Swashbuckling Legends of The CaribbeanLong before Johnny Depp brought his slurred swagger and criminal charms to the

silver screen, the Pirates of the Caribbean were all too real. This was especially true in the mid-17th and 18th centuries, considered by many to be the heyday for seagoing plunderers and buccaneers. Then, Caribbean Sea was rife with ships manned by some of the most vicious souls to ever sail, many of the vessels having been seized from mer-chants of the region.

The stuff of these legends has been captivating travelers for centuries, with many tales elaborated for effect (a la Captain Jack Sparrow). This dramatic flair, combined with the lack of detailed accounts of what was essentially the maritime version of the “Wild West,”

make it difficult to discern legitimate facts from fiction. But there are some true stories that transcend fable, and some prominent pirates whose lives can still draw an imposing shutter upon mention.

locks, creating a demonic image as he slung his many pistols and strapped dag-gers to his chest. His ship, Queen Anne’s Revenge, was identifiable from great distance, boasting 40 guns and match-ing the threatening aura of her master. It was this visual effect of both Blackbeard and his ship that garnered him most of his legendary status, as it was not his style to rely on violent force to get what he wanted. It’s been said that just the sight of him caused enemies to surren-der, which made him one of the most successful pirates in the Caribbean and West Indies.

In contrast to Blackbeard’s dark and brooding image, Calico Jack earned his moniker by way of the colorful clothing he favored, and came by piracy some-what unintentionally. A former quarter-master for the English navy, Jack led a mutiny aboard his warship and eventu-ally took over the crew and ship. Follow-ing the ship’s defeat of a French vessel – and the riches gleaned from it – Jack coaxed his crew to turn their attention to piracy. Perhaps equally contributing to Jack’s fame was his association with two of the only known female pirates of the era: Anne Bonny, who left her husband to plunder with Jack, and Mary Read, a fierce pirate in her own right with a penchant for wearing men’s clothing to be more intimidating. When Calico Jack’s ship was overtaken by authorities, it’s said that the women were the only crew mem-bers to offer any resistance.

L’Olonnais, on the other hand, was decidedly more of a fighter than a lover. He specialized in raiding Spanish ships and coastal settlements, and delighted in excessive cruelty. He arrived in the Caribbean as an indentured servant, quickly turning the tables on anyone who dared to cross him, violently hacking or hanging his victims even

after their surrender. In an ironic twist, L’Olonnais was captured and eaten by cannibals, a fitting end to one of the Caribbean’s most vicious pirates.

Bonus Fact: While Davy Jones is one of the most famous names in pirate lore, there is no evidence to suggest that such a pirate ever existed. One buccaneer by the name of David Jones graced the seas briefly, but made very little impact on the culture. “Davy’s” famous locker re-fers to the ocean floor, used as an adage for dying at sea.

Honor Among ThievesSurprisingly, the culture aboard pirate

vessels of the “Golden Age” of piracy was relatively fair and democratic, as crews largely adhered to an accepted code of conduct. Some ships enforced strict, all-business rules – no smoking, no women, tight dress code – while oth-ers focused more on the economics of plundered prizes and shipboard duties. Since many pirates were former mem-bers of royal or European naval forces, a sense of hierarchy and respect perme-ated the ranks. And while punishment for dissent could be characteristically brutal, it was seldom arbitrary. There was also a blaring lack of discrimina-tion based on the common practices of the day – racial, gender or otherwise. Aboard pirate vessels, one’s worth was decided by pirate standards, rather than societal ones, creating an oddly civilized culture in this criminal utopia.

As modern travelers explore the former waters of those once in violent search of treasures and power, it’s difficult to imagine such horrors on the blissful shores of these beautiful islands. But the legends remain, and continue to add intrigue to the pristine paradise of today.

– Julie Dibble

MOZART TEA TIME

Wolfgang Amadeus Mozart (1756-1791)The world of music has been blessed with many outstanding creative geniuses. Arguably the most notable of these is Wolfgang Amadeus

Mozart. A child prodigy of the first order, Mozart was thoroughly trained by his father, Leopold, who was also a noted musician and peda-

gogue from Salzburg, Austria, where Mozart was born.

