Griffith’s wedding dressmaker

Ada Cummings was a pioneering woman in business, running a store at Bagtown and then in Griffith. It is estimated that at the peak of her trade she made 90 per cent of the wedding dresses worn at local ceremonies during the 1920s.Griffith Pioneer Park Museum pays tribute to Mrs Cummings with a replica of her first store, which was built based on the recollection of her son Stan.Ada Cummings arrived at Bagtown with two children in 1916. Stan would later recall he had his first ride in a motor car that day, when Micky Cush drove them in his Model T-Ford from the train station in Willbriggie.The family had not seen husband

and father William Cummings for a year, since he found work with the Water Conservation and Irrigation Commission in 1915.

Stan recalled that his mother Ada saw the front window of the house they were to live in and thought it would make a little shop. Fifty pounds worth of stock was ordered from Melbourne, taking three weeks to arrive via Cootamundra and Temora.

The opening of the Bagtown store saw the building packed with customers, as women had previously relied on the two general stores for their requirements.

William Cummings would build the shop that was located in Griffith's Banna Avenue in 1920. This shop was enlarged in 1922 to accommodate fitting and dressmaking rooms.

INGREDIENTS

Pappardelle:500g spelt flour500g semolina

10 eggs15g salt

Ragu:1 lamb shoulder, largely diced150g pancetta, finely chopped

1 large red onion, finely diced1kg tinned tomatoes

100ml olive oil1 rosemary sprig200ml red wine

1 piece pecorino rind200g pecorino, freshly gratedSalt and pepper, to season

METHOD1. To make the pasta, mix the flour, semolina and

salt until well combined. 2. Add eggs and knead until a firm smooth dough, wrap in cling wrap and rest for half an hour.

3. Meanwhile, in a large saucepan over low heat, sweat the onion and pancetta in oil until the

onion is very soft.4. Increase the heat and add lamb to

brown the meat all over.5. Add the red wine and reduce the liquid by half.

6. Add the tomatoes and pecorino rind, then season to taste.

7. Turn the heat to low, place a lid on the pot and leave to simmer slowly

until the lamb is tender. 8. Add the rosemary.

9. While the ragu is cooking, roll out the pasta to the thinnest setting on your pasta machine

(always start at the thickest) and then cut into thick ribbons.

10. Cook the pasta in a large pot of boiling salted water, then combine with the ragu.

11. Finish with grated pecorino, buon appetito!

The foodie scene is delightful, with 60 per cent of the population claiming Italian heritage, the cafes are dominated by good Italian eateries, visit these restaurants to discover the city’s most influential culture.

ZECCAIt’s the Italian word for mint – as in where money is created. A perfect name for this classic Italian eatery in an art deco building formerly the local branch of the Rural Bank. There’s an open kitchen and central bar, serving delicious handmade food with locally sourced seasonal ingredients. Zecca was the dream of well-travelled friends Daniel, Ben and Michaela, who returned to Griffith to open their dream restaurant serving rustic and regional Italian dishes. The wine list features local Italian wines.

LA SCALAA Griffith institution: this family owned and run business has been serving Griffith locals and

weary travellers for more than 30 years. The service is friendly, the décor traditional, the meals are hearty and the scaloppine delicious!

VITA’S Located in the historic Mona Cafe in the heart of town, Vita’s has been serving authentic Italian cuisine for more than 15 years. This is a great place to share bowls of gnocchi and pasta with friends and family. Be sure to also try the rocket topper.

MIEI AMICIAlways a hive of activity, this cafe is a regular coffee spot with the locals. Good spot for lunch, fresh juice and smoothies or coffee and delicious homemade treats – try the lemon ricotta cake!

LA PICCOLA GROSSERIA & ITALIAN DELIA family business which specialises in imported cheese, salami and other deli delights. Pop in for an authentic Italian deli experience and pick up a freshly made roll and coffee or Chinotto.

Griffith, the agricultural powerhouse of the
