Totino Estate Vineyards are situated in the picturesque Adelaide Hills of South Australia, in a region called

Paracombe. Located approximately 420 metres above sea level, Totino Estate sits on 120 acres of land with

80 acres of vineyards. The climate is cooler, the soils richer, and the subsequent � avours of the grapes grown,

are delicate yet complex. The property was a former vineyard, however in 1970’s a Government grant was

issued and the vineyards where vacated. In 1999 despite the unkempt state of the Paracombe Estate,

the Totino family saw great potential and commenced planting six grape varietals.

Reminiscing in the years that were, the vineyards remind Don of his youth in Calabria. Travelling through the Calabrian country side with his grandfather, their donkey Peppina and a few relatives from the village who would also bring their donkeys to harvest the small family vineyard.

After harvesting and crushing the grapes barefoot, the families and friends would celebrate by rejoicing with food and wine. Although technology has advanced over the years, we still keep the old tradition of celebrating with family and friends after harvesting.

THE 2008 TOT INO ESTATEAdelaide Hills Shiraz retails for $19.95, which just goes to show that you can’t judge a wine by its price, because at the time of writing this, that wine has just been announced as the runner-up in the 2012 Great Shiraz Challenge.

Just think, you could buy around three cases of the Totino shiraz for the same money you would spend on one bottle of some wines in the same challenge! When I suggested this to Don Totino, proprietor of Totino Estates Wines, his immediate response was: “I think I sell it too cheap, don’t I!” The fruit for this winning shiraz came from Totino’s vineyard at Paracombe in the Adelaide Hills. Paracombe has an altitude of over 400m – the terrain is gently undulating, the climate cool and the soils are rich. The story goes that several decades ago, grapes grown in this same area were regularly used by Max Schubert for his Grange and for St Henri.

As any viticulturist will tell you, wine is made in the vineyard. Totino’s viticulturist, Damien Harris, is no exception. Harris lives on site at the vineyard with his wife Tory. “Absolutely, wine is made in the vineyard,” he agreed. And he couldn’t be accused of being biased because he is also a qualified winemaker. “I’m often asked which I like more - winemaking or viticulture. It’s no contest - I just love being out in the vineyard.”

Harris isn’t alone in his passion for the vine. Totino might be the very busy CEO of Festival City Wines and Food but he loves to roll up his sleeves and spend as much time as he can in his vineyard helping Harris. “I had Don on the tractor all day Sunday,” said Harris. “He likes it because he can relax, doesn’t have to think too much and there are no phone calls.”

“During summer I usually finish in the office around five,” explained Totino. “And then go to work up in the vineyard. I love to be involved, it gives me huge satisfaction.”

He went on: “When I was a boy growing up in southern Italy, the highlight of the year was the grape picking season. We used to go up in the hills in our Alfa Romeos - our donkeys - and pick up the grapes and bring them back to crush them. I used to jump in the concrete vat, stomping up and down in my bare feet crushing the grapes. Then we got to try the wine from the previous year. Even as young as six I was allowed to try it, although my grandma would add lots of water.”

As the often-cited phrase goes – “You can take the man out of the country but not the country out of the man”. Totino has reproduced the atmosphere of those halcyon days of his youth at his Paracombe property that he fondly refers to as his little Tuscany.

It isn’t just grapes that fill the hectares at Paracombe. There are vegetables, sheep, alpacas and according to Harris: “Just about every fruit tree that you can imagine, including chestnuts, olives, quinces,

persimmons, cherries and lovely black figs. Don’s instructions are if there is a bare patch of ground a plant has to go into it - but it has to be a plant that bears fruit!”

“There are about 300 olive trees and on olive picking day Don comes up with his entire family, they lay blankets on the ground and armed with rakes they comb the trees, the wine flows and half a cow is cooked up by the house – it’s a great day.”

Apart from growing the grapes for Totino wines, Totino and Harris are both very involved in the winemaking process. “What you see in the bottle represents long hours spent blending different barrels. If we aren’t happy with the results it doesn’t go into the bottle,” Harris said. He has a simple, but sound, philosophy: “I have to like to drink the wine myself.”

