F & B NEWSF & B NEWSF & B NEWSF & B NEWS Recipe for Success: Courage key to sustain in the business: Bangs' CEO

Harcha Bhaskar, Mumbai

Higher studies and international degrees do not necessarily make a successful businessman, but a passion for business does. That is the lesson learnt from the success story of Asvin Simon, chief executive officer, Bangs, a Chennai-based fried chicken brand. Bangs currently operates 40 outlets across India with 400 employees working for it. The company started with a small kiosk covering an area of just 80sq ft, and now has a presence in over thirteen states, including Tamil Nadu. The others are Andhra Pradesh, Bihar, Delhi, Gujarat, Haryana, Himachal Pradesh, Jammu and Kashmir, Karnataka, Maharashtra, Madhya Pradesh, Punjab and Uttar Pradesh. The chain also operates 40-plus outlets overseas. These outlets are a mix of three types of formats – restaurant,

kiosk and express. Simon, a software engineer by qualification, started the first Bangs outlet in the year 2009, and now plans to open 500 outlets across the country. He stated his plans for the next five years, of which 100 will be company-owned, while the others will be franchise outlets. The company will be targeting the metropolitan cities and mini-metros. Bangs also plans to raise Rs 30 crore via private equity to set up its company-owned outlets. When quizzed about his choice of an off-beat career, Simon said, “Studying and getting a white-collar job was something I was never interested in. I never wanted to work under anyone. Instead, I always dreamt of running my business. After all, it was in my blood, as my father himself is the successful businessman into imports and exports and shipments, and I enjoyed assisting him.” “Venturing into an altogether new business was not an easy job despite coming from a business background. Getting the approval and support of the family was the first challenge. They eagerly wanted me to stick to education career of a software engineer. So the first thing I did was setting up an small information technology company in 2007, which would provide a side income for me for my other dream at the same time making my family happy,” he said. Simon then shifted his focus to setting up Bangs. “Here started the original challenge of starting a venture in a new venture sector (food). It took almost a year to do groundwork about the segment, right from making a perfect recipe to finding the right target audience (including the demographic it would be catering to). Finally, the first outlet in 2009, when I was 23,” he said. “The investment for the first kiosk was Rs 5,00,000. I had the support of my parents, relatives and friends. But, it is just not the money that makes a business work successfully. A clear vision and future outlook is also needed. Even before I started my first kiosk, I had a clear picture and plan about where my business would be in next five years,” Simon said.Talking about his strengths, he said, “One has to be courageous and a brave-heart to sustain in the business. Also, a clear vision is a must, but along with it one has to be flexible. For instance, when catering to the tastes of customers in the north, I have to be flexible in my offerings and setting up outlets. The strategies used for setting up outlets in the south are completely different from those in the north. Even the consumers' preferences for food items is different. So one has to trust his/her ability while running the business.”. Today, Asvin is on an expansion spree. He plans to expand his network by entering into the overseas market. The company will open three outlets in Qatar by the end of the year and more in Malaysia and Dubai the following year.

Kamani Oils' rice bran oil brand Riso awarded product of the year 2013 Priyanka Dhomse, Mumbai

Riso, Kamani Oil Industries' rice bran oil brand, was awarded the product of the year 2013 in the cooking mediums and edible oil category. Kamani organised a press meet in Mumbai on Tuesday. Bollywood actress Raveena Tandon – Riso's brand ambassador – endorsed its nutritional qualities at the event. Vinay Chawla, director, Kamani Oil Industries; Meena Mehta, department of food science and nutrition, SNDT University; Rajiv Behere, assistant vice-president, Kamani Oil Industries, and Kalpana Nair, head, business development, Product of the

