One fascinating aspect of wine is that it can be an artistic expression of science. Wine is a combination of geology, geography, botany, horticulture, and chemistry; but it is the wine maker who takes the final product and creates something that can evoke pleasure and awe.
Wine has been with us for thousands of years, but it is really only in the last 20 that it has become a global beverage. The traditional ‘Old World’ winemaking regions of Europe still produce some of the world’s finest wines, but they are facing increasing competition from New World producers such as Argentina, New Zealand, and South Africa.
For wine lovers this is great news, as there are quality wines available from more regions than ever before. Our wine list at Soneva Kiri reflects this with over 450 selections coming from over 15 countries. The list is laid out in a classic format, geographically by wine growing region as opposed to grape variety or wine style.
In addition to the list the Sommelier Recommendations have been created to complement the menu created by our culinary team. Our goal is to focus on smaller, quality driven producers that practice environmentally conscious viticulture, whilst introducing you to wines that are not mainstream.

Grape Varieties - White
Chardonnay
One of the most recognizable grapes in the world and planted everywhere wine grapes are grown. Due to its neutral character it can produce wines that are fresh, light, and crisp to some of the most complex white wines available. Its home is Burgundy, where the finest examples still come from.
Sauvignon Blanc
With refreshing acidity and light bodied character, Sauvignon Blanc is an excellent food wine, particularly with fresh seafood or soft cheese. Most New World versions go well with spicy Asian dishes due to their fruity nature. It is also one of the two grapes used in Sauternes, the decadently sweet wine from France.
Riesling
To many people in the wine trade, Riesling is the quintessential wine grape, as it is fruity, aromatic, with good acidity and is capable of making wines from very dry to very sweet. It also ages well and takes on complex characteristics with age.
Chenin Blanc
An underrated variety that is also capable of producing wines from very dry to very sweet. Chenin Blanc is a challenging grape to grow, as its labour intensive in the vineyard due to its uneven ripening. It is famous in the Loire valley of France and is also grown with success in South Africa.
Pinot Gris
A popular grape variety also known as Pinot Grigio in Italy, it produces wines with fresh fruit flavours and low acidity that are usually made to be consumed young. In Alsace, it delivers wines of high quality with exotic fruit nuances.
Other White Grapes We enjoy featuring grape varieties that are not globally popular, as they often produce fabulous wines of great character that pair very well with food. Some examples are: Grüner Veltliner (Austria), Schereube (Germany), Fiano di Avellino and Vermentino (Italy), and Torrontes (Argentina)
Grape Varieties - Red
Cabernet Sauvignon
A classic variety capable of producing high quality, full bodied, complex wines that age well. Tannic when young, with aromas of blackberries, it is grown all over the world with success and is most famous for its role in Bordeaux.
Merlot
The other major player in Bordeaux, Merlot makes wines which vary in style from soft, lighter bodied reds for easy drinking to more structured wines for aging. It is also found globally and is a popular variety as it thrives easily.
Pinot Noir
Being the most dominant red grape of Burgundy, Pinot Noir has become very fashionable due to its individual nature. Characteristics change from red berry aromas, to an earthy, leathery bouquet that cannot be found in any other grape variety. The finest red burgundies are some of the world’s most expensive wines.
Syrah/Shiraz
Syrah’s original home is the Rhône valley of France, where it has enjoyed prestige status for hundreds of years. In the 19th century cuttings where taken to Australia where they thrived, giving wines that are bold, with great structure and longevity.
Sangiovese
Its home is Tuscany, and although Sangiovese is starting to be planted in other countries, the grape has a definite Italian heritage. High acidity makes it a great partner with Mediterranean flavours and it is often blended with Cabernet Sauvignon or Merlot to produce the modern style Super Tuscans.
Tempranillo This is Spain’s number one variety and has been introduced globally with success. A versatile grape that is often blended, the best examples are very complex and can age for decades.
Other Red Grapes As with white wines, there are many quality red grapes that are not as renowned. Some examples are Grenache (France) and Mourvedre (Spain), Malbec (Argentina) and Nero d’Avola (Italy).
Old World and New World
A convenient way to categorize wine is to break it into the above 2 categories. The former refers to Europe and the Middle East, as this is the traditional home of wine. The latter describes everywhere else where wine is made in our day, so this would include everything from Argentina to Thailand.
Old World wines historically have been crafted in a style that reflects the winemaking history of the region that they come from. The winemaker often plays a supporting role (in particular with the highest quality wines), allowing the terroir to define the wine. Terroir
is a French term that has no real direct translation in English, but loosely defined it means how a wine tastes due to climate, soil, and topography, with viticultural methods also playing a factor.
