Dear Readers,
It is a pleasure to bring forth the first
edition of the AIHM- ESSAYER by the
hospitality students for our readers. The
Magazine comes as a vision of the
esteemed Management of Amrapali Group
of Institutes, Haldwani that trust the sense
of creativity embedded in every individual.
The various aspects of Hospitality that
students learn as they transform into
Professionals in a highly educative
environment have been carefully bonded
here. It opens its doors as thoughts from
the window of inquisitiveness to a world
of welcoming, serving, attending and
delighting through various articles. The
integrity lies in expression through simple
food for thought, lexis of fruitful
participation in events, articulating poems,
randomized thoughts, riddles and jokes.
The efficiency of the students’ team
emerges out as writers, photography team,
editors and news collectors all culminated
through the efficient team of designers to
store some experiences. Tread softly into
the work as it reveals many interviews as
opinions for the reader’s judgment.
The day without thanks and reverence
remains null and void. Special thanks are

Once you step into the world of Professional Education you have a dream to live. Learning
plays an important role to shape that dream into reality. Learning is not just limited to what you
are taught in class rooms or trained within Practical Labs but it goes beyond this in the form of
participation in co-curricular and extracurricular activities.
I am confident that this magazine ‘Essayer’ will provide the students a platform where they
can showcase their writing, designing, editing and coordination abilities that will sharpen their
thought process.
The youth of this generation as per the psychological researches are facing many challenges
such as deviant behaviour, short temperament, prone to adopting shortcuts, drug addiction,
issues pertaining to attitude etc. and the only solution to these is involvement of students in
activities of positive development and for this magazines and other developmental activities
are certainly a step ahead.

years of academic excellence; the students of the Faculty of Hospitality Management, Amrapali
Institute of Hotel Management are coming up with the annual students’ magazine, ‘Essayer’. I
congratulate Dr Savita Upreti and her team for bringing out the creativity and the hidden
literary intellect of the students.
Faculty of Hospitality Management has taken every possible step for the development of
students. It has always ensured that the best of knowledge and skills can be delivered with
contribution from all and that is the reason of it being successful in building the right character

Explore the new things by visiting different locations and enjoy a vista of activities. This
concept is growing very fast in India. This is the best opportunity to generate maximum
revenue from a particular location. A lot of local people at different locations are coming
forward with different facilities and activities for the tourist to promote tourism in
Uttarakhand.
The lofty mountains, exotic wildlife and
numerous temples define the State of Uttarakhand
as Devbhomi and it needs no more introductions
when it comes to tourism.
Tourism can be the key industry of Uttarakhand
as the State Tourism is considered to be an
important vehicle for its economic and social
development. Adventure and religious tourism
play a major role with the Corbett National Park
at Ramnagar and the beautiful hill stations like
Nainital, Almora, Mussoorie, Kausani and
Ranikhet being most visited tourist destinations of
Uttarakhand. Other places of tourist interest include the Valley of Flowers along with Nanda
Devi National Park known as the UNESCO World Heritage Site. Tourism Ministry of
Uttarakhand is also gearing up with promoting Eco-Tourism, Spiritual Tourism and Cultural
Tourism.
EXPERIENTIAL TOURISM
Now a days, travellers want to be a part of something unique; they want some extra ordinary
experience which will be completely different from what they have already experienced.
Tourists want to be a part of a rich cultural heritage experience of a destination. They want to
visit recently recognised tourism destinations and explore them.
Travelling in vacation does not mean just to enjoy the luxury of a 5 Star Hotel or to spend the
vacation with family or friends. It extends to visiting places emerging through involvement in

