ALL ABOARD

We are also excited about our headliner in April, the ninth edition of the Singapore Yacht Show. For four electrifying days, the marina will come alive with the sleekest yachts and swankiest soirées as movers and shakers of the global yachting industry gather in one place. Following on the heels of a record-breaking show in 2018, this year’s blockbuster event will be bigger and better with more than 150 brands on display, and more yacht premieres than ever before. Explore our whimsical wonderland, and enjoy live demonstrations of the latest toys at the Floating Leisure Hub.

With more than 16,000 visitors expected, we have truly upped the ante this year with a line-up that will appeal to hobbyists and enthusiasts alike, as well as any bon vivant. The Princess F45 and Sunseeker 76 will be making their Asian debuts respectively. Other exceptional models include the Azimut G25M, Sanlorenzo SD126 and Riva 760, perfect for exploring Asia’s expansive cruising waters. Combining elegance and speed, these watercrafts set the benchmark for maritime innovation. With social, couple and family activities, there will be something for everyone.

Some old-fashioned things like fresh air, sunshine and boundless horizons are hard to beat. It is our privilege and honour to continue to bring you a true vision of the luxurious yachting lifestyle this Spring.

Teo Joo LengGeneral Manager

There’s something about springtime that awakens the spirit of adventure. Last month, we welcomed the Spring Festival together at our chic waterfront destination. Amidst a rousing Lion Dance

Performance and Chinese New Year Members’ Dinner, we strengthened our vision of fellowship, travel and maritime innovation.

As you know, at the Club, we consciously make it a point to keep most of our events small and intimate for effective networking. Chinese New Year Members’ Dinner is one of the few large-scale Member events. For our third annual dinner, we pulled out all the stops to indulge you in a gastronomic and visual treat.

Thank you for arriving in full force, and imbuing the party with your positive energy. The Club managers and I are immensely grateful for the opportunity to deepen our friendship. Your insightful feedback will also continue to inspire us for many years to come.

On 20 January, the Club held its fi rst-ever SB20 fun race for Members, with guidance from competitive sailors of the SB20 Asian Grand Slam and Asia Pacifi c Championships. The positive participation and feedback from Members encourages us to organise more of such events.

In the following weekend, ONE°15 Marina held the fourth edition of SB20 Asian Grand Slam and Asia Pacifi c Championships with a record-breaking 24 teams from nine countries. Following the success of the Asia Pacifi c championships, the Club is honoured to be awarded the hosting rights to the SB20 World Championships in 2021, where we will see close to 50 teams of professional sailors from all over the world come to Singapore to race. I look forward to more Members engaging in this event next year and in the World Championships in 2021.

It’s also time to set the ball rolling on the host of Spring activities we have planned. During the March school holidays, we will propel your little ones to seek out new adventures. Look forward to our Southern Island Expedition, which will intrigue your junior explorer with interesting outings and allow for some family time, as well as an exuberant pool party and swimming competition. Refer to pages 22 to 25.

WHAT’S ON

In an Instant: Polaroid at the Intersection of Art & TechnologyA long, long time ago (or so it now seems), before social media, smartphones and hashtags, there existed the Polaroid. Hard to believe now that the clunky hand-held camera was, in its heyday, considered to be highly sophisticated. But as this exhibition showcases, this primitive way of capturing a “moment” has in fact had a lasting impact on instant photography and our ability to

Happenings in March & April

capture and share ‘in an instant”. Over 220 iconic artefacts and artworks come together to highlight the popularity of the device and to call into question just how far we have really come from those snap-and-shake days. 10 Nov – 31 Mar, National Museum of Singapore. WHAT’S ON

