The credit crises, the Swiss Frank exchange rate rising through the ceiling, the uprisings against dictators in several Arab countries and last but not least the crumbling of the Libyan regime. It is difficult to escape this torrent of bad news, even if we remind ourselves that there is nothing we can do about any of these events. Each and every one of us develops his own strategy to handle the flood of bad news. Short of refusing to read the dailies, or listen to the radio or watch television, my therapy is to watch the wonderful sunsets we have here on our beautiful lake in Zug. It reminds me so much of my teens when I used to watch the sun sets on the banks of the Tigris in Baghdad. It had, and still has a magical effect on me and fills me with energy and optimism. A therapy I strongly recommend to all our members, to those who feel the stress and those who don’t, relax, enjoy and let the magic slowly work itself on you. EDITORIALSunsetsIt has been a hot summer, not just in temperatures but also onalmost all other fronts. The credit crises, the Swiss Frankexchange rate rising through the ceiling, the uprisings againstdictators in several Arab countries and last but not least thecrumbling of the Libyan regime. It is difficult to escape thistorrent of bad news, even if we remind ourselves that there isnothing we can do about any of these events.

•IMCZNEWSEVENT NEWSAnnual Barbecue With the promise of good weather all descended or rather ascended toBirkenwäldli near the marina on Aegeri lake in Unteraegeri well in time toenjoy the early morning breeze and the magnificent scenery. In a joyful,relaxed atmosphere with kids having a great time, the grilling team gotworking, and soon everyone was busy eating a most delightful mix ofmeats, accompanied by a huge buffet of the most delicious collection ofsalads and deserts.

The weather was nice and warm with plenty of sunshine, but we did haveone and only one shower, which sent everyone scurrying for cover in thehuge tent provided. Thankfully it was only a short shower, and as soon asit cleared we started playing games. A lot of inventive thought had goneinto many of them. The winner of the general knowledge quiz onScandinavia was none other than Tobias Volker. Congratulations Tobias.

To those who missed the event, please try and make it next year. Youcertainly have missed a most pleasant way of spending a Sunday afternoon.

Monosodiumglutamate, better known asglutamate for its flavour-enhancing effect infood, is the sodium salt of L-glutamic acid.Mostly demonised as additive E621 andmade responsible for the „Chinese restaurantsyndrome“, virtually nobody knows thatglutamate is naturally found in all pro-teins ofour food. In meat, fish, vegetables, or cerealsit is present protein-bound (glutamine); intomatoes, milk, potatoes, soy sauce, andmany cheeses in a free form (glutamic acid).Mother’s milk even contains ten times moreglutamate than cow’s milk. Glutamine is themost abundant amino acid in our musclesand therefore also widely used in sportsnutrition. As an additive, the glutamate formis used (mostly as sodium glutatmate). Suchsalts are known from other (amino) acids andminerals (for example Magnesium asparagate,Iron fumarate, Calcium citrate, etc.).

Glutamate functions not just as a taste orpalatability enhancer, but rather constitutes abasic taste itself, which is scientifically definedas the fifth taste “umami“, or “savouriness”;after the four pri-mary tastes sweet, salty,sour, and bitter. Glutamate from naturalsources was and is traditionally used to bringthe umami taste into food. It is indeed becauseof this very umami taste profile that foods, andconcentrated preparations thereof, naturallyrich in glutamate, are particularly appreciated.The Asian cuisine is characterized through thepalatability of fish or soy sauce, in manyWestern menus meat broth contributes tosavouriness, and the natural glutamate incheese, olives, and tomatoes provides flavourin the Mediterranean cuisine. It is exactlybecause of this natural taste intensity thatglutamate-containing food preparations arewidely used in both traditional and industrialfood production. Yet, industry also uses puresodium glutamate as additive E621, whichcertainly is a cheaper way than usingalternative sources such as proteinhydrolisates or fermented condiments. Thesenatural sources (high in glutamate) do not haveto be declared as food additives, but areconsidered as food ingredients. Nevertheless,the amount of added glutamate in industriallyproduced foods is about the same as intraditional dishes (0.1-0.8%). The high contentin our nutrition is not surprising, becauseglutamate in free or bound form is the mainenergy source of our intestines. Virtually all theingested glutamate is metabolised there andsupports a healthy gut microflora.