various activities and creating personal emotional memories that will stay life-long.
Exploring the unseen places is the top most priority of travellers. They want to visit the
places where they can get more personalised experience. There is a multiple choice in
experiential tourism out of which there are the few popular trends booming in Uttarakhand.
ADVENTURE TOURISM
It is a type of tourism, where the travellers explore their physical as well as mental strength.
Rafting, mountaineering, bungee jumping, trekking and rock climbing are a few examples of
adventure tourism.
Adventure tourism activity includes trekking on difficult terrains like Vasuki Tal Trek, Panch
Kedar Trek, Gangotri- Kedarnath Trek, Sunderdhunga, Pindari, and Kafni Glacier Trek.
Skiing has taken a front foot on important skiing areas like Auli, Mundali, Bugyal and
Munsiyari. Water Sports destinations are Nainital Lake Paradise, Bhimtal, Naukuchiatal and
White-Water rafting experiences are offered at Ganga River and the Saryu River is famous
for rafting and paragliding. Government and semi-government organizations are supporting
the locals to produce and provide facility to the tourist so that they may carry ever lasting
memory of the place and it will help to generate more income and revenue.
VILLAGE TOURISM
The State government is also involved in promoting and engaging people in village tourism
projects. We know that most of the population of Uttarakhand resides in village so to boost
the economy and to stop migration from village; the idea of Village Tourism is the best.
Urbanisation has led to a hectic life such that during vacations people want to relax and spend
some quality time with their family and friends. Village tourism offers the opportunity to
involve in activities like ploughing, crop cutting, bullock cart riding, feeding animals, milking
cow, planting trees and along with this they can enjoy local food and can stay in village huts.
They get personalised experience and the thrill of a new experience that they are otherwise
devoid of in their daily life is beyond expression.
UTTARAKHAND TOURISM: A PROMISING PROSPECT
Tourism is one field in Uttarakhand where there is no end to development. Uttarakhand is
well known in the field of religious tourism through Haridwar, Char Dham Yatra, Hemkund
Sahib and in the field of Wildlife Tourism, Eco Tourism, Cultural Tourism and now even
Adventure Tourism and Village Tourism is spreading its roots in Uttarakhand and will
definitely contribute positively in the development of Tourism Industry in the coming years.
Being an important tourist attraction, all that Uttarakhand needs is a little more promotion
through awareness among the local community for good infrastructure development in order
to boost the economy of the State and the Nation.

Mr Yusuf Yamin, the HR Manager at Taj Hotel Resorts and Palaces, Corbett National Park,
Ramnagar, Nainital, Uttarakhand, possesses an expertise in designing and implementing
training programs. He has initiated several specialized training classes in communication
skills and has maintained cordial relations with various
colleges where he visits to motivate students and recruit
them as trainees and employees.
It has been a pleasure to have Mr. Yusuf Yamin
interacting with the students of AIHM, Haldwani. The
year 2019 was immensely blessed with his presence when
he gave a session on Women’s Participation in
Hospitality Sector.

raise the level of motivation, standard of living and self respect of women’.

diversity in which he
suggested that more and
more ladies should be
encouraged to join the
hospitality sector in order
to help them make a
better mark in the
Corporate World.
Mr Yusuf Yamin was
concerned about the
smaller number of girls
and ladies in the Hotel
Industry as compared to
other sectors. He spoke
about this concern and
encouraged the students
to reach out to the World
of Women and encourage
them to join the
Hospitality Sector.
During the session, he
suggested that more girls
and their parents must be
reached to encourage
them to join the
hospitality course.
Later on, he questioned
the students as to why
some parents do not allow
promoting education
among the girls? The
answers from students
were due to the belief of
the society, insecurity and
fear of harassment.
When asked, “Why
should women and girls
come out to work”? Mr
Yusuf said, “All the girl
students should be
encouraged to come
forward and work for the
betterment of their
personality, knowledge

Not a tangible thing but an attitude that has been engrained in Southerners
forever!
The Term Southern Hospitality is a phrase used to
describe the stereotypes of residents of South
United States that have left a memorable culture of
warmth and sweetness with which they are known
to welcome their guests. Southern Hospitality is
thus the mark of exceptionally good hospitality.
The Southerners, initially planters, were known to
welcome strangers with great love and compassion
and it extended to lavish treatment to Guests as
‘Strangers’. The Southerners never left a guest
without great hospitality.
HISTORY The concept of Southern Hospitality is taken from
the Antebellum Planters Class of South United
States. The Southern Planters were known to
entertain their guests very lavishly as a religious
practice. It is synonym to ‘Atithi Devo Bhava’
concept in India. The early evidence of Southern
Hospitality can be seen as back as 1835 when Jacob
Abbott attributed the poor quality of taverns there
to the lack of need as Southerners fulfilled the needs of the travellers. (Source Wikipedia)

It is a feeling of being sincerely welcomed as a guest or as a long-lost friend. It is a way of
life that makes people feel as warm as the climate in the South.
Whenever a gentleman lands in the southern region he is left with immense memories of the
best hospitality ever. Food forms the main feature of hospitality as Southern Cuisine. The
welcome gesture to new neighbours is a cake that is taken to his door step. Churches in the
Southern are equipped with large commercial kitchens. ‘Fellowship Suppers’ are covered
dish that everyone attending the Church brings with him. Any calamity as a death, illness and
even ill fate are met jointly by the community with neighbours providing food to the
aggrieved family.
Southern Hospitality is also the easiness in speaking with total strangers. It is a unique
friendliness encompassing the whole way of life in the Deep South. This is a message to the
aspiring Hoteliers to love and serve. It is hospitality in its true essence. This is what I feel
about Southern Hospitality, a memory of which shall always remain in my heart.

