Microbiological culture media are used to detect microorganisms on surfaces and in sample material. The dry matter content refers to the residue in percentage by mass, which remains in the drying of milk and dairy products on certain conditions. However, the method is not applicable for products with a high lactose content and dried milk products, which would lead to a Maillard reaction. This causes inaccurate and non-repeatable or reproducible results.

For a dry matter determination in a drying cabinet viscous and solid samples are preferably mixed with sea sand, salt or other allocation means in order to obtain the largest surface possible. Thereby, crusting of the surface can be avoided and a rapid drying process is achieved. The mixed sample is dried for 4 hours at 102 °C and then determined by weighing the dry residue.

Esterase Lipase testing paper: Developed in the 1970s by Prof. Purr this test method detects the presence of lipase in milk products and many other food products by reference to discoloration on the test strip. In this method, at a corres-ponding enzyme activity, a blue color on the test paper is formed. Exclusively manufactured by Dinkelberg analytics.

Phosphatesmo MI is a rapid test for detection of alkaline phosphatase in milk. The test enables a quick detection whether the proper pasteurization of milk has been success-ful or not. One therefore dips the test strip for approximately 1 second into the milk to be tested and then incubates it for about 1 hour at a temperature of 36 °C.

The test paper Peroxtesmo MI is used for the milk enzyme lacto peroxidase. With this test, the complete high-heat in milk can be detected quickly and easily. Peroxtesmo MI is odorless and nontoxic, whereby a secure testing is given.

Glassware for butterfat analysis

Butyrometers Butyrometers are tubular glass instruments with a calibrated scale for determining the fat content in milk and dairy products. The basic method is called acid-butyrometry. The term „butyrometers“ comes from the Greek: „butyros“ means butter and „metron“ measure. These methods are still the fundamental basis of any dairy laboratory.

Mojonnier extraction tubes Mojonnier extraction tubes are extraction vessels which are used to determine the fat content of milk and dairy products (Rose-Gottlieb method). The method is applicable to milk, buttermilk, whey, condensed milk, cream, dry milk products, yoghurt and ice cream. The protein is digested by treatment with ammonia, the fat is extracted by using organic solvents and these are removed by evaporation or distillation and weighed after drying.