The Phantom of the OperaFor a show that has been running for over 30 years, The Phantom of the Opera still draws in the crowds, and this April, it returns in all its gut-wrenching glory to Singapore. The winner of over 70 major theatre awards, including seven Tony’s and four Olivier Awards, the show is the longest running in the world having captivated thousands since it was fi rst performed in London in 1986. Telling the tale of a reclusive musical genius who lives in the shadows of the Paris Opera House, the show features some of Andrew Lloyd Webber’s most beautiful and famous songs including “Music of the Night” and “Think of Me”. A spellbinding triumph that continues to enchant and delight. 24 A pr – 26 May, Sands Theatre, Marina Bay Sands. Visit sistic.com.sg for tickets

Singapore Yacht ShowAsia’s most prestigious yacht show returns to Singapore for its ninth consecutive year. Featuring debuting superyachts, boats, watercrafts and toys, the four-day marine extravaganza is an occasion not to be missed. By day, the Floating Leisure Hub will showcase the latest gadgets—from jetskis to paddle boards—while by night, the entire marina will come alive as one giant boat party. This year is set to attract a record-breaking number of over 16,000 visitors, so yacht show enthusiasts are advised to plan ahead in order to enjoy the fair to its fullest. 11 – 14 Apr, ONEº15 Marina Sentosa Cove. HSBC Singapore Rugby 7sThe biggest celebration of Rugby in South-East Asia, the HSBC Singapore Rugby 7s is back! During one fun-packed weekend, Singapore’s National Stadium will come alive with the sounds of jubilant fans as they cheer on their favourite team. Forty-fi ve matches will be played out across the two-day event, in the traditional format of seven players a side hammering it out on the pitch for seven minutes a side. While it is without doubt a must-watch for rugby enthusiasts, the HSBC Singapore Rugby 7s is also a fun day out for the whole family, with live entertainment, community events and food from participating Michelin-starred restaurants. 13 & 14 Apr, National Stadium. Minimalism: Space.Light.Object.This exhibition, which is a maiden collaboration between the National Gallery and ArtScience Museum tackles the concept of minimalism and its evolution over the years. Over 150 curated artworks spread across both the venues explore how this art movement continues to inform across all art genres, from painting to music—there’s even a Sound Room at the ArtScience Museum to illustrate this point. t One of the highlights of the international sailing calendar, the Singapore Yacht Show is set to dazzle again this April.

Now in its ninth year, the Singapore Yacht Show is set to return in a matter of weeks, bringing the international boating community back to our shores. Playing out

across four fun-fi lled days, the show will combine the biggest number of superyachts, watercrafts and boats in the region —this year’s display is set to break even last year’s records with over 16,000 visitors expected to fl ock to the dock.

Appealing to industry professionals, amateur sailors and boating enthusiasts alike, Asia’s leading yacht and luxury show is a dazzling display of prow prowess as well as an action-packed event, with all of the fun fair taking place on ONE°15 Marina’s very own doorstep. It boasts an elite list of past attendees including football bigwigs Ryan Giggs and Gary Neville; Crown prince of Kelantan, Malaysia, Tengku Muhammad Faiz Petra; MasterChef Asia judge Audra Morrice; Singapore Minister of Communications and Information, S. Iswaran; Nobel laureate José Manuel Ramos-Horta; and local artistes Jack Neo, Darren Tan, Jamie Yeo, Denise Tan, Mike Kasem and Phyllis Quek.

Beginning with the customary SYS Gala Evening, held at the Capitol Theatre this year on 10 April, the occasion offers visitors a chance to get up close to some of the world’s most impressive vessels as well as to discover the very latest in marine leisure equipment.

During the show, the more intrepid visitor can trial the new generation of toys at the Floating Leisure Hub, a fl oating village located right in the centre of the action. From jet-skis to paddle boards to diving equipment, last year’s offering included something for everyone and this year, it is set to do the same again.

Those on land meanwhile will no doubt enjoy the plethora of activities taking place along the quayside, both day and night, that will include prize draws, live demonstrations and plenty of retail opportunities. There will also be delectable gourmet options to ensure the party lasts well into the night.