Previously glutamate was manufactured byhydrolysis of wheat gluten or soya beans bymeans of microbiological fermentation in aculture medium of sugar, molasses, or starch.

The bacteria form glutamic acid, which canbe retained by filtration of the fermentedliquid. Neutralising this solution with analkaline sodium salt produces sodiumglutamate also called E621. Ironically, theassign-ment of an e-number certifies thesafety of an additive. One can certainly argueabout the need to use glutamate as anadditive in foods – instead of aturallyglutamate-rich ingredients. But pleaseconsider that the addition of glutamate doesnot “save” bad-tasting foods. Flavour“enhancer” does not mean taste “improver”!

Quite the opposite! Furthermore the use ofglutamate is limited to salty/spicy foods, andit is not suitable for sweet foods.

Glutamate – no matter whether natural oradded – is widely used in Asian cuisine. That iswhy the expression “Chinese restaurantsyndrome” was coined. Its symptoms includeheadache, sweating, neck stiffness andnumbness, facial tension, increased heart rate

and dizziness. Meanwhile, glu-tamate as acause has been eliminated. Even thenotoriously critical BfR (Bundesinstitut fürRisi-kobewertung) in Germany came to thisconclusion, pointing to the results ofcomprehensive stud-ies, where “indeed similarreactions were also provoked through theingestion of foods and bever-ages withoutadded glutamate”. Because the test persons ofmany studies reacted equally to glu-tamate asto placebo, there had to be other substancesresponsible for the noted symptoms. Aller-gicreactions to Asian food may be caused byingredients such as shrimps, peanuts, spicesand herbs. Also histamine, a biogenic amineoccurring naturally in cheese, wine, orchocolate, is a po-tential trigger of symptomslike headache and parasthesia afterconsumption of these foods. Anti-allergicmedication therefore works – independently ofthe triggering allergen – as an antihistamineagent. Histamine is formed by our body as thereaction to an allergen and causes the variousknown symptoms.

The use of sodium glutamate in combinationwith cooking salt (sodium chloride) allows thereduc-tion of the total sodium content of 20to 40% - with unchanged taste (glutamatecontains about 60% less sodium than sodiumchloride and is used in a lower dosage)! Yet,this actually is only of relevance tosodium-sensitive people. But whoever avoidsAsian dishes and other E621 containingfoods should keep in mind, that one getshis/her daily dose of protein-bound or freegluta-mate/glutamine/glutamic acid anyway.Potential discomforting symptoms thereforemost probably have nothing to do withglutamate, instead but one should checkwhether there are potential aller-gens in themenu – or perhaps it is only a nocebo effect(the opposite of a placebo effect)!

According to the OECD (Organisation for Economic Cooperation andDevelopment), there are 214 million people world wide who liveoutside of their home countries. Out of a global population of 6.9billion, this represents 3.1%, quite a sizable number. Out of these60%, or 128 million live in the developed world. More than 50% ofthese migrants are highly skilled or have intermediate skills. Theimpact of this migration, especially of highly skilled migrants on boththeir countries of origin and the new countries to which they haveemigrated has sometimes been referred to as a talent war. It has beenstrongly inferred that it is a war of the developed world against thedeveloping one. The battlefronts are lined with Chinese graduateslooking for practical experience in the West, or Indian students on theirway to Harvard or MIT.

However, the migration has not been a one way road. Increasingnumbers of Indian technologists have been leaving Silicon Valley tostart a new business back home in India.

The Broader ViewNot so long ago, there was an outcry here over the number of foreignstudents studying at Swiss universities. There is also ongoinggrumbling about the present open borders policy of the Swissgovernment.

