WHAT’S THE FIRST THING that comes to

your mind when you think of the month of

July? For me it is two important birthdays—

my daughter’s and my Mom’s. Fireworks and

our great symbol of freedom, the American

flag, are not far behind though.

July is so great because it really does

smack of Americana. Baseball is everywhere.

Our flags are flown proudly and summer is

in full swing. Images of kids dripping with

ice cream while they try to save that cone

and Dads out by the grill cooking up the July

4th holiday fare swirl around in my mind—

and I am grateful. Grateful that we live in

this country where we value independence,

freedom and a way of life filled with tradi-

tion passed from generation to generation.

No matter how you choose to spend the

fourth of July, I hope you will take the time

to enjoy the freedom to have that choice.

In this issue, we have some suggestions for

He has slowed his steps somewhat, perhaps to match the

steps of the one he is protecting and keeping company.

Dr. Mary W. Speed is a licensed therapist and consultant.

AS PART OF the process of purchasing more

life insurance, I was asked questions—

annoying ones—do you take vacations? How

often do you take vacations? How long are

your vacations? Answers: Yes, three times a

year, 5 days (two of which are travel to and

from days).

Vacations are hard for me. I don’t know

why we have to take them or why life insur-

ance people think that taking a vacation is

a factor in mental health. I’m lying. I know

why vacations are important. And, actu-

ally ask my clients similar questions. Work

can be a vehicle through life or a dead end.

Changes of pace, people, places, things can

be therapeutic. Like one person said, “A

change is as good as a rest.”

I imagine that many of the readers of this

column are industrious, tenacious and find

it hard to take time off. To be weaned from

working too many hours and too many days,

I suggest taking breaks of a few hours, then

a day, then another day. From where we live

in St. Tammany, a wide range of day trips are

possible. One may go to the coast, the city or

deeper into the country.

What you may learn is that the change

of scenery makes you better able to enjoy

your life and have a fresh perspective. Also,

somehow I don’t know how it is possible but

your work does manage to survive and (gulp)

thrive in your absence.

When you are on your way to wherever it

is you are going and panic sets in, breathe

in and repeat, “ I love my life. I love my life. I

love my life.”

KATRINA, RITA, GUSTAV and Ivan are names

we are all familiar with. In any type of disas-

ter, not just hurricanes, one should take a

look back and see what went right and what

went wrong so that we may learn from it.

Since hurricane season is here again, this is

a good time to take a look back and prepare

ourselves and pets for another season.

The biggest problem in Katrina was that

people left with the expectation that they

would return in a day or so when it actu-

ally took weeks or months before people

could return home. Another major problem

was lack of adequate supplies and animal

identification. Proper housing and transport

was another issue. These mistakes give us an

idea of how to prepare for the next time.

When possible, the most important thing

you can do for your pets in the face of an

impending disaster is to take them with

you. Take the time now to prepare a disaster

plan so you can. The American Veterinary

Medical Association has a valuable website

at www.avma.org/disaster. You can also

stop by your veterinarian’s office and pick

up a copy of Saving the Whole Family, which

is the AVMA’s disaster guide publication.

The information found on the website and

the guidebook will help you properly plan

for a large scale evacuation with your pets

and livestock.

In addition, please make sure that you have

proof of ownership, your pets have proper

identification and current vaccinations and

that you have proof of their vaccinations.

Medications, transport cages, food and water

are other items you need. A pet-friendly des-

tination is also important to have in mind.

It is still relatively early in what we hope to

be a quiet hurricane season. Please remem-

ber your pets and livestock when making

your preparations. Take the time now to

avoid a disaster later.

TRYING TO FIGURE OUT what to do with

some of these long lazy days of summer? We

are so blessed to be surrounded by natural

beauty and have access to a corridor that

leads to so many wonderful nooks and cran-

nies in the South.

On the Northshore alone, you can explore

an ancient lighthouse, bird-watch at a

selection of pristine state parks and bike

through the parish at your own pace on the

Tammany Trace. Local farmers bring their

wares every weekend to farmers markets

both in Mandeville and Covington. Drive a

little north towards Bush and you will find

a couple of places to pick fresh blueberries.

