It is an insight into a wide range of techniques that prepare the student to venture into more advanced designs. The course has been structured to utilise a wide range of cutters and moulds by combining hands-on activities for each skill set with both traditional and modern application. The ultimate challenge for those completing this course in the final session students will decorate a cake by combining eight different techniques (including cutters and moulds) following the lead of the facilitator. At the end of this course students will have developed a set of skills and knowledge in the following areas. Day 1: Introduction to the course outline; the essential tools, their use and care; researching products, books and equipment; when to use what cake variety; cake recipes; preparing, levelling, packing and baking a cake; preparing a cake for royal. Practical session: three different covering methods for fruit and other cakes and boards; the use of dummies. Royal icing: the essential tools, their use, storage and care; how to prepare and store royal icing. Practical basic techniques: letters, edging, stencils, flood work, stippling and fixing. Sugar roses and leaves: the essential tools, their use, storage and care; how to prepare flower paste. Practical: making wired and unwired formal, rolled, 5-in-1 and moulded roses and leaves; colouring techniques. Day 2: An introduction to cutters and moulds, their use, storage and care; where to source, how and when to use what tools; sugar ribbons, drapes, bows, plaques. Student will collate their pieces and are introduced to cake decoration using eight new techniques by following the lead of the facilitator. List of materials to be supplied by the student: Apron, hand towel, face washer, pastry mat, rolling pin, notebook and biro/pencil, box for transporting decorated items. List of materials supplied by Merivale Cakes and Crafts: Handouts (lesson notes) industry contacts, essential materials (icing, boards, cakes/dummies, cutters, moulds and textured rolling pins etc). Students are encouraged to test the tools and identify the skill set that they wish to build upon prior to purchasing new equipment. Payment: Total cost $475 to be paid in full, in advance. Refreshments: A light lunch is included.

Sugarcraft Level I

2 Day Course
