Over the past several months I have discussed a

number of different topics including ethanol fuel

issues that cause many of our engines to fail, reports

of governmental restriction of the waters in which we boat, and

safety issues at sea. Because these issues are of paramount

concern to not only me and my family but also to most of our

readers, I’m providing a few updates regarding each.

For those of you who have experienced problems with

your engines due to E10, well, it appears that even zero-

ethanol fuel that’s sold at many marinas is in danger of being

pushed out of the marine marketplace altogether in order

to make room for the Renewable Fuel Standard-mandated

E15 and higher ethanol blends. This will result in shortages

of EO (Zero-Ethanol) fuel as early as this coming summer.

As a result of the federal mandate that requires increasing

amounts of biofuels—mostly corn ethanol—to be blended

into our gasoline supply every year, 90 percent of American

fuel today is E10 or a 10 percent ethanol blend in spite of

the numerous studies conducted that have revealed the

harmful effects of ethanol to gasoline engines, especially

our outboard engines. The average cost to a consumer to

fi x these individual problems starts at $1,000 and goes up

from there. We need to make it clear to our legislators that

the marine leisure market needs a reliable and trusted fuel to

ensure smooth engine operation and safe navigation.

Finally, there’s some good news regarding limitations on

water access. Several months ago I conveyed that a number

of popular areas on the water are at risk of being restricted

to recreational boating for fi shing, spearfi shing and anchoring

as in the case of the Biscayne National Park, a large body of

water at the south end of Miami, Florida. We just recently were

advised that a legislative provision—the Sportsmen’s Heritage

and Recreational Enhancement (Share) Act also known as the

Sportsmen’s Act—passed in the House of Representatives

and awaits Senate approval. If it passes, this new piece of

legislature will eliminate language that safeguards against

unwarranted fi shing closures such as what is happening at

Biscayne National Park.

I was raised to have a high degree of respect for the sea

and the power it holds, which is why I was in favor of the

new AIS (Automatic Identifi cation System) mandate and

its implementation deadline date of March 1, 2016. The

requirement of this device and its mandate will not affect

most of our readers because it currently primarily targets

the commercial sector of the marine industry: commercial

self-propelled vessels of 65 feet or more in length; towing

vessels 26 feet in length or more and more than 600

horsepower; passenger vessels certifi ed to carry more

than 150 passengers; vessels that move or carry certain

hazardous cargo, and vessels that engage in dredging in or

near a commercial channel. AIS receivers are typically not

installed on recreational boats, so it’s understandable if you

are not familiar with their use. AIS is essentially a device that

enables skippers to see and identify other boats and confi rm

their course, which is advantageous especially during night

boating to establish if there is a real and present danger. As

this device gains momentum in the marketplace, I think you

will see more and more recreational boat owners installing

them. I fall into that category and will be pricing them out very

soon for my own boat. I encourage you to investigate the

new U.S.C.G. AIS mandate for yourself and learn more at

Additional proposed legislation that I support regarding

boating safety was inspired by the incident in July 2015

during which two boys left the Jupiter, Florida, inlet and were

lost at sea. Bills SB 746, HB 427 are proposed to reward

boaters in the form of reduced boat registration fees for

those who purchase and register either a personal locator

beacon or an emergency position indicator radio beacon

(EPIRB). (As of press time, the bill cleared the Florida House

on a 115-0 vote.) With the exception of PFDs, I can’t think

of a single investment that’s better in terms of safeguarding

those on my boat. Can you?

Cruisers to Baltimore’s Inner Harbor will see more green and

more wildlife by the end of this decade.The National Aquarium

has unveiled a plan to create an urban wetland to demonstrate

how natural ecosystems can improve the health of the harbor

and the Chesapeake Bay.

The urban wetland will be in the water between Piers 3

and 4 and consist of habitats such as floating wetlands and

underwater shelves with bay grasses and terraced edges.

The project’s goal is to showcase natural ecosystems as an

aesthetic and practical method to improve water quality.

The 2.5-acre area would be free and open to the public. Work

is expected to begin by the end of this year, with completion

set for 2019. The project includes interactive exhibits, kayaking,

picnic spaces, and educational activities in the middle of

the aquarium’s campus off Pratt Street. “We see this as an

opportunity for a second renaissance for Baltimore’s harbor by

creating not only a commercially thriving place, but also one

that is thriving in terms of its health and green space, and as a

habitat for animals and humans to enjoy themselves,” said John

Racanelli, the aquarium’s CEO.

Laurie Schwartz, president of the Waterfront Partnership,

said her group fully supports the aquarium’s plans. “We’re

excited about bringing the National Aquarium’s conservation

and educational components outside,” she said. “It really helps

advance the Inner Harbor 2.0 objective of creating a more

dynamic harborfront area.”

Judge the soup

Crab soup lovers will get their fill at the East Coast

She Crab Soup Classic at the 24th Street Park in

Virginia Beach on April 9th. The rain or shine event

showcases an open competition among local

restaurants who serve their individual recipes and

compete for People’s Choice Awards, the winners

of which are determined by the ballots of those

attending and a panel of four regional cuisine experts.

Tickets are sold in advance and offered at the gate if

available. (The event is limited to 1,500 paying guests.)

Children 12 and younger who are not sampling and

are accompanied by an adult are free. Dogs and

beach chairs are not permitted in the tasting area.

Smoked duck tacos

The Duck & Wine Festival is slated for April 30th in the town

of Duck on North Carolina’s Northern Outer Banks. Festival

attendees are invited to sample each restaurant’s special dish

paired with a selected wine. Ticket sales are all online this year

and the event has sold out in the past. The price of a ticket

includes a reusable wine tote bag, an event wine glass, a wine

lanyard, and cork screw. A good place to park your yacht for the

rain or shine festival is Coinjock Marina & Restaurant located on

the ICW at Mile Marker 50, an ideal stop for mariners traveling

north and south along the waterway.

Boating tragedies in Florida’s waters prompted Governor

Rick Scott to write a letter to the state constituents supporting

Proposed law for FWC pullovers

Some say that overzealous Florida Fish and Wildlife

Conservation Commission (FWC) officers ruin great days

on the water with their random checks. Others say they are

necessary to deter illegal fishing, hunting and safety violations.

Under a law proposed by Florida State Representative Ritch

Workman, officers would need probable cause before stopping

boaters. Workman said he wants to see more reasonable stops

with FWC officers checking boats only if suspicious activity is

observed. Workman said he envisions a safe boating sticker

placed next to the boat’s registration after it passes inspection

to limit boaters being hassled. If the proposed law (House Bill

703) passes, it would take effect July 1, 2016.

Improved Cuba charts

With increased cruising to Cuba from the U.S., the National

Oceanic and Atmospheric Administration (NOAA) and Cuba

are working together to improve nautical charts especially in

the Straits of Florida. Following up on a Spring 2015 meeting

with U.S. and Cuban chartmakers in Havana to work on a new

international paper chart—INT Chart 4149 covering south Florida,

The Bahamas, and north Cuba—the group then met in Maryland

to discuss future collaboration and improving nautical charts.

Shipwreck artifacts returned

Updating the discovery of items from the Confederate CSS

Georgia shipwreck, 30,000 articles were raised. Unique items

kept for archiving by the U.S. government include small buttons,

hilts of knives and swords, an intact glass bottle, leather boots,

and an earring. Texas A&M is studying 13,000 articles at their

lab, and 16,697 non-unique articles were returned to the mud

of the Savannah River in plastic boxes, which, according to U.S.

