Melbourne hosts the world’s second-biggestprofessional beer competition, the annualAustralian International Beer Awards.

Victoria has 35 of Australia’s 120 microbreweries~ many of those in regional Victoria ~ and it isgrowing into a significant and thriving nicheindustry. There is no mistaking the importance oflocation in adding to the personality and quality ofthese beers.

By 2010 the plan is to have 50 microbreweriesthat sustain 260 full-time jobs and contribute morethan $180 million to Victoria’s economy.

Ale - Style made with a top fermentingyeast, ales are generally robust and fruity.

Aroma Hops - Hops rich in oils andchosen for their aroma contribution to the beer.

Barley - Grain used to produce the maltused in brewing.

Belgian Lace - The white ‘latticework’of foam from the head of a beer, left on theglass after a sip has been taken.

Bitter - A flavour characteristic of beer,contributed by the hops.

Brown Ale - A top-fermented beer,lightly hopped and flavoured with roastedand caramel malt.

Body/Mouthfeel - Density of a beer -amount of mouthfeel experienced by thedrinker.

Bottom-fermenting Yeast - Workswell at low temperatures and ferments moresugars. Also called ‘lager yeast’.

Bouquet/Aroma/Nose - Acombination of hops, malt and yeast by-product to create the fragrance of a beer.

Brew Kettle - One of the vessels usedin the brewing process - to boil the wort -also called a Copper.

Carbonation - ‘Sparkle’ caused bycarbon dioxide, created during fermentationor injected at a later stage.

Cask/Bottle Conditioned - Yeastis left in the brew to finish the fermentationresulting in its carbonation developingnaturally in the package.

Conditioning - Warm conditioningdevelops a complex of flavours, cold impartsa clean and rounded taste.

Craft Beers - Beers produced by small,independent brewers with only traditionalbrewing ingredients such as malt, hops,yeast and water, brewed using a traditionalbrewing processes.

Cream Ale - A combination of top- andbottom-fermented beers, producing a sweet,lightly hopped brew.

Draught Beer - Not a beer style, but amethod of dispensing beer.

Dry Beer - Term for light-bodied brewswith minimal after taste.

Dry Hopping - Adding extra hops to thebeer during fermentation or conditioning in thekeg to enhance its aroma.

Esters - Fruity flavours produced by theyeast while fermenting.

Fermentation - The process of theyeast converting simple sugars in the wort toalcohol and carbon dioxide.

Filtration - Slightly cloudy afterlagering, beer requires filtering to removeany remaining yeast and other materials.Most Craft beers are non-filtered.

Grist - Term for milled grains.

Head - The foam at the top of a beerwhich is the protein pushed out of suspensionby the rising bubbles.

Hops - The flower of a perennial vine andone of the four key ingredients of beer.

Infusion - Simplest form of mash - grainssoaked in water.

Keg - Beer container - usually 50 litres.

Lager - Bottom fermented beer fermentedat colder temperatures than ales. (From German ‘largen’ - to store).

Liquor - Water used in brewing process.

Malt, Malted Barley - One of thefour key ingredients of beer. Malt is barleywhich has been moistened, allowed togerminate and then dried.

Mash - A key step in the brewing process,malt is ground and blended with hot water toconvert the starch of the malt to sugar.

Milling - First step in the brewingprocess. Barley malt is crushed betweenpairs of rollers, separating the husk from themeal body. The meal body is fractured,preparing the malt for mashing.

Original Gravity - Density of thewort prior to fermentation - a measureof the amount of sugar and solids withinthe wort.

Pale Ale - Amber or copper-coloured,top-fermented beer brewed using pale malts.

Pilsner - Term for pale, golden-hued,highly hopped, bottom-fermented beers.

Pitching - Adding yeast to the wort.

Porter - Very dark, top-fermented beerfirst brewed in London in 1722. Not asdark as a stout.

Roasted Malt - Specialty maltsaffecting both the colour and flavour of beer.

Specific Gravity - A measure of thedensity of a liquid or solid, as compared withthat of water.

Stout - Very dark, heavy, top-fermentedbeer made from pale malt, roasted unmaltedbarley and often, caramel malt.

Tannins - Organic compounds containedin some cereal grains and hops. Creates adry sensation on the tongue.

