A steak in your futureBy Steve Suther, Director of Industry Information, Certified Angus Beef LLCFarmers and ranchers are no more than 2 percent of the population in North America, so it doesn’t add much to beef demand when you buy. However, you should know and understand what it takes to make a great steak at least as much as any chef knows. It’s your livelihood. The Certified Angus Beef ® (CAB®) brand, owned by Angus producers since 1978 and adding value to Canadian cattle as well since 2000, does not work by insisting that producers or anyone else “demand the brand.” We have to earn that demand by staying true to the quality specifications and tracking every pound so consumers can be confident it will always be worth the premium paid.Once you’ve tried it (click “where to buy” at www.certifiedangusbeef.com), it certainly won’t hurt to suggest others try “Angus beef at its best®,” because that can add value to your cattle. But the trademarked phrase that addresses Angus producers is “The brand that pays®.” It can apply to you, if you take advantage of the Angus breed’s natural ability to marble by consciously selecting for more of those flecks of flavor. Research proves that won’t need to come at the expense of any other traits.Whether you are in the Angus business in western Canada or in the eastern provinces, your future depends on the consumers’ ability to have a great eating experience when they buy Angus beef. You can pursue that with your own brand or as a part of the whole industry. Either way, you have to take a lot on faith. Faith in your breed, faith that genetic selection works, faith that consumers will keep supporting a brand that lives up to its promises, and faith that growing demand in Canada will increasingly move licensed CAB packers to pay premiums so they can meet that demand.

Sales of CAB in Canada have gone up every year since 2006, exceeding 34 million lb. in 2011 (see chart), up more than 5 million lb. in just one year. That’s a testament to the power of this brand in a consumer market still struggling in a sluggish economy. It says people want their money’s worth more than they want to spend less money.Packers are paying more for better beef. Cattle feeders in Ontario have reported $2 to $3 per hundredweight premiums for high quality Angus, and those in Alberta say a CAB-accepted steer is always worth $50 more than a AA, all else being equal. And that was before demand widened the spread this fall. In October-reported U.S. boxed beef prices, CAB was listed at $24.80 above Select, the AA equivalent. Increasingly, marbling will matter in Canadian Angus genetics. Producers are on the right track, stepping up CAB production in Canada every year since 2006, even as overall beef production declined. More than 16 million lb. was produced in the year ending Sept. 30, with 4 million of that exported. The net of 12 million lb. leaves a shortfall of 22 million lb. that had to come in from the U.S. to meet the growing demand. That spells opportunity down the road.

View from south OntarioBill Jackson’s family has been in the purebred Angus business since 1923. In some ways, the customers of Tullamore Farms, near Caledon, Ontario, have not changed much in all those years.The Jacksons buy, breed and sell a selection of elite registered stock, but most of their cattle go to commercial operations with 30 or fewer cows. “They don’t ask me about EPDs (expected progeny differences), so I probably don’t study them as much as I should,” says Jackson, who keeps 130 registered Angus females that calve January to April. “I base my selections on what I like.”There’s still an art to it, and even the top student of data-based tools appreciates a good eye. Customers like his recommendations as they look to the cattle for visual traits, too. Buyers come back year after year, bringing new prospects from positive word of mouth or, in some cases, taste of tongue.The freezer beef trade is important in this area on the Toronto-side of Ontario’s Green Belt, where commercial development is a mixed blessing for the 400-acre farm. Cows can graze all night along the fence bordering a warehouse hub that stays “lit up like a ball diamond,” Jackson says.Even in the suburbs, the beef business is segmented. Jackson sells the light end of his Angus heifers to smaller farmers, five or ten head in a draft, to grow and finish and sell to their freezer-beef customers.

At the end of the day, he says, what sells is home-raised Angus beef, even if it is more perception than science. Jackson knows marbling is what leads to the great taste and repeat customers. “But my customers don’t know about marbling. They might mean exactly that, but what they will say is that it’s tender and tastes good.”He keeps the top one-third of heifers for replacements, including some that sell in an annual fall female consignment sale with several other Angus breeders. Breeding bulls sell by private treaty. Demand has been particularly brisk for the past couple of years, to the point where Tullamore was sold out by July with none carried over for next year’s twos. Steer calves sell in a special fall auction of black Angus feeders weighing 500 to 600 pounds.“I should follow our calves through to see just how they do on the rail, but it would not be easy,” he says. “Our heifer feeders end up taking them to custom killing plants as they are ready and sold. With the steers, it would be up to me to find out who bought them and see if they want to tell me anything. We think most of the guys who feed don’t want to share information.” The commercial feedlots do report feeding more Angus cattle than ever and selling to packers for premium prices, Jackson adds. “I think we are getting more Angus influence in our commercial cattle around here. I sold a bull to an operation that was only Hereford, and another to a commercial Charolais breeder,” he says.Angus genetics come from both sides of the U.S./Canadian border, says Jackson, whose farm is less than 100 miles from Niagara Falls, around the west point of Lake Ontario. “We tend to buy our herd sires in Canada, but they often carry some U.S. breeding,” he explains. Tullamore Farms was also part of a group that bought a $57,000 Angus bull at Denver’s National Western Stock Show last January, though the bull came from Southland Angus Farms in Saskatchewan, in a sale managed by New York’s Trowbridge Farms, practically a neighbor.