Army Corps of Engineers archaeologist Julie Morgan, will help

preserve them. The Confederate gunship was sunk in 1864 in the

Savannah River by its own crew to prevent the ship’s capture by

Union troops during the Civil War.

into the federal channel with depths from less than one foot to

five feet at mean low water.

Be on the lookout for Cliff Kyle aboard his 26' Pearson

Abby Normal traveling south on the ICW. Sailing solo can be

challenging and for a man with one leg it could be more so,

but Kyle throttles full steam ahead with a cheery disposition.

“One thing sailing teaches you is how to handle what’s thrown

at you and navigate through it,” says Kyle. When his house in

Kentucky was foreclosed a couple of years ago, 40-something

Kyle headed back to the sea and lived off the coast of Florida

in the 1990s. He personally made several modifications on his

vessel while sailing to Block Island, Mystic and the Chesapeake

Bay. His final destination this season is St. Augustine or possibly

The Bahamas.

There are two full-service outboard shops in George

Town: Minns Water Sports and Brown’s Marine. Minns

is a Yamaha dealer and Brown’s sells Suzukis. Brown’s

can handle almost any size outboard boat with engines

up to 350 horsepower. These outboard shops are

especially important because they provide excellent

services so far south of Nassau.

February Point just opened a new restaurant, the

Rusty Anchor, which I highly recommend. The new

building has a lovely view across the flats to Crab

Cay, the food is upscale and the staff is as cheerful

and efficient as anywhere in The Bahamas. Moor your

One of the jewels of George Town is Diane Minns’

Sandpiper Arts & Crafts, a store with quality items for

the whole family. When you are done shopping, step

next door to the Driftwood Café or across the street to

Peace and Plenty for lunch. You old timers may like to

know that Lerman Rolle, “The Doctor of Libation,” still

mans the bar at Peace and Plenty.

Late April is when George Town becomes really

enjoyable. This year the National Family Island Regatta

is April 26-30. The regatta is great fun and one of the

most photogenic events anywhere. After

the regatta most of the cruisers start to

leave—some to head to the Caribbean for

hurricane season and others head back

to the U.S. For those who want peace

and quiet, this is the beginning of the best

cruising in Exuma and a great time to run

out and back to the southeast islands.

Great Exuma remains one of the very best

locations for flats fishing, and there are

excellent locations to fish in almost any

weather.

Turtle sex

April is the beginning of the mating and nesting season

for sea turtles in The Bahamas. Please keep a sharp look

out as you travel along the ocean shores of all the islands.

Loggerheads are especially vulnerable to boat strikes as

they congregate to mate off their nesting beaches. Sea turtle

populations have grown slowly since the 2009 ban on sea

turtle harvest in The Bahamas, so adult breeders are especially

important if this trend is to continue.

Abacos

A reminder for all birders and wildlife enthusiasts in The

Bahamas, especially the Abacos, the website, rollingharbour.

com, continues to publish amazing photos and general

information about birds and other wildlife around the Delphi

Club on Abaco.

Farmer’s Cay

According to Roosevelt Nixon—owner/operator of the

Farmer’s Cay Yacht Club & Marina—all mooring chains

and lines have been replaced with new stainless steel

chains and 3/4-inch lines, and the dock and seaport has

been re-planked including new braces. That is very good

news for those who enjoy Farmer’s Cay and want to

moor safely at the dock or in the main channel with easy

access to the Club—the restaurant is open from 9AM to

12AM. Roosevelt is always helpful and very proud of his

Underwater art

One of the not-so-perfectly-kept secrets of the Exumas

is the underwater piano and mermaid sculpture off

Rudder Cut Cay. Sculptor Jason deCaires Taylor’s The

Musician (commissioned by renowned illusionist David

Copperfield) sits in about 12 feet of water and is easily

reached by snorkelers. The location of the sculpture

is now published in the latest edition of the Explorer

Chartbook. Taylor has created stunning underwater

Mariah Harbour Land and Sea Park

The boundaries of Mariah Harbour Cay Land and

Sea Park have finally been set. The park includes the

southern part of Elizabeth Harbour from the south end

of Stocking Island to Pigeon Cay (north of Little Exuma)

and includes several important land areas. The park is

known to include several endangered species such as

piping plovers, iguanas, sea turtles, and a rich variety

of other wildlife. Scientific surveys have also shown that

this area is an unusually healthy nursery for crawfish.

Mariah Harbour Park is a major addition to the national

park system and ensures that Elizabeth Harbour and the

surrounding waters are protected.

Outreach efforts to engage stakeholders are underway

and will be part of the process to determine an official

management plan for the park. The Bahamas is among

the world leaders in marine conservation, and hopes are

that all visitors and boating friends obey Bahamian fisheries

regulations and respect the extraordinary environment.

The 35-square-mile island of Anguilla sits right in the middle

of the Caribbean’s prime megayacht cruising grounds, with the

U.S. and B.V.I. to the north and St. Maarten and St. Barths to

the south. Yet, it’s a destination without adequate dockage for

these large yachts. Anchoring out and a dinghy ride in is the

only way to visit Anguilla’s incredible beaches, five-star resorts

and not-yet-overcommercialized island vibe—a movie star’s

magnet. This is about to change with the construction of the

island’s first megayacht marina at the existing Altamer Resort,

a plan that has been on the drawing board for years. Now, in

the wake of the resort’s acquisition by New York-based Time

Equities and the partnership with Anaconda Holdings—whose

chairman Jeff Boyd was instrumental in the creation of St.

Maarten’s Princess Port de Plaisance, Yacht Club at Isle de

Sol and Portofino Marina—a megayacht marina on Anguilla

is to become a reality. Plans call for dockage capable of

accommodating yachts from 30- to 200-feet LOA. The marina

will also serve as an official port of entry. Marina guests will be

able to enjoy all the amenities at the Altamer Resort, a boutique

villa property located on the island’s west end at Shoal Bay.

The final design stages for the marina wrapped up in late 2015,

however, no date has been set for completion. Future plans

call for a restaurant, promenade, duty-free shopping, and a

164-unit resort.

Grenada’s first-ever music festival

Seaside venues and an exciting program of local and

international artists are the main attractions at the first-ever Pure

Grenada Music Festival set for April 5-10. Cruisers donated their

old sails to make shaded areas around the Festival Village, which

will be located on the spacious green at the Port Louis Marina

along with the main stage. At the Festival’s conclusion the sails

will go to local workboat owners. The 170-slip, full-service, Port

Louis marina is host to the opening night performance featuring

Grammy Award-winning pop and R&B superstar, Estelle.

Reggae Night and Rhythm and Soul Night happens at Port

Louis, too, where the headline acts are Grammy-winning reggae

band Steele Pulse and chart topper, Joss Stone. The most

exciting night for nautical types is the Rock De Boat concert set

on a floating stage in picturesque St. George’s harbor. Canadian

duo, Madison Violet, will perform its hit version of These Ships,

and Guadeloupe’s Erik Pedurand will present his award-winning

Antigua’s Granddaddy of Caribbean racing

Catch the action from Antigua Sailing Week with the

“Granddaddy of Caribbean Regattas” on April 22-30 at the

Antigua Yacht Club in English Harbour. The best vantage point

to watch the racing from shore is at Shirley Heights Lookout,

where a special regatta breakfast party is set for April 24th. See

the sailing by sea aboard the Wadadli Cats on a chase-the-race

The Cajuns of South Louisiana are known for their interest

in spicy food and exotic flavors, but fishermen all along the

northern Gulf Coast have their secret culinary delicacies

as well. Most anglers who have grilled a monster blackfish

appreciate the fish’s sweet and delicate cheek meat, but only

the truly old school fully uses the bounty of these waters and

can turn a fish carcass into blackfish jelly. Generations on the

coast have long kept this culinary knowledge secret, yet it

was fading into “culinary backwaters” until a revival of interest

saved these savory treats from vanishing. These are some of

my favorites.