Totino exports some of his wine to Italy. He recalls a recent visit to his home country: “I was in a restaurant in Trento near the Austrian border and asked the wine waiter if they had Australian wines, he

said they did, and then produced a bottle of my own wine. That made me really very happy.” Totino wines are made in more of a European style. “The 2008 shiraz is a good example of this,” said Harris. “It is probably the biggest style that we have made – it was quite a warm vintage. The fruit is quite pronounced and we ended up using about 70 per cent old oak.”

Totino and Harris were both rapt with the Winestate win. “When you win something Winestate win. “When you win something Winestatel ike this, it makes all the hard work worthwhile,” said Totino. If you haven’t heard of Totino wines it is because Don doesn’t believe in spending money on marketing or expensive brochures. He would rather put the money into producing the best wine he can. The pair only has one point of difference. “I keep telling Don he is selling his wine too cheap,” Harris said. “But he just says ‘I want to make good wines at a good price’ because that is what he expects from other people.”

Bouquet Stewed plums and dark cherry with some spicy & earthly overtones.

PalateShows tannins which are quite dry on the front palate, balancing the acid which leads to a crisp � nish on the back palate. The wine is actually on the upper side of medium. Unique from other wines from the region with its depth, colour and dryness on the back palate with low sugar levels.

Harvest This late ripening robust variety is well suited to the premium Adelaide Hills region. The tightly structured Cabernet Sauvignon, displays scents of blackberries and mint with � avours of dark berry fruit.

Harvest Picked in late April, this full bodied grape variety is well suited for premium wine production. Selected from the Totino Estate, situated in the picturesque Adelaide Hills, the vines have been lovingly cultivated via traditional methods, including the art of hand pruning and picking. Limiting the yield has assisted in creating a wine of immense quality and an intense colour displaying typical Shiraz characteristics.

Don Totino was born in Marina di Gioiosa Ionica RC (1950) – Italy

After immigrating to Australia in 1968, at the age of 18 he was the youngest barber in Australia, however he realised that hair dressing was not for him. He then went on to own and operate a pizza bar called ‘lick a chic’.

In 1977 he bought Sarti Liqueurs, producing liqueursessences, marsala and importing Italian wines and food. From humble beginnings Festival City has since expanded into importing and distributing powerhouse of � ne Italian products such as Italian San Daniele Prosciutto, fresh and matured cheeses, pasta, biscuits and more recently NZ and Chilean wines just to name a few.

Festival also houses a � ne faire of local South Australian and Australian products, boasting Vine Valley Vinegar; an established brand for over 100 years which is proudly still SA owned and made on site in the newly refurbished bottling line.

The company is today a leading distributor of wines, spirits, beers and food, supplying up to 80% of the SA hospitality service; As well as other Australian states including Victoria and Northern Territory.

In 1998 Don purchased an Adelaide Hills vineyard in the region of Paracombe, where Totino Estate was born. The existing vineyards were neglected but with a lot of passion and determination the vineyards began to grow.

2002 saw the � rst release of Pinot Grigio and Unwooded Chardonnay and from there Totino Wines have picked up over the years numerous awards.

Along with a passion of viticulture, Don is a man who has dedicated his time to many charitable boards and social groups such as SPARC and most recently the St Hilarion Building Fund. He has been an active member of the Italian Chamber of Commerce since 1986 and board member since 1995.

His tireless dedication and work for the community as well as his business savoir faire has not gone unnoticed. He has been honoured twice by the Italian Government for both his business and charitable contributions to the community. First receiving a Knight of the Order of Merit to the Italian Republic ‘Cavaliere dell’Ordine al Merito della Repubblica Italiana’ and most recently ‘Commendatore dell’Ordine al Merito della Repubblica Italiana’, Commander Order of Merit, which is the third highest honour in the Italian merit ranking.

For service to the Italian community, particularly through promoting commerce and industry and as a supporter of a range of charitable organisations Don was also awarded an OAM, the Medal of the Order of Australia.

Don is married to Connie and they have three children, Anna, Linda, Francesco, and son-in-laws Laurence Condo and Chris Jarmer. Don and Connie have three beautiful granddaughters, Cartia, Alexia and Charlotte and a grandson named Tommy.
