their made-from-scratch recipes are must-stops. I always take them past the Lawrence Memorial Chapel to show them what I believe to be one of the best music venues anywhere. CVB What is your idea of a perfect day in Appleton or the Fox Cities?CC Spending time with family and friends, but also just about anyone you meet in the Fox Cities because they are so friendly and interesting. I’d start with having a cup of coffee at one of the many great coffee shops, then spending some time in one of the great parks by the river. Depending on the season, visiting Fox Cities Stadium for a Timber Rattlers game would be high on the list because I love baseball. I always like to show off the area where Harry Houdini lived as a child – make a disappearing joke or two – and I always spend ample time enjoying a combination of nightlife, culture and food.CVB What advice do you have for any Fox Cities residents that are aspiring musicians or singer/songwriters?CC Ingest the culture of the town and the region you are from and don’t be afraid to share it with the rest of the world in your music and your writing – embrace it!

According to the biography on his website, Cory Chisel considers himself an old believer. That is, someone that is considered an old soul. That wis-dom of an old soul shines brightly through Cory’s music and lyrics. Cory spent the majority of his formative years in Appleton, moving here at age 8, and considers it his hometown. As a child, Chisel received a scholarship from an anonymous donor to join the Appleton Boy Choir. That experience set the stage for Cory’s life-long love for music. Chisel is proud of his hometown and has made it a goal to showcase it to his music friends.

My with Cory Chisel

CONVENTION & VISITORS BUREAU When you tell your music friends about your hometown, what do you tell them?

CORY CHISEL There’s a lot to describe, but depending on whom I’m talking to, I talk about things like the picturesque layout against the river, our great downtowns, especially the one-mile stretch of College Avenue in Appleton, and I always refer to the ‘notoriously friendly’ inhabitants.CVB Has growing up here influenced your music at all?CC It sure has. I think there’s a certain element of performance that always intrigued me because of Houdini having lived in my home-town…that’s become part of me. Mostly, though, I think it’s the hard work ethic that is so prevalent – it’s well-known worldwide – and that definitely rubbed off on me. The idea of being on time, working till the job is done well, that’s all part of being a musician in today’s world and I couldn’t have had a better upbringing that way. And, of course, I have a strong pride in the culture of the Upper Midwest and all it has to offer.CVB What made you want to have an event like Mile of Music in your hometown?CC That’s an easy one. Mile of Music has given me the chance to show off my hometown like nothing else could…and not just to my musician friends, but to thousands of folks who come from all over the Upper Midwest. There are very few communities who have this amazing combination of walkability, safety, venue variety, personality and warmth, and an openness of the people to embrace something new and slightly risky or challenging. CVB When you bring your friends to town for Mile of Music, where do you take them first?CC I like to show off Downtown Appleton and some of my favorite nightlife places, including some of the down-home landmark clubs like Cleo’s or Dr. Jekyll’s. I always take them to our excellent local eateries like Stone Cellar Brewpub so they can experience our local beers and locally-sourced foods. Restaurants, like Carmella’s, with

2015 FOX CITIES DESTINATION GUIDE 15

Fox River Mall

An interview with John Burgland, Senior General Manager, Fox River Mall

FOX CITIES CONVENTION & VISITORS BUREAU: When are the best times to shop, time of day and time of week?

JOHN BURGLAND: If you’re looking to avoid crowds, then your best time to shop is during the week, particularly at night. If you’re shopping Friday-Sunday, you need to expect crowds any time on those days. People shop based upon a need. If they need something, they’ll go shopping for it.

CVB What’s the scoop on store sales?JB

Store sales are a normal thing now. The best time to shop the store sales are at the end of the sale or at the end of a season to get the best bargains.

CVB Where are the best places to park at Fox River Mall?

JBYour best bet is to look for the least congested area of

the parking lot. There are more parking stalls on the west side of the mall, between Sears and JcPenney.

CVB What are some of the mall services offered to visitors?