Perhaps shrimp throats, aka “spiders,” are among the

more common and likely the easiest to go mainstream. On

the larger, jumbo to colossal-sized white shrimp, there is a

bit of sweet meat that is nearly always wasted. Easily freed

by placing an index finger into the head along the bottom

and pushing down, this tasty nugget when washed, spiced,

breaded, and fried is an amazing twist on shrimp meat

with a unique texture and becomes a perfect and delicious

finger food.

Mullets are one of the rare species of fish to have a gizzard,

similar to a bird. Mullets are bottom feeders and it is best

to only use the gizzard from mullets caught near the islands

offshore where bottoms are sandy and not full of mud. The

mullet gizzard is a small little nodule about the size of a

fingernail and located after the throat. It must be sliced open

and thoroughly washed before being simply spiced, battered

and fried, just like the shrimp “spiders”—a tasty treat.

Red snapper are highly prized along the entire Gulf Coast,

but from the piers of Galveston, Texas, to Orange Beach,

Alabama, the snapper throats are simply tossed out. Yet these

throats on the larger snappers are filled with delicate meat

between the pectoral fins and are almost always scraped off

the fish stations into the water for crabs

or pelicans. I knew of a group of cruisers

from Pascagoula, Mississippi, that would

often do the voyage to Destin, Florida,

along the ICW and arrive as the Destin

charter boats were docking and the fish

was being cleaned. Florida’s charter

captains always found it a bit curious

that these Mississippi natives would walk

up and ask for these discarded portions

of the large snappers. That was until

they tasted the snapper throats scaled,

spiced, breaded, and fried.

There is obviously a theme here regarding the frying of

these tiny leftover morsels of meat, but with reason: They’re

delicious and have a sweetness to them not found in the

other meatier portions of fish or shrimp that is accentuated by

the spicy batters of the Gulf Coast. Ask anyone who’s tried

the little thumb-sized scallop of meat above and behind a

redfish’s eyes.

Go for it and try one of these Gulf Coast’s unique delicacies.

A nice comeback sauce and saltines will certainly help for that

first sampling.

Things are done a bit bigger in Texas and this includes

fishing tournaments. With more than 367 miles of

coastline on the Gulf of Mexico and along the famed

Laguna Madre with charters running from Galveston

to Corpus Christi and all the way south to the Mexican

border in San Isabel, Texas can satisfy your need for

deep or near-shore saltwater fishing.

One of the largest tournaments, the Texas Star State

of Texas Angler’s Rodeo run by the Coastal Conservation

Association (CCA) lasts a solid three months. This

tournament with more than 45,000 participants is unusual

in that tagged species of fish are specifically released

throughout the coast for the purpose of the tournament.

Down the coast in Matagorda, the Matagorda

Bluewater Challenge is another monster multiple species

tournament with boats allowed to leave from several

ports. The tournament also includes a small boat (under

25 feet) class. The big action is off shore where winners

are decided over the combined weight of multiple and

specific species hauled in. This two-day event brings

out the Who’s Who of Texas fishing and novices who

charter vessels with groups of friends and try their luck at

bringing in the largest kingfish, ling and dolphin. Winning

isn’t everything, but two days spent off shore is a perfect

recreational investment for men, women and children.

Not to be outdone and celebrating its 19th anniversary

on the legendary Louisiana barrier island of Grand

Isle, the Swollfest Fishing Rodeo kicks off June 8-12.

Headquartered at the Sand Dollar Marina on the

easternmost reach of Grand Isle, this event has exploded

from its humble beginnings as a group of eight guys

going out fishing one weekend to one of the largest

fishing rodeos in Louisiana.

With world-class offshore and inshore fishing

throughout the waters of Louisiana, Swollfest was among

the early to recognize and adopt the growing trend in

spear and kayak fishing and have adopted them as

classes alongside the standard fishing rodeo classes.

Kayak fishing is ideal in these estuaries of southeast

Louisiana with kayaks able to navigate all of the shallow

coastal marsh and find those hidden and previously

unreachable honey spots.

Located at the edge of Barataria and Caminada Bay

and the deep-water oil platforms of the Gulf of Mexico

that serve as incredible artificial reef habitats, Grand

Isle is known for hosting multiple world-class fishing

events. The species of fish from the multiple habitats

are far too numerous to list, but there is a definitive

reason why southern Louisiana is known as the

“Sportsman’s Paradise.”

As more ice melts from global warming, the odd-looking

Arctic cod is at greater risk of being captured by huge

fi shing nets deployed by earnestly effi cient factory trawlers.

These bug-eyed fi sh with tiny whisker-like barbels, not to be

confused with the common cod, live in 32-degree and colder

water. Something akin

to antifreeze (“antifreeze

proteins” that bind to tiny

ice crystals in the body

and inhibit growth) in

the Arctic cod’s system

allows them to remain in

cold water year-round,

swimming in schools of

thousands, or perhaps

millions. No one knows

for sure.

For now, Artic cod, also

known as Polar cod, is

not being fi shed by the

world’s factory fl eets. A

late 2015 meeting of 10 of

the world’s most powerful

fi shing nations holds

promise for keeping the

ocean around the North

Pole off limits for fi shing.

These Central Arctic Ocean waters cover 1.1 million square

miles and have for centuries—if not millennia—been covered

by ice. Under international law, the high seas—ocean that

is beyond national jurisdiction—are open to fi shing unless

closed or regulated by international agreement.

However, the extent of Arctic ice is shrinking so much

so that in the summer of 2012, a record low 40 percent of

the area was briefl y open water and therefore, potentially

accessible to fi shing boats.

“These cod are essentially what feeds the entire Arctic

Ocean,” explained Scott Highleyman, director of The Pew

Charitable Trusts international Arctic program. “They are like

the anchovies in the Pacifi c. Scientists know very little about

the abundance and

distribution of Arctic cod,

other than that there are

a lot of them.”

While the Artic cod,

as well as other fi sh and

animals that could be

swept up by trawling

nets the size of 747

jetliners, haven’t yet

been targeted by the

world’s fi shing fl eets,

the worry is that the

super-effi cient factory

fl eets could decimate the

Arctic cod fi shery before

any real scientifi c study

is done. Arctic cod is not

considered good table

fare, yet their high fat/

protein content could

come in handy. The most

likely use for them would be to sweep them up in nets by the

multiple tons, and grind them up on factory ships to create

a source of protein for fi sh food and other animal-farming

uses. New forms of protein are much needed around the

world making the homely little cod a likely target. Therefore,

tackling the issue before it happens is key.

“The fi ve countries that actually circle this area are the

U.S., Canada, Russia, Norway, and Greenland,” Highleyman

said. “In July 2015 these fi ve countries agreed to not

fi sh this high seas area of the Arctic. In December 2015,

[representatives from] another fi ve areas—European

Union, China, Iceland, Japan, and South Korea—

came to a meeting with the fi rst fi ve to talk about a

precautionary approach to delay fi shing until more

science is done. My own view is we need a binding

international agreement to lock it in and protect these

waters, to move us from discussion to action.”

