when larry ruvo, senior managing director of southern Wine & Spirits of Nevada, and Dr. Jerry Vallen, founding dean of the William F. Harrah College of Hotel Administration, came up with the notion of UNLVino® 41 years ago, they couldn’t have possibly predicted the size and success of the event you see today. The goal has always been to raise funds for the hotel college while at the same time allowing people to experience the simple pleasures of life over a glass of wine.

The event began as a small affair in the Southern Wine & Spirits warehouse. Since then, it has expanded to grander and more sophisticated venues and serves the palates of thousands of guests. The UNLVino® Grand Tasting is now one of the largest wine tasting events in the country and is undeniably one of the most unique and spectacular university fundraisers to be found anywhere.

The money UNLVino® has raised over the years has supported thousands of students in their studies to become some of the premier leaders in the hotel and hospitality industry worldwide. Many students can attribute at least part of their future success to their participation in running UNLVino®.

This year, the 41st annual UNLVino® will be most impressive to date with three days of illustrious events for wine, beer and spirit enthusiasts. For 2015, we are bringing back the beloved Sake Fever to Red Rock Resort's scenic pool. Southern Wine & Spirits of Nevada’s Master Mixologists Francesco Lafranconi and J.R. Starkus will craft inventive libations and UNLV’s Don Snyder will be recognized for his leadership at the university and in the community.

A variety of champagnes and sparkling wines will be

uncorked at Bubble-Licious under the stars at the Venetian’s Doge’s Palace Plaza. A fan-favorite event, Bubble-Licious, will let guests enjoy small plates from the Venetian and Palazzo’s outstanding collection of restaurants, as well as James Beard Award-winning Chef Daniel Boulud, who will be honored with the Dom Pérignon Award of Excellence.

Returning to Paris Las Vegas’ ballroom, UNLVino’s® time-honored Grand Tasting will delight guests with an unrivaled collection of premium beverages and a fresh entertainment lineup, including a performance by famed modern jazz musician Frankie Moreno. Chef Steve Martorano will be honored for his culinary accomplishments and bold Italian-American restaurant style as the weekend’s main event indulges guests with delectable cuisine from UNLV’s culinary students and celebrated Vegas restaurants.

Of course, these events would not be possible without the dedication and donations of the suppliers, the hosting properties, the staff and management of Southern Wine & Spirits, and last but not least, the faculty and students of the hospitality school.

We wish to give a heartfelt thanks to the hundreds of volunteers working each event because without them the execution of UNLVino® would be impossible. Likewise, we wish to thank you, our loyal guests and greatest supporters; without you, this event would certainly not have come to fruition.

It is my pleasure to welcome you to the 41st annual UNLVino®. In 1974, Larry Ruvo, senior managing director of Southern Wine & Spirits of Nevada, and Jerry Vallen, dean emeritus of the UNLV College of Hotel Administration, created an event that continues today to provide signifi cant annual fundraising to support UNLV students.

With the assistance of Caesars Entertainment, Southern Wine & Spirits of Nevada, the Venetian, Station Casinos and many vendors, we continue to raise thousands of dollars for the William F. Harrah College of Hotel Administration each year. These funds have been used to help hundreds of students succeed in reaching their academic goals. In fact, since the year 2000 approximately 600 students have received over $1.1 million in scholarships as a result of outstanding support from the community for this event. None of this could be accomplished without the generosity of our sponsors and attendees.

While we are proud that the Grand Tasting continues to be one of the largest single-day wine tastings in the nation, it is amazing to see how the events have continued to evolve beyond the Grand Tasting into a multi-day lifestyle event with world-class venues, food, and entertainment. We are honored that Daniel Boulud, Don Snyder, and Steve Martorano will be joining us to accept their Dom Perignon awards of excellence. It is wonderful that so many alumni and friends come back year after year to celebrate this remarkable series of events with us.

UNLVino® provides wine enthusiasts and winemakers the opportunity to sample the latest releases, the best vintages and the fi nest varietals from hundreds of wineries. the foodie community has been gunning to pop bottles, contract sake fever and taste all that is grand ever since UNLVino’s® spectacular

40th anniversary last year. Year 41 is here, and a small army has made

preparations for thousands of guests to sip for scholarship in 2015.

While you will see many friendly faces behind the booths and the

bars, you won’t get to witness what goes on behind the scenes to put on

this historic food and drink spectacle. UNLVino®, for those who don’t

already know, is planned and executed largely by students at UNLV’s

William F. Harrah College of Hotel Administration. The experience

certainly has its bumps along the way, but attracts a passionate group

who aspire to take leisure, luxury and escape to the next level.

“I knew that I thoroughly enjoyed talking to people, helping them

out and the idea of traveling…I realized that there was no other way I

could go but hospitality,” said Alexandra Hurtado, a senior.

Hurtado is joined by Daniela and Mercedes Sanchez, whose high

school experience inspired them to enter UNLV.

“The summer before my freshman year, I was asked to go to an

open house at Valley High School; home of the Academy of Hotel

and Tourism (AOHT),” said Mercedes, a senior. “It was in those

classrooms where I found my passion for hospitality.”

“I loved the idea of…attending one of the top hospitality colleges

in a city thriving on hospitality!” said Daniela, a sophomore who also

graduated from Valley’s AOHT program.

