Introduction to the Wine List

On behalf of the Wine Committee I am delighted to introduce to you the University Club of Toronto’s wine list. May I begin by offering a warm welcome to our members and guests to the delights of the University Club’s wine cellar. There are many benefits to being a member of the club, and one of the distinct pleasures we suggest you take advantage of is the enjoyment of fine wines at unusually good – let’s say unheard of – pricing. We have adopted a discounted wine pricing policy specifically to thank members for supporting the Club through their dues. This policy covers the sale of wines in the bar and regular dining room and limits the mark up to a $28 maximum. This provides an opportunity to sample some excellent wines that you may not have had an opportunity to purchase at home, with it being an affordable pleasure. To give you an example of how this compares to local restaurants in Toronto, a bottle of Chateau Palmer 1982 sells in our dining room for $280 while the price at three leading restaurants in Toronto with sizeable cellars: Restaurant #1: $560; Restaurant #2: $620; Restaurant #3 $600. Blended from Pinot Noir and Pinot Meunier grapes, this is a succulently fruity, supple and aromatic Champagne with fine bubbles and a crisp, refreshing finish of extended length. Taittinger Cuvée Prestige Rosé is intense cherry-pink in color with extremely fine, persistent pinpoint bubbles rising in delicate strands to the surface of the wine. Its classic, aromatic Pinot fragrance of red raspberries and strawberries is offset by elegant, subtle floral and earth nuances. Wine Spectator Appealing aromas of Gala apple, toasted almond and vanilla lead to focused, creamy Asian pear and spice flavors that finish with a vibrant crispness. Drink now through 2012. R31 Ch. Gruaud-Larose (2ieme Cru Classé) (St. Julien) 1990 261 .00 * Gruaud-Larose was superb at the most recent tasting. Moreover, this might be a 1990 that is still affordable. The wine exhibits a thick-looking, plum/purple/garnet-like color. A sensational nose of jammy black-cherries, earth, cedar, and herbs has become far more intense and striking. The wine displays sensational richness and power, but not quite the burly, monstrous size and hulking weight of the 1986 or 1982. Yet it reveals impressive stuffing and power. The low acidity emphasizes the thick, juicy, succulent fruit in this backward yet rich, chewy wine. This was the finest showing yet for the 1990 Gruaud Larose. Score 93 – Robert Parker

R147 Ch. Palmer (3ieme Cru Classé) (Margaux) 1996 258.00 * This wine, a blend of 55% Cabernet Sauvignon, 40% Merlot, and 5% Petit Verdot, is performing well after its July, 1998 bottling. It boasts an impressively saturated purple color, in addition to a backward yet intense nose of black plums, currants, licorice, and smoke. Following terrific fruit on the attack, the wine's structure and tannin take over. There is plenty of sweet fruit, and the tannin is well-integrated, but the wine requires 7-8 years of cellaring. Anticipated maturity: 2007-2028. Score 91, Robert Parker.

R80 Mouton-Rothschild Grand Cru Classé (Pauillac) 1996 393.00 * Wine Advocate Score: 94 Maturity 2007-2030. Cabernet Sauvignon 77%, Cabernet Franc 13%, Merlot 10%. From magnum. This wine has a superb colour compared to the maturing wines tasted alongside; it has a dark core, a dense rim, with plenty of red pigment still. This is very impressive. The nose here is divine; it has a very typical profile for the vintage, full of iron and rust, but enticingly perfumed with violets. It kicks off very elegantly on the palate, and it has a wonderful texture, composed rather than showy. It has great style; the tannins and acidity show through and there is plenty of perfumed character as there is on the nose. There is structure and grip, and a fine persistence. This very superb wine, with its reserved character, will go for more than ten years yet. At its apogee this will be truly remarkable. 19+/20 (February 2008) The Wine Doctor – Chris Kissack

R138 Ch. Latour Grand Cru Classé (Pauillac) 1998 270.00 * Steven Tanzer IWC: Red-ruby. Deep aromas of cassis, licorice and lead pencil. Deeper than Les Forts but currently rather mute in the middle. Strongly minerally. Offers classic Latour structure and spine. Finishes with sneaky, subtle persistence. Score 91

