It was very excItIng putting this issue together because it embodies the spirit of winter and the holidays in the area—snow and warmth and getting together with family and friends. While you look through our little mag and browse the website this season, please take advantage of the special offers and let the business owners know they are being seen. The more we can support each other economically, the stronger of a community we’ll have. I’d like to thank the people of this community for creating a great feeling of connection, where we can all work, live, and play together. We want to also thank all of you for helping us to grow and giving us so much support. Happy and healthy holidays and a prosperous and happy new year. —Jesse Marcus

There are some things that we all have In common. VISITvortex celebrates those commonalities. I think we can all agree that we want to prosper, that we love this area, and that we want to be recognized for the good that we do.In sharing these short video and photo stories I’m finding my place in the community, and sharing the hidden treasures in my own backyard—your treasures. We here at VISITvortex are so happy to be sharing the bounty of this fine region withthe world. —Melissa Hewitt

This season let’s keep our money right here within our communities. Let’s support each other so that we can see our small businesses prosper. If we just try and spend our money with our local merchants and make minimal to no purchases with the big box stores and malls we could actually shift our economy in a really powerful way.

So we are challenging you this holiday season to make your gift purchases mean more than telling someone how much they’re ap-preciated, but how much we value our local merchants and neighbors.

Yes, it’s easier to run to the mall or Wal-Mart and check everyone off our lists, but remem-ber that it’s truly the thought that counts. So let’s put thought and intention into each purchase and realize the powerful tool that our money can be. In shopping locally we support a local vendor, provide a quality gift and we’ve created a relationship with a local shopkeeper.

Our independent merchants are dependent on us. This holiday season can bring success to many local businesses—let’s make our purchases count. HERE ARE SOME IDEAS.

It’S hArd tO BELiEvE thAt thErE iS OnLY OnE rEgiOn in thE whOLE wOrLd thAt cAn grOw SugAr mAPLES SuccESSFuLLY.

New York, New England, and Eastern Canada have just the right climate to allow the sweet sap of the sugar maple to flow in February and March, just as the ground is thawing and releases the earth from its winter grip. So when you think about Valentine’s Day this year, think about tapping your maple trees.

In Vermont—the place where everyone thinks of when they hear maple syrup—trees are tapped everywhere

you look. It’s not just the big syrup producers tapping their maple stands, or sugar bushes, with miles of blue tubes that lead to collection tanks. Everyone’s doing it. Drive past almost any house and the maple trees are tapped, even just one or two. A small family can pro-duce enough syrup out of two trees to supply them-selves for one whole season—and it’s easy and fun!

StArt by identifying whether or not you have sugar maple trees. Look online, at Google Images for exam-ple, or in a tree book to see the smooth but crackly sur-face of the bark. It’s unlikely that the tree will still have

leaves right now, but that is also an easy way to identify the tree (red maples also produce sap but not as much). Mark the trees with rope or tree tape if you’d like.

nExt you’ll need taps and buckets. Do an Internet search or ask at your local Agway or hardware store. There are different types, but the concept is all the same. Drill a small hole into the maple tree that is small enough to fit the tapered end of the tap into the tree but not so

The spring thaw. Time to tap the maples. Gather friends & family for some sweet fun. Head to the sugar shack, or light up the wood stove. Chris tells us about the maple syrup boiler.

large that the tap slips too far in. Hang the bucket on the tap, put on a cover to keep out bugs and debris, and the tree starts dripping the slightly sweet sap right away.

nOw it’s time for boiling. Forty gallons of maple sap is boiled down to get just one gallon of succulent syrup, so you’ll be boiling a bit. If you have a wood stove, you can evaporate the water in the sap into your air by plac-ing a pot on the wood stove. Or just place a pot on your stove and boil most of the liquid away. Add more sap or get ready for the final touches of boiling. You can also buy a large maple sap boiler and go all out with your set

up. If you do this inside your house every year you’ll start to get a slightly sticky film on your ceiling. That’s when you know it’s time to build yourself a sugar shack.

BE very careful not to burn the syrup (what a mess!). There are ways to monitor the syrup by eye to make sure all of the water content has been removed, but owning a hydrometer makes the job much easier. Just float the device on the surface and a line indicates when the brew turns to syrup. Otherwise, watch the bubbles turn from being large, like boiling water, to very small, like boiling milk. The liquid also changes the way

it runs off of a spoon once it turns to syrup—it starts to look like slow moving...well, syrup.

mAking your own maple syrup is a great project to do with your family and friends. It produces sweet results and is a way to work with the land around you. This year as the snows melt away and spring is about to appear, get your body moving with the flow of the maple tree.

40 gallons of sap for 1 gallon of syrup!!! Now we wait, and we wait, and wait and wait. Take a whiff, it smells delicious! The fruits of our labor, pancakes for dinner!

