful if you are hav-ing trouble pinpointing what makes your rosacea worse. Knowing your triggers when you visit your dermatologist will make it easier for them to develop a plan to keep your rosacea in check.
Once you’ve identified triggers you still need to monitor what causes your flare-ups. “New triggers can pop up over time,” says Kellet.
Managing your rosaceaRosacea can’t be cured. It can, however, be treated. Because rosacea gets worse over time if left untreated, the first thing you should do is visit your dermatologist. “Treatments vary depending on your symptoms and triggers,” says Kellet. For example, topical treatments can be very effective in treating
acne-like papules, but they do nothing for redness or visible blood vessels. Likewise, Accutane and certain antibiotics can diminish papules but would also be ineffective in treating redness or blood vessels. Photothermolysis, a laser therapy, can be very effective in treating the later, however. “The lasers warm the blood vessel walls and help shut them down,” says Kellet. Lumenis One is another great option for non-papular rosacea. “Multiple wavelengths of light can help soothe the skin,” says Kellet.
Once your condition has been properly diagnosed and your triggers have been identified there is a lot you can do on your own to keep your rosacea in check.
Finding the right skin care products is essential. Rosacea-prone skin tends to be sensitive, so products with alcohol and fragrance can irritate your skin. Witch hazel, menthol, peppermint and eucalyptus oil also tend to be triggers. People with rosacea should also avoid scrubs and toners and products made to treat acne.
Ideally you should cleanse your skin with alcohol- and fragrance-free products; then rinse with lukewarm water, and blot your face dry with a soft cotton towel. Also, always wear a broad-spectrum (UVA and UVB protection) sunscreen with an SPF of 15 or higher.
Like Kellet said, avoiding triggers can be extremely difficult. That being said, aim to avoid extreme
weather whenever possible. Cozying up by a fire or enjoying a hot bath or sauna can be overwhelming. If you have to go out in the cold, cover up with a hat and scarf.
If exercise is a trigger, try to workout indoors in a well-ventilated area – preferably by a fan. If you’re training out-doors, do so when the sun is at its weakest (early morning or evening) and make sure you rehydrate often.
With a few simple lifestyle changes you may find that your rosacea is much easier to handle than you once thought. VM

Blueberries, and their European counterparts bilberries, have long been touted for eye health. In vitro studies show the flavonoids in blueberries can protect retinal cells from age-related and oxidative stress-induced cell death.
A study published in Nutrition Research showed that blueberries may inhibit DNA damage by a staggering 18 per cent. A journal submission in Circulation showed that anthocyanin found in blueberries may reduce plaque forma-tion and dilate blood vessels. A study published in the Annals of Neurology looked at sample of more than 16,000 women and concluded that women with highest intake of ber-ries delayed their cognitive aging by as much as 2.5 years. In 1942, during WWII, penicillin and other sulfa drugs were scarce and garlic was used as an antiseptic to disinfect battle wounds, prevent gangrene and cure dysentery.

It’s been almost 20 years since Andie MacDowell enthralled audiences – and Hugh Grant – in Four Weddings and a Funeral,
but the five-foot-eight actor and model still manages to turn heads wherever she goes. Here’s how MacDowell manages the stress in her life and why she still looks drop dead gorgeous at 55.
StreSS ManageMentMacDowell’s latest project, a Hallmark Channel series Cedar Cove, has relocated the actor to Vancouver – which suites her just fine. British Columbia provides the perfect backdrop for a healthy lifestyle and allows MacDowell to indulge in one of her favourite pastimes – hiking.
“Exercise is the best thing for me in terms of reducing any stress in my life,” says MacDowell. “I’m fortunate because I actually enjoy it and have never been one for sitting.” Hiking may be one of her first loves, but her schedule doesn’t always allow for it. MacDowell also enjoys walking, bike rides, and yoga. “Getting your endorphins going and blood flowing is such a good stress reducer,” says MacDowell. “It keeps your body and mind healthy; as well as your heart.”
If you want to get the true stress-reducing benefits, MacDowell says you need to be conscious of what’s going on in your head when you’re moving. “Ever been on a walk and continue to think about stressful things?” she asks. It’s counter productive. “We all have to be conscious of what we’re thinking and not bring nega-tive thoughts in,” says MacDowell.
When MacDowell feels negative thoughts creeping in she focuses on her breathing. MacDowell slowly breathes in for a count of 10 and then releases for a count of 10. “It sounds so simple but it’s not,” she says. Focusing on your breath quiets the mind and can bring a mini meditation to your workouts. If that doesn’t work, she sings a song. “It can be a totally silly song that helps your mind stop worrying and wandering – even Twinkle Twinkle Little Star will work.”
MacDowell also sees the importance of retreats. “I used to go to this place in North Carolina for a week and spend a lot of quiet time. You go days without speaking,” says MacDowell. “Without saying one word!” The actor swears that it’s an amazing experience to be quiet for a day. “It helps you get to know yourself a little bit bitter; it can help you be more attuned with yourself. People should try [quiet] for an hour or even a day,” she says.