The fi ve countries that circle the North Pole may

regulate the 200-mile exclusive economic zones (EEZ)

from their borders. Beyond that 200-mile line is the

area in question. The current pause from human fi shing

doesn’t mean Arctic cod is safe from being caught and

eaten, but for now the consumers are mammals like

beluga whales, narwhal and seals, along with birds and

other fi sh such as salmon and halibut.

That makes the Arctic cod a critical part of the food

supply and chain that ultimately affects the entire

Arctic food web and health. In addition, if the Arctic

cod were to go away, the plankton the cod eats could

bloom out of control. (Plankton are microscopic forms

of animal and plant life that Arctic cod feeds on in the

upper layers of the water column.)

“This is a good news story because there is a

chance to prevent a problem before it starts,” said

Highleyman, a conservationist for 30 years and a

resident of Bellingham, Washington. “These countries

are open to bolstering cooperative science and actually

fi guring out how the central Arctic Ocean ecosystem

works, what role the Arctic cod play and how it is

changing with the climate.”

“Enforcement of an agreement would come through

the five countries closest to the area, which is as

large as the Mediterranean Sea,” Highleyman said.

“It’s also self-enforcing, because fish have to be

offloaded somewhere. If someone showed up with a

bunch of Arctic cod, there would be talk.”

Exploring virgin waters so long covered in ice could

appeal to fishing nations for a number of reasons.

First, fish like Arctic cod are plentiful and therefore

should be easy to catch. Second, and perhaps more

important, is the idea of establishing a “catch history”

in the area before regulation is put into place.

“The way it works on the high seas is that you can

fish there unless there is an agreement,” Highleyman

said. “So even though an exploratory fishing fleet

might not make money, they could fish there to obtain

catch history that might be used in future fisheries

management.

“That is why it is so important that these 10

powerful nations are talking about putting an

agreement in place before that happens. It’s putting

science first.”

Conservationists aren’t alone in calling for an

agreement. More than 2,000 scientists sent a letter

to Arctic countries in 2012 pointing out the need for

action. Alaska Natives and the state’s commercial

fishing industry have also called on the U.S.

government to promote the agreement.

your outboard engine or sterndrive

be going, going, gone—just

like manual stick shifts in cars? Mercury

Marine’s new Active Trim system uses

GPS and engine rpm to effi ciently trim your

drives for the best performance. Boat trials

at the 2016 Miami International Boat Show,

where the product was launched, revealed

consumers love it.

Hardly anyone requests a manual

transmission in cars today, but manual

trim in boats has been common. For

outboards, adjusting trim is the process of

tilting the entire engine and propeller up or

down, which affects how the force of the

propeller raises the bow out of the water

for a more effi cient and comfortable ride.

For sterndrives, trim is adjusting the drive

up or down. Trimming the engine improves

fuel economy and allows the boat to take

advantage of the engine’s horsepower

propelling it. Mercury’s Active Trim works

with both outboards and sterndrives.

“What makes Active Trim work is the

patented GPS-based control system—

we are the only company that offers

it,” explained Rob Hackbarth, Mercury

Marine’s category director for controls

and rigging. “Unlike other automatic trim

systems […] that use only engine rpm to

control trimming, Mercury’s Active Trim

controls the trim in accordance with boat

speed and engine rpm.”

Mercury Marine is a $2 billion division

of the Brunswick Corporation. Also under

Brunswick are leading boat brands such as

Bayliner, Boston Whaler, Meridian, and Sea

Ray. At the Miami show, Active Trim was

available for consumers to try on more than

20 boats from 15 brands.

“It’s a hard feature to describe to

someone, because the boats don’t look

any different,” Hackbarth said. “The driver

has to experience it. That is when they

really understand. Passengers out on a

test drive will stare back at the engines.

Yes, the engines are trimming up and

down, just like they are supposed to,

which is the whole point.”

A small information control pad on the dash

that relays the Active Trim information allows

the user to select profi les, and also contains

the GPS unit. “Active trim is for entry-level

and expert boaters,” said Hackbarth of the

project that began in February 2015. “When

we fi rst started many people’s fi rst thought

was, ‘I know how to trim an engine and so

do a lot of other boaters. Why would we

need this?’ Then they tried it and got used to

it fast. Active Trim simplifi es boat operation,

while improving engine performance and

decreasing fuel costs.”

For new boaters, Active Trim allows them

to immediately trim their engines properly

with no intimidating learning curve, or

monitor and adjust trim constantly upon

changes in boat speed or turns. Because

the system uses boat speed from the GPS

to make its trim-sender adjustments, when

the boat slows down in a turn Active Trim

responds accordingly for the ideal ride. This

feature solves problems with the engine or

drive trimming up instead of down, if the

propeller breaks loose in hard turns.

“Five trim profi les are available that

accommodate nearly any boat application

from small runabouts to cruisers to high-

performance,” Hackbarth said. “There’s

nothing complicated. At install you just run the

boat and select the profi le that is best suited for

that application.” After installation the profi les

allow the operator to further personalize Active

Trim to their driving style and compensate for

changes in boat load, operator preference

and weather conditions, while maintaining

complete auto operation.

Active Trim works great for boats with a

wide trim range and can be overridden with

the regular manual trim buttons, though auto

mode can be easily re-engaged. Once the

boat passes the 50-mph mark, Active Trim

no longer moves the engine. It resumes

automatically once below 50 mph. On

faster boats such as bass boats in which

the operator wants to get the last mile per

hour out of their boat, Active Trim can be

overridden so the engine can be trimmed out

fully for top speed.

What does Active Trim not do? It can’t

sense when you are in shallow water, so it

won’t automatically trim up the engines to

not hit bottom. It also won’t work if you don’t

have GPS connectivity, such as going under

a bridge or if the GPS conks out. In that case,

you have to trim the engine manually.

The Active Trim panel is compatible with

analog and digital gauges, and has been

specially designed to accommodate mounting

in a broad range of boat applications. It does

not require use of a multi-functional gauge, and

the only special tool needed is a 54-millimeter

hole saw. Active Trim can be ordered with new

boats or retrofi tted using a kit as long as the

engine is Mercury SmartCraft capable.

The Active Trim option is priced at under

$500. “We wanted to keep the cost down

but offer a complete kit,” Hackbarth said.

“That’s why we include a GPS unit within

the panel. It works with nearly our entire

four-stroke product line [excluding 40- to

115-horsepower tiller models]. You are good

to go with the kit and can even upgrade our

40- to 115-horsepower outboards that use

analog trim—we include a digital trim sender

in the kit for those engines.”

Even boats with quad 400-horsepower

Mercury Verado outboards or surface-

piercing drives can use Active Trim. “We

have a kit for high performance boats called

Performance Active Trim,” Hackbarth said.

“In boats with surface-piercing drives there

is not a big trim range, but it still works.

Now if you have a Boston Whaler with four

big outboards, then Active Trim is very

helpful. It syncs all four outboards, so on

a busy waterway there is one less thing to

worry about.”

Retirement with sunsets and mai tais on

a boat sounds great but many must

continue to work to supplement the

cruising kitty. Regardless of your occupation,

regular communications with others are a

must. Onboard connectivity is improving at

a rapid pace and today’s offshore maritime

communications provide real-time data and

voice capabilities as well as audio and small

form video. Here’s the latest in technology to

keep you working while you cruise.

1. Skype & FaceTime — The easiest way

to use someone else’s land-based Wi-Fi for

phone calls is to dinghy ashore with your tablet

or phone. Outside the U.S. most restaurants

provide a password when you purchase a meal

or drinks. Video conference free over FaceTime

between iOS devices such as your iPhone to a

Mac, or FaceTime audio call a phone number

for free if the Wi-Fi is strong enough. But even

with sketchy Wi-Fi bandwidth, audio still works.