Old World wines have had much more time in which to develop their personality through trial and error. Only recently have New World wine growers realized the importance of terroir and this is one reason why the quality level of many New World wines has risen so quickly.
Technological advances in wine making are the other reason for the rapid quality increase in wine and are something that the New World has given to the Old.
Old World
Austria
An up and coming global player in quality wine, Austria survived a disastrous wine scandal in 1985 that left its industry in tatters. Because of strict government legislation that prohibits any tampering and strong control of yields, Austria now produces some very exciting wines that are getting worldwide recognition. Gruner Veltliner is the star, but there are many other varieties worth checking out.
France
No other country has contributed more to wine than France. It has been a wine producer since Roman times and virtually every style can be found there. Globally it is the 2nd largest producer and its comprehensive Appelation Contrôlée wine laws have been the benchmark for many other nations.
Alsace
Influenced by Germany more than its home country, wines from Alsace are some of the world’s best food wines but they suffer from recognition. White varieties like Riesling, Pinot Blanc, Pinot Gris and Gewurztraminer dominate with styles ranging from very dry to very sweet.
Bordeaux
Perhaps the spiritual home of wine, this is France’s largest growing region and the home of the great Chateaux. Cabernet Sauvignon, Merlot, and Cabernet Franc are the main red varieties in the Haut Medoc, Pomerol, and St. Emilion; while Sauvignon Blanc and Semillon produce the dry whites of Graves and the sweet, luscious dessert wines of Sauternes.
Burgundy
Chardonnay and Pinot Noir produce most of the quality wines here, with the sub-district of Beaujolais planting Gamay. Like Bordeaux, Burgundy has an illustrious wine history and the finest examples are some of the world’s most sought after bottles.
Loire A lesser known region outside of France, Loire is at its best with dry Sauvignon Blanc and richly sweet Chenin Blanc. Some quality red wine is produced here as well, but in smaller quantities. Loire wines tend to be high in acidity due to the cooler northern climate, making them ideal food wines.
Champagne
This famous region is the most northern wine growing region in France; with the cooler temperatures providing ideal conditions for high acidity grapes, which are essential for making quality Champagne. Chardonnay, Pinot Noir, and Pinot Meunier are the grapes used. This is what accounts for the numerous individual styles of Champagne as each producers’ blend is closely guarded.
Rhône
Two distinct regions of north and south, the majority of wine here is red and rosé, however, some interesting white wine is also produced. Many different grape varieties are grown, with Syrah, Grenache and Mourvedre the most popular.
Germany
German wine is unlike any other. Most of the finest wines have some residual sugar and they are known for their lighter body and lower alcohol levels. German wine is an ideal pairing with spicy Asian food and they deserve a serious look as the quality has never been better and their style suits a tropical climate.
Italy
The world’s largest producer of wine has more indigenous grape varieties planted than anywhere else. There are literally hundreds to choose from. More common varieties such as Merlot and Cabernet Sauvignon have been introduced and blended with the local varieties successfully.
Spain
Spanish wine is becoming more popular on the world stage and it has benefited from modern winemaking technology and vineyard management. The best Spanish reds compete equally with the world’s best and the whites and sparkling wines or cavas are well received.
Portugal and Greece
Portugal and Greece are two countries to watch as their wines have rapidly improved. Local grape varieties are being meticulously cultivated and financial investment has gone a long way. Previously most of the wine was not exported, but that has changed and we are now able to enjoy these wines in Thailand.
New World
Argentina
Because of its European roots, Argentina has produced quality wine for many years but was made to be only consumed within the country. This has changed recently and now Argentinean wine is enjoyed around the world. Malbec and Torrontes are two grape varieties to look for.
Chile
These days Chile enjoys a booming wine industry. The classic Bordeaux varieties have put Chilean wine on the map, and now we are beginning to see Pinot Noir and Syrah of very high quality. Chile enjoys an almost perfect climate for wine production and much research has gone into new areas to plant.
Australia
Australian wine is a top 10 producer globally, though only a small percentage of land is suitable for quality wine production. These regions are mainly in the far south and west, with a close proximity to the ocean. Clever marketing has made Australian wine a dominant player in almost every wine style and modern vineyard management has allowed most grape varieties to be grown here with success.
New Zealand
New Zealand’s wine regions extend 1,600 km and the country ranks 15th in overall global production. The wine is produced in mostly maritime, cool climate winegrowing regions and allows a wide range of wine varieties to flourish.
