It makes absolutely no difference to me at all.
I am skeptical about this decision. It probably has something else that makes it unhealthy.
I guess it is a step forward but what took so long?
It would make me want to buy the product in appreciation – good for them!

Typical baked goods and dry grocery products are in the 5-7 pH range
Option #1 Red Anthocyanins: shift from red to purple under these pH conditions
Option #2 Beet: the Maillard reaction typically causes browning during heat processes, such as baking or extrusion
Option #3 Carmine: sourced from the cochineal insect and considered “bug juice” by the media, must be labeled as an allergen on ingredient lists but performs excellently across pH levels
Option #4 pH-Modified Solutions: generally modified by acids which can cause texture and flavor issues in end product
