treats of summer. Whether boiled,steamed or grilled, it is a popular sidedish this time of year.

Sweet corn has a higher sugarcontent than field corn, which is thetype fed to livestock and used in manyprocessed foods. The extra sugar,and resulting sweetness, is a naturalmutation that was noticed by NativeAmerican tribes. In 1779, Europeansettlers first tasted sweet corn, whichwas given to them by the Iroquois.

The United States and China leadthe world’s production of corn, whichis grown throughout the Earth’stemperate zones.

Sweet corn is harvested at the milkstage, before sugars in the kernelsturn to starch. It should be eaten,canned or frozen soon afterharvesting for the best flavor.

A gluten-free grain, corn is a goodsource of B vitamins, the antioxidantferulic acid, and minerals such aszinc, magnesium and iron.
