THE ‘5 A DAY’ FRUIT AND VEGETABLES government advice has omitted two very important factors. Nature has kindly colour coded its offering with a rainbow of hues, eating a balance of colours is optimum for helath and knowing the amount of each to consumre will also improve health. Each colour has different compounds which the body needs on a regular, and often, daily basis. There is no point eating five a day of one colour as the vital nutrients of the other colours will be deficient in the diet.

Artificially coloured and genetically modified foods confuse the picture so should be avoided because they do not tell us what the food contains and are unlikely to be balanced in nutrition. Plus artificial additives can cause many health problems especially for children, the elderly or those with allergies or a weakened immune system.

Nature’s colours give strong clues which we sometimes ignore. For instance the amazing beetroot possess betacyanin which gives them their deep red colour and provides the essential ingredient which can assist the body with recovery from many ailments. It stops the spread of cancer tumours, prevents diseases of liver, kidney and pancreas and treats ulcers in the stomach, strengthens the lungs and the immune system, improves vision, reduces pain after intense physical training and menstrual pain, eliminates hard stool, positively affects the colon, regulates high blood pressure, improves bad breath which occurs due to indigestion of food, helps treat acne and creates healthy skin. Therefore, if foods of a particular colour are avoided there are many great health benefits that are missed out on and many essential organic nutrients and minerals.

Some vegetables have more than one colour for instance spring onions have green leaves and white roots. This means there are the nutrients of both these colours present so the whole of the plant should be eaten which will provide the

nutrients of the green and white categories below. The same goes for beetroot and beetroot leaves.

Some vegetables, fruits and nuts contain different healthy nutrients in both their flesh and skins so both should be consumed. Apples, aubergines. potatoes and sweet potatoes are examples. Orange, lime and lemon peel has powerful antioxidant properties, is nourishing for the heart and should be included in the diet. Skins should only ever be discarded if they are completely inedible such as bananas, swede, watermelons, pumpkins etc. Just–ripe bananas contain slightly different phytonutrients than very ripe black bananas. Both are good for different reasons.The western diet generally lacks in different colour combinations of vegetables and fruits and large portions of just one or two colours are consumed on a daily basis.

Choose at least one small serving of each of the six colour categories per day. Make two of them fruit and four of them vegetables.1. YELLOW/ORANGEAnthoxanthins, betaxanthins and carotenoids give the yellow/orange colours found in apricots, bell peppers, butternut squash, carrots, chick peas, chilli peppers, corn, ginger, lemons, lentils, mango, oranges, papaya, peaches, pineapple, prickly pear, pumpkin, swede, sweet potato, tangerines, turmeric, the peel of yellow and orange citrus fruits and whole grains.

4. REDAlpha and beta-carotene, betacyanins and

lycopene give the red colour in apples, asparagus, bell peppers, cabbage (red), cherries, chilli peppers, cranberries, goji berries, grapefruit (pink), grapes (red and black), guava, oranges (blood), pears

(red), mung beans, persimmons, pinto beans, prickly pear, radishes, raspberries, rhubarb, red chokeberry, kidney beans, onions (red), pomegranates, raspberries, rhubarb, rose hips, saw palmetto berries, strawberries, sumac, Swiss chard and tomatoes and watermelon. Astaxanthin is the most powerful antioxidant known to man and causes the pink/red colour in seafood such as lobster, prawns and salmon. The highest concentration is found in krill oil.

5. WHITE/CREAMAnthoxanthins give the white/cream colour found in aubergine, just ripe bananas, brazil nuts, butter beans, cauliflower, celery, chestnuts, coconut, garlic, Jerusalem artichoke, leeks, macadamia nuts, mung beans, mushrooms, navy beans, onions, parsnip, peanuts, pecans, pine nuts, pistachios, potatoes, radishes, soya beans, spring onions and turnips.

6. BROWN/GOLDFoods can contain a variety of the above pigment nutrients such as brown rice, cocoa beans, dates, hazelnuts, mushrooms, nuts, potatoes skins, seeds and whole grains.

Note that to absorb fat-soluble carotenoids, the red, orange and yellow foods must be consumed with a little oil such as cold-pressed coconut, seed, nut, olive or rice bran or other fatty foods like avocado or oily fish.

Foods containing the nutrients lutein, zeaxanthin and the vitamins A, D, E and K must also be consumed with some fats at the same time.

Selecting foods based on their colour is not only a great way to improve health but is also a good inspiration to introduce new ingredients into your diet. It can be great fun finding recipes that make the most of nature’s wonderful world of colour.

THE PRESSURE ON LOCAL government finances gets more intense as each year passes.

Councils of all political colours face the same challenge - protecting valued public services whilst achieving significant savings.

The challenge faced by The London Borough of Richmond is particularly acute. As a ‘wealthy’ borough we receive relatively little in the way of grants from Central Government. This has been the case when Westminster was controlled by Labour (New or Traditional), Coalition or Conservative. This means that local expenditure in Richmond is funded largely by local council tax or service charges when compared with virtually any other Council area.

Faced with this challenge the Council has opted for a bold plan to share staff with neighbouring Wandsworth borough. The objective is to achieve £10m worth of fresh savings on top of those already identified in previous initiatives. The commencement date for the shared staffing initiative will be 1st October 2016. In sharing staffing the council hopes to save money in four key ways.

Firstly, and most simply to reduce the overall level of staffing. Secondly, to remove unnecessary duplication between the two boroughs. Thirdly, to bring together commissioning and procurement and to benefit from our combined bargaining power. Fourthly, to achieve improved efficiency through harmonising systems and processes.

Although some people are nervous about the idea of sharing services with others we have already entered into a number of long-term agreements with neighbouring boroughs for a variety of services. Legal, Audit and HR are already delivered via shared arrangements. Even more significantly, much of the support provided to vulnerable children in the borough is provided through Achieving for Children (AfC) a joint venture between Richmond and Kingston.

Whilst staffing and services will be shared, the democratic structure of the two Councils will remain unchanged. Richmond will remain a separate legal entity, as will Wandsworth. Each borough will retain full sovereignty. Richmond-upon-Thames voters will continue to elect Richmond councillors from Richmond wards. These councillors will in turn set the policy and management objectives for Richmond. These policy and management objectives may be identical or substantially similar to our neighbours in Wandsworth, or they could be totally different. The stance adopted by each borough will depend on the voters in each borough. The Shared Staffing Arrangement (SSA) will then be used to deliver the policies adopted by the two councils.

The case for sharing staff extends beyond simply saving money. Both Richmond and Wandsworth are high performing councils. Each has expertise that can be shared with the other for the benefit of residents of both boroughs.

As with any major change we are bound to have some teething problems, but officers from both councils are working hard to make the changes as seamless as possible.