FaceTime comes with your iOS device, and

there’s no need to set up an account.

Skype works on either iOS or Android/

Windows devices, and you need to download

the app and set up an account. Wi-Fi calls

are free, but calls to mobile/landline numbers

are charged a nominal fee for which you need

to purchase Skype Credit. Calls on both

systems are worldwide, although there are

some exceptions in India.

2. Wi-Fi Boosters — If you want to stay

aboard and reach shore-side Wi-Fi you need

a booster, typically a combination of an inside

modem and an external antenna. The booster

antenna amplifi es the land-based signal, and

the modem creates a private wireless network

for your boat. This allows your device (with a

much smaller antenna) to tap into Wi-Fi for more

reliable transmissions from a distance. Web

surfi ng and video may be a challenge but email

and weather updates should work.

There are many brands to choose from such

as WiriePro, Digital Yacht WL510 and Rogue

Wave, all with varying claims as to range (some

up to seven miles), but expect a couple of

miles of strong signal at least. Some booster

units (WiriePro) amplify 3G- and 4G-based

data networks as well as Wi-Fi. Units retail

for $400-$800 and need installation onboard;

we recommend using professional electronics

installers.

3. Satellite Hotspots — Turn your

smartphone into a sat phone. You can now

hotspot 5-8 devices (phones, tablets or

laptops) with a satellite-enabled device. There

are two that work on both iOS and Android

devices: Iridium Go! and Globalstar Sat-Fi.

Make voice calls, send emails, text, search the

Internet, get weather, check GPS positions,

and update social media.

You need to purchase a service plan (typically

at least 12 months and costs vary with voice

minutes and data usage, about $130-$150/

month), and download the software to your

computer or the app to your smartphone.

Iridium Go! is small, waterproof and costs

around $800 for the hardware. Globalstar Sat-Fi

needs an external antenna mounted with a clear

view of the sky and retails for approximately

$1,000. Skype, FaceTime, Netfl ix, and Hulu will

not work, and remember to password protect

your Wi-Fi so that somebody with a booster

can’t hijack it and rack up satellite costs.

4. Satellite Dish and Phone — Satellite

phones have been getting smaller, easier to use

and cheaper. Portable devices run $600-$1,200,

and service plans vary from 50 cents to $1.50

per minute and include both voice and data. The

rumor is that touchscreen technology is coming

to sat phones and that there is accelerating use

of apps via satellite. Prepaid voice calling cards

allow people to purchase their own airtime and

use anyone’s sat phone with a PIN code. You

may be able to use FaceTime and Skype over

satellite, but remember, that no longer makes

them free as you will be charged airtime.

Satellite connectivity is provided primarily

via Iridium, Globalstar and INMARSAT. Iridium

touts worldwide coverage and reliability.

Globalstar has limited coverage but clearer

voice communications and faster data

transmission speeds. INMARSAT is for larger

boats and bigger budgets.

Broadband communications take satellite

up a notch. VSAT (very small aperture terminal)

consists of two parts: a transceiver (the dish

outside in direct line of sight to the satellite) and

a user interface such as a laptop. A small VSAT

setup can cost $4,000 to $10,000 (with dishes

from KVH, Intellian and Sailor) plus installation,

plus usage charges. Expect to pay around

$1.50 for satellite-based voice and around

$1.00-$1.50 per megabyte of data. Dish

domes have been getting smaller (13"–15")

and easier to use so they are no longer the

domain of superyachts. Buying bulk service

plans can save money.

5. Long Range Radio — Boaters still

benefi t from tried and true high frequency (HF)

radio communications. Voice calls, email and

weather downloads are possible via both HAM

and single side band (SSB) radio connections

up to 2,000 miles. For voice over SSB, a

ShipCom account is required. For email, a

SailMail membership ($250) is needed.

The SailMail Association was established

in 1990 by cruisers and maintains its own

worldwide network of SSB-Pactor private coast

stations. You will need a SSB radio like the ICOM

M802, a Pactor modem and a Windows-enabled

computer (Mac will work with Windows-mirroring

programs such as Parallels). With installation, this

setup costs $6,000-$8,000.

Communicating via SSB takes a bit of

practice and can be impacted by propagation

and solar conditions, so having a satellite backup

is advised if you must have regular contact.

SSB requires a ship’s station license and a radio

operator license (no test). HAM, which operates

on different frequencies than SSB, requires the

operator to be licensed (test) and does not allow

business transactions over the airwaves.

Due to its highly effi cient compression

capabilities as well as spam and virus fi ltration,

some cruisers use SailMail over their satellite

systems. Simple email is fi ne but large

attachments will be diffi cult.

There are many ways to skin the cruising

communications cat. A little knowledge, a budget

and an open approach to new technology will

let you wander while you work.

The aroma of burgers wafts through

the evening air; hot dogs and brats

hiss and pop as they near peak

perfection, and the color of peppers on

kabobs become charred as they soften.

What’s not to love about fi ring up the

barbecue after a long day on the water?

Because grills are located above decks,

boaters tend to treat them with a more

cavalier attitude when it comes to safety—

bad move. According to the Insurance

Information Institute, barbecues result

in more than 2,000 fi res, more than 300

grill-related injuries, and at least 3 deaths

annually. Here’s a look at how to keep “the

king of coals” from becoming a barbecue

statistic.

All types of grills—charcoal, liquid

propane gas (LPG) and electric grills—

come with their own pros and cons:

• Charcoal grills can be a challenge

to light but stay lit in even the strongest

winds—a good thing for cooking yet a

minus in the event of an emergency such

as accidently spilling those hot coals.

They’re also messy to use and clean, fuel

storage can be a pain, and you’ll have to

refi ll them during extended grilling periods.

• Gas grills are easier to light, clean, offer

better temperature control, but are more

diffi cult to keep lit in a stiff breeze.

• Electric grills offer all of the above

less the worry about them going out,

yet require a source of AC power, which

means having a generator on board or

dock-only usage.

Prior to installation, determine where

the grill will be used: clamped to the

cockpit railing or use with a fi shing rod-

style mount. Choose a location clear of

fl ammable items so that the grill doesn’t

interfere with hatches, dinghy davits, etc.

If removable, think about where to stow

it after use, and where to safely store the

fuel above decks.

While electric grills also have safety

requirements, the following tips mainly

concern charcoal and gas grills (due to

their use of combustion). Consider these

general, commonsense precautions that

can be applied when using most any grill:

• Read the owner's manual. Find

information on everything from assembly

to safe operation tips. Still have questions?

Don’t be shy—give the manufacturer a

call to clarify. (Write their consumer service

phone number on the manual’s front page

for easy reference.)

• Always grill above decks in an open

area. Barbecue grills are designed for

above deck use in a well-ventilated area.

Never barbecue down below in the galley

or inside an enclosed area, such as the

cockpit with full canvas curtains in place.

In both cases, carbon monoxide can

accumulate with lethal results.

• Securely mount your grill before

use. Ensure your grill is fi rmly mounted

in place and stable. Never use portable,

camping-type grills, which can easily slide

around or tip over. Grills should also be

mounted where people and pets can’t

accidentally come in contact with them.

Never try to move a hot grill. Instead, allow

the grill to become completely cool to the

touch before trying to relocate or stow it.