This contrasts sharply with the facts. The vice chancellors of 16 UKuniversities sent a letter to the Observer newspaper in March this year,in which they stated that, “International students bring extensivecultural and political benefits to the UK. Additionally, when they return

to their countries at the end of their studies, they become cultural andeconomic ambassadors for the UK”. On the industrial front, themultinational companies as well as most industrial companies havewelcomed the open borders policy, as it helps to alleviate theshortages of skilled labour.

In view of the current recession in the developed world, the centre ofgravity of technology development is shifting towards the fast growingSouth East Asian countries.

Hence, although immigration of highly skilled persons appears as abrain drain for the countries from which they emigrated, and a braingain for the countries to which have immigrated, it is in fact more of abrain circulation when viewed in the longer term.

Capital versus LabourIn most developed countries, a struggle has evolved betweenindustrialists calling for open borders and greater freedom for foreigntalent to be imported in order for them to maintain their ability toinnovate, while the labour unions complain that lax immigrationpolicies result in lower wages. At the other end of the talent scale, itis a well known and accepted fact of life that several branches wouldlose their competitiveness completely if their access to cheap labourwere blocked. This cheap labour is being provided by unskilledimmigrants. The construction industry is known to be particularlydependent on the availability of cheap labour.

Obviously it is difficult if not impossible to draw a line on how manyimmigrants with what skills to allow to enter a given country, and atthe same time please everyone. In both the US and the UK, theauthorities are trying to change immigration policies so that the doorremains open for the highly skilled, while keeping the less skilled out.Only time can tell whether this will be a long term solution for thedeveloped countries.

Bozcaada is a small island in the Aegean Sea,it is part of Çanakkale Province and is locatedon west coast of Turkey. It is roughlytriangular in shape having a total surface areaof 39 km2 . It is strategically situated atthe entrance to the Dardaneles Strait.Furthermore, it is the only rural district inTurkey which does not have villages. It hasonly one settlement, namely Bozacaada towncenter. As of 2010 statistics, the island hasapproximately 2.500 inhabitants, of which 30of them are of Greek origin.

Brief History of BozcaadaIn Ancient Greek the name of the island wasTenedos. According to Greek mythology thisname is derived from the eponymous heroTenes, who ruled the island at the time of theTrojan War and was killed by Achilles. Inancient Greek History, there was an Aeoliansettlement on the island, then it wasconquered by the Persian Empire and at thetime of Alexander the Great, becameindependent. In the late Middle Ages, therewas a struggle between the Byzantine Empireand Venetians to take control of the island.The island changed hands several timesduring long-lasting wars. As a result, itspopulation of around 4.000 islanders wereresettled in Crete and Euboea (Eupbea is thesecond largest Greek island in area andpopulaiton after Crete). In the middle of the15th century Mehmet II conquered the islandand the Ottoman Navy used the island as asupply base. Up till the 19th century it wasthe subject of major conflict betweenOttomans and Venetians. In the 19th centuryRussians repeatedly captured and used it asa military base, but they could not hold it.After the war of Independence, with theLausanne Peace Treaty, of 1923, Bozcaadatogether with Gökçeada became part of theRepublic of Turkey. With the LausanneTreaty, the Greek population was keptexempted from the population exchange

between Turkey and Greece. The Greeks andTurks lived together until the late 1960ies.

Bozcaada has always been famous for itsvineyards since ancient times. Today, thereare three family owned wine companiesproducing high quality wine. The fishing isanother traditional economic activity. Apartfrom vineyards and fishing, organic farminghas been one of the most important activitiesat Bozacaada. As from the early 1990s,domestic tourism started to play a major roleon the economy of the island. Bozcaada hasmany beaches with no human footprint. Onecan enjoy the turquoise blue and crystal clearsea during day time and enjoy the fishspecialties with local wines in the evenings.One of the most important features of theisland is the preservation of old housesmainly built by Greeks. When you visit theisland you will see that there are two districtsin the town center. One district was inhabitedby Greeks and the other district wasinhabited by the Turkish pooulation. Thesecommunities despite all negative events ofthe past have managed live together for manycenturies. Today, you can stillfeel this ambiance of peacethat surrounds you. If you arecurious about the social andcultural life on the island, youcan visit Bozcaada Museumlocated in the town center.Bozcaada offers many socialactivites like art and musicfestivals. These festivals takeplace during the summerstarting from June until the end of September.September is very important for the people

who earn their living from grapes. It is theharvest season. Until the end of Septemberthe grapes are collected and brought to thewine factories.