Year India, were present at the conference. Based on a survey conducted in 24 markets across India by Nielsen, Riso emerged the consumers'

choice for the accolade in the cooking mediums and edible oil category. The number of respondents was 18,000. Chawla said, “Thousands of health-concious consumers are adopting Riso as the sole cooking medium for their family. Riso is produced by a process of physical refining, which helps retain the nutrient oryzanol, which works postively on our health.” Explaining about Riso's nutritional aspects and values, Mehta said, “Rice bran oil is rich in Vitamin E complex, tocopherols, tocotrienols, gamma Oryzanol (an antioxidant), high quantities of phytosterols, polyphenols and squalene.” “Compared to other cooking oils, rice bran oil has a longer shelf-life because of these antioxidants. These compounds are nutritionally very valuable, and it appears to be the richest source of tocopherols and tocotrienols. Hence, rice bran oil does not only have a good fatty acid profile, but also is a rich source of antioxidants and micronutrients,” Mehta added. Behere said, “Apart from the nutrition benefits, Riso shines out the flavour of the food cooked in it, whether you want to fry, saute, bake, use it as salad dressing, Riso rice bran oil is perfect for all kinds of cooking. It has very high smoke point, and hence prevents breakdown at high temperatures and extends shelf life of the food cooked in it.”

Cremica’s latest offering - Opera cottage style chips in four variants Cremica, a player in the bakery segment, launched Opera cottage style potato chips in four variants - Cheese Jalapeño, Piri Piri, Italian Herbs and Salt & Black Pepper - in Mumbai recently. According to a press release issued by the company, cottage style chips or as they are more popularly called kettle chips have been introduced for all potato crisp addicts. Available in four distinct Mediterranean flavours effectively seasoned after preparing in olive oil, the product has a high unique quotient. Further, the chips are handmade and prepared to retain their natural texture, fresh taste and distinct shape and size. According to the company, kettle chips do have one great thing to offer: crunch. The hefty crunch of kettle chips is different from the traditional way of serving chips. In the latter, the usual industrial processing is done by frying huge quantity together, whereas kettle chips are cooked in small batches to see every chip is cooked to perfection and varies in size. The potatoes are hand-picked from fresh farm heightens the aroma when you bite into them. And since there are no offerings of this variety in the market, the only option consumers have been left with is buying international packs. But Cremica’s new offering aims to bridge this gap.

The M iracle of G reen TeaThe M iracle of G reen TeaThe M iracle of G reen TeaThe M iracle of G reen Tea Can you know?

Green tea is a type of tea that is harvested and then quickly preserved. Whereas black tealeaves are allowed to oxidize after they are picked, green tealeaves are immediately heated to prevent oxidation. Green teas are processed with either steam heat or with dry heat such as pan firing, which is similar to stir frying in a wok or a quick baking process in an oven.

Is any other food or drink reported to have as many health benefits as green tea? The Chinese have known about the medicinal benefits of green tea since ancient times, using it to treat everything from headaches to depression. In her book Green Tea: The Natural Secret for a Healthier Life, Nadine Taylor states that green tea has been used as a medicine in China for at least 4,000 years.

Today, scientific research in both Asia and the west is providing hard evidence for the health benefits long associated with drinking green tea. For example, in 1994 the Journal of the National Cancer Institute published the results of an epidemiological study indicating that drinking green tea reduced the risk of esophageal cancer in Chinese men and women by nearly sixty percent. University of Purdue researchers recently concluded that a compound in green tea inhibits the growth of cancer cells. There is also research indicating that drinking green tea lowers total cholesterol levels, as well as improving the ratio of good (HDL) cholesterol to bad (LDL) cholesterol.

To sum up, here are just a few medical conditions in which drinking green tea is reputed to be helpful:

Cancer

• Rheumatoid arthritis

• High cholesterol levels

• Cardiovascular disease

• Infection

• Impaired immune function

What makes green tea so special?

The secret of green tea lies in the fact it is rich in catechin polyphenols, particularly epigallocatechin gallate (EGCG). EGCG is a powerful anti-oxidant: besides inhibiting the growth of cancer cells, it kills cancer cells without harming healthy tissue. It has also been effective in lowering LDL cholesterol levels, and inhibiting the abnormal formation of blood clots. The latter takes on added importance when you consider that thrombosis (the formation of abnormal blood clots) is the leading cause of heart attacks and stroke.

Other Benefits

New evidence is emerging that green tea can even help dieters. In November, 1999, the American Journal of Clinical Nutrition published the results of a study at the University of Geneva in Switzerland. Researchers found that men who were given a combination of caffeine and green tea extract burned more calories than those given only caffeine or a placebo.

Green tea can even help prevent tooth decay! Just as its bacteria-destroying abilities can help prevent food poisoning, it can also kill the bacteria that cause dental plaque. Meanwhile, skin preparations containing green tea - from deodorants to creams - are starting to appear on the market.