Take some scenic back roads and you will

find flea markets and antique shops smat-

tered about.

There are plenty of places to take a little

day trip, though. New Orleans is less than

an hour away. Hop on River Road and get an

eyeful of the beautiful history and architec-

ture of historic antebellum Louisiana. Keep

driving and you will hit our state capital,

Baton Rouge, where inside the Capitol build-

ing you can actually see a hole from a

bullet meant for Huey Long. The sight of

the majestic Mississippi is breathtaking

from the Capitol balcony. Our state mean-

ders on through Cajun Country in Acadiana

where hospitality, good food and the Cajun

culture wrap around the natural beauty of

swamps and cypress. If you head southeast

of Lafayette, Avery Island is tucked away and

filled with tropical gardens.

If you want to feel some sand between

your toes, try the Gulf Coast. Many of the

beaches are still open despite the seeping oil

and you can reach the panhandle of Florida

in about three hours. On the way through,

visit historic Mississippi filled with beauti-

ful estates, antique shops and beaches of

its own.

Step back in time in Natchez, MS, just

two and half hours north of Mandeville. In

Natchez, you can take a horse drawn car-

riage ride through town and enjoy the quaint

cottages interwoven through the community.

The ladies can peruse the antiques district

while the gentlemen hit the golf course.

We are indeed spoiled by the beauty of

our own community and the easy access

we have to so many neighboring ones.

What better time to explore them all than

right here, right now, right in the middle

of summer.

Relieving Pain at its Source“T

he most important aspect of providing a patient with eff ec-tive relief from chronic pain is a precise diagnosis of the

source,” states Dr. Mohamed Elkersh. “An accurate diagnosis can spare a patient years of ineff ective treatment, and point the way toward the right treatment to bring the greatest relief.”

Dr. Elkersh explains that chronic pain is discomfort that persists for more than six months after an injury has healed or an illness has been resolved. Medication and even surgical care has not relieved the pain.

“Chronic pain impacts every aspect of a patient’s life,” he points out, “ and it is a serious problem. The American Academy of Pain Medicine reports that approximately 76.5 million Americans are aff ected by chronic pain. It is the most common reason cited for missed work and costs our economy more than 100 billion dollars every year in lost produc-tivity and medical care.”

Comprehensive TreatmentThe Advanced Pain Institute incorpo-

rates both neurology and interventional pain medicine procedures to provide its patients with a multidisciplinary treat-ment program. Providers at the Institute use a variety of approaches to bring their patients relief from pain, beginning with the simple act of carefully listening when they fi rst come in.

More advanced interventional pain relief procedures range from therapeutic spinal injections, nerve ablation, spi-nal disc decompression, vertebroplasty and kyphoplasty–all accomplished with minimally invasive techniques––to the placement of spinal cord stimulators that mask pain signals and intrathecal infu-sion pumps for the treatment of chronic pain and spasticity.

“We can help a patient no matter where the pain originates,” assures Dr. Zapata. “Migraine pain; spasticity secondary to spinal cord injury and multiple sclero-sis; cancer pain; diabetic neuropathy; arthritis; and facial, abdominal, or pelvic pain are among the many conditions that can be controlled with the customized approaches off ered at Advanced Pain Institute. “Patients should never have to suff er with uncontrolled chronic pain.”

EYE FLOATERS are small dark shapes that

appear in your vision and can move with

eye motion. Vitreous floaters are common

with age, nearsightedness, diabetes and after

cataract surgery. Floaters can be seen when

looking at something bright, such as a blue sky

or white paper. Many patients are concerned

when they see spots in their vision. Patients

complain that they notice one or more black

spots in their visual field. Other presentations

can be cob web or hair-like particles.

