Value-added casings provide a range of benefits that go far beyond the traditional function of the sausage casing. They eliminate entire production steps by transferring smoke, colour, flavour and /

or spices directly from the casing onto the product surface. This takes place during the cooking process of the filled meat, cheese or tofu. The product is then ready for use and remains in the casing until cut or opened.

CASING REPLACES MULTIPLE PRODUCTION STEPS

Normally, when a sausage is to be smoked or sea-soned it has to be removed from the original cas-ing after cooking. It is then smoked, caramelized or coated with spices and other seasoning. In a fur-ther step, the new coating is established, usually by applying heat. The finished sausage is then repacked for storage in a plastic sleeve until it reaches the slicing system. With value-added cas-ings from Kalle, sausage manufacturers can avoid all of these steps which will reduce costs and increase product safety. That not only reduces costs, it also increases product safety. Since the cas-ing is not removed, it provides total protection for the filling from the cooking process through to slic-ing.

COST SAVINGS OF UP TO 20 PER CENT

Depending on the application and existing produc-tion process, companies can achieve cost savings of up to 20 per cent by eliminating cooking cycles and unnecessary process steps. Kalle value-added casings have been respectively received by the market. They are a major growth driver and easily the fastest-growing segment in the Kalle Group.

CATERING FOR NEW CONSUMER TRENDS

Through the transfer of aroma and flavour compo-nents, a value-added casing becomes an integral part of the finished product. Kalle works together with sausage manufacturers to develop the required flavour profiles. Food safety is assured through close co-operation between Kalle R&D and the cutomers product safety team. This direct communication has led to the development of a whole host of products that address the growing demand for healthier nutrition and clear listing of ingredients. Using natural smoke types and plant-based colouring agents, it is possible to create attractive products with no exposure to unwanted substances.

FOOD SAFETY

NaloProtex and NaloPro are complying with §§ 30,31 of the German Food, Commodities and Feed Law (LFBG), with article 3 of European Regulation 1935/2004/EG. The plastic layers comply with the Ger-man Commodities Regulation as well as with the European Regulation 10/2011/EU. NaloPro and NaloProtex are in conformity with the applicable regulations of the U.S. Food and Drug Administration (FDA).

Food additives and flavorings are in conformity with applicable European directives or regulations as well as with corresponding FDA regulations.

NaloSpice and NaloProSpice are complying with §§ 30,31 of the German Food, Commodities and Feed Law (LFBG), Recommendation XLIV of the German Federal Institute for Risk Assessment (BfR) arti-cle 3 of European Regulation 1935/2004/EC and applicable regulations of the Food and Drug Adminis-tration (FDA) in the United States.

Polymer or “plastic” casings were always intended to be used for cooked meats or cheese, it seemed contradictory to associate them with curing. However, development continues and we have now discovered new grades of polymers that allow permeability levels never thought possible.

With NaloFerm, Kalle presents a polymer casing that combines characteristics unparalleled to date:

» Curing of dry meat products in the same chamber with traditional casings and without any drying times concerns.

» Soaking time is reduced, salt is not required

» Protection against mould growth without any additives on the casing or in a dipping solution.

» Protection against excessive drying on the outside since permeability is perfect for a controlled curing process, therefore there is no need to start curing in humid conditions.

» Due to its lower wall thickness, up to 30% addi-tional meters can be shirred on the same com-pressed length compared to traditional cured meat casings.

Monolayer oriented polymer casing with perme-ability level sufficient to cure meat or cheese. Weight loss is comparable to casing categories tra-ditionally used for these applications. The casing can also be used for cooked products which require a strong smoke application. NaloFerm is available as a straight and ring shaped casing.

USAGE INSTRUCTIONS

Fill casings dry or dip them briefly in unsalted water. Proceed with curing process as before. Drying can start immediately with no need to worry about dry rind. Immediate drying can save valuable curing time.