Daniela and Mercedes are both at UNLV on scholarship and

serve on the executive board for the National Society of Minorities in

Hospitality (NSMH).

“It was because of the scholarship that I decided to stay in Las Vegas

for my undergraduate (degree),” Mercedes said.

This scholarship may very well lead her to stay in Sin City

after graduation.

“My goal after graduation is to either land a direct placement role

in a sales or catering department in Las Vegas,” she said. While she

has an end goal in place, she’s making the most of her college career

to build out her managerial skill set.

“My goal for after graduation is to make the college that gave me my

top education in hospitality proud,” said Hurtado, who is still refining

her internship search.

The hospitality program is no stranger to the significance of work

experience in this profession. Students must log 1,000 professional

hours as part of the degree requirements.

Students have many resources to help them through this goal,

however. UNLV’s prime location and experienced faculty are key

assets that students won’t find in too many other programs.

“We are given many emails a day about open jobs, upcoming

internships, hospitality-related volunteer events and more,” said

Daniela. “They provide students with all the tools they need to finish

an internship and the 1,000 work hours.”

“We are so fortunate to go to school where the hospitality

playground is our backyard. A majority of my professors have or

still work in the industry,” Mercedes said. “(They have) real life

experiences to share with their students, and have connections

throughout the Las Vegas Valley.”

Those connections and experiences aren’t limited to Las Vegas.

UNLV’s network spans the globe.

“Two summers ago, I was blessed with the opportunity to study

abroad in Switzerland and take food and beverage courses with UNLV

professors who have built long lasting relationships with various

restaurants and wineries throughout Europe,” Mercedes said.

“That is one college experience that I will never forget.”

Mercedes’ experience has taken her on a domestic journey as

well, allowing her to intern at the Aspen Meadows Resort Food

and Beverage Department in Aspen, Colo. She has brought back a

holistic experience to build on her pursuits back in Las Vegas. It’s this

kind of exposure that has allowed Las Vegas itself to innovate on an

unmatched level.

Daniela has also gotten to broaden her work horizons through

UNLV’s connections.

“It was at one of the hotel career mixers that I was able to start a

relationship with Starwood Hotels and Resorts,” she said. “I have had

an externship and internship through them in food and beverage.”

When asked about some of the more stressful aspects of the

program, the girls reverted back to the job search, as well as a class that

emulates reality (food) TV.

“The most stressful and engaging class has been (Food Service

Operations Fundamentals). In that class we learn different cutting,

cooking and pairing techniques,” begins Daniela. “Our final exam is

very similar to what my culinary competitions look like: you are given

a mystery basket, you cook the food in a way that displays as many

techniques as possible, plate it with all five elements and present it all

within a certain amount of time.”

While students enjoy these “Chopped!” and “Iron Chef”-like

missions, the tests are meant to equip them with skills for the real

world, where work experience reigns supreme in recruiters’ eyes.

“The first day in my (Introduction to the Hospitality Industry) class

I was told GPA did not matter. In the world of hospitality, it is your

work experience that matters,” said Daniela. “The time commitment

we have to make to work and school is more crucial in hospitality

management than it is in any other major.”

She adds that the hospitality major itself is a difficult path. “Many

non-hospitality students believe hospitality to be an extremely easy

program, the easy way out,” Daniela begins. “We don’t have crazy

imaginary numbers to deal with in math, but the competition is

enough to make you feel like you will never measure up.”

Mercedes sees UNLVino® as monumental for helping put students

into school as well as advancing student success post-commencement.

“UNLVino® plays a huge role in the Hotel College, as this is our

biggest fundraiser,” she said. “It just goes to show how passionate we

are about it and how important ticket sales and donations are.”

The students are crucial to putting on the event.

“Cooking the hors-d'oeuvres or passing (them) out, showcasing

the various wines…figuring out all the logistics and acting as liaison

between all the vendors,” Daniela said, commenting on some of the

many moving parts behind the scenes.

“I am in the UNLVino® capstone class as a student manager,” said

Hurtado. “I am on the Southern Wine & Spirits team helping with the

UNLVino® was cofounded in 1974 by the William F. Harrah College of Hotel Administration and Southern Wine & Spirits of Nevada, the two organizations that continue to sponsor it today. Over the past four decades, UNLVino® has raised several million dollars for scholarships and other academic developmental needs of UNLV students. UNLVino® is differentiated through unparalleled, hands-on student experiences at all levels of event planning, execution and promotion, as well as the impactful funds raised each year – all testaments to the celebratory weekend’s broader purpose – scholarship.