R158 Ch. Pavie (St. Emilion) Magnum 1999 406.00 * The inky/ruby/purple-colored 1999 exhibits a tight but promising nose of crushed stones, a liqueur of blackberries, cherries, and black currants, and subtle smoke and licorice in the background. Powerful, with impressive elegance, fine harmony among its elements, a multi-layered texture, it has a finish that lasts for 50+ seconds. There is considerable tannin, but it is well-integrated. Give it 3-4 years, and drink it over the next two decades. A profound effort for the vintage, it is an example of a perfectionist proprietor pushing the envelope of quality. "The 1999 Pavie is a candidate for "wine of the vintage". It boasts an opaque ruby/purple color in addition to gorgeous aromas of crushed minerals, smoke, licorice, cherry liqueur, and black currants. The wine is exceptionally pure and multilayered, with stunning texture and overall balance. The tannin level suggests 3-4 years of cellaring is warranted; it should age gracefully for 25+ years. If readers are wondering why Pavie has become so much better under the administration of Chantal and Gerard Perse, keep in mind that yields are one-third of what they were under the previous owners." - Robert Parker’s Wine Advocate: 95 points

R205 Ch. De Lamarque Cru Bourgeois 1999 60.00 * Wine Advocate: “This is an excellent, seductive, lower level cru bourgeois with loads of blackberry and cherry fruit intermixed with a smoked herb component. Some spicy oak is also evident. The wine is medium-bodied, with good fruit, and balance.”

R224 Ch. Cambon la Pelouse (Haut Medoc) 2000 68.00 * The Wine Enthusiast: “The 2000, which has a slightly more saturated ruby/purple color than the 2001, is fleshier, with

a more substantial mouthfeel. Exhibiting sumptuous fruit, ripe tannin and a seamless texture, this serious Haut-Medoc is equivalent to many classified growths.”

Decanter, 4 out of 5: Classic cassis/cedar Medoc bouquet, quite dry and restrained. Fine fruit and good elegant wine, shows elegance, depth and finesse. Drink 2-10 years.

R220 Ch. Rauzan-Segla (Margaux) Magnum 1.5 Ltr 2000 495.00 * Score 90 Robert Parker: “The dark ruby/purple color is saturated and impressive. With coaxing, notes of lead pencil shavings, black currants, earth, cedar, and spice box emerge from a relatively closed, firm, medium to full-bodied wine or, as the French would say, a classic vin de garde (for long-term cellaring). There is no denying the classicism and purity of this 2000. Best drinking: 2010-2025.”

R203 Les Forts de Latour (Pauillac) 2000 180.00 * Score 92 Robert Parker: “The 2000 Les Forts de Latour is a seriously endowed wine with notes of black walnuts, black currants, crushed rock, tobacco and spice box. Full-bodied, luscious but still in need of another 2-3 years to hit full maturity, it certainly can evolve for another 15 or more years, and looks to be slightly richer and longer-lived than I originally predicted.” Drink 2012-2027

R214 Ch. Figeac (St. Emilion) 2000 201.00 * Score 93 Robert Parker: “Figeac has become a more consistent wine over the last few years. A profound effort, the surprisingly full-bodied 2000 Figeac has an opaque purple color accompanied by a terrific bouquet of camphor, graphite, black currants, licorice, and smoked herbs. With well-balanced, powerful tannin, concentration, and pinpoint precision, finesse, and purity, this expressive as well as textured effort will drink well between 2004-2018. When Figeac hits on all cylinders, one can understand why some tasters believe it is as complex as Cheval Blanc. This is undeniably the estate's finest effort since 1996.”

La Conseillante (Pomerol) 2000 385.00 * Score 96 Robert Parker: the 2000 La Conseillante has a deep ruby/plum/purple color and an unbelievably expressive nose of sweet kirsch liqueur intermixed with raspberries, incense, toast, and licorice. Full-bodied yet ethereal in the sense that it seems to combine power along with eloquence and delicacy, this is a beautifully pure wine that has just hit its plateau of full maturity, although ideally I think it would benefit strongly from another 4-5 years of bottle age and drink well for two to three decades. (Jun 2010)

