Meeting Report (Continued from Cover)

March YOM winners are the Bradfords at 17830 Deep Brook Drive. This yard is a perfect example of a winter-summer low maintenance yard. It has a variety of greens, and there is nice contrast in height and shape with the many plants and shrubs: nandina, foxtail ferns, society garlic, Aztec grass, monkey grass and more. The flowerbeds are neatly outlined in rock and the lawn is well groomed, and the lovely birdhouses accent it all. Kudos to the Bradfords, our new neighbors.

Olympic Fever Can Encourage Physical Activity In Children

According to an expert at Baylor College of Medicine, the Olympics are a great opportunity for children to learn about physical activity and goal setting.

According to Dr. Jorge Gomez, associate professor of pediatrics in the division of adolescent and sports medicine at Baylor, Olympic competitions will encourage children to do something fun and active.

"Research has shown that the strongest predictor of children remaining physically active into adulthood is having experiences of being active with their parents," said Gomez.

He offers the following tips for parents when watching the Olympic Games with their children:

• Point out that the athletes are participating because it¹s fun for them.

• Emphasize athletes are where they are after years of hard work.

• Discuss what it means to be a team player and to have good sportsmanship.

• Focus on the fact that the athletes are fit because they take care of themselves by eating well and exercising.

• While encouraging children to explore new activities, keep safety in mind.

The Recipe BoxSusan Tsujimoto, Editor

I LOVE tomatoes!! …can’t get enough of them, and I can hardly wait to get some planted in my garden. Nothing tastes better that a home-grown tomato!! According to The Old Farmer’s Almanac, early March is the best time to transplant, so it’ll be a couple months before I’ll be able to enjoy some home-grown deliciousness. But lucky for us Texans, tomatoes are available in stores year-round. Here is one of my favorite tomato soup recipes, which is perfect with a grilled cheese sandwich.

Roasted Tomato Soup

5 tomatoes, cored (if necessary) and quartered1 large red bell pepper, seeded and quartered2 medium yellow onions, peeled, quarteredextra-virgin olive oil5 plump cloves of garlic, unpeeledfine-grain sea salt1 cup reduced sodium V8 juice1 - 2 cups light chicken or vegetable stock1/4 teaspoon smoked paprika

Instructions:Preheat the oven to 375°F and position a rack in the middle

of the oven. Coat the bottom of rimmed 18” x 13” half-sheet baking pan with olive oil.

Arrange the tomatoes, skin side down, on one half of the

baking sheet. Coat the bell pepper and onions with olive oil and put them on the other half of the baking sheet along with the garlic, place the pepper skin side down as well. Give veggies a light showering of salt, then bake until the tomatoes start to collapse and the onions start to brown and caramelize, about 45 minutes. Turn the onions if they start getting overly dark on the bottom .Check on the garlic as well, once the cloves are golden and oozy inside, pull them from the oven.

Peel the garlic, dump all of the roasted vegetables into conventional blender or food processor.* Deglaze the baking sheet by adding V8 juice and 1 cup water to the baking sheet. Using a rubber spatula scrape the browned veggie-bits into the liquid. Add the deglazing liquid to the blender and process the vegetables to desired consistency.

Add pureed veggies to a soup pot and add the stock, smoked paprika and a bit more salt if needed - adjusting to your taste. Simmer until heated through and serve.

Notes:*Depending on the size of your blender/processor jar, you

may need to work in batches. If you have a glass blender jar you need to be extra careful that you let the ingredients cool down a little bit before you put them in the glass jar, otherwise the glass could explode and cause serious injury.

As with all soups, stews and chilis, this soup is better the day after it’s been prepared.

Make an impact.

THE NEW DIRT

Have you ever wondered where the stuff you send down the drain goes? Most people think, “out of sight, out of mind”. The wastewater system is designed to handle and process certain types of waste. When things, that are not supposed to be flushed, rinsed or dumped down the drain, enter the wastewater system, they can create serious complications. Some items cause blockages in the collection system, which can cause sewage to back up into homes or to overflow from a sanitary sewer manhole into a yard or the storm sewer system. Some items cause blockages at the treatment plant resulting in inefficient wastewater processing that can have serious environmental consequences. Drugs and other chemicals are not removed by the treatment plant and pass thru to harm fish or other animals and plants in the receiving stream. Please use the following lists as a guide for items that should NOT be disposed of in the toilet or down the drain:

Bathroom Products-disposable diapers, tampons, cotton balls, ear swabs, mini or maxi pads, condoms, nail polish, nail polish remover and unused medication (both prescription and over the counter).

Chemicals-furniture and metal polishes, motor oil, transmission fluid, antifreeze, rust remover, deck cleaners, solvents turpentine, paint, garden chemicals (pesticides, herbicides, and fertilizers), toxic chemicals (if label reads: “DANGER”, “WARNING”, “CAUSTIC”, “TOXIC”, “CORROSIVE”, “FLAMMABLE”, OR “POISON”)

In The Kitchen-fats, oil or grease lard/shortening, butter, margarine, coffee grounds, egg shells, food scraps, produce stickers, baking goods, sauces, dairy products, paper towels and rags

Miscellaneous-cleaning wipes of any kinds (even if they say they are flushable), facial tissue, bandages, bandage wrappers, cigarette butts and cat litter