This year, the 41st annual UNLVino® will feature three days of events for wine, beer and spirit enthusiasts, April 16-18, 2015. Nevada’s original wine festival will showcase an array of international beverages and continue Southern Wine & Spirits of Nevada’s mission to raise millions of scholarship dollars for students of UNLV’s William F. Harrah College of Hotel Administration. UNLVino® will also continue its tradition of recognizing hospitality industry leaders with the Dom Pérignon Award of Excellence. The 2015 honorees include culinary icon Daniel Boulud and the “Godfather of Italian-American cooking” Chef Steve Martorano, as well as UNLV’s Presidential Advisor for Strategic Initiatives, Don Snyder.

daniel boulud is chef-owner of several award-winning restaurants and the Feast & Fêtes catering company. While he hails from Lyon, France, it is in New York that he has truly mastered the dining scene and is today considered one of America’s leading culinary authorities. Raised on his family’s farm in the village of St Pierre de Chandieu, the chef remains inspired by the rhythm of the seasons and menus driven by fine ingredients. Since arriving in the US in 1982, Boulud has become renowned for the contemporary appeal he adds to soulful cooking rooted in French tradition.

growing up in south philly, many would have thought steve Martorano didn’t stand much of a chance for more than going into the family business. With his father making only $166 a week and his uncle in the Mob, Martorano knew one thing – he didn’t want either of those lives for himself. But what was he to do? School was never his strong suit, so he set out on his own journey to success

— but not without a few failures along the way that only made him stronger and more determined to show the world what he is made of.

After spinning records for a few years as a DJ in the ’70s, Martorano opened up his first delivery sandwich shop in his apartment. He was a one-man show with an increasingly popular business. His sandwiches became such a hit in South Philly that Martorano outgrew his space and opened a takeout restaurant in a strip mall. Here Martorano made pizza, sandwiches, pasta dishes and homemade water ice. A few years later, the demand outgrew his location again, and Martorano moved to a freestanding, sit-down restaurant.

In the early ’90s, the US economy took a turn for the worse and Martorano lost everything. He knew it was time for a change. In 1993, he moved to Fort Lauderdale with merely $40 to his name and opened a new restaurant on Oakland Park Boulevard

– Café Martorano. 18 years later, Café Martorano is a worldwide

sensation. The restaurant chain has expanded into five locations – the original one on Oakland Park Boulevard, one at the Seminole Hard Rock in Hollywood, Fla., at the Rio All-Suite Hotel & Casino, at Paris Hotel & Casino and at Harrah’s Hotel & Casino in Atlantic City. donald snyder has deep ties to the university and southern Nevada. An executive with senior leadership experience in both the

commercial banking and gaming industries, Snyder is the immediate

past president of UNLV and now serves as the presidential advisor for

strategic initiatives.

Snyder has been involved with UNLV for more than 25 years as a

volunteer or administrator. Prior to his term as acting UNLV president,

he served as dean of the UNLV Harrah Hotel College and as the

university’s executive dean for strategic development.

Snyder remains involved in major strategic efforts for the university

and the Hotel College, for which he helped gain legislative and

gubernatorial support during the 2013 legislative session. This includes

assisting college fundraising efforts for a proposed academic building

and strengthening the UNLV’s role as the intellectual capital of global

gaming, which is directly tied to the state economic development plan.

He’s been a leader in UNLV’s push to create a school of medicine, and he

led the planning efforts for a proposed on-campus stadium as chairman

of the legislatively created UNLV Campus Improvement Authority Board.

A prolific fundraiser, Snyder played an integral role as chairman of

the Smith Center for the Performing Arts. He is also a former member

and chairman of the UNLV Foundation and co-chairman of the

university’s successful $537 million Invent the Future capital campaign,

which concluded in 2009. Snyder has served on the boards of more

than 15 public and private companies, numerous local nonprofits and

several legislative commissions, including chairing the Governor’s

Commission on Medical Education, Research & Training in 2006.

Snyder has been formally recognized on many occasions for outstanding

community service, most recently as the 2013 Philanthropist of the Year

by Gov. Brian Sandoval.

Following his graduation from college in 1969, Snyder began a

successful banking career, continuing involvement with the industry

today. During 22 years with First Interstate Bank (now Wells Fargo), he

rose from a management trainee in California to serve as chairman of the

board and CEO of First Interstate Bank of Nevada from 1987 to 1991. He

held leadership positions in retail and corporate banking, international

banking, real estate banking and served on the board of directors of several

First Interstate subsidiaries during his later years with First Interstate.

Subsequent to leaving First Interstate Bank, Snyder co-founded

Bank of Nevada (originally called BankWest of Nevada). From its initial

$8 million in assets, the bank has grown into a multi-state banking

organization, with the parent holding company, Western Alliance

Bancorporation, listed on the New York Stock Exchange, with assets now

of nearly $9 billion. While never serving in a management capacity, he

has been an active member of the board of directors for both Bank of

Nevada (where he has served as chairman for many years) and Western

Alliance Bancorporation.

Snyder’s move to the gaming industry started in 1992 when asked

by downtown Las Vegas casino owners to lead the efforts to develop

what became the Fremont Street Experience. He served as chairman,

president and CEO until July 1996 and continued as non-executive

chairman of the board until 2006.

Following the successful opening and initial operation of the

Fremont Street Experience, Snyder joined Boyd Gaming Corp. in 1996.

He became a member of Boyd Gaming’s board of directors in April 1996,

executive vice president three months later and president in January

1997 – a position he held until his retirement in 2005.

His retirement from Boyd Gaming was planned to coincide with

efforts to move forward with the funding and development of what

became the Smith Center for the Performing Arts. Having been

involved in the earliest efforts (starting in 1994) to develop a world-

class performing arts center, Snyder became chairman of the board in

1999; a position he continues to hold. While always serving in a non-

paid capacity, he effectively teamed with Myron Martin (who become

president and CEO during construction) to provide the leadership that

made the center a reality.