And of course, boating afi cionados will certainly get their fi x of vessel gazing —this year’s confi rmed fl oating fantasies include the Azimut G25M, which was fi rst unveiled last September during the Cannes Yachting Festival, as well as the Princess F45 and the Sanlorenzo SD126 that will both be making their Asian debuts during the Singapore Yacht Show. With her high performance Carbon Tech superstructure and cutting edge interior design, the Azimut G25M is one of the big draws of the event, alongside the trio of Sunseekers that will be on display including the Sunseeker 76, previously unseen in the region.

This Spring, there really is no need to set sail to discover a world of leisure and pleasure.

Sanlorenzo SD 126’s luxurious interiors are a customised blend

CLUB BUZZ/PROFILE (MEMBER)

Wong Min Qi fell in love with sailing fi ve years ago when her father, TC Wong, bought a boat in September 2013—a 40-foot Lagoon 400S2 sailing

catamaran he named Ximula. Min Qi was working as a marketing executive at the time, but resigned from her job to join her family on a month-long sailing trip to Phuket.

Several months later, in June 2014, the 29-year-old marketing graduate from National University of Singapore started Ximula Sail with her father, offering yacht charter services. The business was born after their family and friends expressed interest in renting the Ximula for parties and events.

With her father spending a lot of time away sailing on his other boat, the Ximula II, Min Qi is now in charge of sales, marketing and business development. She works with a business partner who looks after operations, and they have a team comprising a captain and crew member to take care of maintenance and charters.

“Our vision is to inspire a happy sailor in everyone,” she says. “We’re trying to do that through more open trips where people can join us on our scheduled sailing excursions. You can get to so many beautiful destinations you can’t access on a plane, plus you’ll also enjoy the journey there. This year we did one to Tambelan, which is a cluster of islands off the west coast of West Kalimantan, Indonesia. It was two-and-a-half days of nonstop sailing.”

Min Qi has been a Member of the Club for a year now. Prior to that, she came here frequently with her father, who has been a Member for fi ve years. She now comes by three to four times a week, meeting clients at LATITUDE Bistro, getting some work done at the lounge and hanging out with her crew. She sometimes even spends the night on the boat.

“I enjoy the community here,” she says. “I love to come here because everyone is very friendly and relaxed. When you get here from the city, you instantly feel relaxed. It’s a very nice ambience to share with your friends.”

Min Qi reveals that she and her father became Members of the Club because they wanted to berth their boats here. “My dad specifi cally chose ONE°15 Marina Sentosa Cove because of the location—it affords easy access to wherever we want to go. It is the closest to the Southern Islands, where most yacht owners go for swimming, kayaking or just to relax on weekends. It’s also close to Sisters’ Islands, which is where we need to go for immigration,” she says.

Another reason Min Qi picked ONE°15 Marina Sentosa Cove: The availability of shops, restaurants and other services in the marina. She’s also appreciative of the fact that they are able to get assistance and use of the buggy service when needed.

As the co-founder of a yacht charter service, for Wong Min Qi, ONE°15 Marina Sentosa Cove is the perfect respite from the bustle

of city life while allowing her to indulge her love for the water.

FOR THE LOVE OF

SAILING

Her most memorable moment at the Club took place even before she became a Member. “We came for the Singapore Yacht Show in 2012 when my dad was looking to buy a yacht. We looked at the different yachts and learned about yachting and the whole lifestyle. The Singapore Yacht Show is still a highlight for me as a Member because for the past two years, I was able to participate as an exhibitor through ONE15 Luxury Yachting, the agent representing the charter yachts here,” she says.