I am Rajan Kumar, a BHMCT 8thSemester student. This interview was with Chef Diwakar
Balodi who is currently Executive Chef at ANANDA IN THE HIMALAYAS, A
DESTINATION SPA situated in Rishikesh.
Sir, It is a pleasure to know that you are from Ananda, Rishikesh. How is the tourism
industry doing over there?
The esteemed Chef replies-Rishikesh is a world-
famous tourist centre of Uttarakhand that
witness’s tremendous tourist influx throughout
the year. Many Ashrams dominate the area and it
is also known World Wide as the ‘Yoga Capital’
of the World. Tourists visit here for holy purpose
and for yoga, ayurvedic medicines and adventure
activities like river rafting, camping and
paragliding.
Sir, when are you happiest at your work?
Mr Diwakar Balodi is a cheerful personality and was obviously out with the prompt- ‘All
day’. He further added that he is happier when a customer stays at their Hotel.
“My happiness increases many folds when a guest appreciates our services and food and
leaves with a positive feedback”.
Sir, please guide us on new trends in food production in the Industry?
Now is the era of food globalization, people travel to eat. All the students who are interested
in Food Production Department should know the new trends like oil free cooking, fusion
techniques, and Sufi food that is simple with non-spicy preparations.

Sir, please share some knowledge on food safety?
Food safety refers to the conditions and practices that preserve the quality of food to prevent
it from contamination and food-borne illnesses. In hotels, hygiene is maintained by following
FIFO LIFO, HACCP rules. Food products consumed must be checked for FSSAI licence.
Sir, as you have been a part of many interviews
and selection drives, can you please give us
some tips on interview preparations?
For interview preparation and campus interview,
knowledge and skills is the key to success. As far
as selection in jobs is concerned, one should be
clear with the subject basics, possess good
general knowledge, work on the skills and gain
the core area knowledge as much as one can.
Sir, what are your views on the thought that National Union Hospitality Industry of India
wants 8- hours’ shift in this sector?
If the 8-hours’ shift rule will come into effect in Hospitality Sector in India, it will surely
increase productivity, sort out various health issues and create more job opportunities. It will
help the hoteliers spend some quality time with their family.
He laughed and exclaimed, “We are no less than Soldiers.”
The motivation, information and above all the presence of a cheerful personality as Chef
Diwakar Balodi was a blessing in disguise for me. I still cherish the memory.

Technology has a great influence in our world and we all know how much technology is
useful for us. Technology has affected the Tourism Industry as well. Technology has been
beneficial in reducing the cost, in enhancing operational efficiency and in providing
improved services and better customer experiences. Both customer and business can benefit
from improved communication, reservation and guest service system. Smart technology is
reshaping the hotel industry and hotels need to prioritize investment in next generation
technology. Some major technology is emerging as beneficial and astounding to the
Hospitality Sector. Among these are Recognition Technology, Robots, Chat bots and
Artificial Intelligence, Internet of Things, Big Data, Virtual Reality and Augmented Reality.
Recognition technology has been used in
Hotel Marriott in China for face
recognition. It is exciting to know that
recognition technology is one of the most
amazing recognition instruments in
Industry. Biometric is a seamless
procedure that can benefit the hotel
procedures and customer purchases.
The emergence of Robots in Hospitality is
another exciting tech trend. The Hilton
Robot Concierge- Connie that uses speech
recognition and AI to respond to the guest
queries and learn from the interaction is a
marvel of technology. Henn-na Hotel in
Japan has drawn headlines for being the
World’s first Robot-Staffed Hotel with
robots being used as front desk staff,
customer information tools and even as
luggage porters.
Chat Bots and Artificial Intelligence is
another great contribution of technology to
satisfy customers. Chat bots enhance
customer satisfaction experience to
increased platform of assess via various
digital devices that today’s generation
apprehends. Artificial intelligence assists
the arriving hotel guests, helping in
altering the guest experience. Google
Voice and Amazon Alexa offer interesting
ways that guests can search for help or
control in room experiences. Artificial
Intelligence has the potential to greatly
impact our ability to understand and
personalise the guest experience.

