Important Numbers At a Glance Good day to all, I hope this latest update finds you well and that Memphis diners are beating the heat of summer in your restaurants with some of the country’s best fare. I want to extend a continued welcome to our new Health Department contact, Kasia Smith-Alexander, who is primed and ready to tackle the new Food Code changes which rolled out July 1 in her new role as manager for the Shelby County Health Department. Kasia moved from a leadership role in the emergency preparedness department, and it is apparent that she in her six years in Memphis has come to love the people, places, foods and soul of our great city that make it so special. For those that might have missed it, Kasia treated us to a very informative and engaging presentation outlining the new changes to the FDA Food Code and the subsequent changes to our Health Department inspections. I would like to bring to your attention a few very important elements. For starters the inspections are transitioning to a risk based assessment. For establishments that are deemed lower risk, they may only have one inspection a year- an example being, institutions that sell only prepackaged items. A high risk facility may have up to four inspections a year, such as a deli concept with fresh meats. Secondly, there will be new risk designations replacing the critical and non-critical violation terminology. I highly recommend that each of you read and review the new designations with your staff. With the new terminology, there is also a key requirement mentioned: on every shift there has to be a “Person in Charge” present during an inspection that has a demonstrated knowledge of food safety. Third, a big change and added requirement: there will be no bare hand contact allowed for ready to eat items. You should take note of the new procedures, ensure your staff is trained, and plan for increased costs for gloves and handling utensils. Finally, a written health policy is required that all food employees must report any certain symptoms and diagnosis to the person in charge. The person in charge will be responsible to ensure those employees exhibiting such symptoms or diagnosis are excluded or restricted from work. You will need to modify or establish the procedures on adhering to this policy. More information is available in this issue of TIPS and on our website. You should make it a priority to thoroughly review all the information. Also, please feel free to contact Kasia directly with any questions you may have to relate directly to your business. On another note, we want to express our gratitude to Michelle Harris and The Peabody for hosting our last speaker event. The space was grand as always, Capriccio Grill’s new Southern comfort menu items were delicious, and feedback was extremely positive. Purpose and Goals: To provide informed speakers covering up to date topics germane to the hospitality industry in today’s ever changing economic environment to an audience of approximately 250 people. Since 2003, the funds raised from this event support the MMHLA and AHLA PAC. Target Audience: Owners, Operators, Management Companies, Hotel Companies, Lenders/Financial, Construction Companies, General Managers, and allied members of the local association. This event draws people from all over the country. In 2013, attendees and speakers came from the following states: Alabama, Arkansas, Arizona, California, Georgia, Kentucky, Maryland, Missouri, Mississippi, North Carolina, New Jersey, Ohio, Tennessee, Texas, Washington DC Event Dates for This Year: August 18 and 19, 2015 Event Agenda: The agenda for last year’s Southern Lodging Summit is attached to provide background on the program. The Summit begins this year on Tuesday, 8/18, with “Lunch with the Speakers” at the Rendezvous; Hospitality Suite at the Peabody; Reception and Dinner at the Peabody. The Conference begins on Wednesday, 8/19, with breakfast, updates from AHLA and STR followed by two panels of speakers covering a variety of contemporary topics and issues. Our keynote speaker will follow lunch, and we conclude about 3:30PM.

President Anthony House welcomed everyone and the minutes were approved. Vice President Eric Vernon read the mission statement. Newmembersandfirsttimeattendeesintroduced themselves. One of these was Levon Atkins, our new mLGW representative. Anthony talked about the great Redbirds event and the upcoming golf tournament. There were no committee updates – things are slow this summer. Legislative update concerning the COD bill: The language will be changed to let payment be negotiated.

For the Executive Director’s report, Kimberly Carlson commended the Associate Members for their excellent Coffee Club program. She encouraged Associates who had not attended to do so and invited Restaurant Members to stop in and say hello.Zoo Rendezvous is September 12 this year.

New Board Member Michelle Harris welcomed everyone to the Peabody and invited everyone to happy hour in the Corner Bar where they will be showcasing Capriccio Grill’s new Southern Comfort lunch menu for us. Since there were no Associate Member updates or any other business, the Business Meeting was adjourned. Our guest speaker was then introduced: Kasia Smith-Alexander, Manager, SCHD Environmental Health and Food Safety.There were over 80 members in attendance as Kasia gave an energetic presentation of the new way the environmentalists (inspectors) will be inspecting us and insight into the new Food Code changes. Kasia urged members to call or e mail her with questions.**Highlights and more information follow on pages 4 & 5 of this issue of TIPs** After the Food Code update, members gathered in the Corner Bar for happy hour which was definitely a welcomed change of pace from theFood Code updates but lively discussions were evident!

The Retail Food Sanitation Rule has changed to incorporate the 2009 FDA Model Food Code and current food science. The “New” Retail Food Sanitation Rule will take effect on July 1, 2015.

AutoZone Park was the place to be on June 1st as the Memphis Redbirds played host to the Salt Lake Bees for a double-header AND those attending this year’s MRA & MMHLA night at the Redbirds!