Sailing is more than just a business or a hobby for Min Qi; it is a way of proving that she is able to overcome adversity. “You’re just a little boat in the vast open sea—that thought terrifi es me and excites me at the same time. You’re so vulnerable to the wind, tide, current and storms. But even though these are things that you cannot control, there are still ways to adapt. When you are able to adjust, hoist your sails and go with the wind, you realise that you can overcome anything even though you’re so small.” Te

MARCH-APRIL 2019 LONGITUDE // 15

LONGITUDE: Can you tell us a little bit about your professional background and what brought you to ONE˚15 Marina?EHSAAN KHALID: As a Singaporean, born and bred, I naturally served my National Service and in those days it was pretty intense—we would start working out early in the morning using rubber tyres, kettle bells and makeshift equipment, and even late at night we would be doing benchpresses and pull ups. I absolutely loved it though and realised I was also pretty good at it. In my teens I had been a Muay Thai champion and so being physical came naturally. After I completed my two years, I went into the Auxiliary Police and was posted in Woodlands, but honestly, I missed the buzz that I got from the gym. I took a short break and then decided to go into personal training. At heart, I am a sun-and-sea lover, so when the opportunity to join ONE°15 Marina presented itself, I didn’t look back.

Describe your typical day here at ONE˚15 Marina. We work in two shifts, but even when I am not scheduled to be in until the afternoon, I reach the Club by 7am. I love it here. Also, I believe in working to my clients’ timetables rather than to mine, so one of the fi rst things that I do is to get to know my clients and understand a bit more about their lifestyle so that we can create a realistic workout timetable for them. If the Member is a family man for example, there is simply no point in trying to squeeze in a session over the weekend because the missus is likely to get annoyed! So I’ll suggest a couple of early morning workouts and another two in the evenings to try and ensure that everybody is happy. If that means I have to be in at 7am as well, that’s totally fi ne for me! Every last Sunday of the month, I can also be found up on the rooftop of the Club where I run a bootcamp for Members and their guests. Every session is different and we often have guest trainers hosting. But the goal is always to workout, have fun and sweat!

What role do you believe physical exercise plays in our general wellbeing?I always tell my clients to think of their body as their house—if you don’t take care of it, there are going to be holes in the roof and cracks in the walls and rot under the fl oorboards. Ultimately, you only get one body to live in, so you should treat it well and that really does start with feeding it a good diet and giving it a good exercise routine.

Can you guide us through some of the ways in which you help clients achieve their fi tness goals?I work with between three and seven clients a day and with all of them I use a combination of methods, from Muay Thai to resistance training to Pilates.

Before we even get to the physical part though, I start with a full body analysis—identifying each client’s body type and the areas that they need the most help with. Humans typically fall into three different genotypes, so it is always helpful to pinpoint which type they are. Then I look at their posture, because that is a good indicator of lifestyle and muscle weakness—I might notice they have rounded shoulders, which usually indicates weak “lats” (latissimus dorsi) or I can see that they have a protruding chin which suggests sitting at a computer all day looking down and overstretching the neck. I also always work on their nutrition because achieving the body that you want is 70% diet and 30% workout.

What areas of your job do you particularly enjoy?I love training people, I really do. You go on this journey together and it’s fun and it’s messy but it’s also really rewarding when you see them achieve the body that they’ve always wanted or reach the fi tness goals they never thought they would achieve. I have never had a diffi cult client so I don’t really feel like my job is work.

EHSAAN’S TOP THREE

1. Surfi ng and skateboarding

To me they fall into the same category! My dad introduced me to surfi ng when I was 11 while we were on holiday and I took to it immediately. Because we don’t have waves suited for surfi ng in Singapore, I asked him for a skateboard instead so I could “surf” the streets. It’s still my favourite mode of transport.

2. Books

I love to read. My favourite book of all time is Twenty Thousand Leagues Under The Sea. I would do anything to meet Jules Verne.

3. Dancing

I teach Zumba and I used to teach salsa to seniors. I really liked doing that, they are the loveliest people to hang out with.