Many vitreous floaters are the result of

bits of cells that remain in the vitreous

humor and are more noticeable as the vitre-

ous liquefies later in life. The vitreous is a

gel that is about 99% water and one percent

solid elements. The solid elements form the

floater. While some floaters are normal, it is

important to have a dilated fundus exam by

your eye doctor if you see floaters in your

vision. Increased floater activity could be the

result of a posterior vitreous detachment,

retina problems, inflammation, infection

or hemorrhaging. A vitreous detachment

happens when the vitreous framework col-

lapses and the vitreous separates from the

retina. Vitreous detachment occurs in less

than 10% of people under 50 years old and

in 60% of people over 70 years old.

Other symptoms that may occur with float-

ers are flashes of light. This usually indicates

traction or pulling of the vitreous which is

common with aging. For people who have

floaters that are simply annoying, no treat-

ment is recommended. In some situations,

floaters can be so dense that they significant-

ly decrease a patient’s acuity. In these cases,

the vitreous gel may have to be removed.

a natural-looking restoration that beauti-

crown, veneers or filling virtually undetect-

able. This new technology will eliminate the

need for impressions, temporaries, second

appointments and waiting on the perma-

nent restoration to return from the lab.

The new advancements in porcelain materi-

als have allowed these restorations to rival our

traditional porcelain fused to metal standards.

Gold is still the standard but these newer, life

-like materials are the next best alternative in

a society that is heavily focused on esthetics.

With this newer standard, minimally invasive

HERPES IS A VIRUS that is best known for

the sores and blisters that appear around the

genitals or lips at site where the virus entered

the body. The two types of herpes virus, HSV

I and HSV II, can be found any place in the

body. It is spread through close contact, like

kissing or touching but most often during

sexual activity. It affects one in five adults

in the United States, many of whom do not

know that they have it.

The virus passes through a break in the skin

or through moist membranes, like those that

cover the genitalia. The body’s natural defens-

es fighting the virus actually cause sores,

blisters and swelling to occur. Symptoms can

include burning, itching or tingling where the

virus initially appears or re-appears. Also pain

in the lower back, buttocks, thighs or knees. A

few hours later, sores will appear.

Herpes is spread through oral, genital

or anal contact. Condoms may not protect

against herpes as the lesions may not be

covered by the condom. It is also spread to

other body parts by simply touching a sore

then touching another unaffected part of the

body (mouth to genitalia or mouth to nose).

The virus can survive a few hours outside

the body but there is no proof that it can be

picked up from toilet seats or other objects.

People cannot always tell when they are

having an outbreak. Symptoms often mimic

recurrent yeast infections but are actually

recurrent herpes outbreaks. Therefore, educa-

tion and awareness are important.

Herpes is a source of concern and dis-

comfort but awareness can promote pre-

vention, help patients cope with the virus

and help prevent its spread. There is no

cure but medication can ease the symptoms,

promote healing and help prevent its spread.

WHEN DIANE KIMBELL AND KANDYL DOMANGUE first met, though

they were both in the medical field, they had no idea that they would

one day be professional partners. Diane was working in the field

issuing medical credentials, and Kandyl was about to open her own

occupational therapy clinic. When they crossed paths as medical

professionals, they befriended one another and learned that they

were each in the process of making new discoveries about digestive

health and how it affected both their own lives and the lives of many

of the patients they helped every day.

Diane tried for nearly eight years to get relief from her digestive

health problems. Plagued with crippling irritable bowel syndrome,

she would literally try any remedy she found in hopes that one

would be the cure. Even the doctors she worked for could not seem

to find answers. Among her many health issues, Diane’s skin was

covered with eczema. It covered her eyes and arms. She learned

about colononic hydrotherapy during a trip to a local health food

store where her friend Robin suggested she try it.

Diane traveled nearly four hours to get to the facility but it was well

worth it. Once she started her colon therapy regimen her digestive

and skin problems subsided along with all of the symptoms she had

once been forced to endure. During this time she met Kandyl, whom

she was working closely with to open her OT practice. Kandyl was

independently learning about digestive health and colonics and how

it tied into her patients’ needs. When she heard about Diane’s success,

she decided to tag along and have her own session. She was sold. “I

instantly felt clean, internally lighter, rejuvenated and full of energy.”