Despite the booming tourism activities,Bozcaada managed to preserve its authenticlook and natural beauty. If you are planing tomake a trip to Bozcaada I recommend you togo in mid September. The weather will besunny and the island will be calm becausethe school season begins on the first weekof September.

The journey to Bozcaada from from any majorcity in Turkey is a long one. From Istanbul ittakes about 6 hours by car. From Izmir, youcan reach Geyikli pier in three hours. Geyiklipier is the main location to take the ferry. Theferry trip takes about 45 minutes. You can goto the Island by your private car, but thestreets of the island are not suitable to copewith the traffic especially at weekends. Youcan also rent a motorcycle or bicycle on theisland. Additionally there is public transportby small buses. A two night stay would beenough to discover the beauty of the island.There are many different kinds ofaccomodation. You can stay in an oldGreek-style Pension in the town center orspend the night in the middle of a vineyardsor olive trees. On the breakfast table you canfind many different dishes. Among them, Istrongly suggest to taste tomato jam andolive oil served with different locally grownherbs. You can also make daily visits to wineproducing facilities and taste different kinds

of wines. Every Thursday, there is an openbazaar, like the flea market here. You can buyfresh fruits and home-made jams. After the

bazaar you can enjoy the wonderful beachesof the island. For lunch, you can have seaspecialties together with cold/hot mezesmade with olive oil. After lunch, you can enjoya short nap on the beach under the matumbrellas. Before going out for dinner, thereis one thing that everybody should definitelydo. Visit Polente, where you can enjoy a mostmagnificent sunset.

It's tough to be patient when the marketcontinues to go down, as we are experiencingsince February 18. In your frustration you mayeven want to give up tracking the marketaltogether. That's understandable, particularlywhen the market behaves this way, but tosome extent you should always keep yourpulse on the market, because just when youleast expect it, it will signal its readiness tomove up.

The scenario frequently seen to trigger a newuptrend is termed a "follow-through day." Ithappens when a major index closes upsignificantly higher for the day on a sizableincrease in volume from the prior session. Itgenerally occurs between the fourth andseventh day of an attempted rally.

On a very hot evening out bowling we ran 2lanes of 4 people each.

Wine winners were for first Stephen Butterworthon 418 and Otto Steuri with 408.

Stephen Butterworth led the way in Game 1with 134, followed by Hal Trufan with 124.

The second game was won by Otto Steuri on161 with Stephen Butterworth trailing on 148followed by Janis Meier on 140 and Beat Zügeron 127.

The third game was won by Hans-PeterSchobert our resident Split expert, with 142,followed by Stephen Butterworth on 136, BeatZüger on 133 and Otto Steuri on 130.

There was pretty tight scoring from all 8 bowlersand all bar 1 were over 330 for the three games.

Total scores for the 3 games were: - Beat Züger(377), Otto Steuri (408), Adrian Lüdi (332),

Hal Trufan (344), Stephen Butterworth (418),Janis Meier (354), Hans-Peter Schobert (364)and Grant Holliday (268).

Otto Steuri and Stephen Butterworth led theway in strikes with 8 each followed by HalTrufan with 6 and Beat Züger with 5.

Spares were shared with Stephen Butterworthand Hans-Peter Schobert on 10 each, followedby Beat Züger with 9 and Janis Meier andAdrian Lüdi with 8 each.

New to us, was the exceptional number ofSplits Hans-Peter Schobert had, 7 in all! No oneelse came even close!

Until the next event on September 21st, theBowling will be Spring Chickens versus OldCocks, and this precludes any women – it is anall-men event.