Beauty SecretSMacDowell is honest in acknowledging that her looks are a still a big part of her job. In addition to exercise, MacDowell maintains a svelte figure by doing a variety of cleanses and getting at least eight hours of sleep a night.
Cortisol and serotonin levels are important for lower-ing anxiety and achieving a sound sleep. To help keep her hormones in check, MacDowell regularly eats red or pur-ple potatoes. “I read that eating potatoes (with the skin on) at night helps build serotonin so you sleep better,” says MacDowell.
For dinner, MacDowell cuts up a variety of fresh veg-etables, with potatoes, and steams them all together. “I sprinkle on a spice called Ghost Salt or add salsa, and top with a salad dressing made with jalapenos and that’s a very filling and satisfying dinner for me,” says MacDowell.
She does sometimes add a little chocolate at the end of a meal. A staple around her beachside home is dark choco-late. “And you can’t make me feel guilty about that either,” she giggles. “Again, I’ve read many studies that say choco-late is good for you. It helps boost your mood and it effects your body so that you feel love – to have that feeling of being in love. So how can it be bad for you?”
changing Beauty“I think beauty is timeless. When you turn 50 though, beauty changes,” says MacDowell. “It has to do more with the people around me, caring for them, having them care for me. If you only text and email, you’re in big trouble. You need to have meaningful contact with people.
Being happy is a key to looking good and leading a long and happy life. I have an intense need inside of me to finding the answer of what makes me happy. It’s up to me to choose to be
happy and it’s a choice I have to make every day. How I live my life, how I relate to my family – that’s an internal perspective of what beauty is on a bigger scale. If I want to still wear red lipstick at my age with a pink sweater – colors that make me feel vibrant and happy – that’s what I’m going to do.” VM

orna Vanderhaeghe’s self-titled company is likely a lit-tle younger than you would expect. In just over a decade
the entrepreneur has turned a small supplement start-up into a company that landed her a top five position on Profit’s list of female entrepreneurs for 2013.

Her e-newsletter has over 50,000 subscribers and her forum got so big that they had to temporarily suspend it when it topped 500 questions a day. So what’s the secret to Vanderhaeghe’s success? Creating a women-friendly company in every way, educating the consumer – and creating products that work.
Building the BrandVanderhaeghe didn’t blindly jump into the nutritional supplement industry. She had already owned and sold Klaire Labs Canada. Vanderhaeghe had also served as the marketing manager for Flora distributors, founded a nutrition course program and co-authored the interna-tional best seller The Immune System Cure. With degrees
in both biochemistry and nutrition, Vanderhaeghe has always known what she’s doing when it comes to nutrition.
Women would come to her lectures and ask questions about hormonal health. Afterwards people would come up to Vanderhaeghe and say they were unable to find all the supple-