Years before becoming an employee of UNLV, Snyder had a long

history of active volunteer engagement with the university. He became

a member of the board of trustees for the UNLV Foundation in 1988,

served fi ve years as chairman of its board and served as chairman of the

fi rst and only comprehensive capital campaign.

For his work supporting UNLV, Snyder was awarded the President’s

Medal in 2000, an Honorary Doctor of Laws Degree in 2001 and was

named (by the NSHE Board of Regents) a Distinguished Nevadan in 2003.

For his leadership in the business community he was inducted into the

Nevada Business Hall of Fame by UNLV’s Lee Business School in 2011. In

recognition of their signifi cant philanthropic gifts to UNLV, Snyder and

his wife Dee were inducted into UNLV’s Palladium Society in 2009.

Snyder has been actively involved in numerous other businesses,

charitable and civic activities in Nevada over his more than 25 years in

Southern Nevada. In recent years, he has served on boards for Bank of

Nevada and its parent, Western Alliance Bancorporation; NV Energy;

Tutor Perini Corporation; and Switch Communications Group LLC.

Additionally, Snyder has served on numerous nonprofi t boards over

his time in Nevada. He presently serves on the boards of the Smith Center

(chairman), Nathan Adelson Hospice (past chairman) and the Governor’s

Workforce Development Board. His past board service includes the

Las Vegas Convention & Visitors Authority, Nevada Resort Association,

American Gaming Association, United Way of Southern Nevada (past

chairman and two-time chairman of the annual fundraising campaign),

Nevada Development Authority (past chairman), Council for a Better

Nevada (past chairman) and Tournament Players Club at Summerlin.

Snyder is a cum laude graduate of the University of Wyoming (1969),

with a bachelor of science degree in business administration. Snyder

and his wife, Dee, have been married for more than 42 years, have three

grown children and three grandchildren.

mark sandoval joined the m resort as executive chef in June 2012. His passion for working with farm-to-table ingredients

and experience working under mentors like Master Chef Joel

Robuchon and Wolfgang Puck positioned him as the perfect addition

to the Forbes Four-Star award-winning resort.

Sandoval was introduced to the culinary arts at a young age when

he and his father, a restaurant cook, would prepare dinners for their

family three to four times a week. Sandoval loved the reaction his

culinary creations received and spent his adolescent years cooking

for friends and family as often as he could. In 1995, he moved to

San Francisco to attend the California Culinary Academy. His first

restaurant position came at Moose’s, a North Beach favorite where

Sandoval learned to prepare seasonal American cuisine with local,

small-farm ingredients; a passion that would develop Sandoval’s

cooking style. After 2 1/2 years, Sandoval left to help open Jianna

restaurant, then worked as sous chef and banquet chef at the award-

winning Carneros, located at the Lodge at Sonoma. There, Sandoval

raised his own herbs and vegetables for the daily changing menu and

eventually was promoted to executive sous chef.

After three years, one of Carneros’ frequent guests, Steve

Ledson, owner of Ledson wines approached Sandoval with an

opportunity to open a restaurant on the plaza in Sonoma called the

Harmony Club. The restaurant provided Sandoval with his first

executive chef position and the chance to continue cooking with

farm-fresh ingredients.

In 2005, Sandoval was hired to work as sous chef and saucier with

his biggest inspiration, Master Chef Joel Robuchon, who was opening

his first restaurant in the United States at the MGM Grand in Las

Vegas. After one year, he transferred into the MGM Grand Culinary

Department where he worked closely with the resort’s high-profile

clientele as he cooked for private parties and VIP guests.

Sandoval joined the Wolfgang Puck Fine Dining Group in 2007

as sous chef at Postrio, the Las Vegas location of Puck’s famed San

Francisco eatery where he was soon promoted to executive chef. At

Postrio, Sandoval was responsible for changing the entire menu

to reflect the flavor of the Mediterranean while staying true to the

fresh, seasonality of American ingredients. Throughout his nearly

six-year tenure, Sandoval continued to push the envelope, seeking

out new, unique ingredients to update his menus for both the casual

café and more formal dining room.

In 2012, Sandoval found his home at M Resort, where he was

later appointed to oversee the resort’s newest restaurant, the grand

prize venue of Food Network’s “Restaurant Express,” Jayde Fuzion,

as well as Anthony’s Gourmet Burgers and Brews.

When he’s not in the kitchen, Chef Sandoval is also a UNLV

professor, where he enjoys sharing his applied knowledge and

experience with his students. He also teaches the culinary

portion of UNLVino®, a charity event that raises funds for student

scholarships at UNLV’s school of hotel management, which he

finds extremely rewarding.

Romero Britto cover artist

romero britto was born in recife, brazil, and nearly 26 years ago moved to Miami where he started creating and selling his works

on the streets of Coconut Grove, a historic neighborhood in Miami.

While in Coconut Grove, he painted on newspaper and often used

his fi ngers to replace paintbrushes.

Since then, Britto has developed his artistic visual language to

include 3-D sculpture, mixed media, serigraphs and digital prints.

His work has evolved over the years, but the message of happiness

remains. Since then, he has collaborated with companies such as

Disney, Coca-Cola and Mattel.