CORN & POTATO SOUP

WITH OR WITHOUT PUMPkIN

4 1/2 cups fresh corn4 cups diced potato2 cups milk1 quart heavy cream1/16 cup salt1/8 cup white pepper4 cups cooked and pureed pumpkin (optional)2 cups gruyere cheese

Put all the ingredients except the cheese and salt into a stainless steel soup pot. Bring to a boil and simmer for 30 minutes until the potatoes are soft. Although the pumpkin puree is optional it works well to help thicken the soup. Add the puree pumpkin if you wish and cook for another 20 minutes. Add the salt and stir constantly, taste for salt and add more if you wish, cook for another few minutes. Remove the soup from the burner and serve in one cup bowls garnished with the grated gruyere cheese.

The original recipe was made for Rondout Valley Growers Association Barn Dance. The growers delivered 2 bags of fresh corn and 50 pounds of potatoes. The recipe was made to serve 125 guests a one cup portion. The recipe has been scaled down to serve 15 people expecting them to go back for seconds.

indoor gardens for the gardener

Purchase old or new containers; larger and shallower ones for little rock gardens. Deep containers are best for forcing tulips, daffodils, jonquils, or paper whites and herb gardens for winter culinary season-ing. Plain terracotta or plastic containers can be decorated with fabric, wallpaper, lace, ribbons, beads or anything you feel your gift recipients’ taste would appreciate. As an extra bonus you can attach fancy garden gloves on the side of a container with a ribbon; or perhaps a trough.

It Doesn’t taKe a lot oF money nor talent to make a memorable, customized gift—just the desire to give those favorites on your holiday gift list something special, just as they are! Most importantly shop smaller, LOCAL BUSINESSES for any supplies to create the items we’ve suggested.

HOMEmade Gift Ideas

homemade Bath salts Luxurious and inexpensive. Get any shape jar with a lid—old or new—Fancy china or plain clear glass. Put in Epson or sea salt, baking soda, vegetable-based glycerin and an aromatic essential oil that will please the recipient. Food coloring may be used if you wish it to have a prettier hue. Mix together and put into the jar. The presentation of a plain glass jar can be enhanced by decorating the lid and/or using your imagination with fabrics, antique lace, beads, etc. on the outside. Pat-terned lidded jars can just be tied with a rib-bon. Always include the ingredients and be sure to list the essential oils used for any po-tential allergies.

Personalized Journals

You can spice up cheap, plain items like journals and sketch-books your-self. Buy them on sale from an art supply or discount store, and decorate the covers. Personalize them with buttons, rhinestones, glitter or dried fl owers. Writing a thoughtful note on the inside cover and the date will fi nish this gift off with a special touch.

Flavored Cooking OilInteresting bottles found at yard sales and thrift stores can become a epicurean’s delight just by adding twigs of Rosemary, Thyme, Basil, Oregano, Parsley and other aromatic herbs into the bottle that you’ve half-fi lled with olive oil. You could also add some peppercorns for decoration and further fl avor, then fi ll the bottle with more oil. If the bottle had no lid various size corks are available at craft stores. Adding a festive ribbon, raffi a or any embellish-ment to the neck of the bottle will fashion customized charm. This gift looks great on any recipient’s kitchen shelf as well as enhancing their culinary skills.

Page 39: VISITvortex Winter 09/10 Issue

tea Cup gardensBuy vintage fl oral pattern teacups at secondhand stores & antique shops and plant ornamental bulbs in them. Or search for old mugs with herbal print designs and plant chives, oregano, rosemary, or basil. Decorate with a bit of ribbon and a card describing how to care for the plant.

handcrafted JewelryOne doesn’t have to be a silversmith to cre-ate beautiful baubles and bead originals. Craft stores in the Hudson Valley abound with “bling”—from sparkling glass, colorful acryl-ics, and porcelains to genuine gemstones and Swarovski crystals. They make one-of-a-kind personalized gifts cherished by favorite gals and guys on your holiday gift list. Findings such as Lobster claw clasps, crimp beads, and ear wires are readily available in everything from hypoallergenic stainless to pewter and even sterling and 14 karat gold. Tutorial books are available on how to create a masterpiece in as little as an hour to several hours for more intricately designed originals.

a dress-Up Box for the KidsObtain a large cardboard box from your local supermarket and cover it with pretty wrapping paper, or if you are more ambi-tious, hot glue a fabric remnant for more durability. Now browse charity shops, rum-mage sales or yard sales and pick up in-expensive hats, scarves, ties, veils, tutus, jewelry, gloves—even low-heeled dressy shoes to go with fancy dresses, or small size dresses or jackets. For boys keep an eye out for items for Superhero dress-up. Dressing up is an age-old pastime and even the modern-day child has the desire to be a princess or hero. It’s good, clean fun that will keep kids occupied for hours on end.

Personalized towelsA set of inexpensive hand tow-els, whether vintage or new, can be made unique with the addition of fancy ribbons sewn or hot-glued about three inches from each end. For more formal “guest towels,” the use of acryl-ic beads sewn to dangle at the towels’ edges transforms sim-plicity into a most dazzling gift customized to coordinate with any bath décor. Include soaps or other bath products in a bas-ket for the perfect gift.
