1 (15 ounce) cans pumpkin puree

4-1/4 eggs

1 cup and 1 tablespoon vegetable oil

2/3 cup and 1 teaspoon water

3 cups and 2 tablespoons white sugar

3-2/3 cups all-purpose flour

2 teaspoons baking soda

1-1/2 teaspoons salt

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

1/2 teaspoon ground cloves

1/4 teaspoon ground ginger

Directions

This recipe's Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe

yield of 3 - 7x3 inch loaf pans.

Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 7x3 inch loaf pans.

In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl,

whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the

pumpkin mixture until just blended. Pour into the prepared pans.

Bake for about 50 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out

clean.

1/2 cup unsalted butter

3 tablespoons all-purpose flour

1/4 cup water

8 Granny Smith apples - peeled, cored and sliced

Directions

1. Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a

paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.

2. Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work crust.

Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.

3. Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C).

Continue baking for 35 to 45 minutes, until apples are soft.

Directions

1. Preheat oven to 375 degrees F (190 degrees C). Sift together the flour, salt and baking soda; set aside.

2. Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and

milk. Add the flour mixture; mix well. Shape into 40 balls and place each into an ungreased mini muffin

pan.

3. Bake at 375 degrees for about 8 minutes. Remove from oven and immediately press a mini peanut butter

1 (1 pound) sweet potato

1/2 cup butter, softened

1 cup white sugar

1/2 cup milk

2 eggs

1/2 teaspoon ground nutmeg

1/2 teaspoon ground cinnamon

1 teaspoon vanilla extract

1 (9 inch) unbaked pie crust

Directions

1. Boil sweet potato whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potato,

and remove the skin.

2. Break apart sweet potato in a bowl. Add butter, and mix well with mixer. Stir in sugar, milk, eggs,

nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an

unbaked pie crust.

3. Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until knife inserted in center comes out

clean. Pie will puff up like a souffle, and then will sink down as it cools.

4. Form into walnut-size balls. Roll in granulated sugar. Place on greased cookie sheet about 2 inches apart.

5. Bake at 375 degrees F (190 degrees C) for 8-10 minutes.

6. Store in an airtight container to keep from getting overly crisp. If they do lose their softness, an easy way

to restore it is to place one slice of fresh bread in the container with the cookies for a couple of hours or

overnight and they will be soft again!

Banana Nut Bread Baked in a Jar

2/3 cup shortening

2 2/3 cups white sugar

2 cups mashed bananas

2/3 cup water

1. Preheat oven to 325 degrees F (165 degrees C). Grease insides of 8 (1 pint) straight sided, wide mouth

canning jars.

2. In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs, bananas, and water. Sift

together flour, baking powder, soda, salt, cinnamon, and cloves. Add to banana mixture. Stir in nuts.

3. Pour mixture into greased WIDE MOUTH pint jars, filling 1/2 full of batter. Do NOT put lids on jars for

baking. Be careful to keep the rims clean, wiping off any batter that gets on the rims.

4. Bake at 325 degrees F (165 degrees C) for 45 minutes. Meanwhile, sterilize the lids and rings in boiling

water.

5. As soon as cake is done, remove from oven one at a time, wipe rims of jars and put on lid and ring. Jars

will seal as cakes cool. Place the jars on the counter and listen for them to "ping" as they seal. If you

miss the "ping", wait until they are completely cool and press on the top of the lid. If it doesn't move at

all, it's sealed.

6. Jars should be eaten immediately or kept sealed in refrigerator for up to a week.

4. Bake for 10 to 15 minutes in the preheated oven, until the tops are cracked. Bake longer for crispy

cookies, less time for chewy cookies. Cool on wire racks.

1 (10 ounce) package flaked coconut

1/2 teaspoon ground ginger

3 (8 ounce) packages cream cheese

3/8 cup white sugar

1 egg

1 egg yolk

2 tablespoons heavy whipping cream

1 tablespoon cornstarch

1/2 teaspoon vanilla extract

1/2 teaspoon lemon extract

Directions

1. Preheat oven to 350 degrees F (175 degrees C).

2. Combine the graham cracker crumbs, ground pecans, 2 tablespoons white sugar, 2 tablespoons brown

sugar, and the melted butter or margarine and mix well. Firmly press mixture into one 9 inch springform

pan.