CLUB BUZZ/HAPPENINGS

A PANEL OF OVER 20 international experts, led by our Chairman and CEO, Mr Arthur Tay, met on 28 and 29 November last year to put in place a development strategy for Hainan, China, with a view to transform it into one of Asia’s most signifi cant and productive marine hubs. Representatives from the Hainan Department of Commerce, ONE°15 Marina, Agile Clearwater Bay Marina, Lingshui Li Autonomous County People’s Government, Lingshui Li Autonomous County Commerce Bureau and Hainan Cruise and Yacht Association met during the two-day Hainan Marine Tourism VIP Roundtable summit held at Raffl es Hainan, during which a blueprint for the future of the island was determined. The landmark occasion is a signifi cant step in China’s potential as a whole and marks an important moment in ONE°15 Marina’s future.

Describing the waters surrounding southern China as “the Silk Road of Sailing” , Mr Tay was adamant that a dual-pronged approach was necessary if Hainan was to become one of the world’s leading ports, emphasising that both policies and infrastructure would require signifi cant investment in order to achieve such an ambitious goal. However, he noted, the dream could most certainly become reality.

Organised by the Hainan Department of Commerce, ONE°15 Marina and Agile Clearwater Bay Marina, the closed-door event took place in Lingshui county, which has been placed fi rmly on Hainan’s map thanks in large part to its prominent location and its natural beauty. The county’s proximity to Sanya City Centre and its adjacent airport have seen it rise in popularity among tourists in recent years, but it is the scintillating waters of Lingshui Bay, and the exemplary facilities at Clearwater Bay Marina in particular that have contributed signifi cantly to the area being earmarked for development.

WHAT’S A POOL PARTY WITHOUT WATER, but when the one in question is rain—it’s a different story altogether. But for the children at ONE°15 Marina’s pool party on 1 December, it didn’t matter. Rain or shine, they gleefully bounced on and off the infl atable obstacle courses and lounged away on adorable fl oats. As a special surprise, Syrena, Singapore’s fi rst “mermaid”, joined the party with friends from her Mermaid School, delighting the kids with their fl awless swimming technique. But it was not just water fun, as those “on land” who preferred to stay dry had their share of fun learning balloon sculpting and making cartoon-shaped keyrings too.

ON 13 DECEMBER, eight young pastry chefs decided to take home a memorable treat for Christmas: Traditional log cakes, made from scratch and all decorated to boot. ONE°15 Marina’s very own celebrity chef was there on site, guiding them through the process of mixing the fl our and rolling the pastry, all along educating them of the nuances that go into the unique texture of a log cake. Then the mini chefs jumped all hands on board to decorate their individual cakes—there were little snowmen and Christmas trees ringing in more than a fair share of festive cheer. Suffi ce to say, the holiday spirit in the air was palpable.

Even rain could not dampen the spirits of the children at ONE°15 Marina’s pool party.

Christmas became extra special for some mums as their little ones charmed them with their creations.

SOME ONE°15 MARINA MEMBERS decided to end the year on an adventurous note. So on 28 December, a team of explorers, young and old, set off on an expedition to the Southern Islands of Singapore—and who better to take them than the pleasure cruise Popeye Boat. The adventure crew visited Kusu Island’s Bodhi tree and turtle sanctuary, and broke off for lunch on Lazarus island, where they had a picnic by its tranquil beaches and learnt about environmental conservation while conducting a mini beach clean-up.

TO LEARN SOMETHING NEW was the resolution for 2019 for 16 Members, or so it seemed on 14 January, they attended a unique event organised by the Club that introduced them to a new genre of dance from the Rock n Roll era. It was also an opportunity to bond with other Members while tapping their feet to the beat. Going by Members musing that there should be “more events like these”, it appeared that a rolling good time was had by all.

Select ONE°15 Marina Members decided to revisit the Swinging Fifties.

WANT TO DANCE?

WHEN IT COMES TO LATTE, aside from the aroma of the coffee and the relaxation afforded by the café itself, there’s one other thing that delights our senses: The design drawn lovingly on the brew by the barista. On 9 January, a few lucky ONE°15 Marina Members got the chance to play that role. They attended a private coffee art workshop and learnt how to draw intricate designs under the expert guidance of professional baristas. It made for a memorable experience that they will recall every time they take a sip of their latte.