R98 Ch. Mouton Rothschild (Pauillac) 2000 727.00 * Score 96+ Robert Parker: “Perhaps the most beautiful packaging ever on a Bordeaux bottle, Baroness Philippine de Rothschild literally produced a work of art in the gold-engraved bottle of 2000 Mouton Rothschild. Of course, one can’t drink the glass, but this is a top-flight Mouton Rothschild, eclipsed only by the 2006 and 2009. A rich, tannic, earthy style, with loads of creme de cassis and floral notes, the final blend of 86% Cabernet Sauvignon and 14% Merlot is a full-bodied wine with plenty of coffee, earth, chocolatey notes, and still plenty of tannin to resolve. I gave it an anticipated maturity range of 2015-2050 back in 2003, and that looks on target. The 2000 Mouton Rothschild is at its best with about 24-48 hours of decanting. A blend of 86% Cabernet Sauvignon and 14% Merlot, the wine offers a saturated ruby/purple color in addition to reticent but promising aromas of toast, coffee, licorice, creme de cassis, and roasted nuts. Dense, chewy, and backward, with tremendous purity and density in addition to obvious toasty oak, it is full-bodied, powerful, tannic, and backward. Twenty-four to 48 hours of aeration only hints at its ultimate potential. This blockbuster will be exceptionally long-lived

R219 Ch. Canon (St. Emilion) 2000 165.00 * Score 90 Robert Parker: “This elegant St.-Emilion has filled out nicely over the last decade. From barrel and post-bottling, I thought it might turn out austere, but that does not appear to be the case. It offers a deep ruby/purple color as well as copious aromas of black cherries, crushed rocks, and earthy undertones. While not a blockbuster, it is beautifully balanced and pure, revealing slightly more depth and richness than I expected. Best drinking 2010-2025”

R216 Ch. La Tour du Pin Figeac Grand Cru 2000 105.00 * The 2000 vintage was a stellar way for Bordeaux to kick off the new millennium. The vintage produced impressive wines from both banks, and was defined by ripeness, concentration, balance and a round, almost silky texture. Most significantly, this quality was reflected throughout the region and across all price points, and the best wines had more than enough structure to continue to evolve for decades. This example is from the family-owned La Tour du Pin Figeac, and the grapes were harvested from vines of more than 40 years of age. A great opportunity to taste mature Bordeaux from a landmark vintage

R234 Ch. Grand-Puy-Lacoste (Pauillac) 2003 100.00 * Robert Parker: “A deep ruby/purple-tinged color is followed by a moderately intense bouquet of black currants and underbrush. It hits the palate with good fruit and medium body, but tails off in the finish. It is an elegant, lighter-styled example of this generally high-class performer. It can be consumed over the next 10-12 years.” Best drinking 2006-2018

R37 Ch. Saintem Grand Cru 2009 58.00 Rounded, ripe and inviting, with freshly crushed plum, blackberry and blueberry fruit woven with toasty spice and framed by a lingering cocoa edge on the finish. Tour Pibran (Pauillac) 2009 76.00 90 points: A major sleeper of the vintage from the owners of Pichon Longueville Baron, this blend of 60% Merlot and 40% Cabernet Sauvignon displays plenty of coffee bean, creme de cassis and sweet cherry notes in a very intense, full-bodied, opulent style. There is some serious power underlying the extravagant fruit. (Robert Parker, The Wine Advocate, February 2012)

R120 Chateau Cantemerle (Haut Medoc) 2010 78.00 95-96 points - James Suckling, April 2016 "Wow. Real Cantemerle with stupendous power and depth. Mineral, stone and violet character. Full and structure. It starts slowly and then goes on for minutes. Perhaps best ever?"

R171 Chateau Rahoul Recolté (Graves) 2010 55.00 Polished and alluring, with black tea, dense plum and blackberry fruit, followed by a long, licorice- and tar-filled finish that glides along with surprisingly polished structure. An echo of smoky tobacco lingers as well, and this offers good range and depth. Best from 2014 through 2021. Score - 90. (James Molesworth, Wine Spectator, web only, 2013)

R89 Ch. Grand Terrier des Eyriaux Bordeaux Superieur 2011 33.00 Ripe black plum and cassis fills out the nose and this black fruited power is there on the palate. Ripe feeling tannins give a mid suppleness lovely and fleshy. The ripe cassis is backed by firmer black cherry with towards the back coffee and spice giving an added complexity. The finish is sweet fruited and quite rich." 93 points - Derek Smedley, Master of Wine, June 2012 (2009 vintage)