is the IoT or Internet of Things that helps
in connecting everyday devices and
appliances to the internet thereby
converting them into Smart Devices. An
example of this are the Internet enabled
Thermostats that are
installed in the rooms
that can automatically
adjust room
temperature at check in
and check-out time.
The same technique is
deployable to the
lightning devices
helping in energy
conservation.
Data Collection has
been the main stay of
the day. A large
number of data can
help in business to
identify trends that can
be used for Revenue
Management purpose. It can be used by
travel agents to provide more intelligent
destination packages to different age
groups.
Virtual reality is of recent, the most talked
about technology. The 360-degree virtual
tours are used by various hotels to help the
guests take a virtual tour of the hotel and
destination. This enhances the guest
experience.
Augmented reality can
be relied on to do
booking of more travel
shoppers looking for
unique experiences. It
has exploded the way
similar to virtual
reality but differs from
it as it enhances the
real-world
environment through
information overlays.
Hotels are providing
AR compatible wall
map where guest can
point their phones at
the wall map and can
find information about
specific locations.
Thus, technology has been a great boon to
the Hospitality Industry and is coming
forth as a challenge to the young minds.

My name is
Rohit Kumar and I am a student of BHM-KU 8th Semester.
It was a great moment of pride for me as I was given a chance to take an
Interview of Mr. Raghvendra Pratap Singh, Associate Director of Sales,
Intercontinental Hotel Groups, Gurugram.
The joy was increased manifolds as I came to know that Sir is an
alumnus of AIHM, Haldwani.
Sir believes that Hospitality is not just an industry, it is a culture
and an hotelier is a title with huge responsibilities. The most
wonderful afternoon that I will always cherish as a college
student was that spent in the company of Mr. Raghvendra Pratap
Singh and Prof Dr SK Singh during this interview session. Let’s
see what Mr. Raghvendra Pratap Singh shared with us…….
Sir, how do you define Hospitality?
Sir answered, “Hospitality is a culture and Hotelier is not merely a title, they are a complete
Industry.”
Sir, you as a student and alumnus are aware of the hard strings hit before interview time.
Sir, what will you suggest us on how we students should prepare for our short term and
long-term goal?
Sir was empathetic and said, “See, when we journey, we pass through different stages.
These steps are the short-term goal and the final distance is the long-term goal.”
Sir, who is your Icon (Ideal)?
He smiled and looked at COO Sir and complemented, “Professor Dr. Shailendra Kumar
Singh.”

Sir, will you give us the pleasure of knowing how you describe your road to success?
“It is not a particular road. It is every point of positive changes that you find in your life.”
Please share with us your thoughts related to the prospects of Uttarakhand as a Tourist
State.
“Uttarakhand is one of the emerging states of India and under the current scenario it is also
emerging as a Medical Tourism destination. I think the stakes are low and prospects are
high.”
I really appreciate the patience of Mr. Raghvendra Pratap Singh as he kept on answering my
inquisitiveness with patience. So, I continued to a different direction and requested him to
share one failure story with us and how he overcame it.
I was encouraged through his motivational words as he said, “There is no word like
failure. Every day is a new day for every person. If we start every day afresh as a NEW DAY
and want to achieve something then we will feel that there is no failure and then we will
really enjoy our life.”
I wish the talk could have been never ending but all things must pause so here I am with
the last bit of question with our alumnus. “Sir, I thank you for inspiring us all the way.
Last but not least I wish to get some more motivation for our growth and development.”
Appreciably great was Sir’s remark as he told me that, “Motivation is when we surrender
ourselves to our duty and then we make it a motivational instrument for us.”
That’s more than all friends!!!

It cries alone when it needs something for

Sometimes childish, sometimes mature,
the heart wants what it wants.
Full of emotions, full of drama
Whenever alone makes me remember my
mama
Stop-Stop! The World won’t run
according to you.

Orientation Program (August 2019)
At the beginning of every semester the fresher’s get
a taste of what institute life will be like. The
orientation program at Amrapali Institute of Hotel
Management, Haldwani helps to introduce the
students to the various programs and events at
AIHM.
The students undergo a week long orientation
program through various interactive sessions. The
Head of the Institute, Head of Departments and
Faculty along with the senior students help the
fresher’s understand the entire program.
There are even sessions delivered by the famous personalities and hoteliers to make the
students aware of the avenues that will help them climb the
ladder of life.
Students then understand that there are four core departments in
hospitality and various ancillary departments.
The new students are told the importance of hygiene and
grooming. They are even told about the events and activities at
AIHM.
They are made aware of the
surroundings, the campus, its facility
and faculty. The various kitchens,
restaurants and housekeeping labs and activities are introduced to the
students. The students are lead step by step to the code of conduct,
disciplinary actions and other requisites.
The motivating speeches and activities are a part of the whole week
when students get familiarized with every nook and corner and
requirements of AIHM and then they are a part of AIHM.