Kandyl realized that as an OT, she helped many people repair exter-

nal ailments but she did not really address their internal health. It

was the desire to help heal the whole person that lead her to explore

digestive health issues. “So often, vague symptoms of illnesses will

subside after the body is cleansed and toxins are removed. When you

have a cleansed system all nutrients are absorbed into the body at

optimal levels, promoting better overall health.”

The ladies collaborated to bring colon hydrotherapy to the Northshore,

so people could experience its countless benefits without having to

travel so far. After colon therapy training in Arkansas, they came back

as certified colon therapists and AloraCleanse was born.

60 physicians, and the ones she consulted could not seem to find

she led nothing close to a normal life. She learned about Colon

Hydrotherapy on one of her many trips to a local health food store

where her friend Robin, who worked there, suggested she try it.

Diane traveled nearly four hours to get to the facility but it was

well worth it. At last she found a remedy that truly worked for her.

Once she started her colon therapy regimen her digestive and skin

problems subsided along with all of the symptoms she had once

been forced to endure. During this time she met Kandyl, whom

clients are placed on a “Chi” machine which gives the body a little

jiggle to help relax the colon. An abdominal massage helps to relax

the abdominal muscles and the infusion begins.

Several factors contribute to poor colon health. However, failure to

properly hydrate ourselves and under-

chewing our food are two of the

biggest causes. “We tend to do all of

our celebrating around food. We also

eat because of stress and sometimes

we do not even sit down for meals,”

Kandyl says. “All of this, coupled with

heavy intake of caffeine which is a

diuretic, leads to dehydration. We

need to drink water and eat fiber to

help keep our colons healthy.”

Diane’s philosophy on life has always been, “Live life to the fullest.”

Thanks to her finding the remedy she says changed her life and put

her on this path, she is now able to do so. She credits her husband

Robert with giving her the confidence to follow her dream and start

her business. She has a love of the Northshore having grown up in

Slidell. She and her husband and their four children like the family

friendly, close-knit community atmosphere this area provides. “This

area has so much to offer us as a family. There is always something

going on where we can bring the kids and spend time together.”

Kandyl is originally from Houma and has spent time in the Carolinas,

but now calls Madisonville her home. She says the best advice she’s

ever gotten is to take time each day to do something nice for yourself.

She and her husband Chad recently put down roots here with the

opening of his interventional pain management practice. “We knew

we wanted to come home and we chose this area because it was so

clean and beautiful. I love it here, especially the shopping in Covington

and Mandeville.” Her favorite hobby is painting oil on canvas with a

good glass of wine.

In the next five years, both Diane and Kandyl hope to expand the

business to other locations and maybe even teach classes to certify

new therapists. In the meantime, they want to let people know that

the benefits of hydro colonic therapy can range from clarified skin

to improved levels of energy and possible reduction in symptoms of

medical issues. “We know that people are benefitting from the service

Behind the Scenes: EW Photo ShootA lot of time and attention goes into making our cover shoots as fabulous as the women themselves. Photographer Tom Ballantine started documenting the day at the salon to give our readers a peek into the day of a cover model.

Enterprising Women Kandyl and Diane were treated to pampering for the July cover shoot. Bruce Amoroso of Salon 300 in Madisonville freshened and styled the women’s hair before moving on to the cover shoot.

Meanwhile, photographer Steve Randon prepped the location at the Covington Arts Center. When the ladies arrived, they were treated to long stemmed roses and a bottle of wine to help make the afternoon relaxing and fun.

PharmD, and George B. Muller, BS, RPh, have

become an integral part of the Madisonville

community. Madisonville Drugs and

The pharmacy, which opened in 2000,

is the culmination of Kristian’s dream to

become a pharmacist. His partner, George,

area of compounding. Compounding involves

mixing drugs into different forms; from a

pill to a liquid or topical cream. Many people

MENOPAUSE IS NOT a single point in time but

rather an evolving process that takes place

during a women’s entire reproductive life. It

is a transition that can start in the mid 30s. If

you’re in your 30s and experience symptoms

of hormone imbalance, listen to your body

and investigate further. The underlying cause

of symptoms is hormone imbalance.

