    GARLIC CHICKEN

    1 Chicken 800 gm 75/800 gm

    2 Flour 60 gm3 Corn flour 90 gm

    4 Tomato sauce 100 gm

    5 Onion 100 gm

    6 Spring onion 5 gm

    7 Seasonings 10 gm

    8 Chicken stock 30 ml

    9 Oil 15 ml

    10 Ginger 15 gm

    11 Garlic 6 cloves

    12 Ajinomotto 2 gm13 Oil 400 ml

    METHOD

    1. Debone the chicken and cut into cubes.2. Make a batter with flour and 2/3rd of corn flour.3. Add chicken and coat well4. Deep fry the chicken cubes till it gets crisp and remove it.5.

    Heat oil in wok, add crushed ginger and garlic and slicedonions.

    6. Add tomato sauce, stock and seasonings to it.7. Add corn flour blended with little cold water.8. Cook the gravy till it gets thick.9. Add fried chicken cubes and remove10.Serve hot with chopped spring onion.

    VEGETABLE FRIED RICE

    METHOD

    1. cook the rice by boiling method and drain it.2. Heat oil in wok, saut finely chopped ginger and garlic, and

    finely diced vegetables and stir fry it.

    3. Add rice and seasoning and cook it for 5 min.4. Garnish with chopped spring onions.5. Serve hot.

    METHOD

    1. Make a batter with corn f lour and flour, egg milk and salt.2. Heat a small oiled pan. Swirl one length of the batter over

    the base and cook for 2-3 min. repeat with remaining

    batter.

    3. Spread out the skin and spoon one eight of the filling alongthe centre of each.

    4. Roll the pan cake with filling and then saut in batter tillturns golden brown in colour.

    SWEET WONTON

    4 ORANGE JUICE 50 ML

    5 WONTON SHEET 4 NOS

    METHOD

    1. Wash and boil the walnuts.2. Clean and remove the seeds from dates.3. Mix the walnut and dates with orange, lime rind and make a

    small balls.

    4. Prepare wanton sheet with flour, salt and sugar and make asoft dough.

    5. Roll the dough into rectangular shape and cut it into square.6. Place the ball on wonton sheets and fold and make boat

    shape.

    7. Deep fry in oil till it becomes golden brown in color.8. Garnish with powdered sugar on top9. Serve.
