gather together...8 peaches, peeled and sliced, about 6 to 8 c.s¼ c. bourbon3/4 c. sugar, divided, plus more for dusting2 tbsps cornstarch1 tsp ground cinnamon1½ c.s all-purpose flour2 tsps baking powder½ tsp kosher salt12 tbsps (1½ sticks) cold unsalted butter, plus 2 tbsps for skilletHeavy cream, plus more for brushing
make it happen...Heat your oven to 375ºIn a large bowl add the peaches, bourbon, ¼ c. sugar, cornstarch, and cinnamon and mix well to coat the peaches evenly; set aside.Prepare the dumplings: Into food processor add the flour, 1/2 c. sugar, baking powder, and salt. Cut 12 tbsps (1½ sticks) butter into small pieces. Add it to the flour mixture and pulse until the mixture looks like wet sand. Mix just until the dough comes together. Don't overwork; the dough should be slightly sticky but manageable.In a 10-inch cast iron skillet over medium-low heat, melt the remaining 2 tbsps butter. Add the peaches and cook gently until heated through, about 5 minutes. Drop the dough by tbsp fulls over the warm peaches. There can be gaps, the dough will puff up and spread out as it bakes. Brush the top with some heavy cream and sprinkle with some sugar; put it into the oven on a baking sheet to catch any drips. Cook for 40 to 45 minutes until the top is browned and the fruit is bubbling. Recipe courtesy Tyler Florence

1/4 c. water1 pint strawberries4 oz rum and of course Ice
"This delicious frozen treat made with fresh
strawberries and oranges will keep your thirst at bay all summer long."
Using a vegetable peeler or zester, remove the zest of the orange, taking care to leave the pith behind.
In a small saucepan over medium heat whisk together the sugar with 1/4 cup water and the orange zest. Bring to a simmer and remove
from heat. Cool to room temperature. Strain to remove orange zest.Reserve 4 strawberries for garnish and remove the hulls and roughly
chop the remainder. Add the strawberries with the juice of the orange to a blender and fill with ice. Add the cooled orange simple syrup and
blend until smooth. Add the rum, if desired, and blend. Pour into glasses and garnish with reserved strawberries.