International Chef Day
International Chef’s Day, 20th October, 2019 at AIHM was a feast to the children from
‘Himalaya Nav Jivan Sansthan-orphanage’ with a lunch hosted
in their honour. The owner Mrs. Bindu lukos was accompanied
by 13 students.
Mrs. Lukos has been running the orphanage for the last 18 years
with her husband. They take care of the kids by providing them
with basic necessities of life and good education. Some of the

kids are studying in very renowned schools like Birla, Queens and St. Theresa.
Mrs. Lukos’s message for youth: ‘All of us are privileged to be provided with good life, let’s
serve others.’
So, the Chef Day this year was a wonderful experience with an inspiring message as learning
for all of us. Over all it was an overwhelming feeling to see those kids smiling.

nuts from brain. A total of 4 rounds were conducted for the same.
The first round was question and answer, the second was logo identification, the third round
was picture round and the fourth round was a
rapid-fire round.
All the teams were very excited and curious for
the competition.

LIFE MOVES ON AMONG THRILLS AND
TRILLS AT AIHM.
Diwali Decoration
Diwali is the festival of lights. It is celebrated
every year to commemorate the advent of lord
Rama back to Ayodhya. As per the legend, on
this day the people of Ayodhya decorated the
whole place and lightened it with oil lamps or
diyas as they welcomed lord Ram with Sita mata along with
Lakshman.
This Diwali saw decorations at AIHM with decorative
lights, traditional rangoli and exciting torans made by the students of
AIHM. The lobby of AIHM was decorated beautifully by faculty
members and students. Many vibrantly colour pots adorned the lobby.

The artifacts like “Dhanush” of lord Rama and the “Gada” of Hanuman ji made by students
were also placed in the lobby and at the corridor. The painting of the ten heads of Ravana was
meaningfully stuck on the front wall which was visible to everybody who entered from the
main door. The pictures of Lord Rama and Sita along with Lakshman also glorified the walls
of AIHM.
It was nothing less than a good event management display for the students and surprisingly
by the students. Thus, an artistic and decorative festival of lights was celebrated at AIHM.

For good ideas and true innovation, you need human interaction,
conflict, argument and debate.
On the occasion of “Tourism Day” our institute organized a debate
competition on the topic ‘Tourism a bright future for jobs or not?’
Many students participated in it with full enthusiasm. A good for and
against discussion predominated the show. Of course, only a few
make to the grand position but all learn this way.
At last Prof Dr. Shailendra Kumar Singh our esteemed COO Sir gave
a motivation speech on how we can boost our morale through debates.

Late Smt. Kamla Dhingra memorial meet (KDMM) was
successfully organized on 10th and 12th October 2019.It is
organized every year since 2002 in the fond memory of Late
Smt. Kamla Dhingra, beloved mother of Dr. Sanjay
Dhingra, CEO Amrapali Group of Institutes and has gained
immense popularity over the years. It is now one of the most
awaited events among the student community. Many
students participate in this event and they wait very
enthusiastically for it. This year students from different
schools took part in a lot of competitions like quiz
competition, dance competition and skit competition.

A big tray with beautifully laid resins awaited the
presence of the esteemed Management along with
the faculty and students to mix the ingredients like
black currents, cherries, fruits and soak it in rum,
wine and whiskey.
Faculty and students wearing gloves and chef
caps made it a wonderful gathering, mixing the
ingredients to add flavour and taste of Christmas
to the cake yet to be prepared.
It was a wonderful learning session for the students. Yes!!! Christmas Santa arrived earlier to
facilitate enthusiasm.

“I participated in cooking competition that was held at
Banarsidas Chandiwala Institute in Delhi on 16th Sept.,
2019.” It was a national level competition. Around 20 to
22 colleges participated in the competition.
The level of competition was quite high. “I had to work
on Asian Cuisine and for that I prepared a Vietnamese
Menu that was a three-course meal. Taste wise my
preparation was considered delicious and I gained good
experience and exposure but I have lots to learn.”

Holi Darbar
Holi Darbar, a pre Holi enjoyment at AIHM under the coordination of Chef Mohit Arya was
a Retro theme-based event with innumerable performances as dances and songs and a skit on
Holi.
The Holi Fest at Amrapali Group of Institutes is
called Holi Darbar. The whole place was decorated
with paper cuttings like that in village marriages.
There was a swing with the idol of Radha Krishna.
There were posters of Bollywood hero heroines and
students also enacted them in-front of the
Management and faculty.
The Management and Faculty also participated and
contributed by blessing the team and sang songs or
said a few words. The Holi songs from Uttarakhand and dances elated the spirit of the show.
There were refreshments as chatapati chat, pau bhaji, gol gappa and pan served by the
students as part of the learning session.
It was a memorable day for all.