Coff eemaking took on a whole new meaning for the Members who attended this workshop.

FROM 24 TO 27 JANUARY, ONE°15 Marina was abuzz with activity as 24 teams from nine countries, including Singapore, and a total of 100 participants competed on our pristine waters. The Singapore teams included students from the National University of Singapore, Singapore Management University and Raffl es Junior College. With the Northeast Monsoon playing along, the race was fl agged off to a resounding start. In a veritable display of skill and technique, Team Glasgow Kiss bagged the overall trophy for the second year running. Mr Jack Long, Group General Manager, SUTL Group; Teo Joo Leng, General Manager, ONE°15 Marina Sentosa Cove; Lim Han Ee, CEO, Singapore Sailing Federation; and Nicholas Cocks of the Singapore SB20 Class Association presided over the grand awards and closing ceremony hosted by ONE°15 Marina Sentosa Cove at its Rooftop Terrace. Overall, it set a great precedent for the 2021 World Championships to be held in Singapore.

ONE°15 Marina Sentosa Cove hosted another successful edition of the annual sailing regatta.

SB20 ASIAN GRAND SLAM & ASIA PACIFIC CHAMPIONSHIPS

IN THE LEAD-UP TO THE SB20 ASIAN GRAND SLAM and Asia Pacifi c Championships (SB20 AGS), the Club organised a SB20 Fun Race for Members to get a taste of sailing.

This event welcomes anyone who enjoys sailing or even without any prior sailing experience to try out the sport for themselves.

Competitive sailors from the SB20 AGS provided Members with theoretical knowledge of sailing and went on to lead them in a day out on the sea, letting them try their hand at sailing keel boats.

The Club would like to thank all the Members who participated, and we look forward to having more Members join us next year!

ong hailed as exemplary, a Mediterranean diet is perfect for this time of year, when the indulgences of the festive season have begun to catch up and the palate is crying out for lighter fare. With an emphasis on the freshest ingredients, prepared with very few additional fl ourishes and only a little

seasoning, Mediterranean dishes feel both cleansing and nourishing, returning us to a simpler way of eating. Who can resist a humble tomato salad, with just a drizzle of extra virgin olive oil and a scattering of basil leaves? Or a plate of roasted vegetables, dressed with a splash of balsamic vinegar, as an accompaniment to a piece of grilled fi sh? Perfect for a summer supper or steamy lunch party, Mediterranean cuisine is the archetypal holiday food, vibrant and full of fl avour, while also being easy on the waistline.

FINE FOOD

Chef William Soh, Executive Chef at ONEº15 Marina, has some basic rules for achieving authentic southern European fl avours. It all starts with selecting the freshest ingredients, he says. “Because Mediterranean countries are surrounded by the sea, their dishes tend to consist of seafood rather than meat,” he explains. “But the key is in the freshness of the seafood—that is vital to the overall dish.” He advises pairing market-bought clams, mussels and prawns with commonly available ingredients such as olive oil, onions, garlic and tomatoes to make a simple seafood pasta or a bouillabaisse. Or to keep it really simple, poach a piece of fi sh with some white wine for a dish that can feel quite lavish even though it couldn’t be easier to prepare.

His other tip —seasoning. “Spices and herbs really bring out the fl avours in Mediterranean dishes,” Chef William continues. Oregano, basil, thyme and rosemary are all widely used in marinades and dressings. Wine is also essential. “Add wine, red or white— although white is preferable —to give extra body to your sauces.”

With our guide to these essential ingredients, Mediterranean marvels couldn’t be easier to achieve at home. Consider yourself prepped.