Currently, he is represented in more than 100 galleries

worldwide. Last year he served as the 2014 FIFA World Cup

ambassador. His public works include exhibits in places such as Sao

Paolo, Beijing, Tel Aviv, Berlin, Moscow, New York and London’s

Hyde Park.

Britto’s mission is to share happiness with the world as well as

give back through his philanthropic efforts. Britto has supported

thousands of global charities during this career and the UNLVino®

event is an event he is passionate and excited to participate in year

after year.

“I look forward to it every year! I commend Larry Ruvo and

Jerry Valen on their admirable work and the funds they raise for the

University of Nevada, Las Vegas,” Britto has said.

Britto fi nds inspiration in the simple things in life; he fi nds

happiness and joy in everything he experiences, from a simple

sunset to a loving couple. The words happiness and love are

synonymous with his works.

Many would consider his work pop art. Other pop artists include

Andy Warhol, Keith Haring and Roy Lichtenstein. Britto admires

the work of Picasso, Matisse, Warhol and Haring. Yet he’s also

inspired by other artists such as Pollock, Leger, Dali and DaVinci.

Britto is fi rst and foremost an artist, a creative being.

Britto’s fl agship gallery, Britto Central, has been on Lincoln Road

in Miami Beach for 21 years. Britto has fi ve concept stores – three

onboard Royal Caribbean ships and two at the Miami International

Airport. Britto’s work has been displayed on every continent.

Career Highlights:In 1989, Absolut Vodka commissioned Britto to be part of the

now-famous Absolut Vodka campaign. He was the fi rst unknown

artist at the time to be part of such a prestigious group, which included

Warhol and Haring. This was the single most important collaboration

of Britto’s career.

As a child, Britto was dazzled by the beauty he found in Disney animated

fi lms. In October 1997, Britto’s childhood aspirations came true when

he was invited to attend the Walt Disney Art Classics Preferred Gallery

Forum at Disneyland to unveil his newest Disney-inspired serigraph,

“Mickey Mouse’s Greatest Love.” Currently, Britto is among a select group

of established and emerging artists chosen by Disney to create inspired,

artistic visions of their famous characters and properties. With his bright

and cheerful interpretations, Britto’s Disney-inspired serigraphs are a

perfect fi t for the Walt Disney Art Classics Fine Art Program. The Disney

unlv hospitality management senior Sarah Novak says she has “fallen in love with and has a passion for the events industry.”

Professor Todd Uglow, one of the UNLVino® event planners, agrees. “Sarah is enthusiastic 100 percent of the time! She really knows how to care for customers and her fellow workers. I think she will be very successful in our industry!”

She recently earned a scholarship to study abroad in Singapore at UNLV’s satellite campus. “I want to create amazing events for people to make their days truly memorable.”

Novak says she loves UNLVino® because it’s an amazingly fun series of events that really gives back to UNLV students. “I am on the PR team for UNLVino® and I get to read all the student bios and I was pleasantly surprised by how many of my classmates have actually received scholarships from the UNLVino® Foundation. Not only has UNLVino® raised millions of dollars in scholarships for students but it is also providing me and my classmates real life hands on event planning, execution and promotion experiences, which is priceless!”

keilah vandermeer is a senior at UNLV. As one of the UNLVino® managers, she has been working with Kirvin Doak Communications to develop public relations, marketing and social media for UNLVino®.

Vandermeer grew up in Corvallis, Ore. Her early involvement in organizing events for her school and community led to her passion to become an event coordinator. However, when she turned 18 she decided to put her plans on hold and join the military. Vandermeer served five years in the United States Marine Corps, where she was fortunate enough to travel the world and experience new cultures. She moved to Las Vegas in 2013 after being accepted into the UNLV hospitality management program and is working toward a special concentration in events and meetings.

Professor Todd Uglow, one of the event planners for UNLVino® says “I am not surprised she is a Marine. Keilah’s attention to detail and her quiet, intelligent reflection comes out in everything she does. She has an instinct about this industry that I normally see in people with many more years of hospitality experience.”

michelle schenck was born in germany and lived in New Mexico prior to moving to Las Vegas. After graduating high school in 2010, she decided to attend UNLV to study meetings and events management. During her time at UNLV, she has held numerous positions in her sorority and spent a semester studying abroad in London. “Michelle is a such a pleasure to work with; she knows how to plan and bring people together in a difficult and stressful environment,” says professor Todd Uglow, one of the event planners for UNLVino®.

“We are grateful to have her on our team!” Schenck enjoys UNLVino® because

she has always been interested in planning festivals for a career and what better place to learn the ropes than the greatest food and wine festival in Las Vegas – UNLVino®! She loves the idea of vendors and suppliers coming together to share their products with the public, but she also loves how the members of the Las Vegas community come together to help raise money for UNLV scholarships. Schenck is very excited to be a part of UNLVino® and to help to give back to her school.

james cutler has over 12 years of

experience in the gaming and hospitality industry, serving commercial and tribal casinos throughout the US market. Cutler returned to UNLV in 2012 to complete his B.S. in hotel administration, majoring in hospitality management. His most recent roles included senior account executive at Aristocrat Technologies for 10 years followed up with two years as director of sales at NEWave. Cutler continues to advance his passion for serving customers in hospitality and gaming, plus offering his enthusiasm to the greatest food wine collaboration in Nevada!