• Keep it under control. Never leave a

grill unattended during use and always

keep some method of fi re control nearby

such as a portable fi re extinguisher, fi re

bucket (with a lanyard long enough to

reach the water), fi re blanket, etc. A

spritzer bottle of water can help with minor

fl are-ups, but remove food from the grill

fi rst if possible. Cleaning your grill regularly

to remove grease and fat buildup reduces

the chances of fi re and fl are-ups as well.

• Use proper grilling utensils. Use of

long handled barbecue utensils (tongs,

forks, etc.) helps reduce burns due to

pops and splatters.

• Wear grill-safe clothes. No thongs,

speedos or “au naturel” grilling, please.

On the fl ip side avoid baggy, frilly clothes

and loose, billowing shirts or bikini wraps

that can catch fi re.

charcoal starter fl uid. Never use gas from

the dingy jerry can or add charcoal fl uid or

any other fl ammable liquids to the fi re once

started. Charcoal chimney starters allow

you to start charcoal using newspapers,

etc., without the need for starter fl uid.

2. When you’re done grilling, let the

coals cool completely before disposal.

LPG grill safety

1. Most boat grills use small, 16.4-ounce,

disposable LPG cylinders. Always inspect

these for signs of corrosion, dents, gouges,

or other external damage before use.

2. Properly mount the grill outside in a

well-ventilated area before connecting the

cylinder.

3. Always disconnect and remove the

LPG cylinder after use. If the grill is to be

stored below decks, always remove the

LPG bottle before stowing.

4. Store LPG bottles above decks in

a well-ventilated area where escaping

vapors can only fl ow overboard. They

must also be protected from the weather

and mechanical damage. Possible

options include a PVC tube holder or a

non-corrosive bag properly mounted to

the stern railing (well away from the grill

of course).

5. Never lean over the grill when lighting

(or cooking for that matter), and keep the

lid open to prevent fl are-ups from gas

build-up.

The term buccaneer comes from the

French word “boucaner,” to cure or

preserve by smoking. It was used during

the 17th century to describe men residing

on the isle of Hispaniola (now modern

day Haiti and the Dominican Republic),

who subsisted by hunting wild cattle and

pigs. Buccaneer was derived from their

practice of preserving meat by cutting it

into thin strips and smoking it over open

fi res on wooden grills, an idea stolen from

the Carib Indians. “Boucan” was an Indian

word meaning dried meat and campfi re.

The wooden grill used during smoking

was a “barbacoa,” from which comes

Some boats try to be everything for everyone. It

never works, because there are just too many

compromises to meet every possible need. And so

they end up as boats that do nothing effectively. Then

there are boats that know who they are and what

they do well. Let me introduce a perfect example: the

Absolute 40 STL.

Absolute Yachts, which started back in 2002 with

25-footers and then grew into larger yachts, decided

to step back to create a

dayboat, and it’s quite clear

that they started with a

blank sheet of paper. The

40 STL launched a new

Absolute series, the Sport

Line, which first debuted

during the 2012 Cannes

Boat Show. The hardtop

version was presented in

Cannes two years later, but

not until the 2016 Miami

Boat Show did it debut for

the North American market.

The hardtop is beautifully finished with fabric

underneath as well as lighting and speakers. Frankly,

you’d be a dummy not to order this hardtop option

unless you really want to put your dermatologist’s

kids through Harvard. And, since it’s open above the

windscreen, you get plenty of breeze when you want

it, without any of the UV rays. Button up the cockpit in

case there’s a sprinkle on the horizon, with tracks on

all sides for clear enclosure panels.

So, what is a dayboat? Well, it’s a boat meant to

take the whole fam-damily out for a day on the water.

But it’s more than that, because it needs to have

accommodations for at least overnighting, it has to

have a galley and, of course, a head. The Absolute

40 STL is a boat that is as much at home taking a

bunch of your friends for an

evening cocktail cruise as

it is filled to the wales with

laughing kids for a day of

swimming and watertoys.

And when you want to

get away by yourself, it’s

absolutely (pun intended)

perfect for running over to

Bimini for a night or two.

If you were to ask a

group of boating people

for their biggest complaint

about dayboats, it’d be that

everyone, from kids to Aunt Mabel, has to move every

time someone wants to walk around. It’s just damn

inconvenient to get settled and then have to scrunch

up to let someone walk past. Absolute started with the

premise that they wanted to have private areas on a

basically open boat and, when I fi rst saw the drawings,

I was prepared to be scornful—well, perhaps not scornful,

just underwhelmed. And I was oh-so-wrong. This is the

coolest dayboat around, price be damned.

Walk with me here. Get aboard a nicely sized transom

that lowers hydraulically to be a “beach” for your water fun,

and then walk forward on either side past a large—very

large—sunpad with individual backrests that fold away.

Note that you’re not disturbing anyone on the sunpad.

Now walk past a U-shaped dinette and an outdoor

kitchen but, once again, no one has to move because

this lounge and entertaining area is separated by its

own coaming, so you’re walking on a private side deck.

Parental note: This side deck also has high coamings

to make it secure for kids, and there’s a locking gate at

the back.

Enter the cockpit from either side, and no one is

inconvenienced. The helm is on the starboard side

(more on that later) and, if the skipper suddenly wants

to throw out a fender or even dock the 40 STL by

himself, no one has to move.

The private entertaining area consists of a very comfy

wraparound dinette with backrests at just the right height

and angle, all around a table large enough for everyone

to dine. The console to port hides an outdoor kitchen,

which is likely to be well used, since it has a Dometic

barbecue grill, sink and icemaker for drinks under the

counter. Throw some shrimp on the barbie, cubes in the

rum, and let’s party!

About that helm…First, there are two really comfy

seats for skipper and companion with flip-up bottoms

to stand, and the dashboard (black, so it doesn’t reflect

into the windshield) is laid out for maximum visibility.

Centered is a Raymarine monitor and, on each side,

are analog engine gauges right in the skipper’s line of

sight. There are not going to be any, “oh, I didn’t see the

gauge” excuses on the 40 STL. Three rows of rocker

switches are neatly labeled, throttle/shifters are right

where you want them and, since this is a Volvo Penta-

powered boat, it has the joystick control to simplify

docking. Add in great visibility in all directions, oversized

windshield wipers, a teak-planked footrest for bracing,

and you’ve got a pretty nice office for the skipper.

This boat had the Volvo-Penta D6 diesels that turn

through Duoprop sterndrives. Absolute offers pod drives

on some of their other models but, in this one, it makes

sense for several reasons. First, the low engine height

means the cockpit doesn’t have to be raised. Second, they

keep the draft to a minimum and allow for easy beaching.

Last, the Volvo-Penta joystick controls give you effortless

control when docking or maneuvering.

Those D6 diesels (gas and smaller diesels are available)

are adapted from the Volvo truck engines that are darn-

near bulletproof. A hatch in the cockpit allows for the usual

engine checks via a ladder into the engine room.

But wait… didn’t I mention overnighting? I sure did and, if the two of you

can sneak away for a weekend, oh my! A curved companionway hatch gives

plenty of headroom to the spacious cabin with oversized windows that let

in tons of light. The interior on our test boat was a warm walnut and, with a

mix of white mica cabinetry, you could be in a penthouse overlooking the Via

Veneto.

The forward area is filled with a settee wrapping around a dining table, so if

you can’t send the kiddies to the grandparents convert this into a big double

berth (aka play area).

One thing that might be a surprise is a second galley to port. Complete

with a Waeco fridge and a two-burner cooktop, it might seem redundant.

But who wants to cook in front of everyone on the dock? And this is

perfect, with a brushed

stainless steel backsplash for

coffee and croissants in the

morning, or a cup of chowder

at night.