Annual Function at AGI
Carnival and Spandan are the two functions to celebrate the
inception of Amrapali Group of Institutes, Haldwani. The Chief
Guest this year was Sri Bansidhar Bhagat ji, the Honorable
MLA from Kaladhungi and BJP President of Uttarakhand.
Carnival was organized on the first
day with a number of stalls in the
AGI ground. There were food
stalls, games stalls and games zones, soft toys and daily
handicraft things and many gift items
stalls.
They were either managed by students
or faculty or in association with certain business enterprises.
Students’ dances were witnessed with friends in the request
made for songs and the whole day was spent in good
company.
Spandan was the second day of the annual function. It is a
musical afternoon that turns into a memorable musical night.

Chief Guest followed by a number of dance drama, dances
and musical shows among which the Hanuman Chalisa
dance drama gained immense popularity.

The Institute song was also sung with great enthusiasm. Students as performers and students
as spectators was a wonderful sight and all enjoyed the show thoroughly. The famous singers
like Mounty Hunter and Aasis Kaur sang to the heart’s content.
Many meritorious students were also awarded during the function.
There were numerous rewards and scholarship awarded to the
students and service recognition given to the faculty and staff that
has been serving the institute for the past twenty years.
Thus the 21st Year of inception of Amrapali Group of Institutes was celebrated with gaiety by
everyone.

A session on ‘Mobile phones-Habits or
Addiction?’ was conducted by Mr. Ganesh,
‘Media personal of Dainik Jagran.’
During the session Mr Ganesh told the
students about the mobile being both an
addiction and a habit. The session was
very interesting and other department
students were also invited to attend the
session.
Mr. Ganesh told the students about the
advantage of mobile phones and how it
helps us in getting education, how it is

used for reference and for research. With
the help of the mobile phones we can do
our work very easily.
Apart from this he told us about its
disadvantages also. Today’s generation is
misusing the mobile phone. They use it as
a game to waste their time by playing
games on mobile. After the enlightening
speech the Dean Academics also
encouraged the students to pay heed to all
they had learned that day. It was indeed a
fruitful session.
Another good introduction in AGI is the
ASCAB. Its coordinator for AIHM, Dr
Savita Pande (Upreti ) has welcomed
students’ creativity through various
activities of Decoration Club and Future

Giddha is a folk dance of Punjab that is
performed only by ladies. This is a female
counterpart of Bhangra dance. It is
performed during festive season and social
occasions especially during the sowing and
reaping of harvest.
The legend carries that it originated from
the ancient ring dance that is predominant in
Punjab. It was a way to show joy and
happiness during the harvest season.
Costumes, bright coloured Salwar kameez
and dupatta with heavy jewellery teamed up
with heavy makeup symbolises Giddha.
Some more adornments that add shine to
Giddha are Tikka on the forehead, Jhumkas,
Raani Haar, payal, bangles and the nose
ring. All this amidst fast music and
traditional Giddha songs, rhythmic beats
and clapping give life to the ceremonious
occasions.
A hospitality student must be aware of the
various dance forms of the region. Today’s
world is of remix. Food, service and entertainment are the name of the game. Theme events,
parties and marriages have started making a mark in the society. The perfect blend that
Giddha gives to a Punjabi wedding cannot be ignored. The popularity is not restricted to
Punjab but even extends to India and abroad. Places such as London, Edmonton, Los
Angeles, San Francisco and Vancouver are definitely not alien to this folk dance.
A tradition, a practice, a piece of entertainment and now an event for hoteliers to manage,
Giddha leaves a joyous mark in every heart.

‘Lock your windows and bolt the door the spooky season is here once more’
Halloween is a time of treating and dressing up in scary and spooky costumes. It’s quite a
tricky adventure. Halloween is celebrated every year on the 31st of October. It is the first day
of All Hallowtide that is celebrated from 31st October to 2nd November. It is considered as the
time to remember the ones who have left for the heavenly abode. The tradition of Halloween
is traced back to the ancient Celtic harvest festival and also to the Christian tradition to
remember the dead Saints. Halloween is fun time to celebrate with family and friends. On the
day of Halloween people attend Halloween costume parties, place Jack O’ lanterns around
their house, and visit haunted attractions and share scary stories with each other. Children
dressed in scary costumes go around the neighbourhood to play tricks on each other and to
get treats and also to collect candies.
A large variety of chocolates and candies are prepared during Halloween. Some mouth-
watering food preparations include caramel apples, bonfire toffee, barmbrack and Halloween
chocolates and cakes. The sweet and scary feelings of Halloween are thus passed from
generation to generation.