1. OLIVE OILOf all the items in the Mediterranean pantry, olive oil is perhaps the most used, so it pays to buy the best quality possible. Contrary to recent reports, it is perfectly safe to use in cooking and continues to be one of the most versatile oils available, acting as both the base to marinades and dressings as well as working beautifully on its own with just a little salt and pepper. For the most authentic southern European fl avour, opt for 100% extra virgin olive oil (rather than an oil blend) and where possible, opt for organic—this means that the olives that produced the oil, have been left untarnished by chemicals, thus ensuring their fullest fl avour and a golden, treacly liquid that will ensure a beautiful start—or fi nish—to any dish.

2. GARLIC & ONIONS“Always sauté your onions until they are fragrant before adding your garlic,” advises Chef William. Garlic burns surprisingly fast, so adding it to hot oil too early in the cooking process will only scorch it and leave your dish with a bitter taste. Instead, consider it almost as a garnish, to be added moments before the main ingredients to suffuse them with their fl avour. Or, make like the Spanish and Italians and eat it raw—the health benefi ts are countless. A clove rubbed onto toasted bread makes for a delicately fl avoured garlic bread alternative or a few thin shavings added to diced tomatoes really raise their fl avour for a juicy bruschetta topping. Be sure to have a handful of mints nearby, however!

3. TOMATOESSun-ripened tomatoes are synonymous with Mediterranean summers, and there is virtually no dish that doesn’t benefi t from their addition. The giant beef tomato is perfect for stuffi ng with sausage meat and rice, while the more delicate vine variety works beautifully well when simply roasted. A tumble of heritage tomatoes is the perfect accompaniment to a creamy burrata, while a smooth passata is the irreplaceable component in achieving the perfect ragu. Simmered for as long as possible, it becomes the basis to the perfect lasagna, cannelloni or spaghetti bolognaise for a dish that is both comforting and restorative.

MEDITERRANEAN FLAIR

The Club off ers a comprehensive selection of French, Italian, Greek and Spanish-inspired dishes at LATITUDE Bistro as well as an extensive off ering of wines from various regions at all of our dining outlets. For more information, call 6305 6982 or email [email protected]

4. LEMONSWhether zested or juiced, roasted or raw, lemons add a hit of freshness to any Mediterranean dish. Their sharp acidity will cut through the richest meat, so a quick spritz on a veal cutlet or pork chop makes it immediately melt-in-the-mouth, while nothing could be simpler and more comforting than a bowlful of spaghetti al limone. For a quick and easy dessert, swirl lemon juice through crème fraiche, add a little icing sugar and serve in chilled glasses.

6. WINENot just an accompaniment to meals, wine is also frequently used in Mediterranean cooking to bolster dishes. The key to cooking with wine, however, is to make sure it has evaporated before serving—otherwise you run the risk of inebriating guests! Red wine is typically used in meat dishes while white is preferable with fi sh or poultry, but much of the preference for one or the other depends on the country or region responsible for the dish – bolognaise, although a beef-based dish, is traditionally made with white wine from the Emilia-Romagna region.

5. HERBSThyme, rosemary and basil are just some of the classic herbs that will help to inject a little Mediterranean pizzazz into your dishes. Drizzle thyme-fl ecked olive oil over goat cheese for a Greek twist on a savoury starter, stud lamb chops with rosemary sprigs and slivers of garlic or blitz a handful of basil with some parmesan, pine nuts and garlicky olive oil for a fl avour-packed pesto. Oregano and marjoram work exceedingly well in tomato-based recipes, sage pairs beautifully with pumpkin or pork, and try lemon thyme for a fresh, lemony infusion.

METHOD

• Prepare the salsa by combining the diced tomatoes, olive oil and lemon juice. Season generously with salt, pepper and fresh thyme before putting aside.

• Boil the potatoes until soft, then mash and set aside.• Season the salmon on both sides and grill in a pan, skin

side down, for about 6 to 8 minutes, just long enough for it to form a crisp skin while staying pink in the centre.

• Using a foil ring or a fork, mould the mashed potatoes in the centre of the plate and arrange the lettuce.