The master stateroom is

just aft, and it’s huge. There’s

full standing headroom where

you need to stand up, and the

angled berth is truly inviting—

big windows in here, too.

The head is equally

appealing, with an enclosed

shower with Lucite doors, and

surprisingly good storage.

I loved the Absolute 40 STL

because it’s an honest boat.

It’s a great dayboat with some

very clever design features, it’s

equally good as an overnighter

for a couple, it’s well built,

stylish, and it barely sips fuel.

An Italian-designed, contemporary motoryacht fi lled with

natural light and lots of social areas and open spaces,

the new Hatteras 70 MY is made for entertaining. With its

iconic Hatteras construction and battleship-strong hull, it’s also

made to take you, and a good number of your friends, just about

anywhere you want to go in safety and comfort.

The combination of modern-but-classic good looks,

panoramic windows, creative use of space, and ocean-straddling

performance could set this Hatteras apart in the world of luxury

motoryachts. But actually, the 70 is the trimmed-down little

sister of the 100 Raised Pilothouse that Hatteras introduced in

2014, with the same lines and features on a slightly reduced

scale. All this is not by accident. “Our motoryachts aren’t like

anybody else’s motoryachts,” says John W. S. Ward, Hatteras

president and CEO. “Our goal is to create a defi nitive family of

motoryachts to differentiate ourselves from all the other players in

this category.”

Much of the sense of being on a much larger yacht comes from

the 70’s 21-foot beam, which opens up the interior while making

the boat more stable both underway and at the dock. And its low

draft of just 4' 6" opens up cruising to The Bahamas, the Keys or

other choice spots where the water is thin.

Living aboard is easy. The yacht has four staterooms, including

a full-beam midships master worthy of a fi ve-star hotel, two

staterooms forward and a private VIP in the bow. Then there’s the

crew’s cabin below, with its own head and work area. (The 70 is

designed to be run by the owner or by crew.) A dayhead is on

the main deck opposite the galley.

Step aboard the 70 from a wide and deep swim platform and

go up five molded fiberglass steps to the aft deck protected by

the extended boat deck above. (Or board the yacht from gates

on each side if the 70 is tied up at a high dock.) The aft deck can

be enclosed, but the evening I was there it was open with a warm

breeze simply begging guests to sit down at the high-gloss teak

table and enjoy a glass of wine or appetizer. The table is mounted

on two stainless steel pedestals, while a molded bench seat

along the transom and three chairs forward can sit six or more

guests comfortably. A bar with sink and fridge completes the

entertaining motif here.

Two sliding doors open wide to the salon and the main deck, all

on the same level as the aft deck. The open, fresh look extends

all the way through the salon and country kitchen to a casual

dining area forward with a large window overlooking the bow and

whatever’s ahead. Simply put, the main deck of the Hatteras 70 is

elegant, sophisticated and filled with light coming from frameless

windows lining both sides and from a creative one-piece

wraparound windshield.

Entering the salon, a low, light-colored, L-shaped lounge with

throw pillows is on the starboard side, with a cocktail table and

club chair completing one of the many social areas on the yacht.

Across on the port side, a 40" dropdown TV dominates a first-

class entertainment center with a home theater surround sound

system and DVD player.

Moving forward, the L-shaped country kitchen is on the

starboard side, with an island countertop bar large enough for

six or eight people. All the open space allows the chef to stay

in touch with everyone on this deck, and guests also enjoy

uninterrupted views in every direction. All the way forward, a

U-shaped dinette surrounded by windows on three sides offers

a casual dining area—a perfect spot for lingering over coffee

in the morning or something stronger at night. There are two

small tables here, with two extra chairs.

A pantograph door on the starboard side by the galley

opens to the wide, protected side decks and to the bow,

where another social area with three large sunpads is

nestled up in front of the window

above the dinette. Additional bench

seating, port and starboard, can hold

even more guests.

below from curved stairs on the port

side opposite the galley, where there’s

enough extra space for half a dozen of

your best friends to sleep over—if you

so desired—then enter the luxurious

master stateroom turning aft. Cedar-

lined storage is under the king-sized bed as well as in the

walk-in closet. With an all-white countertop and two sinks, the

master head is light, contemporary and upscale. An all-glass

door opens to the shower, which features a marble bench seat.

Two guest cabins are forward across the hall from each

other. The one to port features two single berths, while the

one to starboard offers a full-sized berth. Both cabins share a

head with shower on the starboard side. All the way forward, a

large VIP stateroom takes advantage of the wide beam in the

think my favorite spot on the new 70

is all the way up top on the flybridge,

which is protected by a standard

fiberglass hardtop. The helm is offset

to starboard a bit, with two 15" Garmin

touchscreen displays, a systems

monitor and other electronics. Two

matching, adjustable helm chairs

promise comfort and great views. Just aft of the helm is

a wet bar with three stools, a fridge and icemaker. On the

port side, a U-shaped lounge with a high-gloss teak table

awaits guests for cocktails or casual dining. There’s a large

cabinet with a single electric grill behind it. All the way aft

two lounges beckon guests for sunning or relaxing. If this

area is used as a boat deck, you can mount an optional

1,500-pound davit here.

Ever since Willis Slane, a dedicated marlin fisherman,

built the first Hatteras in 1959 to tackle the turbulent waters

off Cape Hatteras, the company has earned a worldwide

reputation for producing tough sea boats. The 70 is laid up

with a solid fiberglass hull, resin-infused hull bottom, and

synthetic foam core in the stringers, bulkheads, hull sides,

and decks. The hull itself is convex to reduce pounding.

Hatteras president Ward intends to take advantage of

that seagoing heritage by getting people on board the

70 and other new boats in rough conditions, so he has

opened a new sales center with slips at Pier Sixty-Six in Fort

Lauderdale, Florida. “If they go out on a rough day,” he says,

“we think they’ll buy the boat.”

Next up for Hatteras: A new 90 motoryacht, with the same

lines as the 70 and the 100. No doubt she’ll be just as tough

and chic, but decide for yourself—she’ll be ready for the 2017

Miami International Boat Show.

Hidden from the endless tracts of condo developments

and the annual migration of college students to the

Emerald Coast of Florida are rustic boating towns

and fi shing villages seemingly out of reach from the crowds.

Somehow having managed to retain the old school charm

of Florida's Gulf Coast from the 1960s and 70s, these towns

revolve around their quiet beaches, marinas and dockside

restaurants. Fried conch fritters and grouper baskets are served

up with salty charter captains telling tall tales, while a Jimmy

Buffett wannabe plays for tips and a bartab.

People on the Gulf Coast were some of the fi rst to adopt the

sugar sands and warm emerald cruising grounds of the Florida

Panhandle for their vacation destinations, and the nostalgic love

for the “old Florida” with her rustic waterfront dining and quiet

walks along the Gulf of Mexico's sugar white sands still resonates.

The 70s and 80s were the early heydays of development on

this coast with the fi rst major condo developments exploding

in Pensacola and later in Destin and Panama City. Today, the

Panhandle is largely an expanse of homes and beachfront

condominium towers whose height has been known to create

micro-climates of fog by forcing moist tropical air from the Gulf

into the cooler levels of the atmosphere.

The Florida of yesteryear still exists, but one has to cruise a

bit farther to escape the endless tracts of mini-malls and chain

restaurants to just east of Panama City, where the charming

towns of Mexico Beach, Port St. Joe and Apalachicola seem

to have held onto rustic, old Florida. Home to charter captains

and oystermen that fish the still pristine waters of St. Josephs

and Apalachicola Bay, their Florida is likely the one that Jimmy

Buffett still dreams about.