ments she was recommending. Around the same time, Vanderhaeghe developed uterine fibroids. She started searching for solutions to her own problem and looking into ways to provide the products she was recommending to others – and Lorna Vanderhaeghe Health Solutions, Inc. was born.
A Family-Focused Company “Our products work,” says Vanderhaeghe. “Most people look at how to mask the problem. I look at the root problem. Everything is based on science.” Vanderhaeghe seeks to find patterns in illness and solve these by creating products that are based on scientific studies. “So many problems come from hor-monal imbalance,” says Vanderhaeghe. “Often having too much estrogen in relation to other hormones. I research how we can balance hormones naturally.”
Vanderhaeghe’s business is also different from many others in that it’s rooted in family. “Back when I had Klaire Labs, my kids used to help me pack boxes after school. I think it’s important to balance career with kids, and for your kids to see that their mother works hard,” says Vanderhaeghe.
Vanderhaeghe has four children and six grand-children. Her partner’s three teenage sons also live with the couple part time. Her house has always been busy – everyone always knew she had time for them though. “You need to be there at 3:00 for your kids. It’s so important,” says Vanderhaeghe.
The key to mixing work and family is setting boundaries. “My kids grew up with two phones in the house,” says Vanderhaeghe. There was a work phone and a home phone. “They knew when the red phone was in use no one could talk or fight.”
Fitting It All In“You have to realize what’s not important,” says Vanderhaeghe. “When I had young kids I remember staying up until midnight for nights on end to make Halloween costumes from scratch.” It’s okay to go out and buy a costume. Does it really matter if you make it from scratch? Sure it’s nice. In the long run will it make a difference in your kids life? Is it worth stressing yourself out over? “You don’t need to be perfect. You don’t need to make a cookie with every kid’s in your child’s class name on it for Christmas. Prioritize and delegate.”
Vanderhaeghe admits that one of the hardest things for her to do was to hire a cleaning lady. When she did, she made so much more time for important things.
“Find that work and life balance,” says Vanderhaeghe. “Your kids are only lit-tle for a very short time. Five years is gone in a blink and you never get it back.” You may not be able to have it all, but you can have all the important stuff. VM
Vanderhaeghe tries to bring her family and work values to her office. “We have a very young staff. The average age is 27,” says Vanderhaeghe. As a result, there are a lot of new moms. “We do everything we can to accom-modate women with babies so they can continue to work.” Some moms work from home and one even has a crib in her office. “Moms need flexibility. My business is very pro women and pro family.
“If you don’t like your job, you better find a different job.”

Long starts her day with 20 minutes of meditation. “I set my intention on what I need to accomplish so that when the kids get up I’ve already done the work I need to do in order for everyone to have a good day,” says Long. “Don’t get me wrong, I still feel frazzled at times. Starting off my day this way gives me a place to go back to.”

• More Peaks Than ValleysAfter more than 20 years spent in the spotlight of tele-vision and film, Long has had to learn to block out the noise and focus on what’s important. The five-foot-two actor was born in Brooklyn, New York; then moved with her single mom to Los Angeles to find initial success as a Disney star and on the soap opera Guiding Light.
Her audience reach is now broader than most actors. You may know her as Don Cheadle’s love interest on Showtime’s House of Lies, or as the star of movies includ-ing: Made In America, Soul Food, and Big Mamma’s House. Going back a little, Long played Will Smith’s long-time girlfriend on The Fresh Prince of Bel-Air and Brandi in Boyz n the Hood. (One of my favourite mov-ies of all time.)
Throughout her journey Long, now 43, admits to experienc-ing peaks and valleys both professionally and personally. “If you don’t experience ups and downs in life, you’re downright bor-ing!” says Long. “You need to be able to balance out your mind, body and spiritual sides on a regular basis. For me, the spiritual side is meditation and prayer. Working out is for the body and the emotional part is just understanding that I can handle it, even when it’s difficult.”
Long has always been a strong, independent woman who has a solid grip on life. “Listen, I am probably one of the most sen-sitive people. I cry at the drop of a hat, my feelings get hurt eas-ily. It’s because I’m vulnerable, and I want to live my life being vulnerable when I need to be.”
On this sun-soaked morning, with minimal make-up, jeans and comfortable tee, Long turns serious for a moment, admit-

