Peppers:Ilikethemilderflavorofthered,orangeandyellowbellpeppersbetterthanthegreenbellpeppersbutifwanttosubstitutethem,that’sfinetoo.Thoroughlywash,cleanandseedpeppers.Reservepeppertopsforotherdishesorchopupandincludetheminthisdishwhenyoucooktheonionsandgarlic.Blanchcleanedandseededpeppersforabout4minutesinlowboilingwater.Carefullyremoveanddrainhotpepperswithtongsandputina9x13inchbakingpanordish,facingpeppersupright,readytobefilled.
