I used to manage stations in western NSW almost thousand kilometers from here! I saw Aquaculture as the next big thing in farming. The bulk of the world’s protein is going to one-day come from aquaculture and the ocean.

Having an office out on the water is perfect! I am a one-man show, which means that I need to be really efficient by making use of new technology and techniques. The turning point in my farm’s success was converting my infrastructure to grow oysters using floating culture. It produces a consistently shaped clean oyster with fantastic meat to shell ratio and a sublime taste.

Marketing is a big focus for me going forward. I want to maximise the value of my product by offering premium quality oysters to our high-end domestic market, and exploring export opportunities. For me it’s so important that people realise a large oyster isn’t necessarily the best oyster!

I’ve gone from mustering cattle to surfing and I’m loving it!
