Rum Swizzle

Zacapa 23yr, lime juice, simple syrup, angostura bitters

“Tiki” cocktail named after the “swizzle-stick” used to mix the ingredients, that it is made from the stem of a native plant, Quararibea turbinata the “swizzle stick tree” or an allspice bush.

First appeared in 1947 Trader Vic’s Bartender’s Guide. Tiki historian Jeff Berry called it “the long island ice tea of exotic drink”.

Dark & Stormy gosling’s black seal rum, lime juice, simple syrup, ginger beer

Dark and Stormy was created specifically for Gosling’s Black Seal Rum from Bermuda, combined with lime and ginger beer.

Gimlet

tanqueray 10 gin or ciroc vodka, rose’s lime cordial

The Gimlet may have been named after British Royal Navy Surgeon General Sir Thomas Gimlette, who took his scurvy inhibitor with a tot of gin. Appeared in 1922 ‘ABC of Mixing Cocktails’ byH. McElhone.

Singapore Sling

The Singapore Sling was created at Raffles Hotel at the turn-of-the-century by Hainanese-Chinese bartender, Mr. Ngiam Tong Boon. In the hotel’s museum, visitors may view the safe in which Mr. Ngiam locked away his precious recipe books, as well as the Sling recipe hastily jotted on a bar-chit in 1936 by a visitor to the hotel who asked the waiter for it.

Tommy’s margariTa don julio reposado, agave syrup, lime juice

The Tommy’s Margarita is a Julio Bermejo creation, considered by many as the world’s leading Tequila aficionado and Tequila ambassador to the US. This particular Margarita is one that he started serving in the 1980s at his father’s legendary San Francisco restaurant ‘Tommy’s Restaurant’, where the bar was voted World’s Best Tequila Bar.

A contemporary cocktail invented in London by Dick Brandsell in 1998.

French marTini ciroc vodka, chambord liqueur, fresh pineapple juice

The French Martini appeared on both sides of the Atlantic around 1995, and was one of the drinks that spearheaded the cocktail revolution of the late 90s during the Sex and the City era. Many believe the drink was originally created to market a French raspberry liqueur.

Zombie ron Zacapa 23yr, gosling’s black rum, bank’s rum, tac-falernum, lime juice, tac grenadine, absinthe, grapefruit juice

Legend has it that Donn Beach originally concocted the Zombie to help a hung-over customer get through a business meeting. He returned several days later to complain that he had been turned into a zombie for his entire trip. Its smooth, fruity taste works to conceal its extremely high alcoholic content.

A bit of history: legend says it was invented in the late of 19th century by the founders of Myers’s Rum Fried L. Myers, the recipe on the back of each bottle is known as the plantation formula.

There has always been a certain simpatico correspondence between the cocktail and horse racing. The Derby drink was actually named to commemorate both races and horses and had several variations, but this is our favourite.