South Africa
Vines have been planted in South Africa for over 350 years, but until recently most of the grapes were used for either brandy or fortified wine production. The industry is still dominated by cooperative cellars, but the number of smaller, independent producers has risen dramatically in a short time. Several famous French names have opened wineries here.
Thailand
The first grape wine in Thailand was produced in 1994 in the northern province of Loei. Vines have been planted in several areas with success, and in 2004 the Thai Wine Association was formed with 6 member wineries throughout the country. The term ‘New Latitude’ wine has been used to describe Thai wines, as the country lies outside of the temperate climate zones that wine is usually associated with. We are pleased to feature several quality Thai wines for your enjoyment and look forward to listing more in the future.
USA
The United States is the 4th producer and 3rd consumer of wine in the world. Due to the large consumer base most American wine is not exported. The quality level is very high with the majority of wine coming from the western states of California, Oregon, and Washington.
Matching Food and Wine
It used to be so much simpler, but this topic has become a complex one as the world eats differently than it used to. Wine styles were originally developed to complement the cuisine of a specific region, but with today’s melting pot of global gastronomic culture, we have the opportunity to try food and wine combinations that weren’t possible a few years ago.
Your own palate should be your number one guide as everyone tastes differently and has their preference. However, matching wine styles to specific foods still has merit as one needs to look at the basic elements in both the wine and the food. It’s all about balance. The
idea is to have the wine and food complement each other rather than one overpowering the other in some way.
The rule of white wine with fish and red wine with meat should be considered but not always followed; as a full bodied white wine in many cases might be a better match for certain meat dishes and lighter, fruitier reds can pair well with many types of fish.
The cooking style and sauce are also important, as these two define how a dish will taste once finished.
Organic and Biodynamic Wine
Organic wine is produced from vines that have not been treated with synthetic fertilizers, pesticides, or genetically modified in any way. The agricultural process practices mechanical cultivation, natural pest control and composting. There are many wineries that practice organic viticulture even though they are not certified organic by their respective country’s regulations.
Biodynamic agriculture is also organic, but it goes one step further in defining the vineyard as an individual organism. The relationship of the soil, plants, animals, and insects are all treated as an interdependent system. Biodynamic agriculture uses various herbal and mineral preparations through composting and field spraying. The astronomical cycle is implemented in these and also in planting and harvesting crops.
The concept of biodynamics was first introduced in 1924 by the Austrian philosopher and scientist Rudolf Steiner. His lectures were in response to a group of farmers in South East Germany (now Poland)
who noticed deteriorating soil conditions and crops due to their use of chemical fertilizers.
Biodynamic viticulture has become increasingly popular in recent years and today there are more than 450 producers globally. Many high profile world class vineyards have switched to this method of viticulture as the wines seem to have purer tastes and aromas, with increased longevity once opened. We invite you to try our biodynamic wines as we feel their quality levels speak for themselves.
Chinese Russian
Coffee Lavazza is our preferred coffee due to its constant commitment to product quality and environment friendly practices.
Their brand Tierra is a sustainability project launched by Lavazza in 3 coffee growing communities in Honduras, Colombia and Peru.
Through this project, Lavazza assists impoverished communities in improving their living standards and finding ways to sell their coffee on more advantageous terms; thus, achieving greater financial independence for the growers.
Lavazza is also involved with Save the Children, which aims to protect disadvantaged children from exploitation by creating educational and recreational facilities, and by aiding in the renovation and construction of homes, schools and clinics.
Sweetener Our sweetener is made from 100% pure and natural sweet leaves from the Stevia Rebaudiana plant. Stevia has a negligible effect on blood glucose and may even enhance glucose tolerance It is useful as a natural sweetener for diabetics and others on carbohydrate controlled diets.

Imagine a world in which children don’t have safe drinking water or sanitary toilets at their school. Imagine knowing that the only water you have to give your children could be contaminated.
This is the reality for 750 million people worldwide who do not have access to clean and safe drinking water and the 2.5 billion people who lack basic sanitation services. We think this is an intolerable injustice.
Meanwhile, the world is awash in plastic waste. Much of this is from the discarded drinking bottles of those who are fortunate enough to be able to buy clean drinking water.
Soneva imagines a world where both these problems are solved.
We were one of the first resort companies in the world to ban branded bottled water, a move which has prevented the production of 1,500,000 plastic bottles in 10 years. Soneva Drinking Water is filtered, mineralized, alkalized, and bottled on site in reusable glass bottles.