Pre-menopause, the PMS years, is the first

stage of menopause. Women in their 30s

should have fairly regular cycles. Increasingly,

younger women do not ovulate regularly. This

can be linked to contraceptive use, a stress-

ful lifestyle and dieting. Women in this age

group have many PMS type symptoms. These

are warning signs of hormone imbalance and

should be addressed. Most of these women

are Progesterone deficient.

Peri-Menopause is the second stage of

menopause. In the years approaching meno-

pause, erratic cycles can occur because of

fluctuating estrogen and progesterone levels.

These are sometimes referred to as roller

coaster years. Symptoms such as mood

swings, hot flashes, foggy thinking, weight

gain and low libido are common. Success in

symptom relief can only be obtained by bal-

ancing hormones.

Post-Menopause is the final stage.

Menopause is defined as the absence of

periods for 12 consecutive months. At this

point Estrogen levels have dropped by 40 to

60%. Without ovulation, Progesterone levels

drop to almost Zero. Testosterone levels drop

also. Menopause is often referred to as an

Estrogen deficiency state, and while true, it is

often marked by too much Estrogen in relation

to Progesterone. Again—hormonal imbalance.

Studies have shown that prolonged estro-

gen dominance can result in uterine fibroids,

endometriosis and thyroid dysfunction.

WHEN WAS THE LAST time you visited

your garden at night? Peace and seren-

ity are easily found in the evening garden.

Daytime’s vibrant splashes of color give way

to the purity of all things white and pale in

color. Fragrances barely noticed in daylight

intensify in the cool, moist, evening air. The

earth even has a different scent and night-

time sounds are never heard when the sun

rules the sky.

Enter the moonlit paradise and surround

yourself with fragrant plants such as lemon

verbena, night jessamine, plantain lilies or

Asian lilies, honeysuckle, white petunias,

creeping thyme, apple mint, lavender, rose-

mary or summer savory. Some of these

emit their fragrance through their blossoms,

while others will release their scent through

the leaves and stems. Planting herbs near

the edges of garden areas so they can be

touched is a wonderful way to encourage

scented walks through the evening garden.

Fauna is also dramatically different at night.

In Louisiana, evening will always be filled

with the chirping of crickets or katydids and

the cries of frogs. Seeing the electric, green

tree frogs is a treat. Hearing their cacophony

is like attending a symphony. Near lighted

areas you will see the aerobatics of many

varieties of moths and maybe witness their

quick demise as the flesh colored geckos go

about their evening activities.

If mosquitoes seem to be a problem in

your area, check with your local nursery for

some of the many exotic plants that love to

feed on flies and mosquitoes. While many

are not the most beautiful, they sometimes

will surprise you with exquisite blooms.

These blooms are intended to attract a

variety of insects but I guarantee they will

attract much human interest as well. Some

of these—like the night blooming cereus—

only bloom in the evening.

Don’t be surprised if you find yourself sur-

rounded by flashes of red eyes—raccoons love

to spend the evening scouting the yard for

anything edible. You may also catch a glimpse

of a white tail here or there—maybe a bunny

or a deer! Seeing a lunar moth is a real treat

but just drinking in the sweet breeze under

the star-lit canopy of the evening sky is a

great way to find true peace and relaxation.

Turn off the TV and let Mother Nature be your

entertainment tonight!

CONTEMPORARY ORTHODONTIC treatment

has many goals including improved func-

tion, more stable positions of the teeth, an

improved bite, a more pleasing smile and

improved facial esthetics. The current trends

in orthodontic treatment strive to accomplish

these goals without the extraction of teeth.

While this conservative approach is almost

universally preferred by the patient and ortho-

dontist alike, it does not always accomplish

the treatment goals—most notably, improved

facial esthetics.

For patients with substantial crowding

and difficulty closing their lips around their

teeth (protrusion) the removal of upper and

lower bicuspids is the treatment of choice.

The space created by the removal of the

teeth allows the orthodontist to correct the

crowding while at the same time moving the

upper front teeth into a more advantageous

position esthetically. The patient benefits

not only from the improved smile but the

improved facial esthetics as well.