ting that the ability to recognize her vulnerability has ulti-mately given her strength. “Because it’s a choice. It’s not that I’m vulnerable because I’m not strong or I don’t know how to handle things. I’m vulnerable because that’s the only way I believe you continue to learn, re-create yourself and re-gen-erate, and understand that life is not always easy. When it’s great – enjoy it! And when it’s difficult, just know that you can get through it.”
Long feels there’s nothing like parenthood to put life into a clearer perspective. “I can’t imagine life without my kids. It is a challenge sometimes making time for myself. I love going to the movies with Ime whenever we can; I love music. I love traveling and I love good food with a bottle of wine with friends. I love interior decorating. So making moments for all of these things is difficult at times.”
• Making Time for FitnessTaking care of your body is part of any balanced life. Long opts for a mix of Pilates, yoga and boxing – each with their own benefits. “I do more yoga now than Pilates because it goes along with my meditation. Boxing is very aggressive so when you just want to get it out or you’re frustrated about something, just making your body have to work that hard is great. Afterwards, I feel wow! I just kicked some butt and it feels great. Now just let me go kick life’s butt and keep it going.”
• Eating for Pleasure – and HealthLong loves food. She’s aware of how to balance her eating with her body’s nutritional needs. “I choose quinoa, avocado, fresh fruit, vegetables – all mostly from the local farmer’s market because the produce is better and you know what you’re eating.” Long tries to eat as gluten-free as possible and to include more pro-tein in her diet. “I am a blood type that needs to eat more meat. I was raised a vegetarian so it’s an interesting mix.”
On any given night, you may find the working mom whipping up turkey tacos in the family kitchen. “I make the best ground turkey tacos on the planet,” she boasts. “The secret is Spike, a spice I put in everything and a dollop of regular sour cream. They are absolutely divine. I don’t always have the sour cream because I’m constantly trying to make room for the chocolate chip cookies for dessert.”
• A Balanced Life“Everyone should try to balance themselves out as much as pos-sible,” says Long. In addition to eating healthy and exercise, Long recently gotten involved in homeopathy. “The whole idea is very intriguing to me. I’ve learned so much about the importance of the adrenals – working moms especially can relate to this. When you are depleted, your body doesn’t function as quickly and effi-ciently as it should. Building that part of yourself up by going straight to the cells is much more effective,” says Long. “Modern medicine means you take a pill for this, a pill for that, but it’s just really a band-aide for a cellular issue. What I’m doing is more

for prevention and I can tell you that since I’ve been doing this, I have a ton more energy, I sleep really well and don’t wake up groggy.”
Long also feels balance is about charity work. “Life isn’t always easy. My mom has a master’s in art and we still had a tough life. So when amazing things started to happen in my life, I immediately wanted to share that with young women who may or may not be a part of the community that I grew up in. To sit down and talk with someone for
20 minutes is a personal obligation that I feel I have gifted in a real positive way that will hopefully help.
Long’s journey is constantly unfolding before her eyes. The lengthy ride has given aim at finding, accepting and loving herself for the woman she is today. “Don’t get me wrong, life is never perfect – there are always challenges, always moments of worry because people have free will and we have to honour that. Life is cyclical and it’s the core process that keeps you moving forward. Understanding the cycle of life, just being in the moment and enjoying that moment, giving and receiving – it’s a universal concept.” VM

dIrectIons:there really is no real “recipe” for this dish, it’s about as easy as making a sandwich. Preheat oven to 400°F (200°C). Generously spread flatbread with fig jam, dot the bread with pieces of blue cheese and prosciutto. Bake flatbread in middle of oven place until warmed through and cheese has softened and bread is lightly toasted, about 8 minutes.
Remove from oven, sprinkle with arugula and cut into wedges.