R58 Ch. La Croix Bonis (St. Estèphe) 2011 67.00 Closely affiliated with Château Phélan Ségur, “La Croix Bonis” comes from selected plots in the estate, most of which are Cabernet Sauvignon, located on the best land in Saint Estèphe. The Gardinier family strives and succeeds in producing a great wine, reputed as one of the appellation’s best. Careful vineyard management including controlled yields and sustainable crop practices help to achieve such year-to-year quality. The harvest is picked entirely by hand, and carried in small trays. After strict sorting, only the very best grapes are kept. Winemaking takes place at Château Phélan Ségur, using the best techniques. True to character, “La Croix Bonis” will be as enjoyable as the great Saint Estèphe wines

R8 Domaine des Sabines Lalande-de-Pomerol 2014 84.00 The Domaine de Sabines 2014, from the hand of Jean-Luc Thunévin, has a captivating nose: very well defined and tensile with animated black cherries and raspberry fruit that is beautifully interwoven with the new oak. The palate is medium-bodied with succulent ripe tannin, a keen line of acidity and a concentrated but very balanced, pure bouquet that is silky smooth and persistent. This might not be one of Jean-Luc's most famous crus but it is well worth your attention, a modern Right Bank wine that is deftly executed. Drink Date: 2018-2032. Score - 91-93. Deep, full-bodied, and rich, with moderately high tannin, it is atypical for the vintage given its structure and density (two characteristics most 2000 northern Rhones lack). It is a brilliant achievement in a challenging year. Anticipated maturity: 2007-2035.”

R190 Domaine Patrick Jasmin Cote Rotie 2001 91.00 Robert Parker Score 90-92 “The 2001 Cote Rotie’s deep ruby color is accompanied by explosive aromas of sweet raspberry fruit intermixed with a hint of apricots (7-8% Viognier is added to the blend). Well-delineated and floral, with a cherry/raspberry fruit component beautifully displayed, this medium-bodied 2001 is not a blockbuster, but it wins the taster over with its delicacy and finesse.”

R186 Chateau La Nerthe Chateauneuf-du-Pape 2012 73.00 Juicy and lively, with good energy coursing through the core of plum, anise, blackberry and fruitcake flavors, while sweet spice and juniper hints fill the finish. Offers a chewy feel without being heavy. Best from 2016 through 2023. Score - 91. (James Molesworth, winespectator.com, Sept. 30, 2015)

The finish introduces touches of liquorice and pepper. A Côtes du Rhône with great complexity for an every day drinking.

Its flavours are pristine and succulent. A perfect match to fresh pan roasted trout with fingerling potatoes.

PORT, SHERRY & MADEIRA

PORT Port is a fortified wine made in Portugal from various grape varieties grown in the Douro valley. Brandy is added to halt fermentation at a point where sufficient natural sugar remains to give the wine its characteristic sweetness. There are many different types of port. Vintage port is wine of an exceptional year, kept in cask for two or three years, then matured in bottles. Late Bottled Vintage (LBV) ports are generally the produce of a single vintage. They are left in wood for four to six years, then fined and filtered before bottling. Ruby port, generally a blend of wines of different vintages, is stored in wood and bottled before it loses its clear, red color. Vintage Character port is essentially premium ruby port. Tawny port remains longer in the cask, losing some color and alcohol. Colheita is a tawny port from a single vintage. Crusted port is vintage or ruby port kept in bottles until it has formed a crust-like sediment. Single Quinta Ports are made in both tawny and vintage styles but with the distinction that they come from only one vineyard. White port is a sweet, amber-coloured port that is delicious served chilled as an aperitif.

SHERRY

Sherry is a fortified wine that comes from white grapes that are grown near the town of Jerez de la Frontera in Andalusia, Spain. Sherry is produced in a viariety of dry styles made primarily from the Palomino grape, raning from light versions similar to white table wine, such as Manzanilla and Fino, to darker and heavier versions that have been allowed to oxidise as they age in barrel, such as Amontillado and Oloroso. Sweet dessert wines are also made, from Pedro Ximinez or Moscatel grapes, and are sometimes blended with Palomino-based Sherries.

MADEIRA

Madeira is a fortified wine that comes from an island off the northwest coast of Africa of the same name. Originally it was naturally oxidized as a result of ageing on shipboard. This process, which produces strong, rich wines, is now undertaken in heated buildings called "estufas," Madeira ranges from very sweet (Malmsey) to medium sweet (Bual) to rather dry (Verdelho and Sercial).
