Jackie grew up in Sioux City, Iowa and she had a wonderful childhood with many cherished memories including playing several games of Monopoly with her four siblings. Jackie graduated from Leeds High (a suburb of Sioux City) and went to work in the office of a local utility company where she met her future husband, Bob; they had six children: Mike, Rick, Barb, John, David (deceased) and Karen. Jackie and Bob were married 67 years and their marriage was filled with love and laughter. Jackie said while they lived in Sioux City their entire marriage, they did move a few times along the way – and before moving, they did a complete renovation of two of the homes which included Jackie stripping all the woodwork. With a laugh, Jackie recalled how this prompted Bob to tell their friends that he was “married to a stripper!” After Bob passed, Jackie moved to Mankato to be closer to family. Jackie loves to read and play bridge – if you’re a fellow bridge player, be sure to knock on her door! Jackie also loves to spend time with her family that has grown to include 9 grandchildren and 6 great-grandchildren! Congrats to Jackie - our fun-loving “Resident of the Month!” The Beatles said it best: “Here comes the sun!” As we approach summer, it’s a good time to remind everyone to use protection in the sun. May is National Melanoma/Skin Cancer Awareness Month. More than 2 million people are diagnosed annually with some form of skin cancer. So, as you enjoy the views from your deck, make sure to have your sunscreen along. Remember these tips: apply often, seek shade and wear sunglasses. On May 10, we celebrate Mother’s Day. Happy Mother’s Day to all of the beautiful mothers living at and working at The Pillars of Mankato! Today is your day to sit back and enjoy! And, here are a couple Mother’s Day fun facts: Mother’s Day is the third most popular holiday behind Christmas and Easter. More calls are made on Mother’s Day than any other day of the year. Lastly, there is still time to vote! The Free Press is sponsoring a “Best of Mankato” contest and the voting deadline is May 4. The Pillars of Mankato is on the ballot in the category “Best Goods/Services - Senior Living/Retirement Facility” and we’d appreciate your vote! Thank you! Hello from the Dimension’s Neighborhood! We are continuing to do our best to keep your loved ones happy and busy. We are doing a lot of puzzles, coloring sheets, and 1:1 visiting. Many of our families are taking advantage of window visits and Zoom or Facetime calls to stay connected with their loved ones during this time; please remember to reach out if this is something you’d like to get set up. My email is [email protected] and my office phone number is 507-344-6778. We are holding on to hope we can see you all soon, happy and well.

Jana Larson, Culinary Director Another month has passed, way too fast. Spring is here and so are the Spring & Summer menus. Beginning Sunday, May 4th, the menus will reflect more entrée salads and summertime sandwiches at lunch as well as some new items for the evening meals. Our grill is set up outdoors and we will be grilling meats at least once a week. Please note: the grill is for Culinary staff use only; it is not intended for residents use. During the month of May, we are planning a special treat for May 1st (May Day) on the snack cart. On Sunday, May 10th in recognition of Mother’s Day, all women residing at The Pillars will receive a free dinner. Even if you are not a mother biologically, you have been a mother figure to someone throughout your life. Don’t worry men - you will get your free meal in June for Father’s Day! Our Mother’s Day menu will be Chicken Kiev over a vegetable rice blend and a dinner roll. I have a special salad and dessert planned as well. If we are still having meals delivered to apartments, we will deliver the meals as we did on Easter. Here’s hoping that May not only brings warmer weather and spring flowers but a move towards the time when we can all be together again! Heather Ballman, Director of Active Living As a reminder, please stay in your apartments as much as possible; we are still discouraging gathering in any format. Please let me know if you would like to schedule a virtual visit or if you need anything to pass the time. We have a library full of books that I am more than willing to bring around if you don’t want to come out of your room. I also have a small supply of DVD’s for those that are interested. Virtual Visits via Zoom or Facetime by appointment - please contact Heather [email protected] or 507-344-6777. Also, each month has special holidays related to each day of the month. As we move forward, we are celebrating many of them in the month of May with special treats on the snack carts or activities or dress up days. Please watch your daily activities packet for more details!

IMPORTANT NOTES WELCOME to our new Director of Health Services, Lisa Nussbaumer! In May, we celebrate National NURSES WEEK! Thank you to Lisa, Stephanie and Heidi for the fabulous job that they do. Please join us in honoring them for their commitment to providing compassionate care for our residents! “Nurses are the HEART of health care.” THANK YOU for sharing your talents and making face masks! Your contributions are appreciated! CONGRATULATIONS to Kristi, Rachal and George for completing the Serv-Safe Food Manager’s course and passing the exam offered through the State of Minnesota (Jana had the certification before beginning work at The Pillars). In addition, Jana trained both April and Megan in the Serv-Safe Server’s course and they both completed the course and passed their exams; Luke and Emelia are in the process of taking the course. And, kudos to Rachal who has trained as a back-up Chef. GREAT job, Culinary team! THANK YOU to everyone who had submitted their email addresses! Mandarin Almond Bacon Salad 1/4 C. vegetable oil 2 T. sugar 2 T. vinegar 1 T. chopped fresh basil or 1 tsp. dried basil, crushed 1/4 tsp. salt 1/8 tsp. hot pepper sauce Whisk together oil, sugar, vinegar, basil, salt, and hot sauce until blended. Chill until ready to serve. 1 pkg. (11 oz.) Leafy Romaine 6 slices bacon, cooked, drained and crumbled 2 green onions, thinly sliced 1 small zucchini, thinly sliced 1 can (15) oz. Mandarin oranges, drained 1/4 to 1/2 c. cracked black pepper sliced almonds Toss together Romaine, bacon, onions, zucchini and mandarin oranges in large bowl. Pour dressing over salad; toss to evenly coat. Sprinkle almonds over salad and serve.
