Created and served by the students of The School of Busi-ness and Hospitality at the Pennsylvania College of Technol-ogy, the evening will start with champagne and hors d’ oeuvres in the Museum’s Recep-tion Room, including beef carpaccio with watercress garnish, crostoni with olive tapenade, and crab-
meat- and fresh herb-stuffed mushrooms. A soup trio of red pepper bisque, chicken and wild rice, and duck consommé and a sal-ad course of romaine hearts with “Green Goddess” dressing will follow. After a fish course of herb-crusted cod with asparagus risotto and a poul-try course of chicken roulade stuffed with
apples and goat cheese with an apple cider sauce, sweet potato puree, and Brussels sprouts, an entrée of apricot-stuffed pork loin with roasted tourné potato and vegetables or stuffed beef tenderloin with sun dried tomatoes, bell peppers, spinach, and grated parmesan will be served. While a dessert of banana cheesecake and cham-pagne sabayon with chocolate garnish is being prepared, guests will be treated to a

They are also required to present a present a skit and speech at the SUN Area and State Dairy Princess Pag-eant and attend a three day seminar from July 9-11 at Elizabethtown College. The alternate princess is required to present a skit and speech at the SUN Area Dairy Princess Pageant and either attend seminar with the princess or mini seminar with the dairy misses, maids, and ambassadors. Dairy Misses, Maids, Am-bassadors, and Alter-nate Princess are to help the Princess at different events and cover for her when she is not available. Boys can also join but can only be ambassadors. Goat people can also join. SUN Area Ag Dairy Days will be taking place on May 16-18 at the Middlec-reek Valley Antique Show along Old Co-loney Road in Selins-grove right beside the
Snyder County Pris-on. There will be kids games Friday start-ing at 4 and Saturday & Sunday from 10-3. Friday night will be a celebrity-milking con-test at 6:30pm. Satur-day at 7pm is the SUN Area Dairy Princess Pageant and Sunday at 1pm is free ice cream sundae. Parking and administration is free.

that the month of March has so many exciting firsts. Did you know that pan-cakes were first introduced in the month of March back in 1882. Yes, those light fluffly breakfast delights drenched in butter and maple syrup first made its debut over one hundred years ago. Many of us still enjoy pan-cakes as a staple of our breakfast con-sumption. How ex-citing that most of been to be the first person to taste a tradition that stood the test of time.
How about Oreo cookies?? The oreo cookie was first sold in the month of March. Oh how far that lit-tle chocolate sand-wich cookies has come. Now, we have all different colors and flavors representing all the holidays. How do you eat your oreo cookie?? Do you take it apart and enjoy the chocolate side first then eat the creamy center or do you eat the entire cookie in one big gulp. Whatever way you choose to enjoy your oreo cookie you can rel-ish in the fact that it appeared in stores
in this month. My favorite day in
March is of course is “Fat Tuesday”. Who does not en-joy a day dedicat-ed to those fluffly, greasy confections. You can attempt to eat as many as your stomach allows to prepare yourself for the Lenten sea-son. Fat Tuesday is also the begin-ning of Mardi Gras which lets those of us that celebrate the Easter season know that we have forty-seven days until Easter.
With all these exciting food facts let us not forget that on March 21st spring arrives. Fi-
nally we can start shedding those winter clothes and begin the chore of spring cleaning.