IngredIents:• 25 baguette slices, sliced 1⁄2" thick and lightly toasted• 1 cup (250 mL) mayonnaise• 1⁄4 cup (60 mL) prepared horseradish, or to taste• 2 tbsp (30 mL) grainy Dijon mustard• 2 tsp (10 mL) Worcestershire sauce• 1 tbsp (15 mL) olive oil• 11⁄2 lb (700 gr) beef tenderloin, trimmed• Salt and freshly ground black pepper
dIrectIons:In a small bowl stir together mayonnaise, horseradish, mustard and Worcestershire sauce. Set aside.
Preheat oven to 400°F (200°C).
Season tenderloin generously with salt and freshly ground black pepper. In a medium heavy bottomed pan heat oil over medium-high.
Carefully sear the tenderloin until browned on all sides. Place in preheated oven to continue cooking to desired doneness, for medium-rare internal temperature should read 140 °F (60°C) with a meat thermometer. Make sure to not overcook the beef. Let cooked beef rest for 10 minutes before slicing.
Slice the meat as thinly as possible, place a generous dollop of mayonnaise on each baguette slice and top with beef.
Top with a light grinding of fresh pepper and serve.

DIRECTIONS1. Empty a package of Cuisine Camino Semi-sweet chocolate
chips in a heat resistant glass bowl. In a saucepan, heat the whipping cream—or the coconut milk—over medium heat until it reaches boiling point. Pour the cream over the chocolate chips and mix with a wooden spoon. For a uniform texture, place the bowl on low heat and stir until chocolate is completely melted and smooth.
2. Add vanilla extract and let the mixture (ganache) cool at room temperature. Refrigerate for 1.5 to 2 hours. Texture should be firm.
3. Using a small ice cream scoop or two spoons, form 20 balls of ganache (they don’t have to be perfectly round at that stage) and place them on a cookie sheet lined with wax paper. Refrigerate for 1 hour.
4. Using a double boiler, melt Cuisine Camino Bittersweet chocolate chips with the margarine. On low heat, keep stirring until a smooth chocolate texture is reached. Remove the cookie sheet from the fridge. With your fingers, gently adjust the ganache balls to make them rounder if necessary.
5. Dip the ganache balls into the melted chocolate to coat them and place them back onto the cookie sheet. If the melted chocolate becomes harder, return the bowl to the double boiler and stir until texture is soft again. If you would like to add toppings onto your truffles, do it while the chocolate coating is still warm so the toppings can stick to the chocolate. See our topping suggestions below.
6. Refrigerate truffles for another 20 to 30 min. Truffles are best served cold.

here has been much talk about chocolate and wine pairing over the last number of years. It makes sense, as interest in wine grows why wouldn’t people start to consider its pairing potential with
one of the world’s favourite foods, chocolate? This is a debate with many opinions. There are those who are strong
believers in the partnership of wine and chocolate, and those who are against it. I fall somewhere in the middle of the discussion.
There is something instinctual that makes us want to put wine and choco-late together. It’s like setting up your two favourite pals on a blind date – you love both of them. That doesn’t, however, mean they’ll like each other.
If you’re simply looking to have a bit of fun by matching up wine and chocolate then the match doesn’t have to be perfect. Just relish in the fact that you’re indulging in two of life’s great pleasures. If, however, you want to get more serious you need to tread lightly. The wrong wine and chocolate can result in very unpleas-ant effects in the mouth, and will spoil the taste of both the wine and the chocolate.
The key point to consider when pairing chocolate with wine is its cocoa percentage. This will determine its amount of tannin (a bitter compound found in grapes, walnuts, chocolate, black tea). Also consider the sweet-ness level. Tannins and sugar are what will have to match up properly with the wine. Otherwise these two components can destroy its taste.
When in doubt the best choice for chocolate is a sweet dessert wine. On the other hand, the riskiest endeavour is to match dark chocolate (high in tannin) with dry red wine (no sweetness, and usually high in tannins).
Never one to shy away from a challenge I’ve chosen to match an Australian Shiraz from Mitolo, a winery in McLaren Vale with an extra dark chocolate from Camino Fair Trade Organic. The two together cre-ate a really luxurious sensation in the mouth. The high alcohol percentage in the wine mimics the velvety texture of the chocolate, and helps to tame the tannins’ mouth-gripping effect. The notes of cocoa and eucalyptus in the wine seem to be elevated by the chocolate, and they both have a simi-lar length and weight, which is important. You never want one side of the pairing to overwhelm the other; you should always still be able to appre-
ciate both partners. So next time you open a bottle of red wine, and there’s some good quality chocolate lying around have a little nibble. See what happens, you might have a win-ning combination on your hands. And like I always say, even a bad match is a chance to learn. VM