The St. Joe Company, a lumber developer, owned much

of this land known as the Forgotten Coast—and still does.

Apalachicola was founded in 1831 and is still filled with the

mossy oak trees and the Southern architecture common

throughout historic Gulf Coast towns like Ocean Springs,

Mississippi, or Fairhope, Alabama. Mainly familiar as the

farthest town east marked under hurricane watches for the

northern Gulf Coast, Apalachicola and the Forgotten Coast

are coming alive as a refuge for those seeking activities

beyond lying on the beaches in the sun and listening to classic

rock. Those who head this way prefer to spice up their time

with water sports, fishing and strolls through historic and

charming towns, away from traffic, the bustle of fast food

joints and loud bars.

Bookended by Mexico Beach with her beachfront cottages

and the stately homes on the windswept barrier island of St.

George—recently ranked as the 3rd most beautiful beach in the

U.S.—the clear waters of St. Joseph's Bay are home to one

of the most unique and unknown activities on the Gulf Coast:

bay scalloping.

After long afternoons swimming in the Gulf

for scallop feasts on the beaches or back

porches with most lightly breaded and

seasoned and then flash-fried in what has

become a time-honored cultural institution

on this stretch of Florida's coastline.

Similar to an oyster in that it is a mollusk,

bay scallops are more muscular because

of their ability to actually swim—their meat

is lean and firm. They have a very delicate,

sweet flavor and as such, cooking

methods should be light. More inventive

dishes have been making the rounds in

the past decades with scallops served in

ceviche or lightly broiled and served in

beautiful salads and even sliders.

As delectable as bay scallops are, the

famed Apalachicola Bay oysters are the

real stars here on this stretch of the Florida

panhandle. Boss Oyster, Up the Creek and

the Sunset Grill offer up these delicacies that

for pennies on the dollar fresh off the bay, chilled and pulled straight off the luggers.

Saddle up to the St. Joe Bar & Package Liquor for a unique, age-old, local’s haunt

or the Haughty Heron for fine wine and cocktails in the Port St. Joe Marina—be sure

Hainan Spring Cocktail1 cup gin

½ cup ginger liqueur (or ginger

syrup)*

½ cup lime juice

Tonic water

Mix gin, ginger liqueur and lime juice in

a pitcher and stir. Pour over ice into four

tall glasses. Add tonic water. Garnish

with a slice of lime or cucumber.

*Ginger syrup: heat 1/2 cup sugar and

1/2 cup water with 2" peeled chopped

ginger on stovetop on high until sugar

dissolves. Let cool, strain out ginger, use

as replacement for liqueur.

Spicy Chinese Cucumbers3 tbsp. soy sauce

3 tsp. vinegar

¾ tsp. sesame oil (or peanut or

vegetable oil)

¾ tsp. chili sauce (other options: ½

fresh red or green chile seeded and

thinly sliced, or ¹⁄8 tsp. crushed red

pepper)

½ tsp. sesame seeds or ¼ cup chopped

nuts

¼ cup chopped scallions

2 medium cucumbers, halved

lengthwise, seeded and thinly sliced

Combine soy, vinegar, oil, and chile in a

bowl. Add cucumbers and toss. Sprinkle

with seeds, nuts and scallions, then serve.

Hainanese-Style Chicken RiceGinger Sauce:

2" piece fresh ginger minced or 2

tbsp. jarred minced ginger (not dried

powder ginger)

6 scallions fi nely chopped

¼ cup vegetable oil (or peanut oil)

2 tsp. salt

Mix sauce ingredients and let marinate

while the chicken cooks. In a medium

heatproof bowl, combine the scallions

with the ginger and salt. In microwave,

heat oil for 1 minute. Pour hot oil over

scallions and ginger and stir to combine.

Chicken:

1 whole cut-up chicken or 3-4 lbs.

boneless, skinless chicken breasts

2" piece of fresh ginger, peeled and

chopped or 2 tbsp. jarred minced

ginger (not dried powder ginger)

2 scallions chopped

2 tbsp. minced garlic

1 tbsp. salt

1 tbsp. sesame oil (optional)

Rub chicken pieces with salt and immerse

in pot with water. Add ginger, garlic,

scallions, and remaining salt. Bring to a

boil, turn to low, cook for 30 minutes. When

cooked, take out chicken. Drain broth from

pot into a container and set aside.

Rice:

2.5 cups uncooked rice

5 cups reserved chicken broth

2 chopped scallions

1 tsp. peanut or vegetable oil (sesame

oil is too strong)

2 tsp. salt

In the chicken cooking pot, add oil and

sauté ginger and scallions on medium

low until fragrant. Stir in the rice, reserved

chicken broth and salt. Cover and bring

to a boil. Reduce heat to medium-low,

and cook 20 minutes undisturbed. Take

off heat, and check rice; if undercooked,

add a little more broth and cook a few

minutes longer. Turn off heat and add

chicken back into the pot of rice to warm

up.

To serve:

Sliced tomato and onion or steamed

Asian greens

1 cup chopped scallions

Soy sauce

Sriracha or other favorite hot sauce

Spread rice evenly on a large platter and

put sliced tomatoes and onions around

the edge. (You may also alternate with

microwave steamed Asian greens.) Top

with chicken and scatter scallions over

platter. Serve small bowls of ginger

sauce, soy sauce, hot sauce, and the

bowl of Chinese cucumbers.

de Indias (CCCI) and International Council

of Marine Industry Associations (ICOMIA),

the congress delves on programs such

as Doing Business in Colombia, Charter

Destination and Fractional Ownership,

After a successful 10-year run on

CBS-owned South Florida station WQAM,

the popular Weekly Fisherman Show found

a new home and a new owner, Nautical

Ventures Group (NVG). The company

acquired the rights to the show after

longtime hosts, radio DJ Eric Brandon and

Sun Sentinel outdoors writer Steve Waters,

approached NVG CEO Roger Moore with

the idea. “I’ve been a steady listener of

the show and have witnessed its listening

audience grow over the years,” said Moore,

an avid boater, fi sherman and occasional

guest of the show. “Simply put, it’s the

go-to show for fi shermen who want the

intel on what’s biting and where they’re

biting from Stuart to the Keys.” The show’s

two-hour format consists of live calls by

celebrity captains who share their local

fi shing knowledge on what should be biting

for the next several days and how to catch

those fi sh. Listeners also call in to quiz hosts

on up-to-the-minute tips, techniques and

home, 940 WINZ, Miami’s Sports Station,

The National Marine Electronics

Association (NMEA) introduces a new

marine electronics course designed for

boaters. The course, the NMEA 0400

General Overview, provides highlights of

NMEA’s 0400 installation standard and

general knowledge and understanding of

common marine electronics installation

and operational procedures. NMEA

President and Executive Director Mark

Reedenauer, said the course is intended

for technically oriented boaters who

would like to apply the NMEA 0400

guidelines to installations they perform

on their own vessels. “As the boating

industry and electronics technology are

changing rapidly and becoming more

plug-and-play, we all know that end

users are installing their own marine

electronics,” said Reedenauer. “NMEA

is taking the approach of educating

technical end users by providing them

with information on properly installing

specifi c pieces of marine electronics in a

basic installation. This includes installing

displays, antennas, transducers, and a

basic NMEA 2000® network. If an end

user gets into a situation that is over his

or her head, the NMEA technical installer

base is there to help.”