Top-fermenting Yeast - Works wellat warm temperatures (typically 20 degreescelsius). Unable to ferment some sugars buttolerates higher alcohol concentrations thanbottom-fermenting yeast.

Water - One of the four key ingredientsof beer. The water must be pure for a crisp,fresh taste.

Wheat Beer - Beer containing a highproportion of malted wheat.

Wort - The name given to the sugarextract produced from the malted barleyduring the mashing process.

Yeast - One of the four key ingredients ofbeer. Yeast is a single cell organism whichconverts the sugars contained in the wortinto alcohol and carbon dioxide.

Zymurgy - The science of beer brewing.

At Arctic Fox, we are passionate aboutmaking full flavoured, naturally brewedbeers without the use of chemicals or

artificial preservatives.We use a traditional mash brewingmethod to produce our beers.

Brewing small batches allows usto closely monitor each and everybrew to ensure that you get greattasting beer.

We use Australian ingredientswherever possible in our beers. They

are naturally fresher than imported ingredients, andwe are doing our bit to support Australian farmers.

Over the next year we hope to expand our range toinclude a number of different beer styles fromaround the world.

At Arctic Fox we respect the environment in ourbrewing practices by using local ingredients toreduce transport, recycle water used for cooling inthe brewing process and managing all wasteproducts that leave the brewery. We also use aninnovative and distinctive ‘top-lock’ 6-pack holderwhich requires significantly less paper thanregular packaging.

They are more fruity than typicalAustralian beers and most imported(high volume brands).Because we get more of the grain fruitcharacters in our beers they aregenerally less hop driven and thereforenot as bitter or harsh, this makesthem great with food.

The beers are not sweet in terms ofresidual sugar but are sweet because we getrichness from the grain during the mashingprocess. We are a microbrewery and not aboutique brewery ~ i.e. our beers are well made,clean and consistent.

Bintara Brewery is situated on Fraser Road,halfway between Wodonga and Rutherglen on theMurray Valley Highway. The brand new breweryand café is an ideal place to enjoy tasting the beersof Bintara, discuss the natural hand-crafted brewsand view the brewing process. The café is open forbreakfast and lunch from Friday to Monday withtapas and beer tasting platters available.

Bridge Road Brewers found itsorigins in Innsbruck Austria.Brewer/owner Ben Kraus,originally from Beechworth,learnt his art in the AustrianAlps, where he met his partnerMaria, who brings her Tyroleanflair to the brewery andits kitchen.

Located in the historic TanswellsCoach House, in the heart of

Beechworth, the brewery boasts a large tastingfacility and dining area. Bridge Road Brewersproduce a big range of ten ales, all of which areavailable for sampling from the brewery bar. TheAustrian influenced kitchen produces the best pretzelthis side of Munich, as well as a well matched lunchand pizza menu. In Summer the Brewery utilises itsbeer garden for moonlight cinema and live musicevents. Beechworth Oktoberfest is held at thebrewery in the first week of October each year.

The brewery is very interactive and enjoys theopportunity to provide visitors with an insight into howthe beer is made, partake in a sample or two andsometimes be involved in the crafting process itself.

The exploits of ‘wild man’ WilliamBuckley, who lived on the BellarinePeninsula early in the 19th century,led to the well known Australianexpression… ‘Buckley’s Chance’,meaning no chance at all.

So, in late 2001 when Buckley’sBeers was conceived, it wasconsidered by its founders to haveBuckley’s chance of really making it.

The original brainchild of four friendsliving locally, Coldstream Breweryopened its doors to beer lovers anddiners in June 2007.

The restaurant and bar are housed ina charming old brick building on thenorth side of the Coldstream township(dubbed the Gateway to the YarraValley). The microbrewery itself hasbeen set up in a purpose-built

extension across a small courtyard at theback of the restaurant, which has large windowsthrough which you can see for yourself theColdstream beers being brewed in small batches, byBrewer Rod Williams. For a small charge, you canalso join one of the regular brewery tours, followedby a tasting of the full range of draught Coldstreamproducts, that even includes a delicious hand-crafted cider. Wine and Cider Maker Phil Kellymakes this premium cider from the juice of localapples, extracted on a traditional rack and clothcider press.

