Strawberries 6Strawberry flavoured oats 1 cupCashewnuts chopped tablespoonAlmonds chopped 1 tablespoonRefined flour (maida) 2 cups + 2 tablespoonsBaking powder 1 tablespoonEggs 4Sugar 1 cupExtra virgin olive oil 1 cupRose essence 7-8 drops

1. Preheat oven at 180° C. Grease a cake tin with a little oil and dust with a little flour..
2. Cut strawberries into small pieces and place in a bowl. Add cashewnuts, almonds and 2 tbsps refined flour and mix well.
3. Sieve together remaining refined flour and baking powder into another bowl.
4. Break eggs into a third bowl. Add sugar and whisk till fluffy. Add olive oil and rose essence and whisk well.
5. Add the sieved refined flour, oats, strawberries and nuts and mix well to avoid any lumps.
6. Pour into the cake tin and bake in the preheated oven for 30-35 minutes. Remove from oven, cool and turn the cake out of the tin. Cut into wedges. Transfer onto a serving plate and serve.