Mozart’s creativity was given the opportunity to flourish as a youth while he was paraded through every

musical center in Europe during extensive touring. In fact, by the time Mozart was 15 years old, he had

been “on the road” for over half of his life. He absorbed every style with uncanny aptitude his works

became a synthesis of all the current national styles. In this assimilation process, he also personalized and

improved each style. By the time he had completed all his tours, he was recognized throughout Europe as a

leading virtuoso performer and composer.

Although he was recognized as a leading composer, he was never able to secure a worthy position. The system

of aristocratic patronage just did not work for him; yet as his daily life floundered, his creative inner life main-

tained a continuous flow of sophisticated and ingeniously conceived compositions in every medium. From his

first symphony at age eight and his first opera at ten, he produced over 600 works in his short 35 years.

Enjoy our own tribute to the master, and other classical favorites performed by Matt Scholz on piano, at “Mozart Tea”

featuring a lavish display of pastries and confectionery treats, today from 3:30pm to 4:30pm in the Palm Court, Lido Deck 11.

marvelled at how a small army of waiters,

chefs and sommeliers is able to create the

culinary masterpieces they do day after

day? If so, don’t miss this behind-the-

scenes look at how all the delicious food

is prepared. Meet Executive Chef Karl Primus today at 4:30pm just outside the

Waterside restaurant, for a tour of Crystal

Symphony’s “Kitchen.”

PERSONALITY PROFILE

Executive Chef Karl Primus

At the age of 15, Karl started his ap-prenticeship in Graz, Austria, working for

4 years in a fam-ily owned Hotel Chain with fine dining cuisine. Af-ter that he worked for another family owned, five-Star Hotel, during the winter seasons in a ski resort in Salzburg, Austria,

working as a Demi Chef de Partie, also in fine dining.

After serving his mandatory military service, Karl continued his culinary journey by moving to the United States. He worked in a restaurant in Philadel-phia featuring European cuisine. The restaurant was featured in the Philadel-phia Magazine as one of the best up and coming restaurants in Philadelphia.

After moving back to Austria, working again in the ski resorts in Salzburg, Karl’s next goal was to learn French cuisine. So now, at the tender age of 23, Karl took all his belongings and savings and took the Orient Express train to Paris, France.

Life in Paris was hard to begin with. Karl’s lack of the French language meant nobody wanted to hire him. Luckily, he was given a job in a major 5-star hotel chain as a Chef de Partie Tournant. Fi-nally he could start learning the language!

Karl stayed for four years in Paris, working for different 5-star hotels and Michelin starred restaurants, working his way up to Sous Chef.

In 2001, Karl started his life on the sea by accident. An old friend from his days as an apprentice, back in Graz, contacted him and told him that they were short

on Chefs on his ship and asked if he could come help out. At that time, Karl was looking for something new in his career. It was perfect timing.

He started on a German Cruise line as Chef de Partie and worked his way up to Sr. Sous Chef before changing into the Provisions department. He became Pro-visions Master and was in charge of all purchasing on board the vessel. When Karl was 29, he was offered the position of Executive Chef. He ended up staying there for almost nine years.

In 2010, Karl moved to a six-star cruise line, working as Executive Sr. Sous Chef and Executive Chef. After one year with this cruise line, Karl decided to return to land and went to work in Hamburg, Germany, in a restaurant located close to the Elb River. Karl spent 6 months here, watching cruise ships pass by daily. This brought the bug back to return to the ship life and so, Karl applied this time with Crystal Cruises. He got the position of Chef de Cuisine, Main Galley and now, several years later, Karl is our Executive Chef aboard Crystal Symphony.

