    POWER FAILURE: Intheeventofpowerfailure,theUltraFD1000willremainonthesettemperature,buttheSnackmakermustberesettothedesiredtemperaturesetting.

    Themoreyoudrythemoreproficientyouwillbecome.Youwillnoticethattherearemanyfactors,whichaffectthedryingprocess,suchashumidity,altitude,preparationandthequalityofthefreshproduce.

    PREPARATION: Choosemature,ripeproduceandprepareitquickly.Donotleaveslicedproduceforlongperiodsbeforeplacinginthedrierasthisaffectsthequalityofthefinishedproduct.Wherepossible,cutfruitandvegetablesintothesamenumberofpiecessoyouwillknowhowmanyslicestoputintoaparticularrecipe.Toensurethattheproducewilldryatthesamerate,cutproduceintouniformslicesorcircles5mmthickoruseafoodprocessororslicer.

    OPTIONAL PRE-TREATMENT:Pre-treatmentdoespreventoxidization(thedarkeningoflight-colouredfoodslikeapples)andpreventslossofessentialvitamins.Naturaldipslikecitrusfruitjuicescanbeusedasanalternativetocitricandascorbicacid.

    DRYING: Alwaysoperateyourdrierinawell-ventilatedposition.Pre-heatingtheunitbeforecommencingdryingisrecommended.Drythesametypeofproducetogetheranddonotaddfreshproducttopartiallydriedasthiswillincreasethedryingtimeforbothproducts.Spreadonelayeroffoodonlyoneachtray.

    DRYNESS TEST: Ifpossible,checkyourproduceneartheendofthedryingcycleasover-driedfoodlosesnutritionalvalueandtasteandismoredifficulttoreconstitute.Acooledpieceofproduceshouldbetorninhalfandsqueezed.Ifnomoistureisapparent,itisdryenoughtobestored.

    Generally,fruitandroll-upsarepliableandleathery,althoughifhoneyhasbeenaddedtheymaystillbeslightlysticky.“Vegetableswillbeeithertoughorcrispandbeefjerkyandfishwillbequitetoughandwillbend.

    9 HYGIENE ■Washhandsthoroughlybeforehandlingfood. ■Detergent,bleachandwaterwillensureutensils,containersandcutting surfacesarethoroughlycleaned. ■Preparefoodquicklyfordryingandstoreexcesssuppliesinrefrigerator untilreadytobeused. ■Ifleavingdriedfoodtocoolinthedrierbeforestoring,coverthecentre outlettostopfliesandinsectsentering. ■Alwaysstoredriedfoodsinair-tightcontainersinacool,darkplace.

    STORAGE: DriedfoodshouldalwaysbestoredinaCOOL,DARK,DRYLOCATION.Forevery10�Cdropinstoragetemperature,theshelflifeofdriedfoodincreasesuptofourtimes.Theidealstorageplaceisyourrefrigeratorordeepfreezeforsuchlowacidfoodsasvegetables,meatsandfish.Anypossibilityofinsectinfestationcanbeovercomebyplacingyourpackagesofdriedproduceinthedeepfreezeforupto48hours.

    RECONSTITUTION: Donotaddtoomuchwaterwhenreconstitutingdriedfoodasnutritionallosswillresult.Theamountofwaterdriedfoodwillabsorbandthetimeittakestocompletereconstitutionvariesaccordingtothesizeofthefoodanditsdegreeofdryness.Iftheliquidisabsorbedquicklyandthefoodstilllooksshrivelled,addalittlemorewateruntilthefoodwillholdnomore.Boilingwaterhastensreconstitution.

    Although a lot of fruit is eaten dry as a snack, fruit for stewing and pie recipes isreconstitutedbyaddingonecupoffruittoonecupofwater.Allowtostanduntilrecon-stitutedandthenproceedwiththerecipe.

    Ageneralruleforreconstitutingvegetablesistoadd11/2cupsofwatertoeachcupofvegetables.Forstewsandcasserolesthevegetablescanbeplaceddirectlyintostocktoreconstituteduringthecookingprocessbutremembertoaddextrastocktoallowthedriedvegetablestoreconstitutefully.
