    Ingredients4 medium sweet potatoes,peeled and diced! cup olive oil" tsp. kosher salt# cup + 2 Tbsp. freshlime juice2 jalapeños (optional)3 tsp. honey2 " tsp. ground cumin1 can black beans, rinsedand drained1 can corn kernels

    DirectionsPreheat the oven to 375 degrees F.

    In a medium bowl, toss the potatoes with ! cup oliveoil. Season with salt to taste. Spread the potatoes ina single layer on 2 sheet pans. Roast in the ovenuntil a knife can be easily inserted into the potatoes,15 to 18 minutes.

    Meanwhile, place the lime juice, jalapeños , honey,cumin and " teaspoon salt in a blender or foodprocessor. Blend until smooth. Set aside.

    In a medium bowl, combine the sweet potatoes, beansand corn. Add the dressing and toss until combined.Season with more salt, if desired. Serve warm or atroom temperature.