JBSome of the typical guest services include wheelchair

and stroller rentals. Both are available in the food court; the wheelchairs are free, while the strollers are available for a fee. If you’re looking for gift cards, the mall has a kiosk available in the food court or they can be purchased at the Mall Office which is open from 8am-4:45pm. The mall also has a public safety department that is available for assistance to your vehicle if needed.

For the tech savvy shopper, the Club app is available for both Android and Apple devices. The app features store sales, special events, a mall directory, restaurant listing and mall map. This same information is also available on FoxRiverMall.com. As a member of The Club, you’ll also receive free WiFi throughout the mall.

CVB What should shoppers know about Fox River Mall?

JBFox River Mall has a large selection of merchants, both

in and around the mall property. There are 180 merchants located inside Fox River Mall, but many more that surround the mall. There are six department stores that anchor the mall including Target and Macy’s. The rest of the mall is made up of a broad spectrum of merchants offering items at various price levels.

CVB 2014 brought the 30th Anniversary of Fox River Mall. What has changed the most with the mall in the last 30 years?

JBOne of the noticeable changes has been the progression

of merchants and the quality of those merchants. Other changes of note are the overall mall layout, the easier access in and out of the mall area, the amount of signage directing visitors and how easily navigable the mall is, considering its size. Fox River Mall is comparable to many malls in some of the larger metropolitan areas in the United States.

CVB What retail trends can you make mention of both happening now and going forward?

JBThe retail industry continues to evolve and change.

There continues to be strong retail outlets that now must compliment the online and catalogue merchants.

The shopping experience is about the experience of feeling and touching merchandise. That experience is one that will never go away. There will always be a need for the immediate gratification you get from shopping at a brick and mortar.

The history between Santa and Fox River Mall is a storied one. 2014 was Santa’s 19th year in a row bringing holiday cheer to the greater Appleton area and beyond. This Santa has a history with not only the mall, but with the communities and the people that live in those communities.

The Fox River Mall Santa is a popular attraction every holiday season. “People have grown up with him,” says John Burgland, Senior General Manager of Fox River Mall. “Just the other day, I was getting my hair cut and the stylist asked me when Santa was coming back to the mall. She said that her significant other had his first photo taken with that Santa and now they would like their baby daughter’s first photo taken with him as well. That is truly the great story to tell. Those that were young 19 years ago are now bringing their kids back to the same Santa they knew as children.”

When asked why this Santa is so popular with mall visitors, Burgland replied “There is a sense of continuity and comfort with having the same Santa year after year. For us, he’s the real Santa.”

Although some things have changed for Santa over the 19 years, including a special logoed truck he uses for transportation around the Fox Cities and the digital photo technology that now exists to streamline the photo-taking process, the quiet and kindness that exists in him has stayed the same.

If you are unable to make it to the mall during photo taking hours, you can also catch this Santa at the annual Downtown Appleton Holiday parade.

Appleton Beer Factory. 603 W College Ave Appleton Phone 920-364-9931 Website appletonbeerfactory.com

Stone Cellar Brewpub dates back to 1858 when a German immigrant named Anton Fischer built the building–the first brewery in Outagamie County. In 1918, the business (then called Fischer Brewery) was sold

to the Walter Brewing Co. which introduced Adler Brau to the Fox Cities. Then, in 1989, Adler Brau beer was back in production, not with the Walter Brewing Co., but under new ownership as the Adler Brau Brewery & Restaurant. In 2004, father and son partners Tom and Steve Lonsway took over the brewery and restaurant that exists today. The demand grew so much for their beers that in 2012, after seven years, a brewery expansion was necessary. Stone Cellar Brewery soon became the Stone Arch Brew House and there are now 100+ bars and restaurants in the area where you can find your favorite Stone Arch Brew House beverage.