dirEctionsCut each tomato into four slices. Cut each mozzarella ball into three slices.
on individual plates, stack the tomato slices alternating with the mozzarella slices and basil leaves – starting and finishing with a tomato. Reserve extra basil for garnish.
drizzle each tomato mozzarella stack with one table-spoon of the balsamic glaze and half a tablespoon of extra virgin olive oil. Sprinkle with sea salt and black pep-per. Garnish with additional basil.
Chef’s Notes: *Balsamic glaze is found in many well-stocked grocery stores and specialty food shops. If you are unable to find it, then you can make it easily. Combine 3/4 cup balsamic vinegar and 2 Tbsp sugar in a small pan. Bring to a simmer over medium-low heat. Reduce heat to low and slowly simmer for 10 to 12 minutes to reduce liq-uid to about 1/4 cup or a light syrup texture. Watch care-fully so as not to over-reduce. Store covered at room temperature until needed.

(about 4 – 5 peppers), stemmed, seeded and cut into 1” pieces• 3 Tbsp olive oil • 1/2 cup diced onions • 1 tbsp chopped garlic • 2 tsp ground coriander • 1 tsp ground cumin • 1/2 to 1 tsp hot sauce • 2 cups chicken broth • 3/4 cup heavy cream or half-and-half • 2 tsp cornstarch • 1 Tbsp water • Salt to taste• Garnish: Chopped fresh parsley or thinly sliced chives
LIme Cream • 1/4 cup sour cream • 1 Tbsp fresh lime
juice• 1 Tbsp water
dIreCtIonssoupIn a large soup ket-tle, heat oil over medium-high heat until hot then add peppers and onions. Cook, stirring often, for about eight to 10 minutes or until tender.
add garlic, coriander and cumin; cook for about 30 seconds while stirring. add hot sauce and broth and bring to a boil. add cream, bring to a simmer then reduce heat to medium-low and simmer for about 10 minutes.
in a small bowl mix the cornstarch and water then stir the mixture into the soup. Stirring constantly, return the soup to a simmer to thicken.
Very carefully puree the hot soup in a blender in small batches until very smooth. Taste for salt and season to taste—saltiness will depend on whether you used canned or homemade chicken broth. Keep warm until ready to serve.
LIme CreamIn a small bowl whisk together the sour cream, lime juice and water until smooth.
Serve the soup in bowls and drizzle a swirl of lime cream over soup. Garnish with parsley or chives if desired.

In a large non-stick 12-inch sauté pan, heat oil on medium-high heat. Sauté onions for about four minutes, stirring often or until soft. Then add sausage and peppers, and sauté for 15 more minutes or until peppers are softened.

a life that can best be described as bal-anced chaos. In addition to Bomb Girls, the actor has two mini-series coming out in 2014–The Best Laid Plans and The Husband. She is also an avid yoga enthusiast and plays the ukulele in an indie band. Here’s how Balfour fits it all in and makes time for fun and health.

Q. What is Greek yogurt?A. Greek yogurt refers to a style of yogurt that is rich in texture, high in protein con-tent, and is typically high in fat.
Q. When did people start eating Greek yogurt?A. Greek yogurt has been widely con-sumed in the Middle East and Balkan Regions for ages and has only been intro-duced to North America diet about a decade ago.
Q. How is Greek yogurt made?A. Traditionally, Greek yogurt is made by placing yogurt in cloth bags and straining overnight to concentrate the solids. The process is time consuming and labour intensive, making mass production for commercialization a challenge. Over the years, technological advance-ments have enabled the commercialization of Greek yogurt through innovative methods such as ultrafiltration and the appli-cation of milk protein. The ultrafiltration method uses membrane technology to concentrate the solids. The application of milk protein involves the use of powder to increase protein content and, with the aid of shear equipment, generates thick and smooth texture without by-products.
Q. What type of milk is Greek yogurt created from?A. Generally, skim milk is used in ultrafiltration, as it can be concen-trated up to seven times. As a result, ultrafiltration increases the concentration of protein, while reducing sugar content because lactose has been permeated through the membranes. Q. What is the difference between Greek yogurt and Greek style yogurt?A. Through my research I am not aware of a clear definition for Greek-style yogurt. However, Olympic has a line of Krema 11%MF products that we call Greek style. The product is rich, thick, and creamy like Greek yogurt, however it is not processed using the above methods. Q. What are the health benefits of Greek yogurt?A. Greek yogurt has high nutritional values. Whereas conventional yogurt would have protein around five per cent, Greek yogurt’s protein count is about 10 per cent. Also, the sugar content is less in Greek yogurt. There is also more calcium and phosphorus in Greek yogurt.