“Las Vegas is a relatively young city and UNLVino® has grown into a long-lasting tradition over 40 years,” said Cutler. “I love UNLVino® because it unites the Las Vegas community, while giving back to the city’s primary university and student body in the form of scholarships.”

prior to moving to las vegas 5 years ago, Daria Wu lived in Washington, D.C., and worked in the food and beverage industry. Her passion for her work led her to Las Vegas to pursue a degree in hospitality management. UNLV was the only option in her mind, due to its reputation and being located in a city that focused on her career. She believes UNLV provides hospitality opportunities in a way that most universities cannot. UNLVino® is a perfect example. It lets students in the food and beverage industry showcase their talents, interests, and love of their craft.

“Daria is one of the most industry-experienced students I have had in any of my classes,” says chef Mark Sandoval. “Her experience shows in that she comes up with ideas and angles from the perspective of an industry pro – she is a real self-starter.”

Wu believes UNLVino® allows hotel college students exposure to other aspects of the industry such as public relations, marketing, event planning and overall operations and team management.

“It’s so exciting to be able to be involved in the planning of this event and the pride that my college chose me to participate,” she said.

in a pivotal scene from the cinematic masterpiece, “Office Space,” one of the “Bobs” (a duo of like-named gents tasked with eliminating redundant positions at a top-heavy software company) asks the perennial question: “What would you say you do here?”

We get the same question a lot with regards to the newest fine wine division, Rare Liquid Assets (RLA). Consider this: there are more sommeliers per capita in Las Vegas than anywhere else in the world. What’s a sommelier? It’s the French term for a steward in charge of wine. For hundreds of years, sommeliers were responsible for the cellaring and serving of wines for royalty. Eventually the tradition of the sommelier spread to restaurants, where such an individual is expected to have extensive knowledge of wines and their suitability with various dishes.

Arguably the highest honor one can achieve in the wine world (and only after years of training and a test so hard it has its own movie) is the title of master sommelier and — get this — there are twice as many master sommeliers in Las Vegas as there are in New York City. We have 12! That’s out of only 140 in North America. Yep, 9 percent of them work in Vegas and two of them work for SWS, including Ira Harmon, who got his pin in 1993 (only the 23rd in the US) and is unquestionably the Yoda of master somms. No

offense to our glowstick-twirling, DJ-loving dayclub patrons, but let’s face it, Vegas is a fine wine town. If you are selling wine in a fine wine town you need a highly skilled, highly specialized fine wine team. That’s where RLA comes in.

Master Sommelier Joe Phillips has been serving wine and educating his customers and staff at some of the finest dining establishments in Las Vegas since the 1990s. Now in his position as director of wine education for Southern Wine and Spirits of Nevada,

he is able to share his expertise and love of wine with all sectors of the community. Formerly a middle school music teacher, Phillips’ passion for breaking down complex subjects, such as wine, to help others learn makes him well suited to his new role. Voted Best Sommelier of Las Vegas in 2012 by Las Vegas Weekly, Phillips is a known personality in Sin City. We were honored to sit down with him to learn about his path in attaining the highest level of sommelier certification and in becoming one of Las Vegas’s most respected and admired experts in the wine industry.

Where were you born and where did you grow up?I was born in Syracuse, New York, and when I was 4, moved to

Mansfield, Mass., where I grew up.

When and how did you first get into nurturing your love for wine?

We were visiting my grandparents in Florida one summer when I

was about 18 or so. My dad brought back some hard cheeses, cured

meats and half a bottle of Valpolicella. First, I was excited to sit

down at the table with my dad and have a little wine. Second, tasting

the food and the wine together was something I never experienced

before. I was intrigued at how the wine and food complemented one

another. A couple of years later I worked at a small hotel in Taunton,

Mass. Our restaurant manager was very passionate about wine and

used to have people come to the hotel to teach us about wine. I went

to a presentation about how sparkling wine is made in Champagne

and how a similar technique is used for Cava in Spain. I found the

presentation fascinating and it was an important lesson about the

relationship between production quality and prestige.

How did you transition from being a music teacher to a master sommelier?I moved to Las Vegas in the late ’90s to try and secure a job as a middle

school band director, as word of the rapid expansion of the Clark County

school system and need for teachers had reached us back east. While

waiting to be licensed in Nevada, I took a job as a waiter in an Italian

restaurant at the MGM Grand. We had a talented chef from Sardinia and

a progressive Italian wine list for the time. I remember a sales person

from Southern Wine and Spirits coming out to do wine training for us,

and once again, the exposure to great food and great wine really piqued

my interest. I could see that there was a lot of potential for growth for me

in the restaurant business and started to study wine to improve my skills

and provide future opportunities. I didn’t realize what I was getting into,

which is probably a good thing. Had I known what becoming a master

sommelier would entail, I might never have attempted it.

How is being a sommelier similar to being a teacher?On many levels, we’re doing the same thing. One of our jobs is to

introduce people to new concepts, so just like a teacher, we’re there to

be a guide, inform about the wines on the list, and help them to choose

wines to go with their food and educate the staff to do the same. Teaching

may be the most important job of the sommelier.