However, in some instances, the extrac-

tion of teeth can be quite detrimental to the

patient’s profile. For example, patients with a

small lower jaw and minimal crowding will

have a negative esthetic impact if teeth are

removed. As the front teeth move back, the

lips lose support and the patient develops a

“dished in” or concave profile.

When planning orthodontic treatment,

the impact to the patient’s facial esthetics

must be accounted for. A beautiful smile in

conjunction with improved facial esthetics

is an overwhelming success for both the

patient and the orthodontist.

From a Member’s Perspective…I HAVE BEEN a member of the Chamber representing

different financial institutions for many years. I have

always felt that the Chamber represents our commu-

nity with the utmost integrity and helpfulness. This is

justified by the wonderful staff of Lacey and her team.

They are always willing to help a new family or busi-

ness in our area. They welcome them like family.

Over the years I got involved in many committees.

What a tremendous way to network and help the

community. My latest passion is the Small Business

Advisory Council (SBAC). I chose it for two reasons.

One is that the SBAC represents the small business-

person. And I felt with my banking experience I could

help the new business navigate through whatever

bureaucracy they ran up against. My personal reward

for this is watching their dream small business own-

ership come true.

Second, I am extremely proud of how our commit-

tee presents educational opportunities to our youth.

As an old sandlot coach for many years, it is fulfill-

ing to watch children grow into great adults under

our tutelage. I have always felt that our youth is our

legacy, spirit for the future growth and leaders of our

parish. That has been also very rewarding for me.

These are a few reasons why I am a loyal and active

Chamber member.

Get Hurricane ReadyHURRICANE SEASON is well underway and meteo-

rologists predict it will be considerably active this

year. Please take the proper precautions necessary to

protect your family and property. In case of evacua-

tion, remember to bring any loose objects indoors to

prevent them from becoming projectiles.

Be prepared. Have a plan ready and even written down

that you will put into action at the proper time. Gather

all you need early and inform others if possible where

or how to reach you during or after the hurricane.

are well prepared and will keep you up to date. If you

with special needs during a hurricane event, it is

Dear Citizens of Slidell…AS I WRITE this letter, I am preparing to take the

office of Mayor of Slidell, a commitment that I take

quite seriously. I am grateful to each and every one

of you who has who has entrusted me with your

vote and I promise to do my best on a daily basis to

serve our city. As has always been my policy, my door

remains open to every citizen who wishes to discuss

your concerns regarding our city and to express your

vision regarding Slidell’s future.

It has been my honor to have served as Slidell Police

Chief for the past eight years and to have worked

side by side with Slidell Mayor Ben Morris. Together,

we have weathered some of Slidell’s greatest chal-

lenges, most notably those following the devastation

wrought by Katrina. Together, we have also celebrated

every triumph over adversity as we moved forward

in our recovery. We were blessed to have been sur-

rounded along the way by the many city employees,

citizens and volunteers who all shared our belief that

Slidell could not be defeated by Mother Nature.

Though we have come so far since that time, we

realize that we still have much to accomplish. Please

rest assured, too, that we are now more prepared than

ever before for this hurricane season and all that it

may bring.

In closing, I would like to take this opportunity to

personally thank Ben Morris for his outstanding com-

mitment to the city and to his remarkable legacy of

public service. Our city is a better place as a result of

JULY IS NOT THE best month for outside

entertaining yet, we still insist on hosting

picnics, family reunions and BBQ’s. I have

always thought we in south Louisiana do this

because of hurricane season, you know, kind

of like thumbing our noses.

I am of the opinion that if the tempera-

ture outside is actually hotter than the fried

chicken, then we should be indoors. There

are those that will think this is heresy. So I

propose the following recipe to ease one’s

conscience.

July Cheesecake (I know, a self-indulgent

name but it is my column).

Secret Tip: you can substitute fat-free cream

cheese and graham crackers without losing

any of the spectacular taste. I only use those

when I bake it!