instead choosing activities that are also fun for her. The for-mer dancer still takes the occasional dance class. “My bal-let shoes are hanging in my closet yearning to be used,” says Balfour. She is also passionate about yoga and practices hot yoga five or six mornings a week. “I do this first thing in the morning. I find yoga really helps get my thoughts out of my head and I find when I’ve done a class and I’m out by 10:00 a.m., I’ve communed with myself, said an intention for the day, stretched my body, breathed a lot and it’s just a great way to set myself up for a good day.”
Why Dairy haD to GoA good start to Balfour’s day also beings with a fresh raw juice or a smoothie, sometimes with her favorite guilty pleasure added. “Yeah, I love peanut butter,” says Balfour. “I’ll add it to my smoothies sometimes or snack with a cut up apple. I guess having peanut butter [and other guilty pleasures] in modera-tion–and really enjoying them when I do–allows me to lead a balanced life,” she says.
Balfour eats healthy for the most part and her nutritional staples include: an ample selection of herbal and green teas, lots of fruit and vegetables (“for my juices and smoothies”), oats, brown rice and quinoa. “I recently stopped eating dairy so no more cheese and crackers in the house. I love cheese, yogurt and all that stuff but I found it wasn’t agreeing with me. It had a bad effect on my skin and after two months of no dairy, I saw a significant difference – for the better – in my skin.” For dairy substitutions, Balfour turns to almond or homemade hemp milk. “I’ve found I’m not really missing it much – except the cheese,” she laughs. “Maybe someday in the future, I’ll begin slowly adding back in some dairy like sheep or goat’s milk or cheese, but not cow’s milk.”
Growing up with a physician father wagging his finger at her for forgetting vitamins and supplements, Balfour feels she leads a rather healthy lifestyle, albeit a busy one. “I aspire to live a balanced life; I thrive when I’m focusing and putting attention on some sort of stability and working at finding a healthy balance,” she says. “But being an actor and a nomad of sorts, one can indulge in organized chaos every now and then. So I guess I balance myself between organized chaos and a very calm, routine based life. It sways from one another every now and then, but mostly I put the emphasis on finding structure, routine and balance where I can.”
the Perfect MixHer to-do list for the day speaks volumes for Balfour’s life-style. “I did yoga earlier and am going to have brunch with my roommate. Then a bit of a band practice this afternoon because we’re having friends over tomorrow night to play some music for them. Then I have my emails, which I try to do every day where I give myself a three-hour time period for

administration stuff. This evening I’m going downtown to listen to a bluegrass and honkytonk band with my friend.” Whew!
Balfour laughs after ticking off her day’s goals, realizing how jam-packed it must sound. “Balanced living is a good mixture of allowing yourself everything you love, disciplining yourself with things you know are good for you and keeping an open mind on what you need; what your body and mind are telling you. Listening to yourself informs balanced living more than anything else.” VM

