The DVF label has become synonymous with the jersey wrap dress. How did the original design come about?

First it was a wrap top, like a dancer’s sweater, and then I decided to turn the top into a dress and it became a wrap dress. Wrap dresses have existed for a long time – it is a very traditional kind of clothing, like a kimono – one that closes without buttons. What made my dress innovative was that it was made in jersey fabric and that it moulded to the body.

Where did the inspiration come from for your signature graphic prints?Everything and everywhere – nature, books, movies. I carry my camera everywhere and take pictures of anything I think might inspire a design or print. But most of my inspiration comes from travelling and watching women all around the world.

You are known for empowering women through clothes. Do you think that being a woman designing for women has given you

more insight into what the customer needs?Yes, as a female designer I know what women want. I know how to create things that will make women more confident, and therefore more beautiful. The priority is ALWAYS the woman.

How do you work together with your new Creative Director, Yvan Mispelaere?I was looking for a long time for someone to whom I could hand a tray with all the ingredients that I have to offer. Somehow his journey and what I have to offer work very well together. I think we will be able to make lots of good meals with our combined ingredients!

Your mantra is ‘beauty is an adventure’: what travel adventures have inspired you?

I’ve travelled to some of the most inspiring places on earth such as Iceland, Tanzania, The Great Barrier Reef, Sardinia, the South Pacific and the East China Sea. All offer beauty and wisdom. It would be difficult to leave any of these destinations uninspired!

When you’re travelling, which one luxury item has to be in your suitcase?

Microquatic Oxygen Infusion Masque, £28.50. Constantly travelling between different time zones can cause harmful toxins to build up in the skin and this product immediately refreshes, revitalises and decongests. I never travel without it.

You are renowned for adding anti-ageing ingredients into your make-up. What was the thinking behind this?

I identified a niche in the market that had not yet been explored. While make-up artist

brands changed the cosmetic industry by offering the right shades to consumers, they had done little to raise the bar in terms of formulations that benefit or improve the quality of the skin. I have a background as a make-up artist and a formulator so I can work closely with our private group of chemists to create exquisite colors and terrific skin-care benefits.

Looking ahead to the new season, what are the emerging make-up trends?

The classic smoky eye is synonymous with a sought-after sexy look, making it the one never-ending trend that reinvents itself season to season.

My road to becoming a chef started with my

grandmother's cooking. I remember the smell, walking

into her kitchen and watching her make her fantastic

gravy and roast dinner.

The best meal I've ever eaten was ‘el raco con fabes’ in Barcelona. Local produce is cooked with little fuss, from freshly harvested wild mushrooms

with cured ham to the freshest turbot I've ever tasted! It reflects my philosophy of not overworking food, just allowing the individual flavours to speak for themselves.

Certain TV chefs have shaped the way people think of professional kitchens. Every chef is different and some are

more fiery then others but we all want the same thing and that is the great pride of sending out a great dish.

In season this autumn? Look out for lovely wild mushrooms: girolles are my personal favourite as they are so versatile. Some exquisite game is also coming into season in autumn especially partridge and mallard. They have fantastic flavour

and are a real delight to cook with.

B r i a n ’ s s o f t s h e l l c r a b f r i t t e r

METHOD:

Marinade: Combine all ingredients and marinate crabs for at least two hours. Set aside.

Crab dressing: Whisk all ingredients together. Pass through conical strainer.

Cooking the crab: Boil crab for seven minutes in water with onion, celery, carrot, bay leaf and five white pep-percorns and leave to cool down. Break down crabs and set meat aside. Once the crab has broken down, add the weighed meat with the rest of the ingredients and season to taste. Place in the fridge until ready to use.

Just before assembling the dish, deep fry the crab for 4-5 minutes (or until golden) at 180 degrees. With the crab mixture, use two spoons and quenelle the mix onto the plate.

The wine chosen to match chef Brian's soft shell crab is from iconic Marlborough producer, Cloudy Bay. The 2008 vintage Chardon-nay is drinking beautifully at the moment. The fresh acidity of the citrus flavours brings the food to life, while the savoury complexity of toasted almonds and pine nuts balances the rich sweetness of the crab.

MARINADE: 1½ tbsp ginger and garlic paste 3 tsp ground turmeric 3 tsp ground coriander 1½ tsp chilli powder 6 tbsp coriander leaves, chopped 3 tbsp chopped ginger 3 tbsp lime juice 6 tbsp rice flour 12 soft shell crabs

CRAB DRESSING: 5 tbsp sake 4 tbsp mirin 150 ml soy sauce 3 tbsp sweet chilli sauce 1 tbsp fish sauce 1 tbsp caster sugar Juice ½ lime 150 ml pomace oil

FOR COOKING THE CRAB:

1 white onion 2 sticks of celery 1 carrot, peeled 2 bay leaves 5 whole white peppercorns

For the crab mix: 250 g white crab meat 10 g chives, chopped 10 g chervil, chopped 3 tbsp crème fraiche 3 tbsp mayonnaise Squeeze of lemon juice

CHOCOLATE FONDANT AT CÔTEMakes four individual puddings

INGREDIENTS125g butter, plus extra for greasing the moulds25g plain flour, plus extra for dusting the moulds200g good-quality dark chocolate, such as Green & Black’s Cook’s chocolate, broken into pieces2 eggs, plus two yolks100g caster sugar

1. Preheat the oven to 180°C, gas mark 4. Brush four individual metal pudding moulds (175ml) with butter. Evenly coat the buttered moulds with flour, tapping off any excess. Transfer the prepared moulds to a baking sheet. 2. Put the broken chocolate and butter in a heatproof bowl set over a pan of gently simmering water, making sure the bowl does not touch the surface. Once melted, stir until smooth. Remove the bowl off the pan to allow the chocolate to cool slightly. 3. Place the eggs and sugar in a large mixing bowl. Using an electric whisk, beat on high for a few minutes or until very thick, pale and fluffy. Fold the cooled chocolate mixture into the eggs and sugar. Sift in the flour and gently fold it in. 4. Divide the mixture equally between the prepared pudding moulds. Place in the oven for 12 minutes. Remove from the oven and set aside for three minutes. Using a tea towel, turn out onto plates and carefully remove the moulds. Serve immediately with whipped cream or ice-cream and garnish with a mint leaf.