Glossary for the Uninitiated

1. A Split is a situation in ten pinbowling in which the first ball of aframe knocks down the headpin (i.e.,the "number 1" pin) but leavesstanding two or more non-adjacentgroups of one or more pins making ithard to clear all the pins with thesecond ball.

2. A Strike is when all 10 pins areknocked down with the first ball.

3. A Spare is when the second ballclears remaining pins.

4. In the final frame of a game, the10th frame, if one clears the 10 pinson the first or second ball, you have athird ball to roll. On all other framesyou only have 2 balls to throw.

HUMOUR•IMCZNEWSIndian StudentIt was the first day of school in the USA and a new Indian studentnamed Chandrasekhar Subramanian entered the fourth grade.

The teacher said, “Let’s begin by reviewing some American History. Who said “Give me Liberty, or give me Death”? She saw a sea of blankfaces, except for Chandrasekhar, who had his hand up: “Patrick Henry,1775” he said. “Very good!”

Ok, who said, “Government of the People, by the People, for the People, shall not perish from the Earth”? Again, no response exceptfrom Chandrasekhar: “Abraham Lincoln, 1863” said Chandrasekhar. The teacher snapped at the class, “Class, you should be ashamed.Chandrasekhar, who is new to our country, knows more about its history than you do.”

She heard a loud whisper: “Fuck the Indians,”. “Who said that?” shedemanded. Chandrasekhar put his hand up. “General Custer, 1862.”

At that point, a student in the back said, “I’m gonna puke.” The teacherglares around and asks “All right! Now, who said that?” Again,Chandrasekhar says, “George Bush to theJapanese Prime Minister, 1991.”

Now furious, another student yells, “Ohyeah? Suck this!” Chandrasekhar jumps outof his chair waving his hand and shouts tothe teacher, “Bill Clinton, to MonicaLewinsky, 1997!”

Now with almost mob hysteria someone said,“You little shit. If you say anything else, I’ll killyou.” Chandrasekhar frantically yells at thetop of his voice, “Michael Jackson to the childwitnesses testifying against him, 2004.”

The teacher fainted. And as the classgathered around the teacher on the floor,someone said, “Oh shit, we’re fucked!” AndChandrasekhar said quietly, “I think it wasGeorge Bush, Iraq, 2007.”

Quit drinking beerBanta Singh walks into a bar in London,orders three glasses of beer and sits in thebackyard of the room, drinking a sip out ofeach one in turn.

When he finishes, he comes back to the barcounter and orders three more. Thebartender asks him, “You know, beer goesflat after I fill it in the glass; it would tastebetter if you would buy one at a time.”

Banta Singh replies, “Well, you see, I havetwo brothers. One is in Dubai, the other inMontreal, Canada and I’m here in London.When they left home, we promised eachother that we’d drink this way to rememberthe days when we drank together.”

The bartender admits this is a nice customand leaves it there.

Banta Singh became a regular in the bar andwould always drink the same way. He’d orderthree beers and drink a sip out of each in turn.

One day, he came in and ordered only twobeers. All the other regulars notice and fallsilent.

When he comes back to the bar for thesecond round, the bar tender says, “I don’twant to intrude on your grief, but I wanted to offer my sincere condolences on yourgreat loss.”

Banta Singh looked confused for a moment,and then he laughs ... “Oh, no,”

He said, “Everyone’s fine; both my brothersare alive. The only thing is ... I have quitdrinking”!!!

The JaguarA boss walked into the office one morning not knowing that his zipper was down, and his fly wide open. His secretary walkedup to him and said, “Boss, this morning when you left yourhouse, did you close your garage-door?”

Not understanding what she meant, he went into his officelooking a bit puzzled.

When he was about done with his paper-work, he suddenlynoticed that his zipper was not zipped up! He zipped it up andremembering what his secretary had told him, finally understood.

Then, intentionally, he went out to ask for a cup of coffee from his secretary. When he reached her desk, he said, “When you saw the garage-door open did you see my Jaguar parked in there?”

The secretary smiled for a moment and said, “No, Boss I didn't. All I saw was a Mini cooper with two flat tires!”

Poor girl, she got fired!!!!!