Contrary to popular advice, it’s best to avoid the bulkhead with older babies and toddlers because these seats offer nei-ther under-seat space nor seat pockets, so you’ll have to store all your toys and supplies in the overhead compartment. The food trays in the bulkhead also pop up from the armrest, effec-tively trapping you in your seat when food is served.
Don’t put your child in the aisle seat as the food cart and pas-sengers carrying luggage could injure him.
If you can afford to, buy a seat for your child and bring along his car seat. The familiarity may make it easier for
him to sit still and even sleep. This only works when your child is able to fit comfortably in the tight seat compartments. A tod-dler with long legs will be scrunched between his seat and the seat in front of him. The added benefit of bringing a car seat
is the safety feature of having your child in a protective seat on the plane. Make sure your car seat has a sticker that says it’s FAA approved for air travel so that it’s not turned away at the gate.
Visit your baby’s pediatrician a week before your trip to be sure he isn’t harboring an ear infection or other ill-
ness. If possible, avoid exposing your child to other children the week before the flight so he’s less likely to catch a kid-car-ried bug. If your baby will be taking any medication on the day of the trip (such as a decongestant or pain reliever), be sure to test it out before the day of travel to gauge any side effects.

Airport EAsEGet to the airport early.Check as many pieces of luggage as possible to avoid overloading yourself. Remember that your child will have to be taken out of the stroller when you go through security.When you check in, tell the desk attendant you are travel-ing with a baby. Let her know if you have a stroller or car seat with you.Change your baby’s diaper immediately before boarding the airplane.Avoid breast- or bottle-feeding your baby just before boarding as he may fall asleep and wake up crying as you struggle to carry him and your belongings to the gate. Wait until you are seated and unloaded, then feed him and maybe he’ll take a nap. Saving food and drink for when you’re on the airplane is also a great way to keep older infants entertained.Whenever possible, check your stroller at the gate just prior to boarding so you don’t have to carry your infant through the airport. If traveling with two adults and multiple children, ask if one adult can do early-boarding to set up while the other adult gives your little ones a chance for some last-minute exer-cise before boarding.

Then there’s the historic Staab House, a Victorian mansion built by German emigrant, Abraham Staab in 1882 for his beau-tiful wife Julia who he brought to the New Mexico Territory in 1865. It still stands today as the fashionable mansion it was a century ago. Now it’s the welcoming main structure of the La Posada Resort. Back in its day, the house quickly became a place where artisans gathered, and society galas were held.
It all was not all happy times within the walls of the second story home where the family lived though. “We’d probably call it post-partum depression now,” says Marcia Sky, area marketing manager when speaking of Julia’s infamous blue moods. The Staabs had eight children. It was the death of a son, however, who died soon after birth that threw Julia into a deep depres-

“Oh, you’re staying in Julia’s room,” stated the desk clerk upon my arrival at the hotel. “She’s been quiet up until yesterday when things began acting up around here – the computers went down and the lights have gone off and on. She must know there will be guests in her room.
It is understood that Julia Staab loved her home and Santa Fe life so much that she still resides in the La Posada Hotel on the second floor – first door on the left. And that’s where I was about to take up residence for the next few days.
After dinner in the hotel’s award-winning Fuego restau-rant, I retired for the evening in what was an uneventful sleep. The next morning, however, I noticed all the clocks were set to a different time – something that was not like that when I checked in.
“How was your night?” asked the breakfast waitress, Maria, with a bit of trepidation. When I explained about the clocks, Maria let me in on a Julia secret of her own.
“When I used to be one of the maids here I knocked on the door to her room as a matter of protocol before going in. Some low voice answered so I left and went to another room.” When Maria had finished cleaning the remaining upstairs rooms, she again
knocked on Julia’s door and the same faint voice answered while Maria felt a slight chill in the air. When she told her manager that was the only room not cleaned, Maria was told that there was no guest staying there. Concerned, the front desk clerk sent someone to check the room again. There was no one there and no sign that there had been. “I have not gone in that room ever since,” she conspiratorially leans over to tell me.
I almost choked on the delicious breakfast coffee. “Oh yes, she’s been wandering around here for years
and years,” says Marcia confirming reports that Julia Staab’s spirit continues to interfere with hotel employees and guests. “Some people see her at the top of the staircase and some have seen her in the woman’s restroom by the restaurant. Many have seen Julia in the small building built on the formal gardens next door. Waiters and waitresses have experienced Julia’s play-fulness. They stack champagne glasses carefully the night prior to an event but when they come in the next day, all the glasses are either put back or scattered about the banquet room.” VM