The restaurant features a menu of share plates,mains and pizzas, along with blackboard specials.Head Chef, Scott Arthur, develops the menuaround local and seasonal ingredients to createsimple, yet high quality food.

A function room is available for private parties ofup to 50 people, with a number of menu optionsavailable, from cocktail parties to three-coursedinners.

Visit Coldstream Brewery in the beautiful Yarra Valley andenjoy great food alongside a delicious range of handcrafted beers that includes both classic lager-styles andtraditional ales.

Acclaimed as the world’s most awarded breweryafter winning 29 medals at the 2002 AustralianInternational Beer Awards and now over 130international medals including Australian title forbest lager, ale, pilsener, wheat, dark, stout andlight categories of beer, Grand Ridge received thePremier’s Trophy for Best Victorian Beer in 2002,2003 and 2005 and was winner of Victoria’s BestRestaurant in 2005.

The brewery operations can be viewed at a relaxedpace from a brand new gallery in the bar whiletours and tastings complement meals at the fullylicensed restaurant and bistro.

The Tooborac Hotel and Brewery is a new entrantto the brewery scene although it has been servingbeers for over 150 years!

The Carlin Family ~ the current custodians ~ havespent the last three years painstakingly restoringand extending the hotel and stables. The end resultis an old fashioned pub with modern ideas.

The brewery is located in the blue stone stables andhas been re-located from it’s previous home at theRifle Brigade in Bendigo where it operated as amalt extract brewery since the 80’s. In it’s newhome, it is being operated as a full grain breweryunder the able stewardship of brewer DamianNippard, formerly of What’s Brewing at theScottish Chiefs in Geelong.

The combination of atmosphere, beer andtraditional pub fare is what we are all about. It isall about keeping it real. A real pub with real beer,real food and most important of all real people.

Hewn from bluestone and granite, the Tooborac Hotel has stoodsince 1857. After the Gold Rush, the hotel served the area’sWoodcutters, Blacksmiths and Stonemasons ~ the men who workedthe timber and rock that built Melbourne.

The Tooborac Hotel and Brewery is situated on the Northern Highwayin Tooborac. 95 kms north of Melbourne, 10 kms south of Heathcote or30 kms off the Hume at Seymour. Right smack in the middle of theHeathcote and Macedon Ranges wine regions.

The University of Ballarat runs a number ofcourses in Food Science and Brewing at ourMt Helen campus in Ballarat.

They include a 5 day introduction to malting andbrewing short course, a Graduate Certificate andGraduate Diploma of Brewing, and a Bachelor ofApplied Science in Food Science.

As a part of the courses students get theopportunity to brew using the 6 hL brewhouse.A variety of different beers have been producedusing this facility. Examples include our lighter stylepale ale ~ Unigold, a British style dark mild ~Unidark, a rich vanilla infused porter ~ VP, anAmerican Style pale ale ~ Ballarat Gold Ale, anda range of one-off beers including a witbier and our“Sinister Minister” Abbey ale.

These products are packaged into kegs and sold in anumber of local establishments. The University isalso equipped with a 100L pilot brewery, amicromalter and an analytical laboratory.

The University is actively involved in research,consultancy and flavour training for thebrewing industry.

Brothers Andrew and David snatched the gleamingcopper clad brew-house from the bankrupt TimesSquare Brewery in Manhattan NY. The equipmentwhich filled five 40ft shipping containers wassmuggled out of the Big Apple under the cover ofdarkness while the NYC traffic cops snoozed.This piece of Times Square has now become astunning backdrop to their Beerhall.

2 Brothers encourage you to “Drink outside thesquare” with their range of characterful sessionbeers: Rusty Belgian Pale Ale, Trickster Witbier,Growler American Brown, Taxi Pilsner and theChief Märzen. These beers can be found onDraught at some of the more interesting wateringholes around Melbourne, however the best place toenjoy 2 Brothers beer is at the Beerhall where just afew feet of beer line separates your glass from thebeer tanks.

The brothers have combined the gleaming steeltanks with local artwork and soft lighting to providea cosy and intimate beer experience. Simple beerfood compliments the fresh draught beer, and awide cross-section of beer lovers come to theBeerhall to enjoy the unique atmosphere and liveentertainment. The Beerhall is open Thursdays4:00pm to 10:00pm and Fridays 12:00pm to12:00am and is available for functions on request.