Ingredients:1 cup of graham cracker crumbs

3 tablespoons sugar

3 tablespoon butter- softened

2 ½ pounds (20 ounces) cream cheese

1 cup sugar

3 tablespoons flour

1 tablespoon each pure vanilla and lemon

extract

1 cup (8 ounces) sour cream

4 whole eggs at room temperature

Topping:1 cup each sour cream and sugar mixed

Red, White and Blue

Mix 2 pints of fresh strawberries or blueber-

ries with 1 to 2 tablespoons lemon extract

and 1 cup of sugar. Refrigerate overnight.

Add as much or as little sugar as you like.

Procedure:Preheat oven to 325°

Mix crumbs with butter and with 3 table-spoons sugar

Press lightly into bottom of pan

Bake in oven for ten minutes.

While crust is baking, beat cream cheese, 1 cup sugar, flour on medium until well blended

Add sour cream and mix well

Add eggs, one at a time and mix on low each until just blended

Pour batter into crust

Bake for 70 minutes or until center is almost set

(Secret Step—mix one cup of sour cream

with one cup of sugar, pour over cake right

before cake is completely baked. Finish baking

cake. You can then turn off oven leaving cake

inside with door closed for ten minutes)

When the cake is finished baking, run a knife

or spatula around cake to loosen edges; cool for

at least four hours before serving. This recipe is

best when baked the day before serving.

Top with either strawberries and blueber-

ries for a true Red, White and Blue treat for

the Fourth! Makes 16 servings.

So as we step into June, let’s remember Dad and all those

who have played an important role in our lives.

THE CURSE OF CASTE OR THE SLAVE BRIDE by

Julia C. Collins is the first novel written by an

African American woman. The edition that I

read is a novel as well as a collection of essays

and commentaries by researchers.

Like many other authors of the time, Ms.

Collins presented

the story as install-

ments, published

in a magazine.

They were written

during a pivotal

year in American

history—1865—the

end of the Civil War,

Lincoln’s assassina-

tion and the abolition of slavery.

The story involves a mixed race woman

(Lina), owned by her future father-in-law,

who after getting married and finding happi-

ness, dies in childbirth. Her daughter, Claire

is reared by a servant, Juno. The story is an

historical piece set in both New England and

in Louisiana. The characters in the story are

forced to cope with family and racial prob-

lems; problems that resound with us almost

150 years later.

Julia Collins died of consumption (T.B.)

before completing the novel, so the research-

ers devised both a happy and a tragic ending.

These endings give the novel closure and make

the read more satisfying. One is left wondering

which ending the author had in mind.

I enjoyed the book’s essays even more

than the novel itself, because the essays are

about vital, timeless topics. One of my favor-

ite quotes from an essay I remember is, “It is

good to read, but better to think.”

For students of history and literature of

the 1800s, this body of work is especially

fascinating.

ceremony at the Justice Center. When asked to say

a few words, I shared my feelings on the subject.

These solemn days bring a challenge. Each time I

think about honoring those who have died in service

to their country and those who have served and

are still with us, I consider how to honor and thank

them. The best way that I can do that is to live a life

worth having died for, worth having fought for. We

the people are the nation. We the people are what our

Flag represents. We the people are who our military is

fighting for. Our way of life is what they have fought

and died for. We define our way of life by how we live.

Are we living lives worth fighting for? Are we living

lives worth dying for? If not, can we thank them prop-

erly? Are we honoring them only one day a year?

How do we do it? Voting is an absolute way to honor

our veterans and those who died serving their country.

Exercising the very democracy they have fought and

died for is primary. Other ways we can honor them are

serving one another ourselves. Volunteer for anything

from packing boxes at the Food Bank to calling Bingo

at a retirement facility. By serving others, we serve

the veterans who have served us. Making our com-

munities and therefore our nation the best that they

can be, is a way to memorialize the ultimate gift from

those who have fought and died. As you go through

your daily routine, see if you have a few minutes to

spare to participate in the activities or your com-

munity. It feels so good to give to your community

and know that you are contributing to a nation worth

serving, a nation worth dying for.