This morning started out just like most morn-ings, when I’m in the office, (which are not many) as I wake up mostly on the road these days. However, as often as I can the first thing I like to do is fire up my computer and check feeder calf market reports from the day before. These days it’s very exciting, as I’m looking to see if we have hit some new high’s. Which is a lot more fun than a couple of years ago when you were looking, just to make sure they had not slid some more.

As everyone already knows the market is strong and calves of all classes are bringing a much greater return than they have since May of 2003. The thing I have been watching lately is the price spread on a specific weight range of steers. When you look at prices quoted in every weight range, especially the steers weighing under seven hundred pounds which are calves coming off cows, there is generally a twenty five cent difference from the high bid to the low bid and as much as a fifty two cent spread in three to four hundred pound steers in the report I have in front of me right now. The point I’m getting to is the profitability difference in producing top quality, market topping calves versus second cut calves. Our local market had a sale yester-day and is quoting five weight steers from $1.50 to $1.74. If you take two steers both weighing five hundred and twenty five pounds and one tops the market at $1.74 and the other brings $1.50 the difference is one hundred and twenty six dollars per head. On just one tri-load of calves (sixty thousand pounds) the difference is $14,400.00 dollars.

There will be some producers out there who look at their calf returns this fall and see a gross return of $787.00 per calf and think that is quite

good. They will also feel that their management and selection of low quality, cheap bulls is the way to go. What they don’t realize is that on a high market it is even more important to be a good manager and use top quality bulls because the opportunity to make profits is even bigger on a high market. The producer with $913.50 calves buying his bulls for five thousand dol-lars versus the guy paying eighteen hundred for a bull, will be money ahead after only the first twenty five calves that five thousand dollar bull produces in his life time.

The market is strong and all forecasts indicate it will be strong for quite some time. The great part of being a primary producer in agriculture is that you are your own boss and in control of your own destiny! The next few year will be profitable, for some extremely profitable, it is up to you whether you are content with getting by or if you want to breed your cows to bulls that will put you to the next level. It makes me smile when I hear people say they can not afford to buy the top bulls, how can you afford not to? So don’t be jealous of the neighbor when he buys a new pick up, maybe look at some of the things he is doing and copy some of his success.

During the previous several years when cattle prices were abysmal every cattle producer in the country had to look at ways to cut costs. There was a tendency to keep bulls longer than usual and to trade bulls amongst neighbours. Although many purebred producers reported strong sales of replacement bulls it appears that on a broader scale the number of bulls sold and the price per bull also declined. An investment in new genetics, especially maternal traits, is still a wise move when cattle prices are poor as the payback will hopefully occur when prices are good, but can be a tough sell. If you had the cash there were some bargains, but who knew for sure what was in store for the future! Now cattle prices are up and replacement bulls are no exception. Is it worth it to pay more for a bull?

Factors impacting the cost per pregnancy in a natural service situation are the cost of the bull, the bull-to-female ratio, the pregnancy rate, and how many years the bull will be kept. Using a bull-to-female ratio of 1:30, a conservative $2000 purchase price, a 95% pregnancy rate and 3 years of use before salvage each pregnancy will cost $23.40 (90 breedings x 95% = 85.5 pregnancies; $2000/85.5= $23.40). However, this is only part of the equation and doesn’t consider feed costs, vet bills, labour, and additional repairs to fences and gates that are inevitable with bulls. Bulls eat more than cows and usually have separate facilities. Interest and depreciation must also be considered. What about death losses... probably around 10% so you better consider this in your calculations. Adding up all of these charges usually accounts for an additional $1000 to $1500 per year in the cost of bull ownership. At $1000 per year the cost per pregnancy rises to $58.48.