• Place the cooked salmon on top of this centrepiece before drizzling the salsa on the side.

STAY

Twenty-fi ve kilometers south of Sanya city centre lies the pristine Yalong Bay, a dazzling stretch of sand that is so fi ne and white, it’s almost surreal. St Regis Sanya Yalong Bay Resort enjoys one of the most prestigious spots along this postcard-perfect beach, making it a fi rm favourite with well-heeled travellers in search of rest, relaxation and a great sun tan. Seaward facing rooms enjoy uninterrupted views over the South China Sea, while those turned inland gaze out to the rainforests of the nearby Yalong Bay Tropic Paradise Forest Park. St Regis’ signature service is par for the course, as is an extravagant 3,500sqm spa and a fully serviced kids club so that everyone gets to enjoy themselves.

North of Sanya, in the opposite direction to the popular haunts of Yalong bay and Dadonghai, lies Haitang Bay a much quieter—and therefore more unspoilt—beach that many are seeing as the next big tourism spot on Hainan. Almost 50km of white sand stretches up the coast to Lingshui, with only a handful of hotel chains yet to make their mark. Rosewood Sanya was one of the fi rst to stake its claim on the idyllic beach and it has worked tirelessly to allow the breathtaking scenery to shine through—a restrained colour palette and natural materials heighten the cerulean surroundings rather than overpowering them and ensure that all eyes are on Haitang Bay and nearby Wuzhizhou island rather than on the decor.

Even a full day at the Atlantis Sanya Aquaventure would not be enough to complete its network of slides and rides. From the underwater aquaduct that meanders gently through a tank full of sharks, to the gravity defying Leap of Faith that shoots those brave enough to attempt it down a vertical slope eight fl oors high, the park is an adrenaline junkie’s paradise.

The original destination on Hainan Island, Dadonghai is the life and soul of Sanya, and although it has the reputation of being crowded, it is defi nitely worth a visit. By day, it boasts one of the best strips of sand on the island with a whole host of watersport activities on offer, while countless bars and restaurants ranging from lively to lovely liven up its night scene. Luxurious accommodation used to be a little hard to come by in Dadonghai itself, but Barry Boutique Hotel Sanya, Harman Hotel Sanya and Sanya Marriott Hotel Dadonghai Bay have all added a touch of glamour to the town that remains resolutely popular with newcomers and oldtimers alike.

Thankfully for those who are intent on completing it all there is an adjacent hotel, with rooms facing out onto the giant shark tanks that are a focal point of the park. When you’ve had enough of the beach, a trek through the rainforests of Hainan will offer a fresh perspective on the island. One of the only tropical canopies in China, Yanoda Rainforest is only 35km from Sanya city centre and spans over 160sqkm. Much of the area is a protected conservation zone, but within the forest lies a 45km park that is open to visitors and that features a network of hiking trails, zip wires and bridges that can take up to six hours to complete. While the fainthearted may well feel the heat, the Yanoda park offers a glimpse into the rich and diverse fl ora and fauna of southern China that is so often overlooked.

As its name suggests, Serenity Sanya Marina is a harbourfront haven in which to retreat when the pulse of the city gets too much. Tucked away on the southernmost tip of the peninsula, it enjoys a quiet position overlooking the South China Sea, with views best enjoyed from the terrace of Gourmand—the Pan-Asia gourmet restaurant that specialises in Malaysian and French nouvelle cuisine. After dinner, retreat into the dedicated Cigar Bar for a little old-fashioned glamour.

Besides being one of China’s most popular holiday destinations, Hainan is also the country’s capital of duty free shopping, with Sanya being one of the only places in China where duty free stores are allowed to operate. Customers fl ying out of the island can therefore shop until they drop and pick up their goods at the airport on their way home. Whether looking for the latest word in luxury or a token souvenir, there is a plethora of malls on the island from the kitsch Pineapple Shopping Center to the 70,000 sqm CDF Mall, the world’s largest duty free shopping complex.