Polishing is the process of creating a smooth and shiny surface by rubbing it or using a
chemical, leaving a significant spectacular reflection.
Floor polishing is a part of the many endless errands carried out by the Hospitality
Professionals. It is an exclusive domain of the Housekeeping Department of the Hotel
Industry. The neatness concept and the welcome sight are the first benefit of housekeeping
personals and besides that it has several other benefits.
❖ It increases the strength and durability of the floor
❖ Increases reflection of light
❖ Provides a clean and non-slippery surface
❖ It’s easy to install and maintains the surface
❖ It adds to the beauty and aesthetic value of the hotel
The spick and span areas like corridors,
rooms and other hotel areas that a guest
loves to step on involves a
process beyond his
comprehension. It is an
elaborate process of sweeping
and polishing that enhances the
look of the Hotel.
For polishing the floor, we
require mechanical equipments.
We also need floor cleaning
chemicals, water and diamond
grinder, a rotating metal abrasive fad.The
time is defined by the nature and size of
the floor.
In a standard hotel room, the minimum
time required to finish the floor is
approximately 45 minutes.
The floor needs to be wet
before it is polished. Floor
should be polished from corner
towards the exit. The acid is
applied with large diamond
grinder and later removed with
a special cleaner. The entire
process is then repeated until
the floor is finally polished and
appears as new.
Steps involved in polishing the floor
→ Arrange all the equipments like broom, wringer trolley, scrubbing and polishing machine,
dry mop, wet mop and dust pan.
→ Start surfing from the forest towards the exit.
→ Then use dry mop to clean the floor.

→ Then scrub the floor with the help of
scrubbing machine. A 200 - 400
number pad is used in the scrubbing
process.
→ After that we use the wiper/ floor
squeezer to extract water from the
floor and the wet floor is then dried.
→ The polishing machines are used to
polish the floor. Polishing powder is
mixed with water and applied on the
floor. A 1500 number pad is used in
the polishing process.
→ Then we wash the cleaning
equipment properly and keep it back
in the housekeeping Lab or store.

ORIGIN OF HOTEL INDUSTRY
A fire at the Hearth, a warm meal and a roof above the head was
all one needed and then the story began…
Hotels are a part of a huge industry known by the name of
Hospitality Sector, a part of Tourism Industry. It is
surprising that a Hotel that is an assemblage of small rooms
for a short stay have taken serious considerations with time.
My inquisitiveness in the Hotel Property began as a student
and in the following lines I supplement a list of the Hotels
that fascinate me.
Do you know?
The First Hotel Built in USA was City Hotel in New York in 1794
Tremont House is a first-class hotel situated in Boston that was built in 1829.
In 1839 first Railway Hotel was established in London and Birmingham.
One of the best Hotels was Bristol (1880)
Many other elegant Hotels like Waldorf Astoria at New York, Denver Brown Palace and San
Francisco Palace came up after that.
Development of Hotels in India:
Musafir Khana and Sarais were developed for guests stay during the Mughal period. Sarais
started inns and western style hotels with the advent of the British in the important cities like
Calcutta (Kolkata) and Bombay.

Rai Bahadur MS Oberoi started his hotel
career as a clerk in 1922 at Faletti’s Cecil
Hotel in Shimla.
Later Mr Ernest Clarke sold his share to
Mr. M S Oberoi on August 14, 1934 and
became the owner of Clarke’s Hotel in
Shimla and Delhi.
He established Oberoi Hotel ltd in 1946.
Later in 1949 he established the East India
Hotel ltd in Calcutta.
The Hotel Industry in India is vast and
hoteliers need to just look around for the

Bar is an establishment that serves drinks, both alcoholic beverages such as beer, liquor, and
a variety of cocktails and non-alcoholic mock tails for consumption on the premises. The
constant transformation in bar trends has made the Indian Hotel Industry gain a level of
acceptance throughout the world. With this growth we have seen the emergence of certain
trends that were very essential for rejuvenation of the Bar Sector for a long time. Some of the
following trends have been now introduced and commonly practiced by the Bar owners:-
• Crafts Spirits is becoming more popular – The craft
spirit market has been growing by 19% per year since
2015 and is forecasted to grow by 15 – 20% per year
through 2022. Craft spirits are produced through
licensed distillery that must bottle the product in
house.
• Concept of Tapas Bar – Tapas Bar or small plate
concept has been initiated in major cities of India. The
Bar is getting clubbed with food and every individual
is proposed to get a bit size food with variety.
Example – Pintxo Tapas Bar, Gurugram.
• Adding a cocktail column in Culinary Menu – As
mixology is becoming popular; mixologists are getting
creative and preparing mixed drinks as a