There are two more important items that I have not considered in my calculation. The first is the salvage value of the bull. Most cost analyses figure on the salvage value of a bull being around $1000. Factor that in and the cost per pregnancy is about $47. Have you checked the value of cull bulls lately? They are still holding strong so it would be not too hard to get at least $1500 for many older bulls. This sure beats the pennies per pound we saw a few years ago! Selling cull bulls this fall could shave 6

months off of the annual costs of bull ownership. Even if he is a bit thin it probably isn’t cost-effective to feed him in your yard to a higher condition with the price of grain the way it is. My second consideration is the genetic value of the bull. Too many cost analyses regard all bulls as being equal; therefore, paying $3000 for bull and plugging that value into my equation results in over a $10 increase in the per pregnancy cost. Right away many producers will say “Aha, see those bulls are too expensive!!” I agree that herd name and promotion can influence price, but it is possible to consider genetic merit. Larger herds with astute bookkeepers usually have the numbers of similarly managed cattle to consider such things as the dollar value of the calves sold, the number of replacements retained, and the longevity and performance of the replacements females generated by their bulls. Many of them become pretty loyal repeat customers. Certainly it is pretty easy to compare bulls using EPDs. I agree that EPDs are just one selection tool, but I also believe they are a very powerful one and they have no doubt resulted in most of the genetic improvement we have seen over the last several years. Besides it is rare to find a sale catalogue that doesn’t list EPD’s so everybody should at least glance at them. So for fun let’s just look at weaning weight and not even consider any other traits. If you could trade up to a bull with a modest 10 pound higher weaning weight EPD than your old bull that would mean that the new bull’s calves would weigh an average of 10 pounds more than the old bull’s; 10 pounds x $1.30 per lb x 85.5 calves =$1111.50 in additional revenue, or $13 per pregnancy. A mere 10 pounds can’t even be detected by eye- balling the calves! So which bull is more expensive now? And that is just one trait! Check out the Genetic Evaluation Results on the Canadian Angus Association website sometime and you will find more good reasons to trade up. You could argue that I am just trying to bolster sales, but I don’t think you can disagree with my numbers. With the prices we are seeing plus the renewed enthusiasm for a bright future in the beef industry it just makes good economic sense to invest in better genetics. When prices are high the lost economic opportunity from poorer performing cattle is even greater. Simple as that!

Complacency can develop into a habit forming disease. Complacency can be found nearly everywhere –most commonly in an office workplace, in government by employees or elected officials, in many areas of professional sports (usually after resigning an extended contract), in breed associations and breeding programs. Being positioned at the top is an enviable status, but many get into a comfort zone thinking that everything will continue as status quo, until we find that things around us have changed and your competition is passing you by. Quickly, we become excuse-makers blaming everyone who steps in our path and finding fault in family, friends and those who are hired to help.

In decades past we have seen this complacency phenomena; a successful breed losing market share to another breed or breeds. Although the first reaction is to put the blame on the association and their staff, namely the general manager, it is the complacent attitude of the membership that carries the greatest responsibility. It is wonderful to have the highest membership and the greatest amount of registrations, but the challenge is to maintain and gain on that position. Loftier goals must be set by the breeders and their association.

The Angus breed is in an enviable position. The name Angus is spoken by urban children, businessmen, supermarket personnel and used in all forms of advertising to attain a marketing edge and known by all in agriculture. The feedlot, packer and retailer all demand the “Angus Advantage” for that special degree of profit that few other breeds can provide. Angus is branded as a leader in the beef industry but the question is, “How do we maintain our status and move for higher achievements?”

At the third T Bar Invitational, Darcy Bear, Chief of the Whitecap Nations, one of Canada’s model native reservations, was guest speaker and spoke of the success of their endeavors and having virtually no unemployment in their nation. The Chief stated, “It all starts at home. How do we expect the young generation to go to work, if the older generation does not want to get out of bed.” In that same parallel, the strength of a breed starts at home with the breeders. It relies upon goals set by its breeders which determine the strength and position of their respective breed.The spring of 2011 will go down as a pivotal year of selling bulls, with most breeders having their best year in the history of past decades. Several new customers appeared who had not replaced their bull batteries since the advent of BSE. These new customers purchased multiple sires and spent top dollars on higher quality bulls. Therefore after a great season, the question you must ask yourself is, “How do I keep these customers and make it better?” The answer is simple… elevate your goals, stay in contact with your client base, ask them what they are looking for and endeavor to supply it.

This breed has a huge gene pool compared to its counterparts. New genetics in a program are pivotal to its longevity and success, but those who are complacent and use old “Muscle Man” for another year, simply because he sired one high selling calf, will be passed by fellow breeders in addition to breeders in other breeds. Often we find that breeders will purchase a slighter, lower performing, “low birth weight” bull for heifers. This is fine, economical but very complacent. Since half of the calves are females, with some going back into the herd as replacements, we find that after four or five heifer bulls, the breeder is ready to disperse simply because he has bred the performance out of the program and lost his bull market. The bull, you purchase for your heifer pasture, must be your next main herd sire… do some research, get off your sack of seeds and position your breeding program for the future.

In the seed stock industry, image is a major marketing factor. The customer views your program based on the image you portray. Visibility and participation become important factors to achieve a high degree of success. As we move forward into a new rising market, we are finding a new wave of cowboy who wants to take advantage of being in the cow business… make sure they know that you are in the Angus breed as a premier seed stock producer and open for business… because they might just be looking for something more than “that heifer bull!”
