KHUBZ EL JARADE (Locust Bread)

500g Locust ‘Caviar’ 500g Strong White Flour

2 Teaspoon Salt 3 Tablespoon Olive Oil

300ml Water 7g Fast-Action Yeast

Mix the flour, salt and yeast in a large bowl. Make a well in the centre and add the oil and water, then add the locust caviar. Mix well and tip onto a lightly floured work sur-face and knead until smooth. Place in a lightly oiled bowl and leave to rise for 1 hour until doubled in size. Line a baking tray with baking parchment. Gently mould the dough into a ball and place it on the parchment. Leave for a further hour until doubled in size. Heat oven to 220C/fan 200C/gas 7. Dust the loaf with flour and cut a cross about 6cm long into the top of the loaf with a sharp knife. Bake for 25-30 minutes until golden brown and the loaf sounds hollow when tapped underneath.

To Prepare the Locusts: The best way to catch locusts is to repair to the nearest high wall. If the season be pro-pitious, numbers of these insects will be found flying against the wall and falling. Pick up the females – they are larger and lighter in colour. Pull off the head like a shrimp, then squeeze the body and there will exude the eggs, like caviar.

THE BUTE ARCHIVE AT MOUNT STUART

The archives at Mount Stuart date back to 1158 and provide a wealth of valuable infor-mation about the Bute family and its various branches. The collection offers rich sources of information relating to architectural, economic, military and political history. Locust Bread dates to the 1900s and comes from a book called Moorish Recipes, which were collected by John Stuart, 4th Marquess of Bute.