You were part of the opening team for the Bellagio and became a master sommelier during your tenure there. Can you tell us about being at Bellagio during such an exciting time? Being a part of the opening of the Bellagio is something I’ll always

remember. At the time there was nothing like it on the Strip. We had

the best chefs in the country all under one roof. In terms of helping

me prepare to become a master sommelier, I learned the craft of

being a sommelier while at Bellagio. I trained under three master

sommeliers and took advantage of the wine training courses that

Bellagio offered, including the Bellagio Wine Academy, an intense 12-

week class. I was also exposed to the best wine in the world, which gave

me an advantage because on a nightly basis I was serving very rare

wines, small production wines and having the chance to taste them,

while working in one of the top resorts in the world gave me a skill set

that was essential in order to pass the master sommelier exam.

What is involved in achieving a master sommelier certification? What did you do to prepare and how long was your journey?The certification is a diploma that’s given out by a trade organization

called the Court of Master Sommeliers, which was founded in 1977 ….

There are four levels: Introductory Course, Certified Sommelier Exam,

Advanced Sommelier Course & Exam and Master Sommelier Diploma

Exam. You are tested on all aspects of wine as well as sake, spirits, cocktails

and beer, because to function in the hospitality industry you need to be a

well-rounded beverage professional. The first two levels are achievable

by anyone who’s been in the business for years but to become a master

involves an enormous amount of studying. I made thousands of flash

cards to study, but in addition to product knowledge you are also tested

on tableside presence and knowledge of products, regions and vintages to

recommend wine, which you can only gain by several years of experience

working in the restaurant business. I took the introductory course in

2001, passed the advanced sommelier exam in 2004 and became a master

sommelier in 2008 (at that time there were only three levels).

You are an active examiner and educator for the Court of Master Sommeliers. What’s involved with that? Does this involve much travel?After you pass the master sommelier exam you are encouraged to train

the next generation of sommeliers and pass on your knowledge. I am

conducting two weekly tasting classes at Southern Wine and Spirits to

help sommeliers and servers improve their wine knowledge. The court

administers about 30 intro exams during the year, as many certified

exams and two to three advanced and master exams. It can require over 20

master sommeliers to administer these exams, especially at the advanced

and master level. The exams take place all over the country, with a few in

Canada and South America.

You’re also a certified sake specialist. How is this title similar to a sommelier and how does it differ?In some ways it’s similar because John Gauntner has been promoting sake

in the US to increase awareness, appreciation and the level of sake service

similar to what the Court of Sommeliers does for wine and spirits. He takes

you through the world of sake in a three-day course, after which you take

the test and get your certification. It is most similar to the Introductory

Course from the court because it is a survey course and does not involve a

test on service or tasting. The higher level courses from the court involve

tests on tasting and service skills.

What makes a good sommelier? Are there personality traits that make one type of person better suited to this profession?To be a good sommelier you need to be a good listener and quickly

understand what the guest is asking about, rather than trying to

impose or dictate what they should be drinking. The goal is to create

a positive and memorable guest experience. Also important are

tableside presence, being able to make friends and gain trust. These

abilities quickly put the guests at ease and promote an enjoyable

dining experience. Not everyone is able to do that.

What is your advice to consumers of wine on making their selections or on deciding which wines are best suited to their tastes?It all comes back to core principles of understanding wine. If you become

aware of the basic structure of wine, identify the components, the amount

of sugar, acid, tannin and alcohol in the wine, you can learn to pay attention

to those things and realize which ones you like more or less of. You will

have a better chance of choosing a wine you will like.

Your current position is director of wine education for Southern Wine and Spirits of Nevada. What are your responsibilities in that role and how do you use your expertise in that capacity?My role is to create programs for three target audiences: our internal

employees, training our sales team, office and warehouse teams to

give them a better product knowledge of what we carry and to foster

promotion from within; members of our trade—sommeliers, shop

owners, restaurant managers and servers, helping them understand

the many different wines and products we offer, which benefits them

by helping them to sell more wine and in turn they will buy more

diverse products; interacting with the general public by doing outside

promotional events, such as Splendor in the Glass and UNLVino®,

events that promote our expertise.

How do you advise people on pairing food with wine? Any hard set rules to follow on that?Release the fear. If you pair a wrong wine with your food it’s not the end

of the world. So just relax. The best way to get a better understanding

of how to pair wine with food is by paying attention to what you’re

drinking and how it’s reacting to what you’re eating. Think about the

elements of a wine—its acid, tannin, alcohol and sugar content—and

how they react to the food you’re eating. Eventually you’ll get a feel

for it, but it takes time and won’t happen overnight. The key is paying

attention and that is the path to getting better at it.

united states: now the second-largest wine consumer in the world has a long history of wine production. The fi rst wines were made in Senecu, New Mexico by Spanish missionaries in 1629.

On the west coast, California, Oregon and Washington, combined, produce 95% of the total wine made. California has four distinct growing areas: the southern region near San Diego, the great central valley, the central coast and the northern area above San Francisco Bay. California has the ability to produce almost any varietal and excels at most. The wines produced exhibit a fresh and fruity spirit, a result of the wonderful growing conditions. Oregon, with a wetter climate, produces excellent pinot noirs and pinot gris’. Washington state, the country’s second largest maker of wine, makes textbook cabernet sauvignon and syrah.