SEEMINGLY SMALL DIFFERENCES in wording can make

a big difference in reality. For example, one Last Will

and Testament or trust (Will) may have a “No Contest”

clause while another Will might not. A “No Contest”

clause provides that if someone unsuccessfully con-

tests the validity of your Will, negative consequences

ensue. Typically, the clause will provide that the unsuc-

cessful contestant is disinherited or treated as though

he or she died before the person who created the Will.

Such a clause can effectively convince people that it is

not worth challenging your Will.

Let’s look at what happened when Harry met Sally.

They hit it off immediately and soon decided to marry. It

was a second marriage for both of them. They each had

children from prior marriages. Sally had an 11-year-old

son, Billy, and Harry had two daughters, Susan 13 years

old and Michelle 15 years old. When they married, Sally

entered the relationship with several million dollars

and Harry entered it with more modest means. When

Sally prepared her estate plan, she wanted to share her

wealth equally among all three children and left them

equal parts of her estate. After a loving, caring relation-

ship that lasted many decades, Harry passed away. When

Sally passed away several years later, Billy, now in his 50s,

contested her Will. He did not want to share his mother’s

wealth with his step-sisters. Billy’s contest ended up

costing Sally’s estate dearly in attorney fees, court costs

and legal expert fees. When the dust finally settled, all the

children ended up sharing a much-reduced pie—a very

unfortunate result. Worse, the emotional scars from the

litigation never healed and the children have no relation-

ship as the result of Billy’s actions.

Sally could have avoided the battle that tore her and

Harry’s family apart if she had included a “No Contest”

clause in her Will. Billy probably would not have con-

tested his mother’s estate plan and risked his share of

her millions.

Consider always using a “No Contest” clause in your

estate plan but especially in the following situations: 1)

substantial wealth 2) remarriage (especially later in life)

3) unequal distribution among your children and/or 4)

unusual distributions.

IN THE GREAT and hilarious show “Gypsy”,

before her debut, three seasoned strippers

on the same bill advised Gypsy “you gotta

have a gimmick, if you want to get ahead.” If

you watch many of the food shows you can

see examples of trickery. Grills, both outdoor

and indoor ones, combined with foods which

consist mostly of hot peppers have made

stars of many non-chefs. It must be very

depressing to the authentic chefs who spent

years learning and perfecting their crafts to

see these food “stars” who know little about

food but much of illusion.

Those creations you see so beautifully plated

are not the results of those faux-chefs, but

rather, are the creation of food stylists. The

dishes prepared by the majority of these popular

TV chefs would be cost prohibitive in many

homes as the cost would be astronomical.

Great foods need neither trickery nor a long

list of ingredients to be wonderful. Catherine

di Medici proved this when she took her staff

of cooks and chefs and recipes with her to

France when she married Prince Henry. She

made history in politics and Italian cuisine,

and has since been named the Mother Cuisine.

Simply put, there is no need for ballyhoo when

it comes to wonderful foods. All good chefs

know that. To prove it, try this simple recipe.

Linguine with artichoke hearts and shrimp1 lb linguine

1 can hearts of artichokes

1 lb shrimp, deveined and cleaned

2 cloves garlic

1 tsp capers

1 lemon

1 lb spinach or arugula

1/3 cup extra-virgin olive oil

1 medium onion

1/2 cup semi-dry white wine

Salt and pepper to taste

In a saucepan, heat half the olive oil. Add

garlic to infuse the oil, then remove it. Add

diced onion and saute´ until lucid. Bring a

pot of salted water to a boil, add the linguine.

After onion is lucid, add your artichoke hearts

and sauté for about five minutes. Remove

artichokes and put aside. Add wine and let

simmer about 2 minutes. Add shrimp and cook

until pink, remove from heat. Remove shrimp

and using the same oil, return pan to heat and

saute´ until greens are just wilted. Place greens

on dish. Surround the greens with artichoke

hearts. Place cooked linguine on top the pasta

followed by the shrimp. Drizzle remaining olive

oil over this. Squeeze the lemon juice over the

shrimp and entire dish. Garnish with chopped

Italian parsley or chives. 4 servings