form of art and are viewing alcoholic cocktails as culinary menu items. More attention
is being paid to food and drink pairing.
• Recreating your own cocktails – These days people travel and explore a lot and hence
they are also moving with an ongoing trend. Instead of opting for a prepared cocktail,
they like to make their own cocktails and want to know the techniques behind the
preparation.
• Wines are creating buzz – Wines are coming in strong in bar trends as people are
getting educated about types of wines and the nature of grapes. Some Indian wines are
even being recommended at the international level.
• Innovative cocktails are a major hit – Drinks that are pleasing to the eye are just as
important as aesthetic food plating. Hence bartenders are using a lot more innovation
by using fresh herb, flowers as garnish and even hints of flavour to seasonal drinks.
Hence as the competition in the market is increasing
the restaurateurs are focusing on unique bar
offerings so that their name could remain in the mind
of their guests. Cocktails are now not restricted to
the formal bars; they are now being originally
created to stand out and complement the food menu.

everyone. It’s rightly said that ‘Conquering the mountain is sweet, but the real satisfaction

When a school student makes a transit to the college life, he experiences many new things. The
student chooses courses according to his interest. One option among the many is registering in
a Hotel Management Course. Since this is a professional course the student wants to explore
job options before completing the course. From the first day of college, he listens to words such
as grooming, good communication skills, pleasant personality, and many other qualities that
are essential to become a good professional. The first year he becomes aware of the hospitality
industry and its requirements and subsequently gains knowledge related to the four core
departments. In the fourth semester the student is sent to a hotel for six months to undergo
industrial training. Industrial training is the best time for a student to learn how the hotel
industry works. Sometimes he faces long shifts. He learns about the current trends in the hotel
industry, working with new machines and systems. After completing the industrial training, he
learns about his field of interest. Industrial training proves to be better not only for his
professional career, but also for his personal life. With his interest, he participates in various
activities organized in his college along with his courses. After cracking job interviews, he tries
to shape his life towards a better future with the blessings of teachers. After completion of
education, many students work in hotels according to their interest. The Hotel Management
Course not only prepares a student for the hotel industry, but also opens many other related
options. It is the professional curriculum that prepares him to lead a good life. So, there are
many opportunities, we just need to focus on the best and grab it.

Amit Kala after his return from the industrial training.
Q- Please share your good moments during IT as a learner.
A- “All my experiences during Industrial Training were good as a learner. The staff was very
supportive and they gave me immense opportunity to come forward and nurture my skills”.
Q- “Tell us about the learning”?
A-“I worked for two months in restaurant to take a taste of F& B services in the real-life
environment. Usually I did night shifts but sometimes I worked during day time as well. It
was a new world alive and afresh each day.
Then I worked for two months in Housekeeping Department. We made rooms for the guest’s
comfort. I did all the work myself because I wanted to chisel my talent. I earned the trust of
my seniors. Then the remaining two months I worked in the Kitchen. It was something tough
and difficult.”

I TOO BELIEVE WHAT SIR SAYS: Kitchen is a tough
job!
Q- Oh! No, Now, what to do? Have you ever faced this situation?
R- “Yes, it usually happens especially while working in the restaurant as it’s the busiest all-
day round.
The morning hours were generally busy and we had to work our way out as a team. I tried to
concentrate and work with full vigor. I always kept a pen and note book with me and used to
write down the orders but they seemed to be never ending. Then I used to often say Oh No!
Now, what to do? Anyways, my seniors were very cooperative and supported me a lot so I
somehow managed to do the work”.
Training Experiences:
Training is a significant part of hotel management course. Through industrial exposure, we
came to know the reality of the life of an hotelier. Earlier when we were new in the college
and our seniors always said, ‘you will get to know how hard training is’, we used to think
they are trying to act smart and trying to de-motivate us.
Well there came a day in my life still registered as ‘15th June 2019’when I left the cozy
college niche for the industrial exposure program.
During the initial stage, I really enjoyed the work. As the days passed, training became
difficult but I never gave up and faced the challenges of training in Le Meridian Hotel where
I had joined as a trainee. They really provided new learning and helped us to understand the
Hotel Management Systems. This was the time where I really worked on myself and choose
Food Production as my area of interest to become a futuristic Chef. Training has developed
my personality and helped me understand the reality of life.
Last but not least I have a clearer vision of where lies the course of my life.