3. Combine 3/4 cup of the white sugar, the pumpkin, 3 egg yolks, ground cinnamon, ground mace, ground

ginger and salt in a medium bowl. Mix well, and set aside.

4. Beat cream cheese with an electric mixer until light and fluffy; gradually add 1/4 cup plus 2 tablespoons

white sugar and mix well. Add the whole egg, remaining egg yolk and the whipping cream, beating well.

Add cornstarch and vanilla and lemon flavorings, beat batter until smooth. Add pumpkin mixture and mix

well. Pour batter into the prepared pan.

5. Bake at 350 degrees F (175 degrees C) for 50 to 55 minutes. Do not overbake. Center may be soft but it

will firm up when chilled. Let cheesecake cool on a wire rack, then refrigerate.

Directions

1. Warm the milk in a small saucepan until it bubbles, then remove from heat. Let cool until lukewarm.

2. Dissolve the yeast in the warm water. Stir in the lukewarm milk, sugar, salt, cardamom, 4 eggs, and

enough flour to make a batter (approximately 2 cups). Beat until the dough is smooth and elastic. Add

about 3 cups of the flour and beat well; the dough should be smooth and glossy in appearance. Add the

melted butter or margarine, and stir well. Beat again until the dough looks glossy. Stir in the remaining

flour until the dough is stiff.

3. Turn out of bowl onto a floured surface, cover with an inverted mixing bowl, and let rest for 15 minutes.

Knead the dough until smooth and satiny. Place in a lightly greased mixing bowl, and turn the dough to

grease the top. Cover with a clean dishtowel. Let rise in a warm place until doubled in bulk, about 1 hour.

Punch down, and let rise again until almost doubled.

4. Turn out again on to a floured surface, and divide into 3 parts. Divide each third into 3 again. Roll each

piece into a 12 to 16 inch strip. Braid 3 strips into a loaf. You should get 3 large braided loaves. Lift the

braids onto greased baking sheets. Let rise for 20 minutes.

5. Brush each loaf with egg wash and sprinkle with sugar.

6. Bake at 400 degrees F (205 degrees C) for 25 to 30 minutes. Check occasionally because the bottom

burns easily.

Meringue Mushrooms

Ingredients

1/2 cup egg whites

1/4 teaspoon cream of tartar

1/4 teaspoon salt

1 teaspoon vanilla extract

1 cup white sugar

1 tablespoon unsweetened cocoa powder

4 ounces chocolate confectioners' coating

Directions

1. Preheat the oven to 225 degrees F (110 degrees C). Line 2 cookie sheets with parchment paper or

aluminum foil.

2. In a large glass or metal bowl, use an electric mixer to whip egg whites until foamy. Add cream of tartar,

salt, and vanilla. Continue whipping until the whites hold soft peaks. Gradually sprinkle in the sugar so

that it does not sink to the bottom, and continue whipping until the mixture holds stiff shiny peaks.

3. Place a round tip into a pastry bag, and fill the bag half way with the meringue. To pipe the mushroom

caps, squeeze out round mounds of meringue onto one of the prepared cookie sheets. Pull the bag off to

the side to avoid making peaks on the top. For the stems, press out a tiny bit of meringue onto the other

sheet, then pull the bag straight up. They should resemble candy kisses. Do not worry about making all

of the pieces exactly the same. The mushrooms will look more natural if the pieces are different sizes.

Dust the mushroom caps lightly with cocoa using a small sifter or strainer.

4. Bake for 1 hour in the preheated oven, or until the caps are dry enough to easily remove from the cookie

sheets. Set aside to cool completely. Melt the coating chocolate in a metal bowl over simmering water, or

in a glass bowl in the microwave, stirring occasionally until smooth.

5. Poke a small hole in the bottom of a mushroom cap. Spread chocolate over the bottom of the cap. Dip

the tip of a stem in chocolate, and press lightly into the hole. When the chocolate sets, they will hold

together. Repeat with remaining pieces. Store at room temperature in a dry place or tin.

bowl, beat eggs until thick and lemon-colored. Add the pineapple, currants, sugar and vanilla; mix well.

Fold in bread cubes.

30-35 minutes or until bubbly and golden brown. Serve warm with whipped cream if desired.

at 400 degrees F for 8-11 minutes or until edges are lightly browned. Cool on a wire rack.

2. Fill a 13-in. x 9-in. x 2-in. baking dish with 8 cups water; place on lowest oven rack. Reduce heat to 325

degrees F.