On the east coast, New York state produces delicious rieslings in the Finger Lakes regionand merlot on the north fork of Long Island.

imagine smelling fresh rain on the concrete, or waking up in the morning to the aroma of sizzling bacon. Imagine sitting at a table with a glass of wine. There are no labels, no accolades and no suggestions. Describe what the wine smells like.

Ann Noble and her colleagues at University of California, Davis developed the Aroma Wheel in the early 1980s to help solve this challenge. Everyone is capable of recognizing more than 1,000 smells. Matching words to these smells is a deceptively difficult task. The Aroma Wheel helps set up the mind as a filing cabinet. The wheel begins with basic

categorizations, such as Fruity, Floral and Chemical. It then expands to a secondary level of qualification, such as Berry (Fruity) and Sulfur (Chemical). The final, tertiary level of the wheel lists 87 very specific aromas, all of which can be discovered in wine, including Geranium (Floral), Cabbage (Sulfur) and Black Currant (Berry).

The Aroma Wheel is effective but not complete. Since a person’s olfactory repertoire is based on memory, these terms are not designed to be subjective. It is a tool for understanding a myriad of aromas and for helping identify and describe them in wine.

UNLVino® commenced Thursday, April 16, with a night under the stars at Bubble-Licious at the Venetian’s Doge’s Palace Plaza. Guests raised their glasses to toast the night with a variety of champagnes and sparkling wines while enjoying small plates from the Venetian and Palazzo’s exceptional collection of restaurants. Distinguished culinary icon Chef Daniel Boulud received the Dom Pérignon Award of Excellence for his contributions to Las Vegas’ restaurant scene.

The UNLVino® festivities continued Friday, April 17, at Red Rock Casino Resort and Spa with the return of Sake Fever. The East met the West as guests feasted on dishes from the city’s hottest restaurants alongside an extensive selection of sakes, Japanese spirits and cocktails. Guests also sipped on creative libations concocted by Southern Wine & Spirit of Nevada’s Master Mixologists Francesco Lafranconi and J.R. Starkus. UNLV’s Presidential Advisor for Strategic Initiatives Don Snyder received the Dom Pérignon Award of Excellence for his support to the school’s hotel college. The world’s first rock ’n’ roll Rat Pack tribute band, Franks & Deans, had the crowd dancing with a lively performance.

Joseph Phelps VineyardsIn 1973 Joe Phelps bought a 600-acre cattle ranch in Spring Valley and began planting vineyards. His winery was completed in 1974 and the first Insignia blend was produced. It put Joe Phelps on the map of top Napa Valley wine producers. Over the years, the goal of becoming 100% estate grown resulted in carefully planned acquisitions of prime vineyards in the Napa Valley. Today, the Phelps estate consists of 7 prime vineyard locations in 6 different AVA’s in Napa. Through the years, Joe searched for the ideal spot to grow both Chardonnay and Pinot Noir and his search ended when the perfect location was found in Freestone, located on the Sonoma Coast. Today, 80 acres of Pinot Noir and 20 acres of Chardonnay produce estate-grown wines bearing the Joseph Phelps name.

Dogfish Head Craft BreweryThe story of Dogfish Head began in June of 1995 when we opened Dogfish Head Brewings & Eats, the state’s first brewpub opened in the resort beach community of Rehoboth Beach, Delaware. The plan was to bring original beer, original food and original music to the area. Not only was Dogfish Head Delaware’s first brewpub, it was the smallest commercial brewery in America. Our very first batch, Shelter Pale Ale, was brewed on a system which essentially was three little kegs with propane burners underneath. Brewing 12-gallon batches of beer for a whole restaurant proved to be more than a full time job. When the doors to the pub first opened, we brewed three times a day, five days a week! The one benefit to brewing on such a small system was the ability to try out a myriad of different recipes. We quickly got bored brewing the same things over and over – that’s when we started adding all sorts of weird ingredients and getting kind of crazy with the beers! – If you haven’t had the chance to taste Dogfish Head, find a beer, track down one of our spirits or visit one of our restaurants! You will see why international beer writer Michael Jackson called Dogfish Head “America’s most interesting and adventurous small brewery.”

Pizza PortBack in March 1987, Gina and Vince Marsaglia, a pair of siblings in their 20’s, bought a struggling pizza place in the sleepy coastal town of Solana Beach, just north of San Diego. Vince took advantage of free space in the restaurant’s storage area to dabble with home brewing. The hobby took off and he was eventually brewing more than could reasonably be consumed at home. So at the urging of friends and fans, Vince and Gina decided to go into the brewpub business. Pizza Port offered its first craft-brewed beers to patrons in 1992.

Duvel MoortgatIt all began when Jan-Leonard Moortgat and his wife founded the Moortgat brewery farm in 1871. Around the turn of the century, Moortgat was one of the over 3,000 breweries operating in Belgium. Jan-Leonard experimented by trial and error, and his top-fermented beers were soon greatly appreciated in the brewery’s home town of Puurs and far beyond. Before long, the Brussels bourgeoisie was also won over by his beers. In 1923 the production of Duvel began with just a few crates. Today, Duvel is enjoyed literally all around the world (in over 60 countries) by countless beer lovers. The beer is still brewed with profound respect for the original recipe and the time it needs to mature.