In addition to his regular full day as Executive Chef establishing the daily menus and overseeing a galley staff of over 90 personnel, Karl works very closely with the Provisions Manager to keep the pantry well stocked. The galley provisions for a typical cruise include enough supplies for as many as 1,400 breakfasts, lunches and din-ners each day. Each lunch and dinner menu, for example, has as many as six courses, all different each day. Over a cruise of 14 days, Karl must stock food for about 10,000 dinners and almost as many lunches and breakfasts; including over 150 different main courses, differ-ent themed lavish luncheon buffets, late night gourmet snacks and Viennese des-sert buffet. Karl is also responsible for

Silk, Churrascaria, The Sushi Bar, Umi Uma and Prego restaurants, the Trident Grill and Ice Cream Bar, Room Service and enough food for Crystal Symphony’s 550+ officers, staff and crew.

If you get a chance to tour the Galley, you will see the large state-of-the-art food lockers which keep all this food fresh. Crystal Symphony is equipped with the most advanced “fresh air” sys- tems for the storage of meat, fresh fish, produce and dairy products in high-hu- midity, constant-temperature rooms.

Guests aboard a typical Crystal cruise consume over 50 pounds of caviar, 4,000 pounds of fresh fish, 30,000 eggs, 300 pounds of fresh strawberries and well over four tons of bananas, oranges, mango, papayas and melons.

“Our guests determine the choice of menu items,” Karl says. “We must provide our guests with prime rib, the finest steaks and chops, smoked salmon, lobster and only the freshest of fish.” Karl is a very busy man. When he has free time, he can be found relaxing in the sun. Judging by the elegant repasts pro-vided to our guests and the rave reviews lavished on his cuisine, Karl is not only a busy Executive Chef, but an extremely talented one as well.

The technology also operates in shallower depths allowing safe navigation in unchartered waters, which will give Crystal Endeav-or’s guests an opportunity to experience rarely visited areas. The PC6-designated ship will also be outfitted with offshore dynamic

positioning capabilities, enabling the ship to remain in one place utilizing GPS and its thrusters, rather than dropping anchor, avoid-ing any potential damage to delicate reefs.

“It is imperative that every element of Crystal Endeavor be designed with precision and careful foresight, always keeping the safety of our guests and the respectful navigation of the waters we sail as the top priority,” said Peter Andersson, Genting’s vice president of newbuilding. “The FarSounder technology equips us to do exactly that, and then some, as Crystal Endeavor navigates uncharted waters around the world. The data and capabilities provided by the program will not only inform our captain and of-ficers of important navigational data, but also provide insights that will enrich the journey for our guests.”

In her inaugural 2020 season, Crystal Endeavor will sail expedition voyages through Japan and the Russian Far East; Antarctica via the Ross Sea; New Zealand and Tasmania; Australia and the Great Barrier Reef; and Borneo, Indonesia and the Philippines. In 2021, Crystal Endeavor will add New Zealand’s Sub-Antarctic Islands; Alaska and the Aleutian Islands; Norway and the United Kingdom; Canary Islands, Atlantic and South America to her repertoire, as well as an extraordinary voyage through the rarely traveled Northeast Passage.

"FarSounder is honored to be a part of Crystal Endeavor. This luxury expedition vessel demands the best of everything, includ-ing the best safety equipment available," FarSounder CEO Cheryl M. Zimmerman explains. "FarSounder sonars have led the way to the furthest southern point in the Antarctic ever traveled by a cruise ship. Now we look forward to our sonars aiding Crystal Endeavor’s captain and crew on their journeys to the farthest reaches of the world."

The German-built Crystal Endeavor is currently under construction at the MV WERFTEN Shipyard in Stralsund, Germany. The largest, most spacious luxury expedition yacht in the industry, Crystal Endeavor will feature elegantly casual, expansive public spaces; all-suite guest accommodations; Michelin-inspired dining options including Master Chef Nobu Matsuhisa’s Umi Uma & Sushi Bar; full-service Crystal Life Salon & Spa and state-of-the-art Fitness Center. Expedition-specific amenities and spaces will enhance guests’ experience, including designated “mud rooms” and helicopter lounge.