BEERS BREWED AT STONE ARCH

SPECIAL EVENTS AND BREWERY TOURS There are three special events that take place every third month at Stone Cellar: Beer vs. Wine, Beer Dinner and Beer School. Beer vs. Wine is a five course gourmet dinner featuring a beer and a wine option paired with each course. The diner then has the opportunity to vote on which beverage paired best with that course. Beer Dinner features a beer from a different craft brewery.

Brewery tours are also available at the Stone Arch Brew House. Tours take place Monday-Saturday year-round but are by appointment only. For more information on taking a tour, please contact Stone Cellar at 920-731-3322.

AWARDS Almost every one of the Stone Arch Brew House brews have won a gold, silver or bronze medal at the North American Brewers Awards. The gold medal winners are the Marquette Pilsner and the Stout.

TOM’S RECOMMENDATION Tom’s favorite brew is the Six Grain Ale, his personal recipe. It’s an English Ale brewed with barley, wheat, rye, oats, corn and rice. It is also the winner of a silver medal at the North American Brewers Awards in 2006.

Appleton Beer Factory started as a dream of Jeff Fogle’s in the 1980s while building brewery systems around the country. He started brewing with his dad on a homemade 1⁄2 bbl system until Jeff’s son, Ben, was old enough to help. Jeff taught Ben the process, and Ben brought his college roommate, Carl, in on t he fun. Ben & Carl focused on creating well-balanced beers and refined their recipes during brew days over six years while their dedicated friends gathered to watch the process and “taste test” the previous batches. Four years went into planning the business and gathering investors, and three years went into self-performing over 25,000 hours of the build-out. 34 partners in the business are contributing their time, resources, and talents to the company, in addition to the 35 employees working there daily.

BEERS BREWED AT APPLETON BEER FACTORY

Seasonal and specialty beers are rotated in throughout the year.

SPECIAL EVENTS AND BREWERY TOURS Appleton Beer Factory is currently working on having a self-guided tour document. Our brew system is completely open for guests to see in the beer hall and our staff is always happy to answer questions. Brew days are usually Saturdays or Sundays every couple of weeks, so if you stop in on the weekend, you can see (and smell!) the beer-making magic.

AWARDS Appleton Downtown Inc: New Faces Award - presented to the business that has made significant improvements to the building they call homeDeath by Chocolate Event: Best DessertFinalists for the Post Crescent’s Best Of awards in the following categories: New Restaurant, Beer Bar, & Brewery

MAIRI’S RECOMMENDATIONSMairi admits “We have an obvious and delicious priority – beer. Our goal is to put top-notch brew in your glass while putting you in a friendly and fun atmo-sphere.” Appleton Beer Factory beers are crafted to deliver what is so often missing from many beers on the market today – balance. This balance was struck from passionate experimentation by knowledgeable brewers who have focused on respecting the ingredients they use and the people they serve. All of their beers are unfiltered with 100% natural ingredients.

Appleton Beer Factory’s top sellers rotate between Blonde, APA, & Hefeweizen. They also have a strong following for our house-made, locally sourced food. Our top sellers are the Rueben and Hangover Burger (beef cooked to order, corned beef hash, fried egg, & gruyere cheese on a brioche bun!).

The Supple brothers, Jay and John, opened the Fox River Brewing Company inside the Fox River Mall in 1997. Their goal is to create a nice, casual atmosphere for their patrons to enjoy food and the brewery experience. They enjoy pairing their beers with food on their menu so the flavors can play off of each to enhance your experience at their restaurant.

JAY’S RECOMMENDATIONSWhen asked what his beer and pairing recommendations were, Jay didn’t hesitate at all. With so many options to choose from, Jay had to name two of Fox River Brewing’s delicious beers as his favorites. For the summer months, Jay recommends the Blu Berry Ale and during the other seasons of the year, he recommends the Scottish Ale.

When it comes to pairing good beer with great food, Jay recommends you try the Bruschetta Chicken is expertly paired with the Fox Light Ale. Another great menu option would be the Chive Turkey paired with the Blu Berry Ale.
