The function of packaging is to surround or wrap meat products with
suitable protective material.
Packaging materials were in the old days simple
natural materials, but in today's exclusively

packing. Temperatures of 60°-80°C or even higher
up to sterilization temperatures (above +100°C)
can be employed for hams, sausages, etc. In these
cases a pasteurization or sterilization effect of the
uncooked packaged products is achieved and re-
contamination avoided as long as the package is
not opened.
